I Dining Room. t was a mouthwatering experience that left guests with intoxicating dreams of exotic variations on haroset, succulent mushrooms, flavorful Mahi-Mahi, and a chocolate dessert that would soothe any soul… On April 9, 2014, Upper Level JMOF-FIU members and supporters were treated to an exclusive four-course dinner curated by the acclaimed Chef Allen Susser. The event was held at FIU’s Biscayne Bay Campus. Guests were escorted to the Chaplin School of Hospitality and Tourism Management’s beautiful new state-of-the art dining room with its high ceilings, ornate fixtures, and video monitors that ran a presentation of the students preparing for the dinner and a photo montage of past Museum events. Under the supervision of Lead Instructor Chef Michael Moran, this special dinner was planned, prepared and served by FIU Hospitality students as a training session for the Advanced Food Production Management Course. Each student had a role in the event, either front or back of the house. The team that ran the front of house had to focus on proper service etiquette, while the back of the house team focused on food preparation using Chef Allen’s recipes. This evening’s class served as a “final exam” for the Student Group Managers: Mauricio Uribe (General Manager), Skylar Siegel (Dining Room Manager), Stephanie Zorrilla (Assistant Dining Room Manager), Kerline St. Prouix (Operations Manager), Viviana Siles (Bakery and Pastry Manager), Jenna Wohl (Kitchen Manager), and Claudia Vera (Assistant Kitchen Manager). In the weeks prior to the event, Chef Allen mentored the students, showing them the proper preparation and presentation of his delectable dishes, created especially for this event. “We did so much to prepare for this event, but the main thing that we did was to train our front of house and back of house staff, which consisted of our classmates,” explained Dining Room Manager, Skylar Siegel, “We spent a lot of time training them on the menu, ingredients and service procedures.” When asked how she felt the evening went, Skylar replied, “I feel that the evening went amazingly well, especially being FIU Hospitality Students with Chef Allen Susser and Chef Michael Moran after a fantastic evening. that my management group and I had no idea what the printed menus or centerpieces would look like until the day of the event. But the most fun part of the evening for me was having the opportunity to speak to the guests one-on-one, because it was so great to hear their positive feedback. I also thoroughly enjoyed working with Chef Allen and introducing him at the beginning of the event.” Mauricio Uribe, the evening’s General Manager, has a lot of experience in the service industry, but this program gave him a special insight into other roles. “I learned about the prep and timing of the meal and the dining room preparation, like folding napkins and placement of silverware. I never had back of the house experience, so this was the best part. The facility has stateof-the-art equipment that I’ve never seen in most restaurants! Also, Chef Moran was great. He was very approachable.” For many of the students, this was the end of their coursework. After graduation, most plan on pursuing positions at top restaurants or training in specialized leadership programs. For instance, Skylar hopes to take part in Marriott’s Voyage MIT/ Leadership Development Program. “I just got a great email from them and when I am accepted, I will be sent away to a new unknown location where I will work with the best of the best in the hospitality industry and be molded into the great manager that I know I can be. Upon completion of that program I plan to complete my masters degree while working for Marriott. Overall, I am just so thankful for all that FIU’s Chaplin School of Hospitality has taught me and for all of the opportunities that the career services offices have provided me with. It is an amazing program that I will dearly miss.” This intimate Dinner with Chef Allen was offered as part of our series of food related events in conjunction with our current exhibit, Growers, Grocers & Gefilte Fish. You can see more photos from this special evening on page 11. If you are hungry for more, our next “foodie” event is Sunday, June 8th with NPR personality, Linda Gassenheimer sharing recipes and smoothies from her latest cookbook Simply Smoothies (see pages 12-13). TILES | Newsletter of the Jewish Museum of Florida – FIU | June 2014 3 Collections Keys to the Collection offers an inside peek at JMOF-FIU’s vast collections Pocket watch with Hebrew numerals owned by George Dzialynski, born in 1857, in Jacksonville. George was the first child born in Florida to a Jewish family that planted roots in the state and has continued to live here as Jews since 1850. From the Collections of the Jewish Museum of Florida, originated by Marcia Jo Zerivitz, founding executive director. As is the case for all museums, our limited amount of gallery space prevents us from showing visitors everything in our collection, which includes more than 100,000 artifacts, documents, photographs and ephemera. This series provides the opportunity for a “behind the scenes look” at items in our collection, giving our audience from all over the world a chance to learn about some of our museum’s treasures. Saluting Florida Jewish Service men and women in the armed forces. U.S. Army Sergeant Jeanette Jacobson, c.1943. Born in New York City, Sergeant Jacobson enlisted in the Women’s Army Auxiliary Corps (WAAC) in August 1942 and was sent to Fort Des Moines, Iowa for training. When the Women’s Army Corps (WAC) formed in 1943, she enlisted again and was assigned as a supply sergeant. In September 1943, Sergeant Jacobson was sent to England and served at Headquarters-8th Air Force as a secretary. After V-E Day, she was transferred to the Intelligence Section until October 1945, when she was discharged. Sergeant Jacobson was awarded the Bronze Star, Good Conduct Medal, WAC Service Medal, EuropeanAfrican-Middle Eastern Campaign Medal, Victory Medal and the New York State Conspicuous Service Cross. After the war, she joined the Jewish War Veterans, becoming the first woman Commander of the North Miami Beach (FL) Post. In 1996, she was elected to be Florida State Commander. Jacobson has served as a Director of the National Museum of American Jewish Military History. She also volunteered four times in Israel, working in vehicle maintenance at a tank and heavy truck base. U.S. Army Staff Sergeant Abe Stein, c.1944. Sergeant Stein joined the Army in November 1940, rather than waiting to be drafted. He was assigned to the Army Medical Department and he asked to be stationed in Hawaii. Sergeant Stein arrived in Hawaii in January 1941 and was assigned to the Schofield Barracks Station Hospital. On December 7, 1941, he was shaken from his bed at 7:55 a.m. as the Japanese attack on Pearl Harbor began. Having survived the attack, Sergeant Stein returned to the U.S. in June 1943, before being sent to Europe in March 1944. As a member of the 31st Medical Depot Company, he also participated in the Allied Invasion of Normandy on June 6, 1944. U.S. Army Private Harold Baumgarten, 1944. Private Baumgarten was drafted into the Army when he turned 18 and was assigned to the 116th Infantry Regiment, 29th Infantry Division. He was sent to England and trained for the invasion of Europe. On D-Day, June 6, 1944, Private Baumgarten, with a large Star of David painted in his field jacket, landed with the first wave on Dog Green Sector, Omaha Beach. Of the 30 men on his landing boat, he was only one of two survivors. During the two days of taking the beach, he was wounded five times, including stepping on a land mine. He was awarded the French Legion of Honor, Purple Heart, two Bronze Stars, Conspicuous Service Cross of New York State and the Jubilee Medal of Freedom from the Government of Normandy. The wristwatch that Baumgarten wore on D-Day is on exhibit at the National World War II Museum. His story inspired Steven Spielberg’s opening scene in the film “Saving Private Ryan.” After the war, Baumgarten received his Master of Science and Doctor of Medicine from the University of Miami and practiced medicine in Jacksonville for 40 years. U.S. Army Technical Sergeant Adah Straus, c.1944. Born in 1914 in Richmond, VA, Sergeant Straus taught band in small towns in Virginia. In 1943, she joined the Women’s Army Corps (WAC) and the 403rd Army Service Forces (ASF) band. Sergeant Straus’ stripes came quickly and when the director told the band that she was now the top non-commissioned (non-com), the other non-com (Sergeant Holland) said “No G-damn Jew is gonna boss me.” The Post Attorney made Sergeant Holland apologize to Sergeant Straus in front of the band. This was the first time that Adah Straus had run into antisemitism. She moved to Coconut Grove, FL in 1954 after marrying Harold Jaffer. It’s important to remember that the museum would not have its extensive collection if it weren’t for so many of you who have graciously donated your family’s memorabilia to be preserved and available for future generations. The cross-curricular workshop was designed in conjunction with our exhibit, CINEMA JUDAICA: The War Years, 1939-1949, focusing on popular culture, mass media and effecting positive social change in the classroom and the community. The goal of the workshop was to provide instructional materials about the role of the Hollywood film industry in the war effort and how propaganda can be used to influence attitudes of the community towards a particular point of view. The keynote speaker, Professor Barbara Weitz, serves as Director of the FIU Film Studies Certificate Program in addition to her roles as member of the FIU European Studies Faculty and Affiliated Faculty of both the Women’s Studies and the Judaic Studies departments. Teachers present their The highlight of the final projects. workshop for the teachers was breaking into groups to create and share posters they designed to advocate for positive social changes to implement the concepts from the in society. The workshop provided the workshop in classroom exercises with tools and inspiration for the teachers, their students. Some teacher reflections from the Professional Development Workshop Lidia Lechtman, Aventura Waterways K-8 Center educator whose parents fled both Europe and Cuba wrote, “I like how the workshop tied in the topic of propaganda and hidden messages that have been brought out through cinema and advertising. I feel this is a very important topic that needs to be covered and discussed in the schools…It would be wonderful if through education and understanding, the human race will learn to live together and respect each other’s differences and similarities.” Elizabeth Mirabal, an art teacher at several area schools, commented, “(I) teach my students about forms of mass communication and visual culture…I enjoyed examining how the movie posters and the movie excerpts reflected certain ideas or points of view that are no longer considered politically correct, but which were acceptable topics of propaganda in the 1940s. I left motivated and wanting to share the information with the student population I work with.” Aracely Jurado, Aventura Waterways K-8 Center, summarized the experience saying, “We must learn from the past and the mistakes that humanity has made. In our poster you can see the evil side and the good side, as well as justice in the middle. As an educator and a mother, the most important thing is to teach the students and my own kids to fight for justice and equality.” For more information about JMOF-FIU K-12 Educational Programs contact: 786-972-3187 or [email protected] A Busy First Year for the Jonathan Symons B’nai Mitzvah Project nearly 350 bar and bat mitzvah celebrants from 22 participating synagogues. TO BE OR NOT TO BE (United Artists, 1942) is a comedy set in occupied, devastated Poland, and replete with running jokes about the new Nazi concentration camps in Poland and Hitler’s saturation of bombing of Warsaw. The film earned its Jewish writer-director Ernst Lubitsch harsh criticism. However, the movie has many defenders who have suggested that humor was the only weapon Lubitsch, a displaced Berlin Jew, possessed, so he used it against the Nazi characters in the film. $5 for JMOF-FIU and MJFF Members; $10 Non-Members; $8 Seniors and Students Tickets may be purchased online at jewishmuseum.com. September Sunday, September 7, 2014, 11:00 a.m. – 2:00 p.m. Jewish Food Walking Tour (see June 1 info) Monday, September 15, 2014, 6:00 p.m. From a Coin Toss into Politics: The Life of a Senator Members Only Exhibit Opening Join us for the opening of this colorful exhibit on Senator Richard B. Stone, who served as Florida’s second and most recent Jewish U.S. Senator (1975-1981). From a Coin Toss includes photographs, classified documents and artifacts, illustrating the Senator’s fascinating story, from growing up on Miami Beach in his family-owned Blackstone Hotel, to the elegant ball gowns worn by his “First Lady” Marlene at White House State dinners, to highlights from his prestigious Ambassadorships in Central America and Denmark. Stone’s foray into 40 years of public service began as Miami City Attorney, however, when a new Florida Senate seat was created in 1967, it was a winning coin toss that solidified his course in the political arena. Free for Museum Members at the $125 level and above; $18 for all other Museum Members. RSVP by September 10. Built in 1936, the Henry Hohauser designed building that underwent a two-year restoration, boasts Art Deco features, a copper dome and 80 stained glass windows. In 2007, the museum expanded into the original 1929 synagogue next door after a one-year restoration, now The Jonathan Symons Building. Both buildings are on the National Register of Historic Places. In 2008, the two buildings were connected with a skylighted Bessie’s Bistro. The museum is much more than beautiful buildings. It is a place that presents its own and traveling exhibits, sponsors cultural and educational programs, houses a Collections & Research Center reflecting 250 years of Florida Jewish history, and communicates Jewish history, art, culture and values to Jews and non-Jews alike in an informal mode. The museum is also a place where Jews of all ages and stripes discover and reaffirm their rich heritage – thus helping to strengthen Jewish identity and ensure Jewish continuity. So how did all this get started? You may already know if you are among those who participated in and enjoyed the exhibit MOSAIC: Jewish Life in Florida that traveled to 13 cities (1990-94). Depicting Florida Jewish history from 1763 to the present, this was a statewide grassroots project to collect material evidence from the time Jews were first allowed to live in the Sunshine State. Thousands of photographs, artifacts and oral histories were gathered from families and this collection continues now in the museum, which was created as a result of the interest and support garnered from the original MOSAIC project. Where the traveling exhibit was the launch, the Jewish Museum of Florida further delves into the state’s rich Jewish history of yesterday and today – for the future. Historic Partnership with Florida International University (FIU) Following the approval of the museum’s Board of Directors, Florida International University’s Board of Trustees and the Florida Board of Governors, the museum became part of the FIU family in December 2012. This historic partnership leverages the resources of the museum and FIU, igniting a new era of interdisciplinary education and research focused on the history of the Jewish experience in Florida, the ways in which Florida Jews influence and are influenced by the cultural dynamics of Florida, the nation and the world, and issues of discrimination against all peoples in Florida throughout history. A key component of the partnership is the relocation of a variety of FIU programs, including the Jewish Studies Certificate Program, to the museum’s facilities.
