The olive tree has long nourished humankind’s mind, body and soul. Kings have ruled with sceptres made of olive wood,
priests have anointed the worthy with olive oil,and the olive branch is known even today as a symbol of peace and honour.
Roman legend has it that Hercules strode along the shores of the Mediterranean, his olive staff sending out roots
every time it struck the ground, and from those roots trees grew. The Phoenicians, adventurous
sailors of the ancient world, helped Hercules spread the olive trees westward from Asia Minor,
where wild trees are indeed believed to have originated and cultivation to have begun as early as
7000 years ago.
Health Benefits
Olive oil is rich in unsaturated fatty acids, in particular oleic acid, which helps keep the cardio circulatory
system in good health. Unsaturated fats help maintain the body’s arterial elasticity and positively affect the
“good” cholesterol (HDH). Olive oil is also rich in phenolic compounds which act as natural anti-oxidants,
not present in any other oil and is also a significant source of Vitamin E.
If you replace foods that are high in saturated fat with the unsaturated fat from olive oil, without
increasing the total number of calories, you can lower your cholesterol and thereby reduce the risk of
coronary heart disease.

How do you recognize a quality extra virgin olive oil?
The Bertolli® Approach
Not all olive oils are the same. Even among extra virgin olive oils, there are different levels of quality.
There are many indicators which only an expert is able to truly evaluate, but there are other important
distinguishing factors which help you ascertain a good quality olive oil from a mediocre product: smell
and taste.
At Bertolli®, we believe in quality above all else. A seven step quality control program has been developed by
Bertolli® experts; from analysis of raw material samples at the beginning of the crop season, to analytical and
sensory tests carried out continuously during the shelf life of all products.This approach guarantees that each
and every single bottle of Bertolli® olive oil has the same excellent quality and great taste for which Bertolli®
is renowned worldwide.
Smell
The first evaluation is olfactory, enabling the perception of both positive and negative aromatic notes.
Positive smells would include the typical fruity note, or the herbal and vegetal scents such as artichoke,
tomato, aromatic herbs and almonds. Negative features could include a disagreeable smell, fermented
flavour or a sour taste.
Taste
The second evaluation not only confirms the olfactory notes, but also allows the appreciation of bitter and
spicy flavours on the palate.
Colour
Colour does not indicate the quality of an extra virgin olive oil. In fact,
the taste, aroma and colour of good quality extra virgin olive oils
vary significantly depending on the variety of the olive tree, the
geographical location and climate, very similar to the variety
found in wines.

Flavour Guide
Our favourite ways to use olive oil include:
Olive oils are great for all-purpose cooking because of their health benefits and unique flavours. If you are
inclined towards specific flavours or cooking methods, here are some tips to choose olive oils for your dishes.
• Simple yet flavourful marinades of extra virgin olive oil combined with either lemon juice or wine vinegar
add wonderful flavour to meats, poultry, and fish.
Extra virgin olive oils are good for dressing salads,basting meats and vegetables,dips,marinades and sauces.
If you prefer a robust, fruity flavour, choose Bertolli® Extra Virgin Originale Olive Oil. If you prefer a sweet,
mellow taste, choose Bertolli® Extra Virgin Gentile Olive Oil.
• When broiling or roasting meats or poultry, brush them with olive oil to seal in their natural juices while
cooking and to keep them moist.
For cooking at higher temperatures, you can use Bertolli® Classico or Extra Light Tasting Delicato Olive Oil,
which are stable at high temperatures. Bertolli® Classico Olive Oil has a mild, distinguishable taste, and is an
excellent all-purpose cooking oil. You can use it for sautéing, stir frying, salad dressings and pasta sauces.
Bertolli® Extra Light Tasting Delicato Olive Oil is light, fresh tasting and stable at high temperatures, so it
can also be used for baking and frying.
• When boiling water to cook pasta, add a tablespoon of olive oil to the water to prevent pasta from sticking to
the pot. Also, immediately after draining pasta, add a tablespoon of olive oil to prevent sticking before serving.
• Toss vegetables in olive oil before pan roasting to seal in moisture and bring out their flavour.
• For added crispness, rub sliced or whole potatoes with olive oil before baking.
• Toss your favourite nuts in a sandwich bag with olive oil to coat lightly, and add a sprinkle of salt for
extraordinary taste.
• Olive oil is a healthy substitute for butter because it is rich in unsaturated fat, which helps reduce cholesterol.
• Using olive oil for baking has many benefits.The Vitamin E in our olive oil makes cakes, brownies, breads and
muffins turn out evenly textured and moist. Using olive oil in baking also saves time since melting is not
required. Bertolli® Extra Light Tasting Delicato Olive Oil is ideal for baking because the olive aroma and flavour
are minimal.

Salt & Pepper (to taste)
2 - 6 oz.Balls of Buffalo Mozzarella, cut into 3/4”slices
Approximately 10 large leaves of fresh basil
Shaved Parmesan cheese
1 Tablespoon Balsamic Vinegar
1/2 Cup of Bertolli® Extra Virgin Gentile Olive Oil
1 Clove of garlic, minced
1/2 Teaspoon of paprika
1/2 Cup of Bertolli® Extra Virgin Originale Olive Oil
2 Cups of firmly packed fresh Genovese
or sweet basil leaves (2 1/2 oz.)
1/2 Cup of pine nuts
1/2 Cup of grated Parmesan or Romano cheese
3 or 4 garlic cloves, peeled and quartered
1/4 Teaspoon of salt
Ground black pepper
1. Combine 1/2 cup of Bertolli® Extra Virgin Originale
Olive Oil,the basil,nuts,cheese,garlic,and salt in a food
processor or blender.
2. Cover and process or blend until nearly smooth,
stopping and scraping sides as necessary and adding
enough remaining oil until desired consistency.
3. Add black pepper to taste.
4. To serve, toss 1/2 cup pesto with 4 cups of hot cooked
linguine or pasta of your choice.
Directions
1. Cut tomatoes into 1/2”slices, and zucchini lengthwise
into 1/2”ribbons.
2. Season both tomatoes and zucchini with minced
garlic, salt & pepper and drizzle with Bertolli® Extra
Virgin Gentile Olive Oil.
3. Roast on grill with cut side up for about 10 minutes,
or until nice and evenly roasted.

1 Bunch of fresh asparagus
1 Tablespoon minced garlic
3 Tablespoons of Parmesan cheese
Salt & Pepper (to taste)
1. Rinse asparagus spears & pat dry.
2. Remove tough ends with a sharp knife if necessary.
3. Heat Bertolli® Classico Olive Oil in a skillet over
medium-high heat.
4. Add the garlic & asparagus spears, cook for 10 minutes,
stirring occasionally,or until asparagus is tender.
5. Sprinkle with Parmesan cheese and salt & pepper
to taste.

1 Cup of sugar
1/4 Cup of water
4 Cups of semi-sweet chocolate morsels
1 Tablespoon of vanilla extract
1/2 Teaspoon of baking soda
1 1/2 Cups of all-purpose flour
1/2 Teaspoon of salt
4 large eggs
1 Cup of toasted, chopped pecans (if desired)
1.Combine sugar,Bertolli® Extra Light Tasting Delicato
Olive Oil and water in a large saucepan.
2. Cook over medium-high heat until sugar dissolves.
3. Add 2 cups of the chocolate morsels & vanilla
extract; stir until smooth. Let chocolate mixture cool
for 15 minutes.
4. Add flour, baking soda & salt to cooled chocolate
mixture.
5. Stir in eggs; add pecans if desired.
6. Spread brownie batter into a lightly oiled & floured
9” x 13” baking pan.
7. Bake at 350oF for 25 minutes or until toothpick
inserted in the center comes out clean.
8. Sprinkle remaining 2 cups of chocolate
morsels evenly over warm brownies.
Let stand 5 minutes to soften and then
spread over brownies.
