DONNA’S DAY: CREATIVE FAMILY FUN

If you ever travel through Lancaster County in
Pennsylvania, you’ll likely find roadside stands
featuring a regional specialty called “Amish Whoopie
Pie.” According to legend, when children would find
these sweet and yummy treats in their lunch bags,
they would shout “Whoopie!”
These dessert treats are more like a cake than a pie
or a cookie, and they’re so big, you’ll want to share
one with a friend. The original recipes were made
with chocolate, but this adaptation using pumpkin has
become a fall family favorite.
This recipe is fun to make when everyone in the
family gets involved. The steps require a lot of mixing,
so give each family member a separate “mixing and
stirring” task using the specific bowls listed in the
following steps.
When cooking with kids, choose tasks according to
ability and the child’s interest in learning new skills.
For example, if one of your kids is ready to crack eggs,
give him “Bowl No. 2”!
First, heat the oven to 350 F.
BOWL No. 1
In one large mixing bowl, combine 1 cup of vegetable
oil with 2 cups of brown sugar. Mix well.
BOWL No. 2
In a second bowl, whisk two eggs, then add them to
the first bowl. Continue stirring as you add 1 1/2 cups
canned pumpkin and 1 teaspoon vanilla extract.
BOWL No. 3
In the third bowl, combine the following dry
ingredients:
3 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 tablespoon cinnamon
1 tablespoon allspice
1 teaspoon salt
Add dry ingredients to bowl No. 1 and stir. The
consistency will be similar to batter for pumpkin
bread. Scoop 1/4-cup quantities of the mixture onto a
greased cookie sheet.
Bake 10-12 minutes or until lightly browned. Cool
slightly, remove from pan and cool on wire rack.
Assemble by spreading your favorite vanilla frosting

DEAR PAW’S CORNER: I’m writing
this not long after returning from the vet,
where my cat “Trix” was treated after
falling from my apartment’s secondfloor window. Fortunately his injuries
aren’t serious and he’ll recover, but it
was a scary day that was all my fault.
Can you please tell your readers
to make sure their cats cannot push
through the screen windows? Many cats
like to sit on the windowsill and watch
the outside world, but if something
attracts them or if they lean up against a
loose screen, it could give way -- which
is what happened with Trix. -- Jan in
Quincy, Massachusetts
DEAR JAN: Thank you! I’m glad Trix
will be OK.
Readers, screen windows often aren’t
secured solidly enough to keep a cat
from pushing or falling through one.
Cats also can tear the screen with their
claws (and sometimes get their claws
tangled in the screen, another scary
moment). The damage from a small
screen rip may not seem like much, but
over time constant clawing can open up
the screen entirely.
To keep your cat safe, try keeping the
lower casement of windows shut, and
screen the upper casement so you can
open that part to let air in.
If you have a screened-in porch that
your cat likes sitting in, make sure the
screen stays in good repair so it can’t
escape.
Keep your cat even safer around
windows by making sure curtain pull
cords are either cut short to stay out
of reach, or wrapped tightly around
mounting hooks. Avoid floor-to-ceiling
curtains that cats love to climb; use
shorter curtains and make sure curtain
rods are mounted securely.

• Use a Bundt pan to roast a chicken.
Grease insides of pan. Simply season
and prepare your bird, then slip the bird
upright on the center, cavity down. Then
fill the pan with veggies for a complete
meal. Roast and enjoy.
• Wipe down screens before replacing
them with storm windows for the
winter. Also, save yourself a lot of time
and aggravation by labeling each screen
with the location it came from. This way,
in the spring, you will have an easy time
getting them back up.

“Hunt for the Wilderpeople” (PG-13) -- A portly
and mischievous foster kid from the city, Ricky (Julian
Dennison), gets placed at the last home open to him
in the system: an older couple living way out in the
mountains of New Zealand. When Ricky starts to
adjust to his new life with Aunt Bella and Uncle Hec
(Rima Te Wiata and Sam Neill), circumstances force
him to go on the run and take to the woods. Quiet,
grumpy Uncle Hec joins him on the run, and the
mismatched duo become the focus of a nationwide
manhunt while they peel apart life’s weird truths.
It’s funny, it’s dramatic; you care about this annoying
little kid, and Neill puts real weight into his grumpyold-man character. Director Taika Waititi (who did

orchard, and so here is just the right recipe to try
them in.
1/2 cup plus 1 tablespoon all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon table salt
1 egg, slightly beaten, or equivalent in egg substitute
1 tablespoon plus 1 teaspoon I Can’t Believe It’s Not
Butter! Light Margarine
1/4 cup Land O Lakes Fat Free Half & Half
3/4 cup Splenda Granular
1 teaspoon vanilla extract
1 1/2 cups (3 small) cored, peeled and diced cooking
apples
1/4 cup chopped walnuts
1. Heat oven to 325 F. Spray a 10-inch pie plate with
butter-flavored cooking spray.
2. In a large bowl, combine flour, baking powder
and salt. Add egg, margarine, half & half, Splenda
and vanilla extract. Mix gently just to combine.
3. Stir in apples and walnuts. Evenly spread batter
into prepared pie plate. Bake for 35 to 40 minutes.
4. Place pie plate on a wire rack and let set for at
least 5 minutes. Divide into 6 servings.

I was eating a grilled octopus at
Dimitri’s in Philadelphia when I
learned that the Eagles had traded Sam
Bradford to the Vikings in exchange for
a first-round pick in the 2017 NFL draft.
All I could do was take a deep breath,
because I knew I had to pace myself.
The news made a walk across the
street to the New Wave, a legendary
Philadelphia sports bar, mandatory.
I cannot honestly say whether or not
Philadelphia has the best sports fans,
but I can tell you that they come off like
the perfect sports-fan stereotype you
often see caricatured in sitcoms and
film. In Philadelphia, the mere notion
of a casual sports fan is abhorrent. You
don’t have to paint your face, but you
must own at least one article of officially
licensed clothing and you must get to
the stadia off of I-95 at minimum once
per year or you risk expulsion.
To recap, tonight we learned that Sam
Bradford, a former top pick in the draft,
was traded to Minnesota, elevating the
Eagle’s first-round pick from this year,
Carson Wentz, to the helm. Wentz,
billed as a “smart” mobile quarterback
with a cannon arm, put up very
impressive numbers at North Dakota
State. The Eagles worked very hard to
explain this rationale to their fans, and
for the most part the strategy seemed to
work as most Eagle fans condoned the
pick.
Well, at least they didn’t boo.
Bradford was never really beloved in
Philadelphia. Fans appreciated his talent
but really disdained his fragility (yeah,
and that’s how they talk at the New
Wave ... “You know something? I really
disdain Bradford’s fragility ... wanna
shoot some darts?”). The guy always got
hurt. So what do the Eagles do? They
elevate a guy that got his ribs cracked
open after completing 12 passes and
missing three pre-season games to the
starting position.
He will be playing for rookie head
coach Doug Pederson, a guy who brings
great bonafides as a former Eagles
QB and from his years of coaching
the Kansas City Chiefs under former
Eagle’s head coach Andy Reid. For good
measure, Pederson also brought along
former Mizzou QB standout Chase
Daniels to back Wentz up.
If Pederson thought Missouri was the
“Show Me” state, he has to know that
Philadelphia brings that mentality to a
completely new level. Vegas has them
at 100-to-1 odds to win the Super Bowl,
but they are loaded with talent, having
signed Darren Sproles at running
back and Rodney McLeod for their
secondary. They have a great set of tight
ends in Brent Celek and Zach Ertz. Still,
even with Bradford, this season was
considered to be a rebuilding year. What
do they have now? A quick survey at
the New Wave sets the tone.
“All I can say is this, the Eagles
just better win ... I’m not into this
‘rebuilding’ (expletive),” says a fan who
hails from Pennsauken. “Let’s see what
this guy (Wentz) can do.”
That about sums it up. Looking for
a great storyline (and great meal) to
follow this season? On the whole, you’d
rather be in Philadelphia.
Unstuffed Cabbage
GOOD HOUSEKEEPING ONE
Cabbage wedges are microwaved, then
topped with a sweet-and-sour tomato
sauce -- a simplified version of the
classic stuffed cabbage! Delicious served
over quick-cooking brown rice.
1 (1 1/2 pounds) small head savoy
cabbage, cut into 4 wedges
1 tablespoon olive oil
2 medium carrots, chopped
2 medium celery stalks, chopped
1 medium red pepper, chopped
3 cloves garlic, crushed with garlic
press
3 green onions, thinly sliced
1 tablespoons fresh ginger, minced and
peeled
1 can (14 1/2 ounces) diced tomatoes
2 tablespoons soy sauce
2 tablespoons seasoned rice vinegar
1 tablespoon light brown sugar
1. Place cabbage and 1/4 cup water in
3-quart microwave-safe baking dish;
cover and cook in microwave oven on
High 12 to 14 minutes or until cabbage is
fork-tender.
2. Meanwhile, in nonstick 12-inch

skillet, heat oil over medium-high heat
until hot. Add carrots, celery and pepper,
and cook 12 minutes or until vegetables
are tender and golden. Add garlic, green
onions and ginger, and cook 2 minutes,
stirring.
3. Add tomatoes with their juice, soy
sauce, vinegar and sugar; heat to boiling
over medium-high heat. Reduce heat
to medium-low and simmer 5 minutes,
stirring occasionally.
4. Spoon tomato mixture over cabbage
in baking dish; cover and cook in
microwave on High 2 minutes to blend
flavors. Makes 4 servings.

adjustments in cooking times to reach
desired doneness depending on your
microwave oven.
