This view has been one of the hallmarks of our beautiful building and underscores the prominent position we have in the heart of Milwaukee. In many respects, our culture of continued education and social connection, relevant business contacts, fine food/service experience and connection to local causes makes the University Club THE Heart of Milwaukee. Our members have created and sustained this exceptional legacy over the years and our staff is committed to its continuation. So, what is important to our members? As I meet and converse with so many of you, it is clear that you want a dynamic, firstclass environment that inspires members to enhance their careers, deepen their networks and engage in the issues that matter to Milwaukee. To do this we need to continue to offer a welcoming place where members and known by name and can rely on the highest standards of service. We also need to continue our legacy of hosting engaging programs and enlightening exchanges about issues that matter to our members and the broader community. These are the lively, enjoyable “can’t get anywhere else” opportunities. With the addition of Joseph Russo, Executive Chef, and Rebecca Owen, Director of Member Services to the University Club staff, we can continue to provide those memorable experiences and engagement within the Club. We will be sharing more information about them in this issue of the Forum. At the end of the day, this organization is all about our members and, to the extent that our members are engaged within the Club and actively partake in its activities, we will continue to be a viable resource in the community. With the exciting news of our intent to merge with Tripoli Country Club, the possibility is that we can ultimately provide all of the historic benefits of the University Club, with the added plus of special events and activities in a beautiful resort setting, very close to our downtown campus. This would have a great value to members of all ages who want choices and options. Not only will they be able enjoy the intellectual, business and cultural benefits of membership, but they can partake in special events and activities in another setting that will charm the whole family and build memories for a lifetime. What an exciting time to be part of the University Club of Milwaukee! I look forward to seeing you at the Club. In addition, the University Club’s mission of lifelong learning will continue to thrive, and will extend to potential new programming at Tripoli. “In this situation, one plus one equals more than three. Not only are we expanding the existing range of services and amenities to our current and future members, but we are creating a distinct value proposition for generations to come,” said University Club of Milwaukee Board Chair Julie Tolan. Tripoli Country Club is a beautiful full-service, multirecreational country club set on 150 sprawling acres in northern Milwaukee. Only 12 miles from the University Club, it offers members easy access to a variety of recreational activities, including a top-rated 18-hole golf course designed by the legendary golf architect Tom Bendelow, a Junior Olympic size heated, outdoor pool with diving well and wading pool, five outdoor hard tennis courts with Junior Quickstart lines, and excellent junior golf, tennis and swim programming. Graham Leibowitz, general manager of Tripoli, who has nearly two decades of experience managing private clubs, will serve as general manager of the combined club, with University 6 Special thanks to Reputation Partners, LLC for this featured article. Club General Manager Vicki Schroeder continuing to oversee day-to-day operations at the University Club. “Our nearly 800 combined members are neighbors, colleagues and friends who are committed to excellence and friendship in both their personal and professional lives,” said Charley Weber, president of the Tripoli Country Club. “We invite every University Club member to experience our renowned golf course, enjoy a meal at one of our multiple dining options or cool off in our beautiful pool this summer.” Use of Tripoli’s amenities before the merger closes is extended to University Club members, their spouses and school aged children. Guests may also join University Club members at Tripoli at standard guest rates. Many Tripoli members work downtown and have already begun utilizing the University Club’s amenities, as well, with rave reviews on the lively atmosphere of 1898, the stunning views from the Sixth Floor Dining Room and the convenience of utilizing the various meeting rooms. “The Club is bustling with activity and the energy is palpable,” said Schroeder. “It’s great to see so many new faces and to know that our Tripoli friends are taking advantage of all that the University Club has to offer.” Town hall meetings are being held at both clubs this summer to share additional information and answer members’ questions about the proposed merger. Working committees from both clubs are being formed to review the remaining operational aspects of the proposed merger, and to ensure the combined organization will operate as one, cohesive club with the highest standards of service and shared culture. Members from both clubs will vote to approve the proposed merger this fall. Members can direct questions about the merger to moreinfo@ universityclubmil.com, or contact General Manager Vicki Schroeder or Board President Julie Tolan. How can we help you? Our culinary art and expression is evident in not only our fresh-to-you menu options but also in our wine selections, whether it be by the bottle or the glass. This month we are highlighting menu pairings with our WineBy-The-Glass selections, we look forward to serving you and your guests soon. Menu Item: Seafood Pasta Wine: Goblesburg Kamptal Grüner Veltliner, Austria Menu Item: Cedar Planked Salmon Wine: Vina Robles “Red 4”, Paso Robles Grüner Veltliner, grown primarily in Austria and the Czech Republic, makes for a lively and zesty wine that is also very food-friendly. Schloss Goblesburg is one of Austria’s oldest wineries, originally founded as a monastery in 1137, with vineyards being planted shortly thereafter. This wine features aromas of wet stone, lime, and pear with a focused palate. Try a glass with our new Seafood Pasta dish, where the balanced fruit, herbaceous notes, and minerality of the wine blends seamlessly with the lobster cream sauce and seafood texture. The companion piece to Vina Robles Winery’s white blend, their “Red 4” is a Rhône-styled blend of Petite Sirah, Grenache, Syrah, and Mouvèdre. Aged in French, Eastern European, and American oak barrels for 16 months, this wine showcases the classic nature of each grape varietal while also expressing its own distinctive character. “Red 4” makes a great partner for the bold flavor of our Cedar Planked Salmon – the soft fruit and earthiness of the ‘GSM’ varietals made more robust by the addition of Petite Sirah – both food and wine sure to make for a marvelous evening. Menu Item: Cast-Iron Seared New York Strip Steak Wine: Beran Zinfandel, Sonoma County Beran Sonoma County Zinfandel shows all the classic characteristics Sonoma County Zinfandels are known for – deep purple in color, vanilla and dark chocolate aromatics, jammy dark fruit flavors, hints of pepper and spice, fine tannins, and a persistent, flavorful finish. Try it with our Cast Iron Seared New York Strip if you’re feeling adventurous and looking for an alternative to Cabernet or Syrah. Beran Zinfandel’s elegantly complex structure holds up to the cut of meat without overwhelming it, providing a distinctive dining experience. 10 Menu Item: Whitefish Wine: Vina Robles “White 4”, Paso Robles Vina Robles Winery’s “White 4” is a blend of Viognier, Vermentino, Verdelho, and Sauvignon Blanc. It is lively and medium-bodied with vibrant fruit layering and a crisp, lingering finish. This unique blend from an emerging California AVA is a great summer wine to enjoy on our patio, but also makes intriguing partner for our Whitefish entrée which features lightly breaded and pan-fried fish with a buttery lemon and caper sauce. From Chef Joe Russo Dear University Club Members, Let me introduce myself as the newest Chef here are the University Club. I bring to the Club over twenty years of experience working as a chef in private clubs, and hope to make the University Club my home for years to come. Some of my prior positions included Executive Chef at the Legend at Brandybrook Country Club and at North Shore Country Club. Most of my training and private club experience comes from days spent at Brynwood Country Club, where I spent over ten years cultivating a love for food and learning about club atmospheres. I understand what members expect when it comes to cuisine! In the four months that I have served the University Club, I have been working on developing new menu items and recipes for members to enjoy for breakfast, lunch and dinner. I have also been working on building a strong team of hardworking culinary professionals. Please support the University Club of Milwaukee by dining with us or holding your events in our wonderful spaces. I promise you won’t be disappointed! Joe Russo Executive Chef On the Cover f o o d & w i n e John Edward Costigan (American, 1888-1972) “Woods and Stream” Oil on canvas. Provenance: Acquired in 1930, bequest of Dr. Ernest E. Copeland. Born in Providence, Rhode Island, Costigan was orphaned and raised in New York by his aunt and uncle, the parents of songwriter, George M. Cohan. Cohan’s parents were instrumental in starting Costigan on a career in the visual arts after he and his four sisters became orphaned. Mainly self-taught, Costigan studied briefly at the Art Students League and worked as a lithographer of theater posters. From that job he learned the printing processes that he later used in his many etchings. He began making his name in the fine arts in 1920, and throughout the decade, reaped numerous important prizes for his oils, watercolors and prints. In 1928, he became a member of the National Academy of Design. He is known for his strong brush stroke and an interest in the common person as a subject. He portrays his people as deeply rooted in the soil that they work, humble yet dignified and contented. His most famous mediums are oil and watercolor painting as well as etchings and lithographs. The firm that he had worked for closed during the depression and in 1920’s he decided to buy a farm in Orangeburg, New York to paint. Costigan married sculptor Ida Blessin. Together they had five children. 11 Happenings at The Club JULY 3RD FIREWORKS e v e n t s 12 Photos: Open Green Screen Happenings at The Club PGA U.S. OPEN PREVIEW: ERIN HILLS 2017 From the Director of Member Services Greetings! Forum Sponsorship Opportunity Dear University Club Members, We trust Magazine you have noticed that our award-winning Forum has been reinstated as a printed publication and is being sent to your home. It became clear after significant feedback that this important resource was missed by membership and the email version was simply not as effective in communicating important information, our exciting programming, and member pride points. To allow the Club to keep providing this important amenity on a more regular basis, we are offering the opportunity for members to become advertising sponsors of the Forum. These sponsorships allow your company or organization to show your support for the Club and reach a very targeted and engaged group. Limited sponsorship opportunities are available on a first-come, first-served basis. Please call Paul Handle at 414-202-6200 to learn more and to reserve your space. 19 Save-The-Date Thanksgiving Buffet Gingerbread House Candlelight Dinners Thursday, November 24 Saturday, December 3 Tuesday, December 13 Thursday, December 15 Private Events The University Club of Milwaukee would love to facilitate your wedding celebration!
