Situated at the furthest tip of Cap d’Antibes in a park of 22.5 acres, the superb Napoleon III building is a legendary haven. This temple form the 18th century is located between Cannes and Nice, the old fortified town of Antibes and the lively neighbourhood of Juan-Les-Pins. Its pinewood with its fragrance and a romantic rose-garden flanks a majestic alley leading to the Eden-Roc Pavilion, built on a terrace above the sea: its spectacular infinity pool is, in itself, a living record of indelible memories. Ideally situated at the heart of the Côte d'Azur, only 20 minutes from the Nice International Airport, 15 minutes from Cannes, the Hotel du Cap-Eden-Roc enjoys easy access to all these towns by sea, thanks to its private landing-stage. The surrounding area… By car or boat, the entire Mediterranean coast unfurls from Saint-Tropez to San Remo and the Riviera from the Hotel du Cap-Eden-Roc. Following in the footsteps of great artists, we find among many others the Rosary Chapel decorated by Matisse in Vence, Museums dedicated to Picasso (Antibes), Fernand Léger (Biot), Chagall and Matisse (Nice), the legendary village of Saint-Paul-de-Vence, its art-galleries and the Maeght Fondation, Vence with its artists’ studios, Grasse, capital of the perfume industry, Biot and its glass factory Vallauris and its ceramics, Eze Village and its medieval eagle’s nest... Cultural discoveries but also wine tastings, as well as a variety of culinary specialities inspired by different areas. 3 Memories A legendary hotel Crowned heads, politicians, artists, renowned intellectuals, businessmen, movie stars… In a centuryand-a-half, the Hotel du Cap-Eden-Roc became a legendary refuge whose history intermingles with that of many celebrities from all four corners of the world. Built in 1870 by the founder of Le Figaro, Auguste de Villemessant, the former « Villa Soleil » as it was then called, was initially intended to play host to writers in search of inspiration. But the project was soon abandoned, and the villa became a luxury hotel. Years went by shrouded in the mists of a motley clientele, until the inauguration of the Paris-MarseilleMenton railway in 1869 and the appearance of luxury trains such as the Saint-Petersbourg-ViennaCannes-Nice, which led to the emergence of a « Côte d'Azur » described by Elysée Reclus as « the future residence of all of Europe ». However, it was only in 1887, with the arrival of Antoine Sella, a highly imaginative hotelier from Piedmont, that the elegant building in pure Napoleon III style was first baptised « Hotel du Cap ». Brimming with innovative ideas, Mr. Sella decided to re-launch the establishment playing the ace of summer holidays. He was a man of vision, Antoine Sella. And since then, the Hotel du Cap has continued to shine... 4 In 1914, a sea-water pool was hollowed out of the basalt rock, the Eden-Roc Pavilion was built, followed by the famous “cabanas” facing the Mediterranean Sea. The ‘fifties and ’sixties literally bore witness to the « landing » of the world’s elite, often by sea, in a very eclectic parade from the Kennedy familly to the Greek shipbuilder Niarkos, the Duke and Duchess of Windsor, Marlene Dietrich, Scott Fitzgerald arm-in-arm with his beautiful Zelda, Ernest Hemingway and even Nobel Prize winner George Bernard Shaw, all seeking their share of the dream: luxury in all simplicity. Succeeding his father, André Sella held the flag up high until 1970, before handing it over to JeanClaude Irondelle who after a career of 50 years, entrusted this precious « rock of paradise » in 2005 to Philippe Perd, today General Manager of the Hotel du Cap-Eden-Roc. 5 Saga The Spirit of the Oetker Collection Masterpiece Hotels In 1891, a young chemist from Bielefeld in Germany, Doctor August Oetker, invented the chemical yeast... The immediate success of this self-raising powder gave birth to a genuine industry which gradually spread abroad and, thanks to important innovations, challenged the European food industry. Four generations later, the original small home industry had become an influential worldwide group with diverse sectors of activity, naturally including foodstuffs but also wines and spirits, maritime freight and… luxury hotels. The Oetker family entered this last field in 1941 with the acquisition of its first establishment: Brenners Park-Hôtel & Spa in Baden-Baden. Then, in 1964, Maja and Rudolf Oetker fall for the « Fitzgeraldian » charm of the Hotel du Cap-Eden-Roc in Antibes: « its impeccable linen, impressive wine-cellar and the sparkling old kitchen with its copper saucepans », said Maja Oetker in François Simon’s book (“Hotel du Cap-Eden-Roc”, Editions Assouline). They had to wait five years before they could acquire and adapt this legendary hotel, already frequented by the elite, to the necessities of modern comfort. They also took over the Hotel Le Bristol Paris in 1978 and the Château Saint-Martin & Spa in 1994. The soul of each hotel, affectionately preserved, has thus produced a « collection » of prestigious hotel properties. There are eleven hotel properties belonging to the Oetker Collection including the hotels on management contracts such as Palais Namaskar in Marrakech, Fregate Island Private in Seychelles, L’Apogée Courchevel in Courchevel, Eden Rock-St Barths in Saint-Barthélémy, The Lanesborough London and as well as Palácio Tangará in São Paulo, which will open in the Spring 2017 and the “New York Masterpiece” opening next Spring 2018. 6 Philippe Perd, General Manager In 1989, Philippe Perd joined the Savoy group, embarking on his training in reception management at the Connaught Hotel in London. In 1998, he accepted to be Assistant Manager at the Hotel de Crillon in Paris. The following year, he was promoted to Manager. He left the Hotel de Crillon in 2001 to run the Château Saint-Martin & Spa on the hills above Vence, as General Manager, until October 2005. He then took over management of the unique and prestigious Hotel du Cap-Eden-Roc in Antibes. The challenge involved modernizing the premises without detracting from the myth, inspiring creativity on the part of the teams and awakening their sense of responsibility, without overthrowing the habits of an extremely loyal clientele. Owned by the Oetker family, the most discreet of the Riviera’s palace hotels then saw its areas renovated always respecting the authenticity and past. July 2007, Oetker Group entrusted him jointly, and for the second time, with the management of the Château Saint-Martin & Spa with the aim of developing a real synergy between these two flagships of the hotel industry. Philippe Perd thus became General Manager of the Hotel du Cap-Eden-Roc, in Antibes, and the Château Saint-Martin & Spa, in Vence. Philippe Perd has been graduated from Harvard Business School with the Advanced Management Program in November 2009. He was awarded by the Deputy Mayor of the city of Antibes and the Sous-Préfet with one of the highest recognitions in France “la Médaille de Bronze du Tourisme” to honor his services rendered to Tourism and in recognition of the quality of service in the Hospitality Industry in October 2011. He graduated from Inchbald School Design in London with the Certificate in Interior Design in November 2012. Philippe Perd becomes Senior Vice-President Operations and Project development for Oetker Collection in 2013. 7 Laurent Van Hoegaerden, Hotel Manager Restaurant manager in 1993 at the Hotel Le Crillon in Paris with Chef Christian Constant, Laurent Van Hoegaerden became Food & Beverage Director six years later and then resident manager… He thus worked alongside Chef Dominique Bouchet and Chef Jean François Piège until Philippe Perd, newly appointed General Manager of the Hotel du Cap-Eden-Roc, called on him to join the team on the shores of Cap d’Antibes. Responsible since 2006 for the food and beverage at the Hotel du Cap-Eden-Roc, Laurent Van Hoegaerden was promoted to the position of Resident Manager at the Hotel du Cap-Eden-Roc in September 2008. With a strong experience in the hotel industry and the management, he is appointed in 2013 as Hotel Manager of the Hotel du Cap-Eden-Roc. Laurent Van Hoegaerden eagerly anticipates his new role where he will oversee day to day operations of the property, ensuring guests’ needs and desires. 8 Brice Kemper, Deputy Director Working at the Hotel du Cap-Eden-Roc since 2006, first as Rooms Division Manager, and most recently as Director of Rooms Sales & Marketing, Brice Kemper will now serve as Deputy Director. He works alongside Laurent Van Hoegaerden, Hotel Manager, to continue the tradition of excellence in privacy, luxury and charm, that make Hotel du Cap-Eden-Roc one of the world’s most honored resorts. Brice Kemper brings an esteemed and extensive array of experience, having worked with the Vail Resorts in Colorado, The Peninsula in New York , The Mark Hotel in New York and the Four Seasons in Atlanta, and most recently as Resident Manager of the Hotel Vista Palace, in Cap-Martin (South of France) prior to joining the Hotel du Cap-Eden-Roc. 9 Gastronomy A sublime art of living From the garden to the table, from the pool to the bar, the brilliant trilogy at Hotel du Cap-Eden-Roc colours, scents, flavours, enchants a loyal clientele used to regularity of tiny details which make all the difference... It is with the Pastry Chef Lilian Bonnefoi since 1995, elected Best Pastry Chef of the Côte d’Azur in January 2008, and the Eden-Roc restaurant’s Head Chef Olivier Gaïatto since 2000, that Arnaud Poëtte, Executive Chef, manages the kitchens of this palace of the French Riviera. The bar offers also an irresistible menu of refreshing fruit or vegetable juices, such as the fresh coconut juice, to appreciate on the outskirts of the Mediterranean Sea. 13 Arnaud Poëtte, Executive Chef « Here, we don’t merely content ourselves with satisfying the client, we offer him happiness... » The caress of the sun along the shores of Antibes inspire Arnaud Poëtte to create a cheerful and elaborate cuisine based on absolute respect of natural ingredients, a deep sense of basics and spontaneous creativity. With his generous smile and the personality of a demanding « pater familias » who supervises a kitchen of 75 people as if they were family, Arnaud Poëtte is one of those outstanding chefs whose careers last because they enjoy giving back what they have received. Born in Soissons, in a family from Picardy, he began his career by winning an encouraging reward France’s Best Apprentice Cook, in 1977. From 1977 to 1982, he alternated his first « seasons » between Loire-Atlantique and Haute Savoie -Hôtel Masson, Le Croisic Hôtel La Montagne in La Clusaz, Hôtel Le Portetta in Courchevel, first as assistant and then as first assistant sauce-cook at the Hôtel Hermitage in La Baule. Summer 1983, he turned up in front of the majestic gate of the Hotel du Cap-Eden-Roc. Arnaud Poëtte then struck anchor on the « Rock of Paradise », returning every summer to assume different posts and accepting the most incredible culinary challenges, until he took the toque in 1992, becoming chef des cuisines at the Hotel du Cap-Eden-Roc. Embarking on a great human adventure, this long-haul captain of the kitchens has delighted the palates of the world’s celebrities for the past 33 years. 14 Olivier Gaïatto, Head Chef at theEden-Roc Restaurant Native of Nice, Olivier Gaïatto grew up in a family which gives him his passion for cooking and his love of sharing, since his earliest childhood. His father and great-grandmother cooked a lot. This is definitely his father who truly gives him the desire to make that his life work. He often said to him: “Olivier, you have to give priority to product, always.” A culinary education based on the use of local products. Olivier starts working in 1997 at the gourmet restaurant La Bourride, in Cagnes-sur-Mer, as a “commis de cuisine”. He joins the Hotel Ambassadeur, in Juan-les-Pins, for two years as demi-chef de partie, and then he works for Holiday Inn, in Saint-Laurent du Var, as chef de partie for the opening of the restaurant. In 2000, he meets the Executive Chef Arnaud Poëtte and joins his team for never leave it until now. He becomes Head Chef of the Eden-Roc restaurant in 2014. His most beautiful encounter remains the one that he had with Arnaud Poëtte who gives him his chance and gives free rein to his creations. He describes his cooking as gourmet and precise with respect for products; with a spoon as an essential accessory to taste all the dishes and a powerful team with his “premier sous-chef” Maxime Danielli, who works with him for five years. 15 Passionate and perfectionist, Olivier tirelessly tries to satisfy our guests, it is his biggest challenge, and to always strive for excellence. Indeed, when we ask him what his motto is, he spontaneously replies: "Excellence". 16 Lilian Bonnefoi, Pastry Chef At the age of 9, Lilian Bonnefoi was already helping his uncle to embellish the tables of the Troisgros Brothers! Born in Roanne, he grew up in the cradle of high gastronomy. Often scolded for being an « enfant terrible » not too keen to get down to his studies, he found his vocation as a teenager by opting for a CAP qualification in pastry-making that showed him to be dedicated, creative and determined. After pocketing his « brevet de maîtrise », he joined the Troisgros kitchen brigade in 1990 as “chef de partie”, then “sous-chef pâtissier”, up until 1992. This unique experience opened his eyes to the outside world, he travelled as far as the United States and served as a springboard enabling him to become manager of the pastry-making service at the prestigious Hôtel Guanahany at Saint-Barthélémy. His meeting with Arnaud Poëtte, Executive Chef at Hotel du Cap-Eden-Roc, in 1995 marked a turning-point in his career and the start of a relationship based on real complicity. Consecrated at the age of 38 as Best Pastry Chef on the Côte d’Azur, in January 2008, Lilian Bonnefoi has a gift for always pushing back established limits to sublimate sugar like a sculptor, combine matter and colours like a poet, invent new accords and awaken gustatory souvenirs from our childhood days. Liliane Bonnefoi promotes the art of pastry-making in its entirety through events, encounters, courses abroad, inspired by wizards such as Gaston Lenôtre, Pierre Hermé or, closer to his style, Christophe Michalak, Head Pastry Chef at the Plaza Athénée (3 Michelin stars) and Stéphane Klein, unrivalled master in the art of sugar, for whom he wrote the preface for the book « Voyage en sucre d’art ». Despite his heavy responsibilities at the Hotel du Cap-Eden-Roc where directs a team of 12 pastrymakers, 1 chocolatier and 3 bakers, Lilian Bonnefoi is an adept of free figuration and an incredible source of ideas as he proves it by opening his own “pâtisserie” in Antibes, in October 2015. 17 Lilian Bonnefoi and his Chocolate Factory After eight years in his own chocolate factory, Lilian Bonnefoi and his entire brigade will ensure for this season the “homemade” production of chocolates of the Hotel du Cap-Eden-Roc. They provide 1,9 ton of candies coated chocolates, 850 kg of brut chocolate for both desserts and meals creation each year. This 2016 season promises to be a year strong on emotions particularly with the exportation of 21.500 chocolates to Japan for the “Salon du Chocolat”, in Tokyo. Lilian Bonnefoi and his team have made 2.500 boxes of chocolate, being 332.9 kg of chocolate, for this event last January. New creations will be added to the delicious chocolate and fruits bar, caramel, hazelnuts… and the different delights of our menu card. Created for both restaurants and in-room-service prestigious boxes of chocolate are realized according to the desires of our clients. They can be sold as well. Invited to visit the chocolate and pastry factory, this will be the occasion for the lovers of chocolate to discover the wrapper with our Pastry Chef, Lilian Bonnefoi. 18 Xavier Dinet, Head Sommelier Jealously watching over the cellar of the gourmet restaurant « Eden-Roc » since 2006, there are some of those destinies that are written in the story of a man from his childhood… Only aged of 6 years old, it’s in following the footsteps of his brother and sister, that Xavier Dinet learned the various positions in restoration and developed over the years an endless passion for oenology. Starting his career at 15 years old as an « apprenti de salle » at the Château de Beaulieu in Joué-les-Tours, he climbed the ladder one by one to become at 18 « commis sommelier » in the Relais & Châteaux of « La Côte Saint-Jacques ». Called at 21 to become the « sommelier » of the highly reputed gourmet restaurant of the Hotel Le Bristol Paris, he will however leave, 4 years after, the French capital to join the French Riviera and the Hotel du Cap-Eden-Roc… finally accessing to the coveted position of Head Sommelier at the Eden-Roc restaurant. With a card counting more than 600 references and more than 15.000 bottles, the favorites of our Head Sommelier speak for fine, elegant and fruity wines like the Pouilly Fuissé « Les Crays » – Domaine Eric Forest, the Côte de Provence « La Londe » Rosé – Château les Valentines or the Chateauneuf du Pape Rouge « Chaupin » - Domaine de la Janasse. 19 Christopher Lavaud, F&B Manager Christopher Lavaud is a man of challenges, and is proud to join the Hotel du Cap-Eden-Roc team as Food & Beverage Manager for a second summer season. He oversees the two main restaurants and is also responsible for the unique « Eden-Roc Champagne Lounge » overlooking the Mediterranean Sea, the famous « Bellini Bar », « La Rotonde piano-bar » and the « Juice & Ice Cream bar ». This is not Christopher’s first experience of the kind. After obtaining his « Masters in Hospitality and Administration » in 2010 from Ecole Hôtelière de Lausanne, he began his career in Egypt and especially in Cairo, at the Grand Hyatt Cairo as head of the Revolving restaurant. Back in France, working for the same group, he joined the Park Hyatt Paris Vendôme in 2011 as Manager of « La cheminée » restaurant. In October 2012, he decided securing the job of Director of prestigious double Michelin starred restaurant « Joël Robuchon Monte-Carlo » in the Hotel Metropole. Christopher Lavaud is passionate about everything he does, the team spirit is something he attach a great importance. 20 Accommodation Successive renovations… Since the arrival of Philippe Perd, the Hotel du Cap-Eden-Roc has been treated to successive renovations every winter. With hotel premises comprised of the main Napoleon III building, the Eden-Roc Pavilion and the building “Les Deux Fontaines”, the establishment today offers 118 units of accommodation. All the bedrooms have been sumptuously renovated, equipped with flat screens and Wi-Fi systems, as well as the private villas, which offer comfort on a par with the expectations of a by a top-notch international clientele. Winter 2008-2009, the hotel is focusing on the well-being of the staff with the construction of new accommodation and complete refurbishment of the collective restaurant. As for clients, they will enjoy the privilege of discovering the restructuring of the upper beach, pool and fully renovated tennis courts. Winter 2009-2010, was undertaken the construction of the new villa of the Hotel du Cap-Eden-Roc, the Villa Eleana. Combining the services of a luxury hotel to the advantages of a private property this sumptuous house, built on two floors, having its own pool, 3 bedrooms and bathrooms, a kitchen, a living room, is one of the most beautiful project created in 2010. 21 Winter 2010-2011, the Hotel du Cap, Napoleon III style property built in 1870 and counting 67 rooms, suites and apartments is being entirely renovated in 2011 to offer more comfort to our clients… The private and public areas are also manicured seeking the excellence of quality (Air conditioning in all corridors, wooden floor within the breakfast room, etc.). The Eden-Roc Pavilion, will see its more prestigious suite, the “Eden-Roc Suite” reach the top of luxury with a Jacuzzi on its 250 m² terrace facing the Lérins Islands. Winter 2011-2012 – Restoration of the three bedroom villa “Les Cèdres” located into the gardens of the property. Three bedrooms villa with their own marble bathroom entirely redesigned by Mrs. Maja Oetker, lounge and dining room, kitchen fully equipped with the possibility to get a full detailed service from the Hotel staff members, large terrace as well as an outside Jacuzzi for well-being moments. Restoration of the building “The two fountains” offering 16 double rooms decorated with elegance and equipped with flat screens and Wi-Fi systems for the comfort of our guests. Five rooms on the ground floor offer a magnificent landscaped garden in harmony with nature. 22 Eden-Roc Pavilion The eighties saw the creation of Junior Suites, together with the creation of a sumptuous suite directly overlooking the rocks of Cap d’Antibes. Madonna, Sharon Stone, Barbra Streisand, Robert Redford, Bill Cosby, Steven Spielberg and many others have been the prestigious guests of this unique suite. The Junior Suites – Renovated Winter 2012-2013 The 31 Junior Suites have a splendid terrace with stunning sea view, spacious and sophisticated marble bathrooms. In this building, modernity magnifies tradition. Eden-Roc Suite – The Eden-Roc Suite reaches the height of luxury in 2011 with the creation of a magnificent landscape garden and a Jacuzzi on its terrace of 250 m². A place with splendid view of Lérins Islands which invites you to meditation. 23 In 2010 was undertaken the construction of the new villa of the Hotel du Cap-Eden-Roc, the Villa Eleana. Combining the services of a luxury hotel to the advantages of a private property this sumptuous house, built on two floors, having its own pool, 3 bedrooms and bathrooms, a kitchen with a chef on request, a living room, a butler at disposal , electrical car as well as a magnificent garden of citrus and olive trees. A luxury villa for a dream stay with the comfort of a quality service. 24 Villa Les Cèdres – renovated in 2012 Right in the middle of the park, the very lovely Villa « Les Cèdres » offers a vast lounge, 3 bedrooms, 3 bathrooms, a kitchen and a beautiful sheltered terrace. The Villa has been entirely restored in 2012. A fully equipped kitchen is available with the possibility to get a full quality service from the hotel. Large terrace and outside Jacuzzi for well -being moments. 25 Installations Iles de Lérins meeting room In the prolongation of the Eden-Roc Grill and the swimming pool, the meeting room Iles de Lérins, 259 m², lends itself to the organization of private receptions, weddings, birthdays, conferences or seminars. Completely renovated this season, the Salon can be divided in three independent sections, perfect for all types of events. Basking in natural daylight, with the Lérins Islands directly in its sights and a superb terrace above the sea, this location also benefits from blackout drapes for private screenings, audio-visual equipment offering spearhead technology, and Wi-Fi connections.
