With summer just around the
corner, now is the time of year
to plan summer activities for your children
and perhaps even the grandchildren.
As in years past, the Club offers two excellent
summer programs for the younger set that
highlight wonderful outdoor activities and
basic to advanced instruction in tennis and
golf. Soccer, baseball, swimming and other
sports are interwoven into the curriculum
and there is not a day of camp that ends
without an abundance of smiles, laughs and
very tired participants!
As with any sport, I cannot stress the
importance of starting players off at a young
age. The basics of success and sportsmanship
are embedded early on and those lessons
will stay with them throughout their
careers–whether that involves sports or not.
Now in our eighth year, our sports and
tennis camps welcome children from
England, Mexico, France, Hong Kong, Costa
Rica, Poland and Spain. Their families plan
attendance at camp based upon dates when
their friends will be attending as well–it is
always fun to witness the annual reunion of
friends and families at The Tennis Gardens
as lifelong friendships blossom and lifelong
lessons are set in motion.
In addition to physical and mental
conditioning,
participants
learn
concentration, problem solving skills,
personal interaction and let’s not forget FUN
–all in a positive and exciting environment.

Mr. Jonathan Lester
Director of Event Management
O
ne of the new faces you will see here at the Club
is our new Director of Event Management, Mr.
Jonathan Lester. He comes to us from Jupiter
Beach Resort and Spa where he held the position of Director
of Catering and Convention Services for nine years. Jonathan’s
experience in creating memorable events for private parties as
well as corporate clients is well-rounded.
A graduate of the Culinary Institute of America in Hyde Park,
New York, Jonathan began his career in culinary arts at the Four
Seasons Hotel and continued to move his career forward to
encompass all aspects of banquets, convention services and
wedding planning. With a keen eye for detail and experience
with beach-centric events and high-end clientele, Jonathan will
most certainly bring a creative vision and exciting energy to the

GRILLED WATERMELON SALAD
Total Time: 30 minutes
Prep: 15 minutes
Cook: 1 minute
Yield: 4 servings
Level: Easy
INGREDIENTS
1/2 (5-pound) seedless watermelon
1/4 cup balsamic vinegar
Extra-virgin olive oil
Kosher salt (specialty salt is great here, if on-hand)
2 cups fresh baby arugula, washed and dried
1 cup goat cheese, crumbled, preferably a French chèvre
Fresh finely cracked black pepper
DIRECTIONS
Stand the watermelon half-cut side down on a cutting
board and slice away the rind, leaving a solid block of
melon. Turn the block on its side and cut it into 8 squares,
roughly 3 by 3 inches and 1-inch thick.
Pour the vinegar into a small saucepan and bring to a
simmer over medium-high heat. Cook until reduced to a
thick syrup consistency. Set aside.
Heat a nonstick grill pan over medium-high heat. Drizzle
just enough olive oil over watermelon slices to thinly
coat and place on hot grill pan. Grill each side about 2
minutes until grill marks appear; transfer to a plate and
season with salt.
To assemble the salads, put about 1/4 cup of baby
arugula on a serving plate, followed by a grilled slice
of watermelon in the center, and top with a tablespoon
of crumbled cheese and another 1/4 cup arugula. Add
another watermelon slice and another tablespoon of
cheese. Repeat with remaining ingredients. Finish each
salad with a very light drizzle of olive oil and balsamic
syrup. Dust with black pepper and serve immediately.

HOW TO START A WINE
COLLEC ion
As a connoisseur of fine vintages myself, and well-versed
in the language of wines, one of the questions I am asked
most often is, “Where do I begin my journey?” For
those of you that are seasoned collectors, I applaud
you for your knowledge and for sharing a passion
that has intrigued individuals since antiquity. For
those of you just starting out, welcome!
If you find your passion for fine wines taking a turn
from just enjoying a great vintage with a fabulous
dinner, I am here to help lay the blueprint for
creating your own collection, one that truly
reflects your own personality and individual
tastes. If you enjoy sharing your passion with
family and friends, or just want to relive that one
bottle that struck your fancy, you are ready to begin your
journey to becoming a collector and to share the nuances of
fine selections in the ambiance of your own home.
I am not suggesting you dig a cellar under your house or
spend an exorbitant amount of money on professional
refrigeration and custom made shelving and cabinets. Those
who are anxious to start a wine collection, can begin with a
few simple tips that will lay the foundation for success.
First, decide on a budget. Pick a number that represents your
level of commitment. You can begin a cellar with $300 - $400,
but $1000 will give you the greatest flexibility. Remember,
this sum does not need to be spent all at once, but can be
spread out over a several years. This will allow to buy some
very good wines that will not only impress but will last for
the next 20 years.
Secondly, buy what you like. I feel this is the most important
step. Your collection should be centered on your likes. When
making your initial purchases rely on a knowledgeable friend
or trusted wine professional who has an understanding of how
wines age. This is important as you make decisions on ageworthy wines, and I suggest you triple up on your favorites.
If you find a wine you really like buy three. You undoubtedly
will want to share with friends and
this gives you the opportunity to enjoy
it on numerous occasions. Look for
successive or multiple vintages of your
wines, this will help build breadth in
your collection. Think twice about trophy
wines as they can be over played and very
expensive. Search out wines that have great
history and are quality driven. Keep an eye
out for deals, buy from your trusted local
wine shop or better yet, purchase directly from
the winery. Not only will this be beneficial for
you, but there is a charm in dealing directly with
the source of your enjoyment.
Next, let’s take a look at things from an operational
perspective. Do you need professional refrigeration?
Not necessarily. Refrigeration is for large collections and
individuals who want to cellar wines for a long period of
time. It is important not to obsess about wine storage,
yes temperature is important, but for the beginner it is
more important to remember to avoid large temperature
fluctuations or swings. The optimal setting is a location that
is cool, approximately 70° , and dark with little natural or
artificial light. A bit of humidity is good, about 70%, and
remember to always store bottles on their sides. If you prefer
to forego creating a space for your wines, there are a number
of inexpensive wine lockers beginning around $200 that will
keep your wines at an ideal temperature of 55°.
And lastly, keep learning! Remember that the pleasure of
collecting is not the purchase, but everything leading up to it.
Read, talk, taste and ask questions. I know for me it is all the
things that I learned about a wine, its winery and its history
that creates the magic. That moment when you uncork
your wine and take that first sip you begin your journey to

2014 equipment line.

Reflections of
Key West
Five couples embarked on the first OPAL Excursion this past
January, Destination Key West for three nights and four days.
We all stayed at an Ocean Properties, OPAL Collection Property.
While some stayed at The Westin Key West Resort & Marina
located in “Old Town” Key West others stayed at the beautiful
Sunset Key Guest Cottages located on a private island in Key
West Harbor.
Most of us traveled to the Keys via the Key West Express which
was quick, comfortable and very convenient. The beautiful
blue seas were calm and the dolphins were abundant.
Our first night there we enjoyed a cocktail reception on the
Westin Sunset Deck overlooking Mallory Wharf and the
delightful Sunset Celebration that takes place daily. Can you
say cats jumping through flaming hoops? It’s a sight to see.
The next day we visited the Hemmingway House after having
breakfast at Blue Heaven. The endless shops on Duval Street
provided shelter from the drizzle. That evening we boarded a
boat and motored over to Sunset Key for a fabulous dinner at
Latitudes, followed by “night caps in the cottage.”

Friday we were free all day to shop until our hearts were
content. That evening we climbed onboard a Historic Key
West Schooner named Danger’s Prize for a Wind & Wine™
sunset sail. Fabulous wines paired with tasty light bites all
while sailing under a cloud of canvas in the Gulf of Mexico. We
then boarded the Ghost & Gravestones Trolley for a chilling
tour with spine tingling tales of Key West’s frightful past. If you
happen to go, just make sure that you ask “Robert the Doll” for
permission to take his picture while in the East Martello Fort.
We finished the trip by boarding the Key West Express for the
return home. As the sun sizzled into the Gulf it ignited the
desire to start planning our next OPAL Excursion. Where will
we go and what will we do?
We returned late on Saturday night. We had enough time to
get some sleep before heading to Sands Pointe to watch the
Super Bowl the next evening.
This is the first of many OPAL Excursions to come. Some
future ideas include: The Lake Placid Lodge, Samoset Resort,
The Sagamore Resort and an epic trip west to “Wine Country”.
Spin the globe and pick a spot! The possibilities are endless.

a healthy and happy face. French women are renowned the

DO-IT-AT-HOME MINI FACIAL MASSAGE
STEP 1 - Starting on the cheeks, draw big circles using your
finger or knuckles, moving upwards.
STEP 2 - Along one side of the face at a time, rub from the
mid-jawline to the cheekbone with a long upward stroke,
pressing firmly for a moment at the top.
STEP 3 - Gently work smile lines with upward strokes, from the
corners of the mouth to the corners of the nose
STEP 4 - With your fingertips, lift and hold both brows to
open the eye are. Rub in a circle around the eye socket
outwards towards the temples, eventually expanding to include
the forehead.
STEP 5 - To plump lips, use thumb and index finger to quickly
pluck all across the top and bottom lip, stimulating the

W
e’ve all heard the term “work the core”
and thoughts automatically drift to the
six-pack abs we see advertised on the
“not sold in stores” TV advertorials.
Whether those ads serve as a source of inspiration or
offer us an opportunity to laugh a little, the truth is
that there is more to “the core” than meets the eye!
Comprised of both small and large muscle groups that
run the length of the trunk and torso along the front
and back, the musculature consists of the abdominal
muscles, the spinal column, gluteal, pelvic floor, and
hip flexor muscle groups and even incorporates some
hamstring and inner thigh muscles. Take a Pilates
class and you will most likely find (and feel) them all!
The benefits of working core muscles are many. A
stronger core increase balance and stability and can
greatly improve your athletic performance both on
and off the field, whether it be golf, tennis, biking,
household chores, lifting small children, taking care
of pets or any chore that demands your physical
participation. Investing time into core work will lead
to better posture, help correct postural imbalances,
decrease the chances of injury and help to alleviate
or reduce back pain. These are all terrific reasons to
consider this exercise regimen, but where to start?
The ab and back machines in the weight room and
the Middle Core Madness and Balance and Posture
classes are easy choices. Ballet Fit and Le Barre
classes provide a functional core workout and Tai Chi
and Beach Yoga will amaze you, even the breathing
work can be a workout unto itself. For the more
adventurous try the Pilates, Piloxing and CrossFit–
all intense to the core! For those of you that prefer
aquatic workouts to ease the stress on joints, water
aerobics is a great way to get some core exercises in as
you use those very muscles to stabilize yourself in a
fluid environment. Not for the gym alone, many floor
exercises can easily be done at home and are quite
effective. The key is continuity and commitment.

interesting opportunity to challenge yourself, consider scuba lessons
that are now being offered at the Marina. Lessons will be held in the

Event reservation policy. For most events, you will now be able to reserve your attendance as early as you like. There will be a few exceptions to
this that include the following: Easter Buffet, Passover Dinner, Hanukkah Dinner, Thanksgiving Dinner and Christmas Dinner. These events will be open
for reservation starting 60 days in advance, similar to previous years. Remember, events sell out, so plan ahead! Times and locations subject to change.
