APPLIED SANITATION COURSE
The Applied Sanitation Course is offered annually and is required
for all unit managers, key employees and supervisory personnel.
Joann Augsburger-Jana, our Consulting Dietitian will present the
Sanitation Course.
There will be 16 employees attending the class this year, some of
which are new to FSC and others requiring re-certification. Re-certification is required every five years to be sure everyone is current
on the latest techniques and regulations. Upon completion, certificates are displayed in each food service location.
This year will we have a one-day course where the information
will be reviewed and the test will be taken at the end of the day.
The class will be held at DeSmet Jesuit High School on Saturday,
October 16th from 9:00 a.m. – 6:00 p.m.
$50 Recruitment Bonus
We are always looking for good employees, and the best source is
our present staff.
This is even more important as we begin a new school year, as
there are always a few that do not return, but there are usually openings throughout the year as well.
As an incentive to help recruit new people, we will pay $50.00 to
any present employee who recommends an applicant who is hired
and completes at least 30 days of employment.
DAVE PHILLIPS MEMORIAL SCHOLARSHIP FUND
Food Service Consultants awards ten scholarships annually in the amount of 500.00 each.
Any employee with a son or daughter enrolled in one of the 27 area high schools
in which we provide food service for is eligible.
We have renamed the program the
Dave Phillips Memorial Scholarship Fund
as he began the program with the following objectives in mind:
• To assist our employees with the cost of private education on the secondary level.
• To encourage employee parents to transition their children from elementary to private high school.
• To assist our company with employee retention and recruitment.
The winners are selected by random drawing at the beginning of school each year,
with the checks distributed in early September. There were 36 entries this year, and the winners were:

I MEMORY OF DAVE PHILLIPS
We dedicate this issue of our Company Newsletter to Dave Phillips as a tribute to the
testimony in which he lived his life and ran his company, with honesty, passion and
integrity leading the way.
Food Service Consultants was founded in 1985
by Dave and his wife Sue. They started with
sixteen units; the company now serves over sixty
locations, in both Missouri and Illinois.
Dave was an only child of Harold and Maureen
Phillips. He started his life living in the small town
of Enid Oklahoma. His family moved to Wichita
Kansas where he graduated from Wichita High
Dave and Sue Phillips
School East. He attended Kansas State University
and graduated with a degree in Restaurant and Hotel Management. He was loyal to his
alma mater and was especially proud when his grandson decided to attend K- State as a
student in Architecture.
Dave had three loves in his life; his family, his friends and FSC. He was a “gentle man”
and always put his wife and children’s needs before his own. Dave and Sue had seven
children, twelve grandchildren and three great grandchildren. He especially enjoyed
getting the family together whenever possible and celebrating birthdays, holidays, and he
especially enjoyed celebrating Christmas.
Food Service was a way of life for Dave. He personally believed that the success of the
company was due to the wonderful, dedicated and hard working people that he employed.
Without them and the company motto “Serving You With Pride” the company would not
have been so successful. He also incorporated his contagious high spirits, diligence,
commitment to his customers and passion for the business into all those around him. He
liked to tell jokes and at times kept things light hearted in the office. Dave truly enjoyed
what he did and cherished the friends that he made along the way.
Many were proud to be a part of his life and greatly honored to be a part of his
celebration of life. We have many great memories to take along in our journeys.

MANAGER’S MEETING
CATERING HIGHLIGHTS
May represents one of the busiest
months of the school year. Our final auction of
the year was held at Sacred Heart Academy in St.
Charles. Graduation and Sports parties start up this
time of the year, with events being held at Kennedy
Catholic High School, St. Louis University High School,
Immacolata, St. Katharine Drexel, Villa Duchesne, Marian
Middle School, Chaminade Prep, St. Elizabeth Academy, Bishop
DuBourg and St. Louis Priory. St. Joseph’s Academy hosted a
Grandparents luncheon. Purina Farms hosted luncheons for their dog
shows. St. Louis Priory hosted a Baseball Field dedication.
June continues the trend of graduation and Alumni parties and year
end special events. Purina Farms was host to several Dog Shows.
Our annual company picnic for employees of Food Service
Consultants was held at Purina Farms in Gray Summit. We had several special events this month. Logan College hosted their
Homecoming weekend. It was the school’s 75th anniversary. They
held several events and we were chosen to serve the BBQ with 1,000
guests in attendance. The following evening we served their happy
hour after the doctors and spouses had a long day of seminars and
meetings. Ursuline Academy hosted their Alumni Luncheon.
July slows down somewhat and allows us the opportunity to re-group
and start to work on new menus and ideas for the 2010 – 2011 school
year. We also had the opportunity to serve the Maggie Welby Golf
Tournament.
August, as always seems to come upon us so quickly. It seems as if
the school year has just ended and here we go again. With each new
school year, brings our new school accounts. Catholic Education hosted its annual Teachers Orientation at the Catholic Education Campus,
followed by Direction Days at St. Louis University High. Missouri
Baptist University kicks off their school year with a Back to School
weekend of events and the Presidents Reception. Logan College held
their graduation celebration in the Purser Center. St. Louis Priory hosted their back to school dinner with an outside BBQ. The next couple
of weeks teachers started making their way back to school so we provided lunches for the teachers. With so many to list I don’t want to forget anybody. We also served Incarnate Word Academy’s New Parent
Dinner. Visitation Academy hosted their Crescent Dinner which welcomes new students and parents. Nestle Purina held their company’s
Family Days at the new Event Center at Purina Farms. They had a
beautiful day for this event. Their 4,000 guests enjoyed a BBQ luncheon that we provided. They also had rides, carnival games and other
items for the employees and families to enjoy.
September started off with a wedding reception in Logan College’s
Purser Center. Purina Farms hosted the GSLVMA BBQ which recognizes the Veterinarians in the area. Ursuline Academy hosted their
Freshman Induction Ceremony. St. Joseph’s Academy hosted their
Celestine Dinner. In September we also start the beginning process
of the Fall Auction Season with schools such as St. Dominic High,
DeSmet, Villa Duchesne, St. Clare of Assisi and Bishop DuBourg .
Villa Duchesne also hosted their annual Grandparents Breakfast and
Mass on a Sunday morning. St. Louis University High School started
their reunion dinners with the class of 1955 and 1980.
As we head into our busy time of the year we always
want to thank the individuals at their respected schools
for all their support throughout this time of the year.

on Sodium
In an effort to reduce hypertension and the
number of strokes, there is a revitalized crusade
to cut back on sodium.
Americans eat more sodium than they need.
We eat an average of 3400 milligrams of sodium
per day, which is the equivalent of about one and
one half teaspoons of salt.
The Dietary Guidelines Advisory Committee,
which has input into the new Dietary Guidelines
for Americans, is calling for slashing the current
recommendation from 2300 milligrams of sodium to 1500 milligrams daily.
This will be a challenge that we cannot tackle
individually.
The problem of excessive sodium intake cannot be solved by simply removing the salt shaker
from the stovetop or the table. Sodium has
become so pervasive in our food supply. It is
estimated that 77% of dietary sodium comes from
processed foods and restaurant meals. Voluntary
efforts to reduce sodium in the food supply have
previously failed. Driven by recent research, policy makers are pushing for broad new restrictions
on the amount of sodium in restaurant and packaged foods.
So, in the meantime, choose foods that are
already low in sodium such as fresh, frozen and
canned fruits along with fresh vegetables and
frozen ones without sauces. Fresh meat, fresh
poultry, and fresh fish are also low in sodium
along with their freshly frozen counterparts
which have not been marinated or injected with
preservatives or salty seasonings. Select herbs
and spices to enhance taste, but avoid salty seasoning mixes. Read labels to investigate the sodium content of favorite foods and therefore make
smarter choices. Do not wait to wage your own
war on sodium!
Cardinal Ritter
Principal Honored
Cardinal Ritter College Prep High School
Principal Mr. Michael Blackshear was honored at
the St. Louis American Foundation’s Salute to
Excellence in Education Scholarship and Awards
Gala on September 17th at America’s Center downtown. Mr. Blackshear is one of eight educators to
be chosen for this year’s award, having served as
associate principal for two years at CRCP before
being named principal in 2009.

start to their day,
everyone gathered
at seven in the
morning for
a continental
breakfast; this
wasn’t just any
breakfast; it had
delicious pastries,
homemade sticky
buns and even
featured a six foot
yogurt and fruit bar
complete with
twenty toppings.
From there, the
meeting began
with updates and
information that
will be pertinent to
the 2010-2011 year.
All of the account
supervisors as well
as Susan Parisi,
Maggie Aubuchon
and Robynne Backs
worked diligently
during the summer
months to provide
a great meeting.
Discussion topics
included fresh and
exciting menu
concepts, marketing
strategies, as well as
introducing our
“Going Green”
program.
We’re looking
forward to an
exciting year!
We would like to extend thanks to Father Wally Sidney and
Doctor Greg Densberger for allowing us to hold the event in their cafeteria
and to Felicie VandeRiet for being such a wonderful host.
• Mike Kumpf welcomed new and returning managers. He mentioned that we were starting our 26th
year as a company and we would continue to run
our business with the passion and professionalism
that Dave Phillips built the company.
• Robynne Backs presented purchasing information, bids and pricing for the 2010-2011 year. She
expects to see a moderate increase in food cost.
During the bid season Robynne and Maggie
Aubuchon sampled new menu items that are reasonable in cost, high in quality and foods that we
believe our customers will enjoy. They started and
will continue to find foods that are less processed
and healthier. Many manufacturers are starting to
see the need for these items and are spending some
time with research and development.
• Kathy Hylla and Kathy Robtoy, worked together
to collect and provide information on recycling.
They presented different ways one could recycle in
their accounts, one interesting example is upcycling. Upcycling is when you take something that’s
usually thrown away and turn it into something people can use. Please visit www.terracycle.net for a
list of products that your school could upcycle and
make money doing so.
• Kathleen Carapella, Debbie Hill and Carol
Marler worked on updating the “Healthy Habits”
menu during the summer months. They shared
information with the group regarding what menus
were modified, as well as some new ideas. Kathleen
and Debbie also provided some colorful posters
about nutrition for the managers to display on their
“Healthy Habits” bulletin board. They also introduced our “Food for Thought” comments binder.
This was designed to give our customers an avenue
to anonymously express their thoughts and opinions
concerning our operation.
• The project that we are most proud of was the
design of our “Serving Our World with Pride”
poster. This is a great way to inform our customers,
parents, faculty and staff of the wonderful things
our company is proud of implementing. These
changes have happened over the last several years
and would include but not be limited to the following:
~ We do business with local companies.
~ Our “Healthy Habits” lunch menus are reviewed
by a dietitian and feature whole grain bread as well
as fresh fruit and low-fat milk.
~ Salad bars with low-fat dressings are offered
daily.
~ We listen! Your suggestions and ideas are welcomed.
This was truly a group effort with Susan Parisi
designing the finished poster.
• Carol Marler presented the new pricing information for the 2010-2011 school year. Our goal has
always been to adjust the prices only where necessary.
• Ann Herides, Maureen O’Donnell, and Patrick
Biarkis spent much of their time during the summer
focusing on vegetarian menu development. They
featured a few of their recipes along with a sampling during break time. A crowd favorite was a
vegetarian based flavored chicken nugget, rolled in
buffalo sauce, served in a whole wheat wrap.
• George Schmidt and Patrick Biarkis demonstrated proper cooking and handling techniques for
grilled boneless skinless chicken breast, as well as a
vegetarian product, tofu. George gave the managers
many ideas of how to menu the chicken breast
including using it to prepare some of our new gourmet sandwiches. These sandwiches have been
greatly received by the students and the faculty.
Our meeting was concluded by sharing a meal to celebrate the beginning of a new year.
Our lunch was predominantly comprised of vegetarian selections. Many people were
pleasantly surprised to find out how many items they could use in their operations that
would meet the needs of people looking for meatless choices.
HUMMUS
Yield: 14-2 oz. servings
Preparation Time: 20 minutes
Ingredients:
Volume
Chickpeas, drained,
liquid reserved
15 oz.
Tahini
¼ cup
Garlic Cloves (crushed)
2 each
Salt
½ tsp
Lemon, juice from it
1 each
Olive oil
2 Tbsp
Parsley and lemon wedges (optional)
Procedure:
Place chickpeas, tahini, garlic, lemon juice
and oil in food processor or blender. Process
until smooth. Add a few tablespoons of

A
OGGI
Eggnog was brought to America from
Europe. Eggnog is related to various milk and
wine punches that had been concocted long
ago. In America a new twist was put on the drink. Rum was used in
place of wine. In colonial America rum was commonly called “grog”,
so the name eggnog is likely derived from the very descriptive term
for this drink, “egg-and-grog”, which corrupted to egg’n’grog and
soon to eggnog.
“Nog” of eggnog comes from the word “noggin”.
A noggin was a small wooden carved mug. It was used to serve
drinks at tables in taverns (while drinks beside the fire were served in
tankards). It is thought that eggnog started out as a mixture of
Spanish “sherry” and milk.
The English called this concoction “dry sack posset”. It is very
easy to see how an egg drink in a noggin could become eggnog.
George Washington was a fan of the drink. His own recipe is said
to contain rye whiskey, rum and sherry. It was reputed to be a stiff
drink that only the most courageous were willing to try.
Eggnog is a popular drink during the holidays, and its social character remains. It is hard for me to imagine a Christmas without a cup
of grog, I mean nog.
Who knows, in 200 years or so if eggnog will still have the same
name. One thing for sure is that it will put a smile on your face, whatever you call this tasty concoction.
Eggnog Recipe
12 eggs, separated
6 cups milk
2 cups heavy/thickened cream
2 cups spiced rum
1 ½ cups sugar
1 tsp vanilla
¾ cup Brandy
2 tsp ground nutmeg
In a bowl using a mixer, beat egg yolks together with the sugar for
approximately 10 minutes (you want the mixture to be firm and the
color of butter).
Very slowly, add in the rum and brandy just a little at a time.
When rum and brandy have been added, allow the mixture to cool in
the fridge.
Stir the milk into the chilled yoke mixture.
Stir in 1 ½ tsp nutmeg.
In a separate bowl, beat the cream and vanilla with a mixer on high
until the cream forms stiff peaks.
In yet another bowl beat the egg whites until stiff peaks form.
Gently fold the egg white mixture into the egg yolk mixture.
Gently fold the cream into the egg mixture.
Refrigerate and garnish with remaining nutmeg.

Westminster Christian Academy’s New Campus
Westminster Christian Academy broke ground for its new 300,000square-foot school on 70 acres at I-64 and Maryville Centre Drive in
Town & Country, Mo., on May 19, 2010. Brinkmann Constructors is
fast-tracking the design-build project for completion in time for the
2011-12 academic year. The new campus will accommodate up to 1,200
students in grades 7 through 12.
At the ground breaking held May 19, 2010, for
Westminster Christian Academy, alumnus Rich
Broyles examines the site plan for the school’s new
campus with other guests. Broyles’ daughter, Emily,
is a current Westminster student, class of 2015.

Alberici Constructors Inc. has broken ground on a new $23 million
rehabilitation hospital at SSM DePaul Health Center in Bridgeton.
In July, Bridgeton Healthcare Investors LLC awarded Alberici, an
$18 million contract to build the hospital. Bridgeton Healthcare
Investors is a joint venture between SSM Health Care-St. Louis,
Select Medical Corp. and Frauenshuh Healthcare LLC.
The 66,914-square-foot, three-story Select/SSM Rehabilitation
Hospital will have 60 beds when it’s completed in October 2011.
The hospital, which will employ about 150 people, will provide medical rehabilitation care to patients with stroke, brain injury, spinal cord
injury, amputation and neurological and orthopedic conditions. The 60
beds in the new hospital would include beds moved from current rehab
units at SSM St. Mary’s Health Center in Richmond Heights and
SSM St. Joseph Health Center in St. Charles.
Alberici Corp., which is led by President and Chief Executive Greg
Kozicz, reported $1.05 billion in 2009 revenue and is one of the largest
privately held companies in the St. Louis region.
Previous Alberici projects at DePaul include a catherization lab,
emergency department additions and renovations 7th floor north renovation and a surgery center.

2010 Distinguished Elementary
Principal Announced
St. Clare of Assisi School Principal Marie Sinnett (Region 3) has
been elected 2010 Distinguished Elementary Principal in the
Archdiocese of St. Louis by the Elementary Principals Coordinator
Council. Eight candidates were nominated by fellow principals in
their regions. After reviewing the applications of all candidates, a
committee of the council selects their candidate for the National
Catholic Educational Association (NCEA) Distinguished Elementary
Principals Award.
Mrs. Sinnett earned her undergraduate degree from Fontbonne
College (now Fontbonne University) and her Master’s from Maryville University. She began
her career at St. Joseph School in Clayton teaching third grade. After the school closed, she
taught at Annunziata Catholic School and Ascension Catholic School. She became principal of
St. Clare of Assisi Catholic School in 2000.
Marie has been a member of Ascension Parish in Chesterfield, where she has served as president of the Women’s Club and of the school board. Mrs. Sinnett says, “I am a product of sixteen years of Catholic education. I look on the position of principal not as a job, but as a ministry and vocation to teach the Gospel message of Jesus to the children. My parents instilled in
me from a very young age a love for God and a responsibility to be of service to the Church.
They were wonderful role models. I hope that I can do the same for the children at St. Clare.”

Going Green
Students at St. Elizabeth Academy in South St.
Louis washed their dishes after lunch, part of
a long-term plan to make the school more
environmentally friendly. Washing the dishes
eliminates the non-biodegradable foam and
plastic used in throwaway plates and utensils.
A number of all-girls Catholic high schools in
the archdiocese are participating in the
Interschool Ecological Council to promote a
more “green” lifestyle on their campuses.
Many other Catholic schools are also involved
in efforts to help the environment.

emphasis on “Going Green” for the 2010 – 2011 school year. There are two areas
in particular that we will be focusing on. The first is that as a company, we are
moving to eliminate Styrofoam products from all of our foodservice programs. We
will be purchasing recyclable paper products instead, and will be encouraging all
of our clients to move in that direction where possible. Paper cups, plates and napkins will be purchased and used in the cafeteria, with a special attention to using
as many biodegradable products as possible. The second area is in regard to single
stream recycling and other special recycling programs that are available and could
benefit your school or business.
Food Service Consultants had been considering “Going Green” for some time
now and felt that this would be an appropriate time to do so. We realize that this is
a very important and sensitive issue with many people in today’s society and would
like to do our part as a responsible company. We have spent the summer meeting
with various paper companies in order to find the very best product line, at the
most reasonable cost. We hope that these new items will be well received by everyone and that we will all become more aware of the environment and how best to
reduce, reuse and recycle. We appreciate everyone’s help and understanding as we
introduce these new items in our foodservice programs in the future.
We would like to give a special thank you to the Inter-School Ecological
Council, which is comprised of a number of local private all-girl schools, most of
which we currently serve. They include Villa Duchesne, St. Joseph Academy,
Nerinx Hall, Ursuline Academy, St. Elizabeth Academy, Notre Dame and
Visitation Academy. There are also a number of religious sisters to thank that have
committed their time to help organize and encourage the efforts of these young
women. By meeting with this committee over the past year, we were able to
receive a lot of helpful ideas in regard to the needs of the students we so proudly
serve.

New President of Catholic Charities Appointed
Archbishop Robert J. Carlson has appointed
Brian J. O'Malley as the new president of
Catholic Charities of the Archdiocese of St.
Louis.
Since 2009, O'Malley has served as executive
director of the Homeless Services Coalition that
coordinates services to the homeless throughout the Kansas City
area.
Prior to that, he was executive director of Family Services of
the Mid-South and executive director of Associated Catholic
Charities-Diocese of Memphis, where he developed the agency
into largest single social service provider in Tennessee. O'Malley
also served as secretary of social ministry in the Diocese of
Toledo, Ohio, where he served on the bishop's cabinet and oversaw all social ministries of the diocese. He also served as counselor to the associate director of Catholic Charities of Kansas
City-St. Joseph, where he started as a counselor/caseworker.
O'Malley graduated from St. Louis University with a bachelor

of science degree and from Our Lady of the Lake University with
a master's degree in social work.

KC YOUTH OF YEAR
Julie Holtmann, a junior at Cor Jesu Academy, has been named
Youth of the Year by the Missouri State Council Knights of
Columbus. Julie was recognized for service, academics and her
many activities, both at Cor Jesu and outside the classroom. She
is an honor roll student, a member of National Honor Society,
plays the flute for Cor Jesu events, is a long-jumper on the track
team and is a member of the Latin Club. She is also active in her
parish Girl Scout troop and in the youth group for which she
served as a facilitator for the Luke 18 Retreat. Julie volunteers
with the Knights of Columbus' annual Basketball Tournament
and Free Throw Contest, the Arnold Food Pantry and Queen of
Apostles Retreat Center, a ministry of the Apostles of the Sacred
Heart of Jesus in Imperial, and has served as a Camp Mater Dei
Vocation Camp Counselor.

Stephen Aubuchon, son of Maggie Aubuchon, is

Scholarship Award. This scholarship is given to one

PRO-LIFE ESSAY CONTEST WINNERS NAMED
The archdiocesan Respect Life Apostolate has
announced the winners of this year's Creative Writing
Contest for eighth graders. Entrants are invited to reflect
on a particular topic related to pro-life issues. This year's
theme was, "Explain why living the virtue of chastity protects us from abortion and blesses us with true holiness,
health and happiness."
The awards are named after individuals who have made
significant contributions to the pro-life movement in the
Archdiocese of St. Louis. Archbishop Robert J. Carlson
presented the awards at an assembly April 20 at the
Cardinal Rigali Center in Shrewsbury.
Each winner receives a $1,000 scholarship, which may
be used to attend the Catholic high school of their choice.
Those who attend a public school receive a $1,000 U.S.
Savings Bond. Winners also receive tickets to the Respect
Life Convention, held in October.

Hair For Cancer
Patients
Stylist Lorrie Niebling worked on

hair cut May 6, to be donated to cancer patients through Pantene’s
Beautiful Lengths program. The
hair donation program, sponsored
by Cor Jesu’s IMPEL club, was
prompted in part by learning that
two fellow Cor Jesu students were
diagnosed with cancer. The students
had their hair cut a minimum of
eight inches.

The picnic was held at Purina Farms. We would like to thank Mr. Brock Fitzgerald for allowing us again this
year the privilege to use their beautiful venue. A special thanks to Chris Herbst for hosting the event.
Despite the high temperature earlier in the day it cooled down and everyone had a fabulous time. A fan
favorite had to be the performing dogs and a cute little pot bellied pig named Chops. It is truly an amazing and
fun experience. If you have not been to Purina Farms it is a wonderful place for all ages and was a great place
to celebrate the end of our twenty fifth year.
Once again our supervisors pulled together to get everything ready for our employees. A special thanks go out
to Susan Parisi and Robynne Backs for coordinating the event and to George and Denise Schmidt, Marlon
Merrill and John Maggio for preparing the delicious barbecue. This event could not have happened without the
help of our friends from Purina Farms.
