This year’s buffet will feature market fresh Balmain bugs, poached prawns,
mussels, freshly shucked Pacific and Sydney rock oysters, our delicate blue

beef cheek Rendang slow braised with macadamia and coconut.

Celebrate the New Year with an elaborate seafood selection. This year’s
buffet will feature fresh Balmain bugs, seared Queensland scallops, hot
smoked salmon, Kinkawooka mussels, diamond shell clams, freshly shucked
Pacific and Sydney rock oysters, our delicate spanner crab and much more.
Enjoy chicken baked with honey harvested in-house, served with Israeli cous
cous and barbecued vegetables. There is also flounder meunière and linguine
with locally caught seafood. Tempt your tastebuds with roasted beetroot,
balsamic and goat cheese risotto and slow braised lamb shanks. Show
stopping side dishes include smashed sweet potato, buttered kipfler potatoes,
roasted whole cauliflower, grilled asparagus and baby carrot.

•Grilled beef fillet with green peppercorn and roasted caraway seed rub served
with condiments including red-wine jus, horse radish and assorted mustard.
