Yoga and Triathletes Ecología, Alimentación, Enfermedades Letter from the Editor by Manuel Lynch, Founder of Mallorca Vegan In this issue of Tranquilo magazine and Mallorca Vegan guide we focus on the small shops around the island called Herboristerias or Bio shops. These are those little specialty healthy food stores that have options for vegetarians and vegans or others pursuing more healthy alternatives. Whether you are a dietary vegan, an ethical vegan or an environmental vegan there is all one thing in common - animals. We want to promote either eating less animals, exploiting less animals, and promote healthier environmental approaches to using the planet’s natural resources. There are many new businesses starting in the world of veganism including restaurants, shops, clothing, and many more. If someone started a business and realized it would never make any money but the social and moral intention of the activity was a positive one then they would seek creating a charity or a foundation and seek support from people that donated to the cause. If someone started a traditional business and it made no money it would be considered a bad business. Likewise, if someone started a business that was growing, successful, and was earning a profit there might be others starting similar businesses as it was “a good business model” or “sustainable”. The term “sustainability” is often associated with business, social, or environmental practices that can operate on their own and do not need outside funding or support. So I ask this question - if the primary intention of veganism is to support minimizing either the consumption, destruction, or exploitation of animals - don’t we want to encourage sustainable vegan business ideas? I am criticized often times for developing a business that promotes vegan options on the island of Mallorca that sustains itself by having businesses on the island that provide vegan options to help cover the cost and distribution of printing and distributing this guide by paying a small listing fee. When we started we received a call once a month about a new business offering vegan options and the guide was two pages long. That rate accelerated and now a year later we receive many calls a week from people wanting to be in the guide and help expand our goal of making Mallorca the world’s leading vegan destination and the guide is now 32 pages long. We have reduced our rates of advertising in our guide by more than 50% since we started and yet we continue to grow in a sustainable and progressive manner. I have been a successful “business man” most of my life. I invent many new business ideas on a regular basis. But perhaps the best thing I do in business is decided which business ideas not to pursue because they are not “sustainable” and will not be profitable and self sufficient. I am by no means a rich man and cannot afford to support a business or businesses that meet my personal, moral, and social objectives but are not sustainable. Mallorca Vegan SL and our business activities are sustainable and we feel proud of that - we are doing something that promotes our ideology, something that helps animals, something that helps local businesses by bringing new customers, and helps tourists find vegan options on our island. So help our island become a destination that people want to come and visit and read how businesses are opening their arms to vegan tourists and locals. Support the business that support making the vegan initiative on the island a sustainable one. Mis padres eran payeses y hortelanos, mis abuelos cazadores, pescadores y hortelanos. Nunca he cazado animales, pero si he ido a pescar, hemos hecho matanzas de cerdos en mallorquín que no quería perder muchas de las tradiciones que tenemos y pensaba que lo que nuestros abuelos siempre hicieron era lo correcto. Hasta que hace unos 3 años hice una Fundación para promover la ecología, la salud y la sostenibilidad en Mallorca. Los problemas casa de mi abuelo y en mi casa, aprendí a económicos y de salud en todo el mundo matar corderos. Yo era uno de los que querían conservar las tradiciones y quería me llevaron más lejos de lo que creía, que los jovenes aprendieran a proveerse hice viajes a Madrid y Barcelona para aprender más sobre la Ecología, sus propios alimentos tanto vegetales Alimentación, Enfermedades, etc. como de animales. Mi ignorancia sobre Encontrar una solución a la mayoría de nutrición me hacía apoyar cualquier los problemas no fué fàcil, me enfrenté a muerte de animales mientras fuera para muchas dudas y sobretodo a mis comer, creía que nuestro cuerpo tradiciones. Me di cuenta de que si necesitaba alimentarse de carne, pescado, frutas y verduras. Yo era el típico quería descubrir una solución que Ecología, Alimentación, Enfermedades sirviera para mejorar nuestro planeta, tenia que desaprender todo lo que me habian enseñado mis profesores, mis padres, mis abuelos, médicos, televisión, tradiciones, amigos, sociedad y políticos. Necesitaba poner en práctica todo lo que estaba aprendiendo y eso implicaba un compromiso holístico en mi vida. Tuve que vaciar todo lo que aprendí en mi juventud para empezar a entender el porqué de muchos problemas en el mundo. A los 32 años dejé de comer productos derivados de animales (ser Vegano), cambié la carta de mi restaurante por una más vegetariana, tuve que convencer a mi familia, trabajadores y amigos de que lo que hacía tenía sentido y era parte del futuro. En mi fundación solo apoyamos los alimentos veganos, ecológicos y preferentemente de Mallorca. Hice un cambio radical a mi vida para demostrar que se puede vivir perferctamente sin alimentos de origen animal, aunque haya sido carnivoro toda mi vida. una isla muy interesante para construir proyectos referentes a la alimentación vegana, sostenibilidad y ecología. Tenemos todo lo necesario para ser un referente mundial en estos campos; el clima, el terreno, la isla, la diversidad de gente y sobre todo una energía difícil de explicar que está haciendo despertar a muchas personas residentes y no residentes. El cambio no ha hecho más que empezar. Mallorca es una isla de tradiciones y los de aquí queremos mucho nuestra isla, pero si queremos más a nuestros hijos debemos modificar un poco algunas costumbres para que ellos tengan un futuro llenos de salud y de esperanza trabajando conectados a la naturaleza. The Sabor Vegan Culinary Academy of Mallorca invited the founders almonds on top. When asked why his specialty is canapés Adrian responded, “I view vegan canapés as an entire nutritious meal shrunken into a single bite.” Adrian Smith Vegan Canapés direct from London by Stephanie Prather, Founder of Sabor Vegan Culinary Academy of Vegan Peasant, a vegan catering company in London, to come and demonstrate how to make vegan canapés or “tapitas”. The workshop included making a Beetroot Falafel with Horseradish Cream, a Truffled Parsnip Potato Rösti with English Parsley and Amaranth, a twist on conventional hummus made with raw Broad Beans with a Coriander Vinaigrette dressing on Rye bread, and the one everyone loved was the Rhubarb Bakewell Tartlette with Mallorca and Diana Pinkett have an interesting story photo by Ron Tibbs on how they encounter and incorporate the flavors from around the world into their vegan dishes. The two talked about how they took a bike ride over a one year period from Southern India, through Pakistan, Iran, Turkey, Italy, and through the remainder of Europe until they arrived back in London. Over 200km a day on a vegan diet! They stayed with families along the way that showed them ancient techniques for creating dishes that taste amazing but are incredibly low cost, dispelling the myth that vegan food costs more. In commenting on their journey they photo by Ron Tibbs said “we found that most people only ate meat once or twice a month in these countries, similar to traditions in the Mediterranean before the western diet was introduced.” Vegan Peasant is a London based company that does corporate event catering, weddings, and has even done catering for Greenpeace and for the animal rescue group Sea Shepherd. The workshop was held at Espai Gastronomic on the top floor of Mercat de l’Olivar and was attended by over 40 people interested in learning more about plant based nutrition and vegan cuisine. It was a fast paced journey where people learned many new techniques. Called the “Vegan Weekend Warrior Workshops” the Sabor Vegan Culinary Academy, a division of www.MallorcaVegan.com, where vegan chefs from other countries come to Palma and teach new vegan dishes. In March they have a French chef from Nice coming to show how vegan food helped cure her cancer. Sabor Vegan Academy also has extensive programs for Chefs wanting to expand their culinary skills by adding veganism and 100% plant based cooking to their skill set. One workshop attendee said, “great initiative by Mallorca Vegan, very swift and professional organization, we had a very inspiring Saturday morning,” commented Katja Wöhr, the founder of the famous Flor de Sal in Santanyi. They believe the increase in baldness may be related to changes in diet (people today eat more oily food and high calorie-count) as well as physical and mental stress caused by changing lifestyles. Located in the hills outside of Palma in the beautiful little pueblo of Alaró. The city origins date back to the Islamic period and documented history begins in the thirteenth century. The Castillo de Alaró at the center was built by Christian inhabitants to ward off invasions from pirates. In 1901 the town was the first to have an urban electricity network on the island. As a sign of how important this was for the island on May 8, flavor blended with a bit of tradition. The owners have seen a very steady increase in customers since they started the restaurant in 2014. When we asked about the percentage of people that come that are Vegetarian or Vegan we were told about 20%. We spoke to some other customers that were English Yachties that live in Alaró and we asked why they come. The answer was, “the food is good and healthy, the space has a nice atmosphere, and the people that own the restaurant are friendly.” I have been to Ecosenalla three times myself and must agree that this is one of those little pueblo examples that will really help lead Mallorca into becoming a world’s leading destination for a healthy, sustainable, and conscientious way of life. Chaturanga: a low plank pose where our body weight is distributed between the hands and feet, working strongly on the arm, wrists, shoulders and tightening our abdomen, helping us to keep our spine healthily aligned, by keeping our body fully straight thanks to a strong upper body. Urdhva Mukha Svanasana or Upward dog: strengthens the wrists and shoulders, opens the chest and deeply works aligning the back and also activating the front part of the thighs. Adho Mukha Svanasana or Down dog: this pose vigorously stretches the back, the hamstrings and shoulders, but also being upside down it increases the blood flow to the brain. Virabhadrasana I or warrior I: It is a great asana that integrates both the upper and lower body, this variation of the warrior highlights the need to make our legs a strong foundation for our whole body, bringing the idea of oneness of the upper and lower body as just one, increasing the strength, concentration and flexibility, provides a boost of energy, realigns the spine, opens the chest increasing our lung capacity, stretches the quadriceps, the abductors, gluteus and finally but not least the six pack too. A triathlete uses almost every single muscle and joint in the body, almost to the point of exhaustion when in competitions, from the rotation of the arms and shoulders swimming, feet, ankles and legs running, to the knees and lower back area cycling. Ashtanga Yoga also works every part of the body, but strengthening them from their physical and mental relaxation, keeping the mind alert, conscious and fully aware in how to master the energy properly, on top of that in Ashtanga all the poses are linked one after the other with what we call ‘Vinyasas’, a constant flow of movements that connect each asana including some jump backs and jump throughs which require full body control, core strength to lift up your body whilst being supported by the shoulders and arms, these ‘vinyasas’ make ashtanga a very challenging yoga style that provides great benefits in the long term. The asanas have great therapeutic effects on the body and mind, release tensions, improve the flexibility, maximize the flow of energy, if our body posture is not correct the lung capacity is reduced, less oxygen gets to our muscles, our breathing becomes shallow and most of the time out of control and therefore the intake of oxygen is affected by the improper body alignment of our trunk, torso, the dorsal area of our back strongly affect the blood flow and the lungs. The nervous system is run by the spine, any problem there will cause tension, body problems, tightness, with the help of yoga we get to relax them, releasing tensions, improving our overall health and our body and mind consciousness as a whole. A poor posture means also having lower energy levels, having to use extra energy to keep functioning in a natural way, getting tired sooner, tensions in our shoulders and neck imply less blood flow to the brain, less mental energy, headaches, lack of concentration and problems focusing. Tensions usually accumulate in the bones and joints creating tightness, affecting their movements and rotations, increasing the chances of injuries and pain. All the asanas practiced properly are the correct tool to keep the body of a sportsman healthy and ready for any physical and mental challenges. Ashtanga Yoga is among one of the very traditional Indian yoga styles, the most dynamic out of all of them, it is the perfect combination of physical and mental endurance, flexibility and strength, determination and commitment, patience and effort, synchronizing each movement with the correct breath. The pose is the vessel to channel the energy created to any specific part of the body that we want to relax. That specific synchronicity will set a pace throughout the whole practice aiming to relax both body and mind, inhaling and exhaling always through the nose, making sure that both last the same even when the body is under pressure throughout the whole practice which is pretty hard but at the end once mastered very rewarding as it improves dramatically our energy, endurance, records, reducing our limits and expanding ourselves to new possibilities and goals. Ashtanga requires discipline and commitment, common traits in any triathlete, but as we mentioned it includes another very useful piece for any sportsman the mind control aspect of the practice through the correct breathing techniques which will properly connect body and mind, keeping a steady breathing pace focusing the mind, bringing full awareness to what we are doing, providing a clear mind and the breath under control which is essential to successfully finishing any race but also prevents future injuries with the right flow of energy and understanding the body and mind as a whole as one to look after and train adequately. ‘Mens sana in Corpore sano’. When you walk into Yerbabuena in Palma you are taking a step into the history of what created the conscientious movement of eating healthier and respecting the planet. Francisco Sendin is the founder of Yerbabuena, the first bio-shop on the island that had a philosophy of using food as a form of helping people fight illness. He was not a classical “herboristeria” that use plant based Where it all Started medicines, his focus was on bringing whole food, organic food, and ingredients that were ecological and good for the human body. Originally from Pamplona, Francisco made his way to live in Palma after living in Madrid. When he came to Mallorca he found that there were a lot of fruit and vegetable products that did not have a lot of flavor so he decided to open a little shop in 1991 that would focus on organic products. When he first opened his store it was “alternative” and rare and many people thought what he was doing had to do with a sect or a cult. He did not want his store to have this feeling so when he moved to where he is located now in the center of Palma next to Plaza Patines he developed a way to get ordinary people to enter his store and not be decisions about what they put in their bodies. He calls it a social movement of change that is unifying nature and biology. When I asked Francisco what he thought of the 65+ stores open now in Mallorca he answered “I think it is great, it means the river is full of water and their are plenty of buckets looking for water”. I also asked if he viewed any of the other shops on the island to be competitors and he said, “No, not at all. Our competition is ourselves and we always need to improve.” Above 90% of Yerbabuena products are vegan and when I asked if he was a vegan store with vegetarian options he said, “I actually never thought about it that way. The accent is on fine ingredients sourced from the island. Fresh spring water is brought from the Soller Valley and wines from Mallorca complete the culinary presentation. Dag and Andrew are the founders of Calatrava 1 and have an interesting background in theater, television, investments, and photography. The space at Calatrava 1 is decorated with some of Andrew’s photography projects from the 1960s that included John Lennon, Allen Ginsberg, Francoise Hardy, Jimi Hendrix, Jean-Luc Godard and in bed – literally – with Mick Jagger and Anita Pallenberg. You can hear stories about what a different world it was, virtually no security, everyone was friendly and compliant. Andrew developed an interesting, eclectic portfolio of pictures – the famous and the anonymous – which evolved into a small but comprehensive view of late sixties London. Dag elaborates elegant vegan dishes. Each Thursday features a vegan soup evening for up to twelve people, including wine and garlic toast bread.
