Self Catering Holidays on Corfu
Back in the Seventies, when
mass market tourism to Corfu
really started, there was a
move away from hotel
holidays to embrace the 'new'
concept of 'self-catering
holidays', with accommodation
in apartments and villas of
varying degrees of comfort
and convenience.
No-one seemed then to have
much of an idea of what really
qualified as a
self-catering
holiday. For a
year I worked
for what you
might call a
'budget'
company and
on arrival day
it was my job to
scuttle through
a very
overgrown
garden to a
shed full of
spiders and
make up 'welcome packs'.
In the shed we kept boxes of
supplies – individual sachets
of coffee, tea and sugar, tiny
pots of jam and equally tiny
foil topped pots of 'cream'. One
of each of these per person,
plus a packet of those dry
rusks that the mice hadn't
broken into, an apple and an
out of season orange rounded
off the contents of a plastic
bag, with a small bottle of
water, and, at the last minute,
a miniscule container of
butter. Oh and let's not forget
the loo roll.

possible to expand on the
contents and holiday
companies were having to hire
extra arrival day staff just to
deliver the 'food hampers' to
the accommodation. Multiple
bottles of wine, water and fruit
juice, cold cuts, salad stuff,
fresh bread, cheese selections
– the resort minimarkets
became more sophisticated to
meet the demand and the
owners made a small fortune
and tomatoes every day as a gift,
bottles of home produced oil and
homemade wine, even one baked
dish each day – moussaka, fresh
green beans with tomatoes, or a
luscious, cheesy pastitsio.
Husbands dropped off freshly
caught fish, and the timid
English were persuaded to try
for the first time such
Mediterranean delicacies as seaurchins, wild greens, samphire,
prickly pears and fresh figs.
And in any case, it's so
easy to wander to the
nearest taverna, enjoy
a leisurely meal at a
very reasonable cost,
and have no washing
up to do apart from
rinsing out the kids'
buckets, spades and
swimsuits.

of them to take winter
holidays in Mexico, Brazil and
Thailand.
Welcome to your self-catering
villa holiday!
It was always going to be too
much trouble, and too hot, to
actually self-cater cooked
meals in rented
accommodation. Some villas
were equipped with enough
tableware and utensils to cater
a Downton Abbey-style
banquet, simpler
accommodation had the bare
minimum, a Greek briki in
which to boil an egg or make a
Greek coffee, a couple of
mismatched glasses.
This carefully budgeted pack
was part of the holiday cost.
Later, the fluctuations of
'Self' rarely had to 'cater',
however, with the smiling
villa maids bringing fresh eggs
These days many of the
upmarket villa
holidays come with
concierges and butlers and a fulltime chef or cook who prepares
meals of multicultural variety.
'Self' no longer has to cater for
much more than opening another
bag of crisps for the kids, or
wielding a corkscrew when it's
the chef's night off – he/she has
of course left a meal prepared in
advance.
I quite miss the sachets of sugar
and tea though, and I miss
shopping for a group of fifty
Ramblers – the eternally patient
grocer obligingly and
unforgettably slicing bread,
cheese and mortadella into fifty
separate portions. Self-catering
on a grand scale!

Editor’s Letter
The hot weather seems to be here nice and early this year so it’s
lovely to see the beaches and sea full of people enjoying Corfu at
its best.
We have had so much input from everyone this month we
couldn’t include it all in this issue but we will endeavour to
include all your contributions in future issues. Please keep your
ideas and articles coming.
We received a record number of entries for the photo
competition so well done to those who made it to print this issue.
We are pleased to have two restaurant reviews this month, both
places look amazing, so give them a visit if you are in the area. If

MIRSINIE’S & ANNA’S
GARDEN - ST. GEORGE
SOUTH by Tracey Robinson
Mirsinie’s & Anna’s Garden is the
first restaurant/café bar I have
used in St George South, this
summer. The reception from the
owners was very welcoming & we
were quickly seated in the
beautiful garden area. It was just
before dusk, so we had a fantastic
view of the Ionian Sea & the beach
below.
When presented with the
extensive menu, I found it very
difficult to choose from the wide
variety of food on offer. There was
a good selection of starters,
cheeses, salads, meat from the
grill, fish & traditional Greek
dishes. There was also a very
extensive drinks/wine list. I also
noted the prices were very
reasonable, for all the food and
drinks available.
I chose a starter of Saganaki
cheese with honey & sesame seeds
and a main course of Pancetta
(Pork Belly Draft) from the grill
with mustard & honey sauce. My
husband chose a starter of grilled
vegetables & a main course of
Moussaka. All of which were
presented beautifully and tasted
delicious.
All the staff were very attentive
to our requirements & were very
helpful & friendly. I will
certainly be using the restaurant/
café bar a lot more over the
summer season.
The Spice Kitchen is exactly what
it says – cooking with spices from
all around the world. The spices
are used for their flavours
whether they be Indian,
Moroccan, Spanish, Middle
Eastern or Chinese.
I can fully recommend Mirsine’s
& Anna’s Garden Restaurant/
Café Bar and I’m sure you will
Gabby is an excellent hostess and
from the moment I walked
through the door I was made to
feel welcome. The décor and
ambience that Gabby has created
pays attention to every detail
right down to the candle holders
and cushions with influences
from different countries including
a beautiful Dutch inlaid desk.
The traditional Tandoori oven
was shipped over from London
and Gabby fires it up every
evening on the deck. The kitchen
area is on view allowing the client
to see where the food is cooked
not be disappointed
.

The Spice Kitchen opened its
doors in August 2014 and was the
result of Gabby Lynch-Hughes
seeing many comments saying
that this type of cuisine was not
readily
available in
Corfu.
Gabby
researched
her market
whilst still
living in
London and
made the
move last
year to open
her business
on the
beautiful island of Corfu.
and a gorgeous array of spices on
the shelves.
I chose to sit on the deck at the
back of the restaurant with the
most amazing view of the sea and
the mountains of the Greek
mainland, a truly relaxing
experience.
I studied the menu and
everything is reasonably priced
with something to suit all
budgets. As well as serving
meals Gabby welcomes people to
enjoy a meze with a drink or just
a drink, drinking in the view at
the same time.
Everything served is home made from
scratch from the mixing of the spices,
the sauces, the Thai green curry
paste..... Gabby can cater for special
dietary requirements, please give
advance notice if you are vegan or
gluten free so Gabby can make sure
she has a creation suited to your
needs. I am a vegan and enjoyed
eating Baba Ganoush with warm pita
bread, a Lentil Salad, Falafel served
on a bed of lettuce accompanied by
Guacamole. Yummy, yummy in my
tummy with so many exquisite
flavours to tickle my taste buds. Had
I been with my meat eating friends
they could have chosen from many
options including Chicken Mughlai –
a milder dish with influences dating
back to medieval India or Beef
Randang a hot Malaysian curry.
I asked Adrian and Sarah Ward from
Real Corfu how they found their
experience of the Spice Kitchen –

The Spice Kitchen is a very versatile
venue and is great for solo travellers,
couples and groups (please give
advance warning for larger groups).
Gabby is also very happy to host
private parties for that special
occasion and can comfortably take 50
people. It is a year round venue –
great for the summer on the open
deck with the spectacular view or
cosy in the winter with a warm
intimate environment to enjoy a
winter soiree.
The current opening hours are 6pm
till late but these are subject to
change so please contact the
restaurant for further information.

Corfu Villages by Steve Ford
Agios Markos - Άγιος Μάρκος
This village dates back to Venetian
times and is a protected area.
The village is reached from the end
of the Ipsos resort through Pirgi
and up to the left where there is a
left hand turn. You don’t need a car
as it is only one kilometre from the
main road.
A peaceful walk with a steady
incline will bring you to the
Panorama bar with beautiful views
over Ipsos, the sea and beyond.
Often misinterpreted as the
“Moonjuice bar” or the
“Moonshine bar”, the Panorama
has a reputation for excellent
homemade wines. The welcome
engaging, the vista hypnotic, the
barrels of local krassi
intoxicating. All of this makes
for a cocktail of pure Greek
kafeneion style living. Beware
though, drink plenty of water
too if you want avoid a hangover
in the morning!
As you amble around the main
road you will notice new houses
tiered downward and the old
village above. Take a walk
upwards and you will be amazed
at the architecture of the
Venetian buildings, many
deserted and falling down but
still showing evidence of a rich
past. Old mansions, a decrepit
church and walkways with
tumbling Bougainvillea standing
alongside and contrasting with
renovations.
Here lies the Orthodox church of
Yperageia Theotokos
Lampovitissa (Virgin Mary
Lampovitissa), the stunning
painting of whom hangs in the
Byzantine museum in Athens
and was painted between 1610
and 1690. The panigiri is held on
8th September.

In the early sixties the villagers
were re-housed at the foot of the
hill about 3 kilometres away,
behind Ipsos beach, because the
mountainside subsided in
various places.
This new settlement is known
locally as “the swallower” or “the
one that swallows” and it is from
here that the underground
streams found their way to the
village of Agios Markos.
The damage to the houses was
beyond repair since enormous
cracks appeared in the walls and
at some houses the foundations
slid down the hill!
Today there are six families
living there permanently and
some of the houses were sold,
renovated and are now inhabited
by Dutch, German, English and
Greeks who use them as holiday
homes.
When the villagers were re-housed by
the state they kept their old homes as
well as their land. Although the houses
are now in a state of total collapse, the
olive trees and other fruit trees, that are
on the land near their original houses,
are still tendered by their owners today.

“It was on a lovely minibus day trip when we'd visited Paleokastritsia, then drove up to the fabulous viewpoint Bella
Vista, then the coach travelled further and we stopped in a flat high area and visited a lovely shop selling olive products, it also had a restaurant, although I don't think it was open when we visited (in May last year). Whilst in the
shop's garden I took a photograph in the distance of this charming village-I'd love to know what it's called if anybody
can help? I'm sure if you live on Corfu you'll know it!”

Life as a Resort Rep - Transfer Day
On Transfer days, a resort rep’s
alarm goes off very early. The
further you are based from the
airport, the more ungodly the hour.
With the first flights arriving at
around 10 AM and returns at 11, the
idea is to get those departing to the
airport with a comfortable 2 hours
plus to check in
and negotiate
security checks
and passport
control.
In a more remote
resort, the first
transfer bus
departs at around
7.30 AM. As well
as your
customers, your
bus will be
picking up on its way to the airport,
so good local knowledge is required.
Departure information notices have
already been distributed. On the
day, guests are boarded and checked
off by the rep, whilst the driver deals
with luggage.
The driver is your best friend and
the vast majority are seasoned
professionals. They almost certainly
know routes and stops better than
you do. Working as a team can speed
the journey and make it more
pleasant for the customers, some of
whom can be disgruntled and not
overjoyed to be going home.
10 minutes out from the airport,
information announcements are
made. Holiday companies set great
store by these and if made properly,
they ease the situation considerably
at Departures for both guests and
staff.
On arrival, the Airport Controller
allocates staff, either to assist with
departures, or to await arrivals.
Departures duty is relatively simple.
Assist customers to appropriate
queues and generally ease their
passage through the check in
process.
On the Arrivals side, things are
more complicated. As travellers pour
out of the reclaim area, it is
important that they identify and
contact the correct rep. With almost
200 passengers on a flight and
several aircraft landing within a
few minutes of each other, this can
be a daunting task. There can be
as many as 6 or 7 reps from other
companies, all jostling for
attention. In my day, we used to
hold up clipboards adorned with
the company logo. We were always
envious of the German reps, who
had large signs on long handles,
much more comfortable to hold
and easier to see.
Reps are often the first person that
customers interact with at
destination, so it is vital to provide
a courteous welcome. Passengers
are often stressed, tired and
disorientated. Some of them are
abroad for the first time. This is
where professionalism and
training kicks in. As a rep, you are
an ambassador, not only for your
company but also for Greece.
The return journey is a reverse of
the inward, but with a difference.
Depending on loadings, buses can
be routed through several resorts
in the general direction of travel.
Again, teamwork comes into play.
The driver allocates space for
luggage, but this time, the rep has
to show guests into their
properties. Every minute counts,
so familiarity with each resort and
its accommodation are needed to
ensure a minimum time spent in
transit for passengers.
On the trip, you give a brief
summary of the island, the resort
and basic information. The most
important job is to get customers
quickly and safely into their
accommodation, in order for their

very early start, a total of 5 to 6

hours can be spent on transfer duty.
On busy days, there is sometimes an
evening run to cope with as well.
Once duties are complete, you are in
theory, free to relax. However, there
are welcome meetings to plan and
requirements or other information to
share with the main office. With the
global use of mobile phones and
computers, this is now much easier
than in the past. Nevertheless, there
is still paperwork to get through.
Some companies even have 2
transfer days which makes things
even more intense.
At all times, the rep’s primary duty
is to be a competent, calm and
knowledgeable source of support and
information. With some companies,
excursion and car hire sales are also
important. Throw in the odd trip to
guide, events to organise and a very
hectic social life and it’s easy to
understand why a Holiday
Representative post can be the most
tiring, frustrating and stressful job
on the planet. It can also be the
most rewarding, interesting and fun
experience under the sun.

Postcards of Corfu - A record of times gone by
Stefan Unkelbach kindly contacted us to
see if he could share his large collection
of postcards of Corfu through the ages
with the readers of the Corfu Gazette. We
were delighted to accept his offer and
will be featuring a selection in each
issue.
Stefan is 57 years old and lives in Bonn,
Germany where he
has worked as a
divisional officer
in the Bonn fire
brigade for the
last 33 years.
He came to Corfu in 2004 for the first
time. As he walked down the gangway
from the plane, he looked around and he
knew “This is my island, it was love on
first sight.”

When he walked through Corfu town a
few days later, he was totally
overwhelmed and began to read up about
the history of the island. He says “it’s not
only the history that still fascinates me,
it’s also the beauty of the island, its
culture and the people! So, I started to
collect everything to do with the island,
its history and its culture.” In addition
to old postcards he collects ephemeras
(flyers and leaflets) and old handcrafted
items.
What really fascinates him about the
postcards are the changes in styles of the
cards over the years and the quality and
skill of the artists and photographers on
the island. He is also very interested in
the people who visited Corfu during
these years and especially those who
came to the island in times without air
transport. He knows in a way, these
cards are also documents of the cultural
and social history of the island.

Animals on Corfu
Raising money to help the strays on Corfu
Please help to raise money and awareness by buying these
great charity t-shirts (created by Jeni Gardiner), all profits
go directly to helping the animals.
The majority of the money is spent on sterilising both dogs
and cats but also to pay vets bills when necessary. There
are also charity dog & cat calendars available for sale
telling stories of animals that have been rescued.

animal lovers in the UK - ‘Corfu Animal

CAT OF THE MONTH
Gino (1092/2003 CARE) was a stray who was petrified when he turned up but is
now a loving boy, neutered and is approximately 1-2 years old. He gets on well
with the other 10 cats he has been staying with, but could really do with a
home where he gets more attention
and fuss. He flops down on your feet
just for a bit of love. He was very
emaciated but is gradually putting on
weight and would make a lovely cat for
someone with time to give him the fuss
he craves. He is currently being
fostered by Melanie. If you are
interested in giving this gorgeous boy a

DOG OF THE MONTH
Cookie (902/1997 Kivotos), a gentle, loveable 6 or 7- month-old Lab-mix female
was abandoned in Gouvia marina in May. It’s the kind of thing that happens all
too frequently because uncaring owners think that someone there will look
after a dog. Because she was so friendly, Cookie became known and loved and
was cared for by boat and shop owners, but frequently she wandered outside
the marina to the busy streets. On May 31st, around 10 pm outside Pipilas
Restaurant, she became the victim of a hit-and-run. The driver didn’t even stop
to see what had happened to poor Cookie and she
was left with a fractured front leg. She was found
and taken to a home nearby, but the family was
unable to help her and finally she was moved to a
veterinarian’s office. The medical opinion is that
her leg can be saved but it needs special surgery
that cannot be performed in Corfu so Cookie
needs to go to the university veterinary clinic in
Thessaloniki. The Ark animal welfare organization
has offered to help with expenses for surgery, but
there is the expense of a trip to and from as well as
possible boarding after the surgery. A very caring
shop owner in the marina is giving her time to
drive Cookie to Thessaloniki and fund raising is in
progress to reimburse her expenses and have
some extra to help save Cookie’s leg. If you would

In Praise of the Greek Health Care System
A personal insight into the experience of an
ex-pat resident, after suffering a heart
attack on Corfu, by Graham Knight.
“I have lived in Corfu for 14 years, initially
working & now in retirement. I currently
live in St. George South.
Waking up one morning a month ago, I
didn’t feel well and had chest pains. I drove
to a friend’s Café/Bar, for help. My friend
Harriet acted swiftly and called the local
doctor, for assistance. Doctor Pandis Chris
was very professional and compassionate.
He immediately recognized my symptoms
and transported me to the hospital in Corfu
Town.
Seeing the severity on my condition, I was
airlifted by a Greek military aircraft, which
had been diverted and I was transported to
the Ioannina University Hospital. Initially
I was taken into Intensive Care and then
onto a recovery ward.
The Consultant and his staff treated me
with care, dignity and clinical excellence. I
cannot praise the Greek Health Care
System enough, in their efforts to help me.

long time friend Derek Butler from
Kavos. Derek travelled to
Ioannina, at his own expense to
support me and arranged for
friends to bring me home, after I
got the all clear from the hospital.
Now on the road to recovery and
having made some lifestyle
changes, I am being continually
supported by all my friends in St.
George South and Kavos. They are
monitoring my diet, helping with
shopping or just being there to
keep an eye on me, especially my
good friend Harriet.
This experience has proven to me
that I am part of a great
community who care for each other
as one of their own family and I
cannot thank them enough.
Also, a massive thank you to all
the medical professionals in
Greece, to whom I will be forever
indebted.

GINGER
BEER
The 4th draw of year 3, Wednesday 29th

The 100+ Club supports Charities of Corfu
Ginger beer is a great refreshing drink for the summer and is actually a
locally produced drink on Corfu. It was first introduced to the island during
the British rule in the 18th century
Ingredients
- 1 cup of sugar
- 2 full spoons of powdered ginger
- juice from one lemon
- ¼ spoon of dried yeast
- tepid water
Preparation
Put the sugar and yeast in a bottle. Shake the bottle well to mix the ingredients. Make sure the bottle is plastic because this mixture can erupt and a
glass bottle may break. Blend the ginger with the lemon juice and pour it
into the bottle. Shake again until the sugar melts. Add tepid water until the
bottle until it is 3/4 full. Close the bottle firmly and leave it in a warm place
(e.g sun or radiator) for 48 hours until the fermentation is completed. When
you press the plastic bottle and there is resistance, then the drink is ready.
Put it in another (glass) bottle and leave it in the fridge for about half an
hour. Drink it chilled and consume it within a month.
