Are we having fun yet?
If not, why not?
Chili cooking is a hobby, whereby we see our friends on a regular basis, indulge in
casual competitions and make the world a better place through our contributions to
charities.
Yes, part of cooking chili requires work: organizing an event, getting ready for the trip,
cleaning up afterwards. Being a leader at the cookoff level, Pod level or CASI level has
responsibilities that could be a burden or can be a source of accomplishment. Choose the
positive and get a sense of accomplishment from a job well done.
For fun, enjoy the community feeds, showmanship games, chatting with a friend and
the thrill of victory. Smile, life is good!
Every time you load up for a cookoff in July, think of ways to make it a fun weekend for you and those around
you!
Enjoy the camaraderie of CASI chili!
Speaking of camaraderie, the 2012 Great Peppers Meeting in Irving, Texas is right around the corner. Look for
the registration form, complete and submit it. You don’t have to be a Great Pepper, Director or Official to attend.
Come one, come all to learn more about the workings of CASI and along the way, you can meet new friends, share
ideas and have some fun.

Reflections from the ED
Wow! It is already July and it’s hot in West Texas! It is also time to provide me with your
Annual Pod Report. This year has gone fast. Thanks to all of you who have already completed the
report and sent it back to me! To those whose report is still pending, please complete it, return to me
as soon as possible so that I can record the information, and prepare for the Great Pepper’s Meeting
in Dallas, TX on September 7 and 8, 2012. If you need assistance completing your report, do not
hesitate contacting me. Do not forget that this report is due to me no later than August 15, 2012.
Also, remember that all Pod officers (Great Pepper, Pepper Popper, Secretary, and Treasure, as well
as Regional and Area Referees) must have their CASI dues paid up through September 30, 2013. You
can mail the dues along with your report using PayPal, or by sending them to Darin Jester,
Membership Director.
We are still working out a plan to help the Regional Referees to report those individual area
referees or CASI Officials as referees for a cookoff. Because of some problems identifying who is the referee that has been
assigned a particular cookoff, we are trying to identify a procedure that allows both the ED and the TallyMaster to have this
information prior to the cookoff. It is going to take some effort on all of our parts to make this happen. Also, remember that you
as a referee need to keep a copy of the Official Paper work (Results Sheet, Chili Entrant Sheet, and the Show Entrant Sheet).
Because of problems that CASI has experienced with the US Postal System this past year, it is a necessity that we can replace
lost paperwork.
Please consider running for a position on the board. There are four Board of Director positions and the Executive Director
positions that are up for election. We also have the Scholarship Program Administrator up for election. If we don’t have board
members, we can’t have a successful TICC. We need CASI members to consider serving the CASI Board and help it continue
to grow and change as we progress into a larger organization. There is a need for new ideas, which will keep us moving forward.
The Great Pepper’s meeting is coming up very quickly. It will be held on September 7 and 8th. Again, we plan on
presenting a workshop or maybe two, as well as well as the Candidate Forum on Friday. Saturday will be the Great Pepper’s
Annual Meeting. If you are a Great Pepper or a Regional Referee or just a CASI member who would like to participate in this
year’s meeting, you need to be sure that you have completed a Registration Sheet (which can be found on the web page in the
Resource Center) as well as making hotel reservations.
As always, I want to remind you that if you do not have a CIS log on, you can get one by sending your request to me at
[email protected]. Remember that your CASI dues must be current to log in to CIS. CIS contains lots of good
information. The History Section has many different reports. One of those areas is the Pod History Section. I have received
very few histories. If your pod history is not there, you need to encourage the pod to get this documented. There are several
other documents contained in that section. The name section contains all the information that we have about each of our
members. If your information is not correct, please send me or Darin Jester that information so that it is updated.
Summer is in full swing here in West Texas! I am sure that this is true all across the States! That means that it is time to
attend a chili cookoff and get those needed points that provides you with your invitation to the 46th TICC! Here’s hoping that
each of you are having a fun and exciting summer. Remember it is time for Chili, Charity and Fun!!!

Two More Candidates Seeking CASI Board Positions
To Janice Miller, Executive Director of CASI, and
to the Great Peppers,
Greetings CASI Members,
After some in depth soul searching I have
decided to announce my candidacy for a position
on the Board of Directors of CASI.
My involvement in the chili world dates back
to September of 1970 and the first ever Men’s
State Chili Championship in San Marcos, Texas
(AKA Chilympiad). I remained involved with
Chilympiad until 2003 when it faded into the
sunset.
During the mid to late 1980’s I was elected Executive Director for 2 years
and then elected to the Board for a 3 year term where I served as president
for two years.
After a seeming lack of interest at the Great Peppers Meeting last year
to serve on the Board I began to think about once again serving CASI.
I am retired at this time and will be able to devote the necessary time that
is involved in being on the CASI Board.
I feel that my prior service to CASI and continued involvement throughout
the years could be a benefit to help CASI raise funds and promote chili.
I am seeking your consideration and support. Thank you,
This notice serves as my announcement of
intention to run for the CASI Board of Directors. I
have been a regular attendee at Terlingua for
several years, and I am very dedicated to chili and
charity. More importantly, my background offers
many of the attributes that I feel will strengthen
CASI when I am elected to the Board.
My career includes management success in 8 different fields; supplier
programming, procurement, program management, product, systems
engineering, electrical engineering, quality, avionics, and marketing. However
the most important thing that I bring to the table is neutrality; I have been
successful over the years by avoiding excessive politics and staying focused on
the business at hand. I feel I am a good listener and am known to work smarter
and not harder.
CASI is something that is very special in my life. I am seeking this position
to serve the organization that I believe very strongly in, and to support all of you
by making CASI stronger for the future.
I thank each of you for your consideration, and if elected I promise to serve
to grow CASI on your behalf.

Update from the Information
Technology Project
I am very pleased to announce that the IT project now has a project
manager. Rolland Pate has volunteered to be the project manager for CASI’s
information technology; thank you Rolland for stepping up.
Also there are four other volunteers on the IT committee. Joe Braden,
Cory Cart, Ed Parks, and Shelley Kroencke have all volunteered to take on tasks
and move this process forward. Thank you to all these CASI volunteers. You will
be hearing more from this group and they would also like to hear from you.

Gift of Life
In early 1983, Carroll Shelby met with his contacts at
Dodge/Chrysler and Stroh’s Brewery to start the wheels
rolling (no pun intended) to present an ultra-modern
ambulance to the Terlingua Medics at TICC. Members of
the Bottom of the Barrel Gang Chili Team volunteered to
drive the ambulance to Terlingua, with full lights and
sirens blaring. But the medics needed to pick up medical
supplies for the ambulance, so Shelby had a press party at
a Dodge dealership in Dallas and presented the ambulance

to the Terlingua Medics. Members of CASI Board of
Directors and the local CASI pods served chili to the press.
A planned presentation of keys to the ambulance was also to take place on
stage at TICC that year to John Alexander, the current director of the Terlingua
Medics. But John and the ambulance missed the ceremony because they were
busy on an emergency call helping in the delivery of the newest member of the Big
Bend community.
Ten months after the new ambulance arrive in Terlingua; John Alexander
reported that the new emergency vehicle had made seven lifesaving missions, 160
field missions, one emergency transport to a Houston facility, and 40 emergency
transports to Alpine.
Each of those missions were made possible by the initial efforts of Carroll
Shelby putting together a group of sponsors to give back to the community that he
loved so much.

SCHOLARSHIP
PROGRAM
I want to remind all scholarship recipients that I
will need a copy of your grades for the Fall 2011 and
Spring 2012 semesters in order to ascertain whether
or not the recipient will continue to receive scholarship
money from CASI. I have had several students
send me their grades already and I applaud them for
being prompt. But I still have not heard from some.
If you know any of the scholarship recipients, please
remind them to send their grades so that they can
continue to receive scholarship money from CASI.
Our plan is to issue the checks before mid-August, but we will be unable to do that
if I do not have a copy of the grades.
I would also like to remind the CASI members that my term expires in
September of this year. I know that their several great CASI members that can take
the Scholarship Program further. All you have to do is apply for the position.
Applications should be sent to the Executive Director.

Awards Day - Presentation of CASI Scholarships
The news today is always filled with stories of bad kids, shootings and just
teenage mischief, but I regularly witness the good kids out there. If you
haven’t attended an Awards Day Program at a high school lately I challenge
you to do so. There are so many kids out there that you never hear about that
go on to MIT, Stanford, Yale and any one of the many other super universities.
I serve on the scholarship committee and we receive so many great
applications from these kids that it is indeed a difficult job. Many teach Sunday
school, volunteer at homeless shelters, take care of family businesses, visit
nursing homes and work many varied jobs. And that is in addition to
maintaining high GPAs on their school work. Many nights as I read these
applications I am brought to tears by what their insight on life is all about. It
pleases me to know that there will be great futures out there for these kids
regardless of any monies that they do or do not receive but I wish we had more
money to give even more help.
I am a substitute teacher at Garland High School and have been for 25
years. I have seen so many great kids come and go. I always cry when my
favorites leave and cry when the new bunch come in. Years later they still
contact me, remember me and it means so much to me.
My favorite time is when I attend these Awards Day ceremonies to award
CASI scholarships. I am so proud of CASI and what it does and of the many
students going on to bigger things. I am so emotional at these ceremonies that I
cannot begin to convey my pride in the CASI organization. (I tried one year and
almost did not get the words out. By the way, I have never sang Happy
Birthday to my children because I am that emotional!!!) I have resolved to just
announcing the names and presenting each one with a chili necklace and
certificate.
Please contact a local high school, find out when their Awards Day is and
attend. Support these kids with your presence. You will not be sorry you spent
the time.

This year I had the privilege of handing out two of the five CASI
Scholarship awards here in Garland, Texas. It was an amazing experience for
me to do this and I thank Nancy Hewlett for this opportunity. For those that
don’t know I am a firm believer in education and promote it whenever and
wherever I can. The children of today are the leaders of tomorrow and we, as
a charity should support them all we can.
The two young women that received Scholarships from CASI at Naaman
Forest High School, Garland, Texas this year were so appreciative of the
awards and I know they will put them to good use. When I announced the
dollar figure of the awards the crowd gasped since most of the awards were
well under $1,000.00...it made me proud to be part of an organization that really
cares for our children.
My heartfelt thanks go out to all that donate to and support the Scholarship
fund. And to Barbara Herrin and her committee, thank you for all the hard
work you put into the Scholarship program.

Dear Chili Appreciation Society International,
Thank you for supporting my college education with your scholarship and for the
opportunity to share my story and life goals with the members of your organization.
My name is Beatrice Secheli and I was born in the Transylvania region of Romania, near the
border with Hungary. (Yes, the mystical home of the fictional Dracula.) Due to my diverse
cultural heritage of Romanian, Hungarian, and German ancestry, I am fluent in both Romanian
and Hungarian. I spent the first seven-and-a-half years of my childhood in a beautiful green
country of rolling hills covered with thick forests, a land yet unscathed by greedy corporations
and the encroachment of mass technology. Romania is sprinkled with castles, monasteries, and
delicious, family-owned pastry shops. My family and I traversed the country in long, winding
trains and my favorite scene was always of the brave little village sheltered in the valley between
two majestic mountains. I look back on those years as the happiest, most carefree years of my
life so far. I lived in a flat on the third floor with my grandmother, parents, and younger brother,
Robert. We didn’t own a computer or any electronic games, so my brother and I entertained
ourselves with numerous make-believe games such as “doctor” and “house”. We also didn’t
mourn the absence of a car since almost every vital location could be accessed on foot. I would
walk down the street to school in my blue uniform. My mother and father, both mechanical
engineers, would walk to work together every weekday morning.
Almost twelve years ago, I immigrated to Dallas, Texas with my parents and brother. My
mother and father left behind their relatives, friends, and everything they had ever known in order
to create a brighter future for their children. My assimilation into American culture was difficult
and I longed to return home. I experienced culture shock coupled with homesickness and it took
me a long time to acknowledge how blessed I truly am.
When I began my high school journey four years ago at Garland High School, I finally
recognized my phenomenal educational opportunities. If I worked diligently, with dedication and
determination, I would reach my dreams.
On graduation day, coincidentally also my birthday, I delivered the valedictory address to a
class of nearly 600 students. I graduated as an International Baccalaureate diploma candidate, as a
Captain of the Mighty Owl Swim Team, as the President of the Spanish National Honor Society,
and as the Vice-President of the National Honor Society.
In the fall, I will attend Emory University in Atlanta, Georgia to study Biology and Global
Health on a pre-medical track. I plan to attend medical school, become a pediatrician, and
improve the health of children around the world.
Once again, thank you CASI for supporting my medical aspirations and I look forward to
sending you updates every semester! Thank you for believing in me and my future.

I’m Justin McDonald, one of the proud recipients of the CASI scholarship back in
2010. I am a Fightin’ Texas Aggie Junior at Texas A&M where I major in Industrial
Distribution. I have been able to complete 72 hours of college credits in my two years as
an Aggie. Over these past two amazing years I have been blessed with the experience of
a lifetime, thanks to the financial support that the CASI family has greatly presented me
with every semester. Over those past two years, I have been able to grow into a maturing
young adult, while also having the chance to receive a high-class education from an
academically recognized college, Texas A&M Dwight Look
College of Engineering. While being a member of the 12th
Man, I have maintained a 3.5 GPA and as of last semester I
started working for a civil engineering firm named Texas
Transportation Institute to gather hands-on experience in the
engineering field. I would like to thank all the CASI
members again for the gracious financial help as I look
forward to another great year at the place I love to call
home—Aggieland.

I did It!!!! I have graduated from Texas Tech University with
a degree in education to teach math and science in grades 4-8. I
have also accepted a job in Roosevelt ISD near Lubbock teaching

Chili Pod. This three-day music, BBQ and
CASI chili event will once again be held in
Brandenburg Park (adjacent to the Red River
Conference Center) in quaint downtown
Red River. This weekend is comprised of the
Larry Joe Taylor music festival, the Lone
Star BBQ competition, the Four Corners
Regional CASI red chili cook-off, the State
of New Mexico Green Chili Championship,
the “open” Salsa Competition and the
“open” Chili competition. The fees are as
follows: $20 for the first chili or salsa category
and $10 for every additional chili/salsa
category. All cooks that sign-up and “pay”
by August 4, 2012 will receive a $5 discount

is a 2 day event plenty of paved parking with
limited hookups. Saturday benefits the Billy
the kid museum. 50/50 Beans, entry fee $10
turn in 11AM. Chili entry fee $18 turn in 2PM.
GRIND ONLY. Live Bands with street dance
10AM till 10PM. Donations will be accepted.

to CASI Pods, State, Regional and
International Opens
As a CASI Pod you are required to put on a pod cookoff once a year. To help
you advertise your pod cookoff we allow each pod to place one quarter page ad in
the Terlingua Trails, each year, free of charge. This ad should run the month before
your cookoff occurs. Should you decide that you need an ad larger than a quarter
page we will simply bill you for the difference in price. This ad should not be
confused with the article advertising your cookoff in the "Cooking with CASI
Calendar" section in the Terlingua Trails. That article will start to run as soon as you
request your cookoff packet and will run until your cookoff occurs.
