different things to different people. Although the name
clearly refers to a geographical distance in close proximity
to the consumer, “local food” implies so much more.

which practices are important will vary among consumers.

CERTIFICATIONS
CERTIFIED ORGANIC
All products sold as “organic” must meet the USDA National
Organic Program production and handling standards. Certification is mandatory for farmers using the word “organic” and
selling more than $5,000 of organic products per year, and
includes annual submission of an organic system plan and inspection of farm fields and processing facilities to verify that
organic practices and record keeping are being followed.
CERTIFIED NATURALLY GROWN
Certified Naturally Grown (CNG) products are certified
by an independent nonprofit organization (not USDA) as
having been produced in accordance with national organic
standards. This program involves fewer paperwork requirements and lower certification fees for farmers than the USDA’s
National Organic Program.
CERTIFIED BIODYNAMIC
Biodynamic farming is based on the work of Austrian philosopher Rudolf Steiner. Certified by Demeter-USA, Biodynamic
farms must comply with USDA organic regulations and
also meet additional Demeter requirements. Biodynamic
agriculture uses an astrological planting calendar and special
preparations that enhance soil quality and photosynthesis.

Other Farming Practices
The best way to understand which farming practices are
being used is to talk to your farmers. Ask them questions
about what they use to amend the soil, what they feed their
livestock, how they deal with pests, whether crops are
rotated, and if cover crops are used.
ANTIBIOTIC-FREE
Antibiotics are often fed to healthy animals such as cows, hogs,
sheep, and chickens to prevent disease and stimulate growth.
“No antibiotics” implies that a farmer does not administer
antibiotics to his/her animals.
FREE-RANGE
Free-range and free-roaming imply that a product comes
from an animal that was raised unconfined and free to roam.
“Free-range” claims on beef and eggs are unregulated, but
USDA requires that poultry have access to the outdoors for an
undetermined period each day.
GMO-FREE
A GMO (genetically modified organism) is an organism, such
as a plant or animal, whose genetic material has been altered
using genetic engineering techniques. These techniques allow
selected genes to be transferred from one organism to another,
often across species, which does not occur in nature or in traditional cross-breeding techniques. GMOs may also be called GE
(genetically engineered) organisms. The following GMO crops
are currently in production in the US: alfalfa, apples, canola,
corn, cotton, papaya, soy, sugar beets, yellow summer squash,
and zucchini. Animal feed may contain GMO grains. Prepared
foods may contain GMO sugar or other ingredients. Ask the
individual vendors about their practices and ingredients. If
products are Certified Organic, they are GMO-free: organic
certification rules prohibit the use of GMOs.
NATURALLY-GROWN/ALL NATURAL
USDA guidelines state that all “natural” meat and poultry products can only undergo minimal processing and cannot contain
artificial colors, artificial flavors, preservatives, or other artificial
ingredients. The claim “natural” is otherwise unregulated.
NO SPRAY/PESTICIDE-FREE
While a farm may not be organic, “no spray” or “pesticide-free”
indicates that no pesticides, herbicides, or fungicides (organic
or synthetic) have been applied to the crop at any point in its
production.
PASTURED
The diet of grass-fed animals consists of freshly-grazed pasture
during the growing season and stored grasses (hay or grass
silage) during the winter months or drought conditions. Grass
feeding is used with cows, sheep, goats, and bison. 100% PASTURED means that no grains have been fed to the animals. Pigs
and poultry cannot survive on pasture alone.
SUSTAINABLE AGRICULTURE
Farming that is socially just, humane, economically viable, and
environmentally sound. The term is unregulated.
USE ONLY ORGANIC PRODUCTS
Many of our local farmers follow the USDA National Organic
Program standards but are not certified by the USDA due to the
expense and time requirements. These farmers are not allowed
to describe their products as “organic” without the certification;
however, these farms use ONLY amendments, fertilizers, and
pest controls as approved by the Organic Materials Review
Institute (OMRI).
HORMONE-FREE
Typically refers to dairy products that are free of recombinant
bovine growth hormone (rBGH, rBST), which is commonly used
in commercial operations to speed the animal’s growth rate or
increase milk production.
INTEGRATED PEST MANAGEMENT (IPM)
A pest management strategy that uses both organic and
synthetic pest controls, but aims to reduce their use through
careful monitoring for actual pest threats. Synthetic pesticides
are applied in such a way that they pose the least possible
hazard, and are used as a ‘last resort’ when other controls are
inadequate.

Our 30-acre IPM orchard is complimented by 3 acres of certified organic apples. Our season begins the end of June with
apricots, cherries, and blueberries. PYO blueberries are available July into August. Peaches and nectarines start ripening
the second half of July and are available into September.
Our apples begin in late August and continue through November, with several varieties available for PYO. The organic
apple varieties start ripening at the end of October and are
only available in our market.

As a young farmer, Ben Scholl had to work part-time
in construction to subsidize his farm income, but there
was no question that he would continue his family’s
agricultural legacy. In 1930, Ben’s great-great uncle
planted the first apple trees on the Scholl family’s
Center Street property in Bethlehem. Ben’s grandfather
moved onto the property in 1948 and began selling the
apples and cider to the public. Ben’s parents, George &
Faith, took over in 1952, built the farm market, and purchased a second farm in Kempton where they planted
more apples and peaches. In recent years, the Scholls
have seen a greater demand for locally grown foods.
The demand has increased so much that four years ago,

the City of Easton, is adjacent to the Easton Area Neighborhood Center, which serves low-income families and houses

at no charge. In 2015, the farm manager will be offering a

Salvaterra's Gardens
Red Cat Farm is a 1 1/2 acre farm that has followed organic
methods for 25 years. We extend the season in passive solar
greenhouses using only the sun as a heat source. In addition
to herbs, berries, and vegetables, we offer our own 100%
whole wheat flour, freshly ground at Castle Valley Mill in
Bucks County. The open-pollinated grain is grown here in
Heidelberg Township using sustainable methods and stored
cool and dry until it is milled in small batches.
Salvaterra’s Gardens is a family-owned business that grows
over 100 different varieties of high quality vegetables using
organic methods. We combine the use of 1800's Parisian-style gardening techniques with 21st century farming
techniques to conserve resources while generating a high
yield. Our produce is grown almost entirely by hand without

There is some
controversy as to whether

The Northampton Borough Farmers’ Market provides locally
grown produce. We plan to have live radio broadcasts
from our farmers’ market along with music and interviews
provided by the radio station. Our market is located in an
Uptown mini-park. We have the support of our local Uptown
merchants and restaurants. So far our efforts at community
building and enhancement seem to be working. We would
love for you to come visit with us, walk the block, and talk
with our farmers, the Roxy Theater owner, and other business owners in Uptown Northampton Borough.

Saucon Valley Farmers’ Market
CSAs and Farm Shares
With COMMUNITY SUPPORTED AGRICULTURE (CSA),
a consumer purchases a share (aka a "membership" or a
“subscription”) in the farm’s harvest in the spring and, in
return, receives a box (bag, basket) of seasonal produce
each week throughout the growing season. This arrangement gets money to farmers early in the season, which
helps with a farm’s cash flow. Shares are usually picked up
at the farm, although many farmers also have additional
pick-up locations.
FARM SHARES AND ASCS (Agriculture Supporting
Community) are similar to CSAs in that members receive a
weekly box of produce. Farms Shares, however, are typically
delivered to low-income neighborhoods, and members
are allowed to pay for their deliveries at pick-up time. This
makes fresh, local produce more accessible to people who
may not be able to pay for the shares up front. SNAP benefits may also be used to pay for the weekly shares.
BUYING CLUBS are a market-style CSA. Rather than receiving a standard box of vegetables each week, members visit
the farm and choose the produce of their choice.

THE EASTON HUNGER COALITION, founded in 2014,
is a grass-roots organization consisting of members from
agencies, government, non-profits, congregations, service clubs,
and individual volunteers who are working together to provide
sufficient, nutritious food for all people in our community. Anyone
interested in working on local hunger/food insufficiency issues
in the Easton area is welcome. Members are invited to join three
working groups: Advocacy and Awareness, Community Resource
Coordination, Fresh Food Access/Food Supply. We also provide
speakers and showings of “A Place at the Table,” a documentary
film about hunger across America.

Easton Hunger Coalition
THE VEGGIE VAN
668 Northampton St, Easton, is a
partnership between the WWNP and
Lafayette College Vegetables in
Community (VIC) program. A farm
stand is set up once a week during the
growing season where freshly harvested
produce grown primarily by volunteers
at the Easton Urban Farm is offered to
the community for a small donation. In
2014, the Veggie Van program provided
more than 4,000 pounds of produce
over a 10-week period. The Veggie
Van partnership includes nutrition
information, tastings, and recipes, as
well as gardening advice. For schedule,

PROJECT OF EASTON’S
INTERFAITH FOOD PANTRY
330 Ferry St, Easton, provides fresh,
local seasonal produce via the Easton
Farmers’ Market (end of market day
donation collections), the Nazareth Food
Bank, and from volunteer gardeners
who donate their harvest. 2,500 pounds
of produce from the Easton Urban Farm
and Easton Community gardens were
donated to community agencies and
local food pantries for direct distribution
to their clients. This supplements
produce items from Second Harvest
Food Bank and Giant supermarket.

(EACC)
901 Washington St, Easton, provides
free meals (breakfast, lunch, and snack)
to 70 children daily (M–F) during their
Summer Camp Coalition program and
serves over 200 free youth and adult
meals (M–Th) over an eight-week
program. For the past three years,
volunteers from Crayola’s corporate
offices in Forks Township have grown
and donated over 2800 lbs of fresh,
local produce from “Edwin’s Garden” to
these programs. The Community Center
also has their own Kids’ Garden onsite.
Excess fresh produce is shared with
families who attend the programs, Safe
Harbor Shelter, Easton Senior Centers,
and nearby pantries.

Eating fresh, healthy food doesn’t have to be expensive.
Numerous studies have shown that prices for fresh, local produce
at the height of season are often cheaper than those at grocery
stores. Here are some ideas that may help keep the costs down.
Buy In Bulk and Preserve the Harvest. Local growers often offer discounts on cases. Purchase larger amounts during
peak season, then freeze, dry, can, pickle, or ferment so you can still
enjoy all the flavor in the off-season.
Cook with Whole Foods. Creating meals from whole foods
is more nutritious and often less expensive than buying processed
foods.
Use FMNP Vouchers. Low-income Seniors (age 60+) and
WIC recipients may be eligible for four $5 Farmers Market Nutrition
Program (FMNP) vouchers per year, which can be used to purchase
fresh fruits, vegetables, and herbs at producer-only farmers’ markets
and farm stands. WIC recipients should ask about FMNP vouchers
during their quarterly WIC visit during the months of May to September. Seniors should contact their County Agency on Aging for
distribution sites and eligibility beginning at the end of May.

Grow Your Own. Start a garden and harvest the freshest pro-
duce possible! You don’t need a large yard. Nurture Nature Center’s
Urban Recycle Garden demonstrates low-cost growing techniques
for small urban areas such as walls, balconies, and small paved
spaces. And there are numerous community gardens in the Greater
Lehigh Valley, including the Easton Community Gardens sponsored
by the West Ward Neighborhood Partnership (15 sites), CedarBrook
and Jordan Creek Parkway Community Gardens organized by the
Bureau of Farmland Preservation in Lehigh County, and The Berks
Conservancy’s Berks Urban Greening (BUG) Community Gardening
Program (9 sites).
Join a Farm Share. Sign up for a weekly share of a farm’s har-
vest. Unlike a CSA, members do not have to pre-pay the full subscription fee at the start of the season, and members can pay with SNAP
benefits. Incentives may be available. Farm Share listings are on p.56.
Learn the Harvest Season. See our Harvest Calendar on
p.44 to understand the seasons. Fresh fruits and vegetables cost less
when they are most abundant.
Use SNAP Benefits. Many local farmers accept SNAP Benefits
(EBT Access Card) as payment. Both the Bath and Easton Farmers’
Markets have market-wide EBT programs. At other markets and farm
stands, individual farmers may be registered to accept SNAP. SNAP
can be used to purchase foods for the household to eat, such as fruits
and vegetables, bread, meats, poultry, and dairy products, as well as
seeds and plants that produce food for the household to eat.
Work for Food. Volunteer on a farm in exchange for food.

six weeks in Italy working on an organic farm learning how
to make wood oven pizza, traditional cheeses, and pasta.
Returning back to the US, Andrew spent a year developing
his two-day cold fermented dough, and Marguerite put her
own twist on the tomato sauce that was passed down to her
by her father and grandmother. Switchback’s mobile Italian
wood oven cooks the pizza for you in 90 seconds at local
farmers’ markets, catering events, and festivals, bringing a
little bit of magic to our neighbors.
