Zignum Mezcal Expands in the U.S.
The largest distillery in Mexico produces mezcal — not tequila.
Founded by the Guillermo Prieto family of Mexico City (the family is a
Coca Cola bottler for parts of Mexico), Zignum is part of the CIMSA group.
Construction began on the distillery in 2006 in the town of Tlacolula de
Matamoros in the state of Oaxaca — the heart of mezcal production.
Mezcal sales began in Mexico City and other parts of Mexico in 2007.
Today, the distillery has a daily production capacity of 14,000 liters, equal to
an approximate annual production of 500,000 nine-liter cases. It’s also the first
mezcal distillery in Mexico certified as a Clean Industry and Kosher.
What separates Zignum’s mezcals — Silver, Reposado and Añjeo — from
others is the modern, industrial production process, as opposed to the
traditional artisanal process still used by many mezcal producers in Oaxaca
and other Mexican states where mezcal is legally allowed to be produced.
At the Casa Armando Guillermo Prieto distillery, the harvested agave plants
(the piñas, or hearts of the agave) are first ground and juice is extracted. In the
artisanal process, the piñas are first cooked. At Casa Armando Guillermo Prieto,
three types of grinders are used: tearing, leaf tearing and diffusion band.
Hydrolysis (cooking) comes next, in which two steam autoclaves/cookers
are used. Each has a capacity of 29,000 liters. After cooking, fermentation takes
place in four tanks. Column distillation is employed.
There are three bulk storage tanks, each with a capacity of 56,000 liters. For
aged mezcal (Reposado and Añjeo), the distillery has 1,134 white American oak
barrels, 292 French oak barrels, 120 other oak barrels and 248 used barrels.
There are many agave varieties from which mezcal can be made, perhaps
as many as 28-32 (depending on who is asked; the number is a moving target).

Serrallés Sues Diageo
Destilería Serrallés of Puerto Rico has filed a federal lawsuit against Diageo
North America, claiming more than $5 million in damages. Serrallés is accusing
Diageo of violating an agreement to produce Captain Morgan Rum at its distillery
in Ponce after Diageo moved production to the U.S. Virgin Islands. Serrallés claims
that Diageo had promised to produce one million gallons of rum to sell exclusively
in the U.S.

Willett Distillery Joins KDA
The historic Willett Distillery has joined the
Kentucky Distillers’ Association (KDA).
“We are extremely impressed with the tremendous
work that Even Kulsveen and his family have
undertaken to restore this remarkable distillery,” said
Jeff Conder, Chairman of the KDA Board of Directors
and Vice President, Global Supply Chain, for Beam,
Inc. “The Willett family’s distilling legacy is etched
deep in bourbon history, and we are excited about
their plans for the future. We applaud their diligence
and dedication to our signature craft, and we proudly
welcome them to the KDA.”
Located on the outskirts of Bardstown, Willett
Distilling was built in 1936 on a farm purchased by
Lambert Willett. Starting at the age of 15, Lambert
learned the whiskey business from his father, John
David Willett, and many of Kentucky’s most respected
distillers at the time.
Thompson Willett and one of his brothers, Johnny,
built the distillery and warehouses on some of the
highest ground in Nelson County, offering one of
the most scenic views among Kentucky distilleries
and ensuring that a fresh breeze would aid in the
maturation of their whiskey.

Scotch Whisky Exports
Remain at Record Levels
Scotch whisky exports increased in value by
12 percent in the 12 months to the end of June
2012, according to figures by the Scotch Whisky
Association (SWA).
Growth was seen in the U.S, Venezuela and Germany
as well as in exports to Russia and the Baltic states in
the first six months of 2012. Asia remained steady
with growth in Taiwan, which helped Scotch whisky
exports maintain their value in the first half of 2012
at £1.8 billion, despite continuing pressure in some
Eurozone countries and the after-effect of an increase
of shipments to France last year ahead of a substantial
tax increase.
In the first half of 2012, exports to the U.S. grew by
13 percent to £303 million, and it remains the biggest

Beam Opens Jim Beam American Stillhouse
Visitors’ Experience and Global Innovation
Center
Beam Inc. opened its new visitors’ center — The Jim Beam American Stillhouse — at its
flagship distillery in Clermont, Ky., on October 3. The facility will offer visitors the distillery’s
218-year history as well as the first-ever tours inside the distillery. The Stillhouse and the
new Global Innovation Center are part of a $30 million multi-year investment by Beam. The
57,000-square-foot Global Innovation Center on the distillery grounds features state-of-theart technical, R&D and design labs.

the doors of the Stillhouse.
The building is a replica of a 1930s stillhouse and will show visitors the Jim Beam bourbonmaking process from start to finish. Guided tours start with Beam’s limestone water well and
take guests through the mashing, distilling, barreling, storing and bottling lines.
In addition to Jim Beam-branded items and many Beam brands for sale in the retail shop,

U.S. Circuit Court of Appeals in Cincinnati.

Estate Cask (40% ABV), a French single
malt whisky from Cognac, France. It was
price far below its market value. YoungArts,
founded in 1981, is a non-profit that
identifies and assists young artists aged 15
and up. The organization will convert the
buildings into its first national headquarters,
creating a permanent home.

Bourbon Barrel Gin
Watershed Distillery, an Ohio craft
distillery, has released Bourbon Barrel Gin
(44% ABV). Watershed aged its Four Peel
$29.95) is infused with Centennial hops.

Naga Chilli Vodka
distilled twice in a copper alembic still from
two varieties of 100 percent malted barley
grown organically next to the distillery’s

MBA from Georgetown University and a
B.S. from Boston College.
Willett Distillery Joins
KDA

Having made their mark on the bourbon
industry, the Willetts retired in the early
1980s. Even G. Kulsveen, a native of Norway
and son-in-law of Thompson Willett,
purchased the property in 1984. He formed
Kentucky Bourbon Distillers, Ltd., and began
restoring the distillery.
This small, independent family-owned
distillery resumed production last January.

operated by Kulsveen, his son Drew (who
runs the distillery), Drew’s wife, Janelle (who
runs the gift shop and tasting room), Even’s
daughter, Britt Chavanne (who handles the
day-to-day operations) and her husband,
Hunter Chavanne (who handles sales
and marketing).
“It’s a real honor and pleasure for us to
be involved with such a historic institution
as the Kentucky Distillers’ Association, an
organization which, for many, many years has
been a tremendous advocate of Kentucky
distillers and their world-famous whiskey,”
said Hunter Chavanne. “Our founder,
Thompson Willett, was a long-time director
of the KDA and a tremendous advocate for
the Kentucky whiskey industry. He went to
bat many times for what he thought was
fair and right for the industry as a whole —
ideals which I know the KDA holds near and
dear to its heart.”
Willett Distillery brands include Willett
Pot Still Reserve, Willett Family Estate Bottled
Bourbon and Rye, Noah’s Mill, Rowan’s Creek,
Johnny Drum, Old Bardstown, Pure Kentucky
and Kentucky Vintage. The distillery is the
14th KDA member and the eighth Kentucky
craft distillery to join to association. The
KDA’s craft membership is available to
licensed Kentucky distillers that maintain
an inventory of less than 25,000 barrels of
distilled beverage spirits.

The Casa Armando Guillermo Prieto distillery
Zignum’s Reposado is aged for two to 12
months in American oak barrels, and Añejo
for 18 months in a combination of French
oak and white American oak barrels.
After initial sales in Mexico, exports began
to Spain. Silver and Reposado entered the
U.S. in Miami in February 2011, followed by
Añejo this past June. The Chicago market was
opened last August. Southern Wine & Spirits
handles the brands in Florida and Illinois.
Zignum sales began in New York City this
month through Park Street Importers. For a
750-ml bottle, the approximate retail prices
are $25.99 for Silver, $29.99 for Reposado
and $49.99 for Añejo.
Selene Estrada, the Zignum executive
for the U.S., said that the next markets in
the U.S. will be Los Angeles and Texas in
2013. The brand is also exported to Australia
and China.
Estrada said that U.S. sales are mostly an
equal mix of on- and off-premise, and that
the marketing efforts are to promote the
brands on-premise with bartenders and both
on- and off-premise with consumer tastings.
The “hipster crowd” is a target consumer.

market by value for Scotch whisky. Venezuela, the ninth biggest market for Scotch, grew 31 percent to £42 million. In Europe, Germany saw
exports increase four percent to £65 million in the first six months of the year. Latvia and Estonia now appear in the top 20 markets, reflecting
a surge in demand in Russia.
India saw an increase of 28 percent to £28 million, and the SWA said it hopes that a conclusion can be reached on the European Union/
India Free Trade Agreement by the end of the year. The agreement would see a gradual reduction of the 150 percent tariff on imported spirits.
Reduction in that tariff could see India become one of the biggest markets for Scotch.
The SWA said that Scotch whisky “continues to attract younger, affluent consumers in newly emerging markets, and this trend is expected
to continue.”
