The Shenandoah Valley Beef Cooperative:
SCALING UP TO MEET LOCAL DEMAND
There is
unprecedented
demand for local foods across
Virginia and the United States.
BUY FRESH BUY LOCAL educational
programming and promotion has
helped to increase the demand.
Presently, the demand appears to
be greater than the supply of locally
grown and identified foods. Many
farmers, groups, organizations, and
universities are looking to scale
up local foods to meet consumer
demand and strengthen the
overall food system. Aggregating
of farmers and farm products
- through the formation of
cooperatives, alliances, buying
clubs, produce auctions and food
hubs - is one way of increasing
supply and potentially meeting the
demand.
The
Shenandoah Valley Beef
Cooperative is a recently formed
cooperative that consists of 20
local farmers selling local beef to
restaurants and wholesale markets.
Located at the headwaters of the
Chesapeake Bay, the Shenandoah
Valley Beef Cooperative is dedicated
to protecting the Valley’s natural
resources that provide beauty and
sustenance for the community,
while humanely producing fresh
delicious locally raised beef in the
most environmentally friendly way
possible.

Shenandoah Valley. The chapter
works to find new markets for local
producers through a variety of
market channels, including farmers
markets, CSAs, restaurants, retail,
and institutions.
This is the 5th edition of the
guide. The purpose of the guide is
to strengthen the links between
producers and consumers that
keep family farms viable in the
Shenandoah Valley.

total annual purchases from local
sources, schools and other area
institutions (like hospitals and
universities), could potentially
contribute millions of dollars into
our local economy each year.

using ingredients from local farms
whenever possible. Here are two

incorporates into students’ meals.

State and federal financial incentives
for easements have helped some
farmers expand their operations, settle
their family estates, or plan for their
retirements. Several Valley counties
have created local farmland programs.
Land conservation alone won’t
maintain farming. Farmers need to
know that staying on the land can
be financially viable. If land doesn’t
turn a profit, farmers may have to
face tough decisions to sell off lots for
development.
The Farm-to-Table project in the Valley
is seeking to help farmers deal with
mounting economic and regulatory
pressures. Virginia Cooperative
Extension, Valley Conservation
Council, LexRock Grows, and Water
Stewardship, Inc., are working with
farmers interested in increasing local
food production while also improving
the environmental and economic bottom
lines for their farms. For the future of
agriculture as a whole and the health of
our communities, we need to conserve
the land base while also building
systems that support profitable local
farming of all types.
