Community Calendar Self-Care Tip Interested in exercising and meeting new people? Join us for the “Taking Action Group” weekly walking club every Tuesday from 1pm-2pm! Can you tell us a little bit about the history of your organization? We’re a component of the University-Assisted Community Schools program of the Netter Center for Community Partnerships at the University of Pennsylvania. AUNI developed from a course taught by Francis Johnston, Professor Emeritus of Anthropology. What is the mission of your organization? To engage, educate & empower youth, university students & the community to promote healthy lifestyles & build a just & sustainable food system. How have you partnered with CityLife Neighborhood Clinics? We offer our free Adult Senior Nutrition Program to all CityLife members, which is taught every Friday by a registered dietitian at the Walnut Street West Free Library of Philadelphia (201 S. 40th St.) from 10:30AM-11:45AM. Participants learn about various aspects of nutrition and practice basic food preparation skills. They’re also informed of local food distribution programs, farmers’ market incentives & SNAP benefits. What is your favorite part about your organization? Working with community members & educating them on how some simple changes in their diet can vastly improve their health & well-being! I love those culinary "ah hah" moments when folks learn how easy it really is to prepare affordable, tasty & healthy food. How can individuals contact you if they are in need of services you provide? During “Cataract Awareness Month,” be aware of the following risk factors. Speak with your Care Team about ways you can keep those “Big Brown Eyes” or “Baby Blues” healthy for years to come! Risk Factors: Smoking Long-term steroid use Certain diseases, such as diabetes Intense heat or long-term exposure to the UV rays from the sun Self-Care Tip The summer is a great time to relax and unwind, but it doesn't have to cost a fortune! Here are some ways to take advantage of the season: 1. Plan a staycation: Check out the list of activities on our Community Calendar and ask about more information! 2. Spend time near water: Ideas? A trip down to the shore or an afternoon by one of the 70 city pools. 3. Spend time outside: Destress and get some Vitamin D, but don’t forget the sunscreen! Recipes to Try! Summer is a great time to experiment with new recipes full of fruits and vegetables in season. Blueberries are packed with antioxidants and fiber, and are in their prime! This recipe is a great combination of fiber and protein, which will help to keep you feeling fuller for longer. Vegetable Couscous with Blueberries Ingredients: 1 cup low-sodium vegetable stock 3 Tbsp. olive oil 1 cup couscous, dry 1 tsp grated lemon rind Pinch ground cumin 2 carrots, diced 1 sm. zucchini, diced ¼ cup pumpkin seeds, toasted 1.25 cups fresh blueberries ½ cup canned chickpeas, rinsed & drained ½ tsp salt Pepper, to taste Directions: 1. In saucepan, bring stock and 2 Tbsp. of oil to a boil. 2. Add couscous, lemon rind and cumin; stir to combine. 3. Remove from heat and cover; let stand for 5 minutes. 4. Fluff with fork and scrape into large bowl. 5. Heat remaining oil in skillet over medium heat; cook carrots for 5 minutes or until soft. 6. Add zucchini and cook 3 more minutes or until soft. 7. Add chickpeas until warm. 8. Remove from heat; add pumpkin seeds and blueberries to couscous. 9. Finish by adding salt and pepper. Serving Size: 4 The Avenue | 1010 W.
