artisanal oils are among the world’s best, and are always available in very small quantities. These premium olive

About Liguria
The craggy coastal region of Northwest Italy arches toward Monte Carlo. It is filled with
palm trees, lemon trees, and olive groves. The terraced hillsides yield olive oils more
delicate than those of other regions.
Vittorio Cassini Classico Extra Virgin Olive Oil 2013
The Cassini ancestors planted the original Taggiasca olive trees high on the hillside, where the sub-tropical
breezes and temperate climate provide ideal conditions. At the harvest, the crop is picked predominantly at
the green stage. With a delicate fragrance, intense and almond overtones, this oil lends well to fish, pork, and

From Valpolicella near Verona, comes Oleum Oleae Tenimenti di Ambroxiis. We met Paolo and his perfect
oil in Veneto. An outstanding representation of the oils of the region, it is composed of the best Grignano,
Leccino, and Frantoio olives grown on the family farm. The exquisite aroma is lightly fruity, typical of this zone
of production. The taste opens sweet and progresses to a pleasantly lightly spicy finish. Best as a finish to

About Tuscany
Avignonesi Extra Virgin Olive Oil, 2013
Toscana, or Tuscany in English, is considered the
classic olive oil region of Italy. The oils of Lucca
and the Chianti regions are best known. In the
Chianti region, near Siena, the oils tend to be
spicy with hints of artichoke and pepper. Further
south in the area around Montalcino, the oils tend
to be deeper green, more rustic, and with more
intense flavors.
Classic Tuscan Avignonesi is produced from the olives of four growers in the Montepulciano area of the
Chianti Classico. The oil is packaged in an elegant tall glass container in an attractive box, which makes it
a great gift. Avignonesi is composed of Correggiolo, Moraiolo and Leccino olives. Decanted before bottling,
the oil is smooth, fruity and aromatic, with a good nip of pepper at the finish. For salads? Certainly…and also

Castello del Trebbio Olio Extra Vergine, 2013
This is a delightful oil from Tuscany—estate bottled at Castello del Trebbio in Pontassieve, not far from
Fiesole. The aroma is intense and complex with rich notes of vegetable, green almond, and artichoke. It is
ample and potent, with tones of fresh herbs, slightly bitter notes, and a peppery finish. The estate, popular
with visitors to Florence, has 10,000 Frantoio, Leccino, and Moriaolo olive trees. Trebbio is wonderful drizzled

About Umbria
About Lazio
Umbria’s olive oils are primarily crafted from the olives of the Frantoio,
Leccino, and Moraiolo varieties. The oils tend to have an artichoke
and green tomato aroma, and sometimes have the peppery taste of
Tuscan oils. Many of the Umbrian oils have a fruity flavor with a great
deal of body.
Lazio (Latium in Latin) is the region of the Etruscans—founders of Rome. Outside
of Rome, the region’s rural economy is dominated by agriculture, including cultivation
of wine grapes, fruit, vegetables and olives—for lively olive oils.
Quattrociocchi Olivastro Biologica 2013
The Quattrociocchi family has been growing olives since 1888, southeast of Rome. The certified organic
grove features 34,000 trees of the Moraiolo, Leccino, and Itrana varieties. Olivastro is a monocultivar oil,
composed solely of Itrana olives. It is intensely fruity, with elements of fresh herbs enhanced by notes of

About Abruzzo
Along the Adriatic on the east coast of Italy, Abruzzo (Abruzzi) fills the market basket
with carrots, potatoes, spinach, peppers, tomatoes, figs and plums. The main olive oil
producing areas of Abruzzo are the Valli del Tordino e del Vomano, Valle del Tavo,
Chietino, and Conca di Sulmona. These areas are mainly valleys rising up from the
Adriatic into the rugged mountains of the region.

About Calabria
Pizza and buffalo mozzarella originated in
Campania, a region rich in agriculture and
perpetually mild climate. Campania distributes
many agricultural products, including tomatoes,
potatoes, eggplants, peppers, peas, figs, apricots,
plums and cherries. Tourists know Campania as
the home of Naples, the Roman Ruins at Pompeii,
Mt. Vesuvius, and the Amalfi Coast.
Calabria (Latin: Bruttium or Brutium), occupies the ankle and toe of Italy. Calabrese
cuisine, is spicy and hot, and includes pasta, produce, meats, fish and fruit—all from
the local region.
Organic Selections from Olio Librandi
We were most fortunate to meet Michele and Angela Librandi at Olio Capitale in Trieste, where they shared
their family’s exquisite certified organic extra virgin olive oil. We chose Carolea as a fine representation
of the traditions of Calabria and Nocellara del Belice for the craftsmanship. Carolea, is full, round, and rich.
Nocellara del Belice, most often a Sicilian cultivar, yields fruity notes of ripe tomato, with characteristic
bitterness and pungency, harmonizing in a sweet almond finish. Simply tops: Flos Olei 98/100.

About Puglia
Ruine Extra Virgin Olive Oil 2013 DOP Cilento
The colorful label is the first you’ll encounter of the lively Ruine in the amphora bottle. Produced in Cilento,
in southern Campania, the olive trees have been growing on these hills since ancient times around the town
of Pisciotta. The local Pisciottana is the primary olive. Ruine possesses aromatic notes of a fruity, medium
intensity with fresh herbal notes that blend well with a richness on the palate, along with the spiciness and
peppery notes typical of these Mediterranean latitudes. Keyword: Ruine
Puglia (Apulia) stretches down the heel of the boot, making it a land somewhat apart
from the rest of Italy. This area is often overlooked by tourists although it is steeped
in ancient history. Agriculture is the most important sector, with much olive oil
produced. Puglia produces more olive oil than any other single region, but most goes
into the mass-produced oils rather than the estate bottled, high quality oils we prefer.
The dominant olives in Puglese oils are Coratina and Ogliarola.

Gargiulo Sorrentolio Venus Biologica 2013
Since 1849, the Gargiulo farm has carried olive-growing traditions through the generations. Located in the
hilly Sant’Agnello’s area of the Sorrento peninsula, where fine olives and citrus are grown. The dominant
olives of the region are Ogliarola (Minucciola), Rotondella, Frantoio, and Leccino. Organically produced from
the best olives, and with the influences of the sea and the ocean breezes, Venus is perfect with vegetables,

in Puglia, where the mill dates back to the 1600s, and extra virgin olive oil production is an art. The robust
stone ground Torre di Mossa (a Coratina monocultivar) and the medio intenso organic Arcamone carry DOP

ancient traditions. An Ogliarola monocultivar, Crudo is unfiltered, with aromas of tomato leaf, fresh cut grass,
and artichoke. You’ll note a bold, rich, and complex oil, calling out to be served with roast chicken, pasta,

About Sicily
Sicilia (Sicily in English) is so different from the rest
of Italy that it could be its own country—which many
Sicilians think it should be. The familiar cities include
Palermo and Messina. Sicily is home to Mount Etna.
Olive oils from the coastal regions often have intense
flavors. From the region around Ragusa, the oils tend
to have more body and be more fruity. From the hills,
the oils tend to be more well rounded, particularly the
oils from the Belice river valley near Menfi. In other
words, Sicilian oil is as varied as the region itself. The
olive varieties include Belice, Biancolilla, Moresca,
Cerasuola, Nocellara, and Tonda Iblea.
Planeta DOP Val di Mazara 2013
Planeta’s family grove, Caparinna, is situated on fertile land by the sea near Menfi, in the province of
Agrigento, where they grow Nocellara del Belice, Cerasuola, and Biancollila olives. Previously produced
only for family, Planeta has been bottled for sale for just over 10 years. The intense aroma and flavors
are herbaceous, with elements of citrus, artichokes, and tomatoes, layered with a spicy-peppery finish.
Recommended pairings include tomatoes and mixed salads, grilled vegetables, firm cheeses, and even
a topping for vanilla ice cream. Flos Olei, Gold Medal Los Angeles.

From the area of Ragusa in southern Sicily, Rosso is an outstanding extra virgin olive oil produced from

peppery finish, making it one of our all-time favorites. Rosso is fruity with a slightly bitter after taste. Ideal

From the Sicilian wine estate, Di Giovanna in Sambuca di Sicilia in Agrigento, comes Gerbino. The entire
estate of vineyards and olive trees has been certified organic, and the trees are Biancolilla and Nocellara
del Belice. With hand-picked olives, this unfiltered oil is produced with artisanal craftsmanship and family
traditions. We’ve found this to be medium fruity with fresh and distinct aromas of olives and grass, scents

Celebrating the New Harvest! Between midNovember and early December, the first new
harvest selections arrive on our shores. These
premium selections are celebrated by olive oil
aficionados and they make great gifts.
True Italian balsamic vinegar is only produced
in Emilia-Romagna in the provinces of Modena
and Reggio Emilia. The aging process may last
12 to 100 years, as the vinegar is aged in oak,
ash, mulberry, cherry, and chestnut, and the flavor
becomes concentrated and multi-dimensional. The
highest quality is Tradizionale, and while Aceto
Balsamico di Modena is also very pleasing.

Condiments are best drizzled over vegetables,
meats, cheese, and fish. The highest quality
balsamic vinegars are often drizzled over
strawberries or gelato.

Aceto Balsamico Tradizionale di Modena DOP
Astounding and highly aromatic. Aromas may “mow you over” with the scent of freshly cut grass, artichokes,
herbs, and lemon. The complex elements lead into a spicy finish. Intensely fruity. Unflitered.
Traditional Balsamic Vinegar hails from the region of Emilia Romagna, and two consortiums oversee vinegar
production in the provinces of Modena and Reggio Emilia. Extravecchio is the top selection from the Modena
consortium. Traditional Balsamic Vinegar of Modena must be aged for at least 12 years in a series of casks
of different woods, among them oak, juniper, ash, mulberry, cherry, and chestnut. Under the guidelines of the
consortium, the vinegar is evaluated by certified tasters. The vinegar is judged using a point system, and the

Villa Manodori Artigianale Balsamic Vinegar is the labor of Massimo Bottura, Chef of Osteria Francescana in
Modena, Italy, the official home of balsamic vinegar. This vinegar is produced in very limited quantities, and is
made from trebbiano grapes. The vinegar is aged in oak, chestnut, and juniper barrels over a period of years.
This vinegar makes an excellent glaze for steak, pork, or poultry. The Dark Cherry selection has a final aging
