Since the publication of the previous issue of the Tribune, there have been many changes
within the Seaside Hotel Group. We would like to bring you up to date with these changes
in this current edition. The magazines layout has also been revised for you and arranged
across 72 pages. You can look forward to discovering an abundance of information and
images from our hotels and our hotel regions in Germany and in the Canary Islands.
The opening of a new restaurant [m]eatery, in the SIDE Design Hotel Hamburg, and
the inauguration of the VASANO Suites in Leipzig – a totally new accommodation concept
situated above the rooftops of the city offering luxury at an affordable price, are among the
highlights that you can expect to find.
Learn more about our ”Pepes Club” at the Seaside Hotel Palm Beach in Gran Canaria. Little
guests will be impressed by the newly-built clubhouse, children’s pool and the equipped
playground area. Childcare has also been increased to provide parents with some free time
to relax. Guests in Lanzarote can enjoy the new SPA and Wellness area – a total sensory
experience. The opening of Anfi Tauro’s new golf course in Gran Canaria is presented along

The service tasks and procedures are
taught in the restaurant, the bar and
the banqueting function department. To ensure they obtain a comprehensive understanding of the
hotel business, the hotel apprentices
in SIDE also work in the kitchen, in
the purchasing department, at the
reception in the reservations department and in the sales areas: sales and
marketing, sales events and catering.
The theoretical knowledge is imparted in six week blocks each year in the
vocational school.

In SIDE the apprentices are integrated immediately with the rest of the
team in the respective departments
and very quickly assigned with
responsibilities. In exceptional cases,
this can sometimes even mean substitution of department heads during
holidays. Trainees are often promoted, but in SIDE a great deal of importance is placed on the use of
your own initiative which is gladly
supported and encouraged; whether
you wish to complete an internship
at a vineyard or take part in a catering competition. When a trainee

However, at SIDE we do not just train
hotel professionals, we also train
chefs. Here, the focus of the training
is on the kitchen where the aspiring
chefs work in all sectors. They learn
how to handle fresh produce such as
fish, meat, sauces, vegetables and
desserts. The chefs also obtain an
insight in to the service area and the
purchasing department.
When they finish their training, the
apprentices have the world at their
feet in that the dual formation i.e.
the practical in addition to the theoretical is recognized worldwide.
These young people have the opportunity to further develop and to continue to climb the ladder in the hotel
industry.

One of Leipzig’s oldest Hotels was opened in
the year 1913 as a luxury 200 room hotel. Since 1995
it displays dazzling Art-Déco chic from yesteryears combined with present day comforts and
technology.
Located in the historical centre of this city is one of
Leipzig’s oldest Hotels. The Hotel was opened in 1913 to
mark the occasion of the inauguration of the Battle
of Nations memorial near Leipzig. The hotel was in
its heyday in the 40´s when Leipzig was named
“Reichsmessestadt” (the Reichs City of Trade Fairs). During the war it was severely destroyed and then abandoned during the time of the German Democratic
Republic. Just four years after the reunification the building was rescued and protected for its historical value. In
1993, Theo Gerlach bought the property which was in
need of a complete renovation. By the year 1995, the
building had been extensively renovated and restored
and on the 20th of March 1995 reopened as the Seaside
Park Hotel Leipzig. A 4 star hotel, with 288 rooms,
decorated in a comfortable Art-Déco style.

History
The Park Hotel was opened on the 18th of October 1913
at the entrance to Nikolaistrasse, which in accordance
with the town councillors, was to be developed as an
important road for trade-fairs, businesses and traffic. In
order to build the hotel in this location, three neighbouring buildings had to be demolished – “the Goldene
Kanne”, “the Goldener Strauss” and “the Schwarzes
Hufeisen” – hence making way for the new edification.
In the city's chronicle from 1913, the following was
recorded regarding the Park Hotel: “Since the year 1913,
on the land located on Richard Wagner Straße a new
castle should be built, a place of peace and hospitality, a
home for visitors to our city on the occasion of fairs and
other circumstances to pass some time in the city. This
was the reason it was inaugurated and opened on the
day of the centenary celebration of the Battle of Nations,
the 18th of October 1913”. Two years later, towards the
end of 1915, the imposing building of Leipzig’s Central
Station was inaugurated after taking 13 years to build.
The opening of the station brought many guests to the
Hotel Park due to its excellent nearby location. This luxury category hotel initially offered 200 rooms with a total
of 320 beds. The approximately 52 bathrooms with a
lavatory system and bidet, in addition to the meal lift,
(dumbwaiter), which connected each floor with the
kitchen, were considered to be a luxury in these times.
The most important guests in the area of “Brühl” were
the fur merchants that came from all over the world. In
the 40´s, the Park Hotel continued gaining importance
due to the rapid development of Leipzig in the
“Reichsmessestadt” (the Reichs City of Trade Fairs).
An increased capacity was needed, and for this reason
the city of Leipzig justified in 1942 the further development of the Park Hotel. During the Second World War,
large parts of the hotel were destroyed. When the war
ended the roof of the hotel had to be completely rebuilt.
In the years after the war, Leipzig slowly became known
as an important literature centre, which provided a boom
in business for the Park Hotel. During the time of the
German Democratic Republic, the building was further
neglected which resulted in much structural deterioration. The only highlights of this period were the opening
of the “Polnisches Restaurant” (Polish Restaurant) in
1974, the opening of the first bar serving beer in Leipzig
in the year 1980, and from 1985 the cocktail bar
“Capriccio”. With more than 170 rooms, the Park Hotel
remained one of the largest hotels in the German
Democratic Republic. ...

What the old Park Hotel became after 1995
During the two years of reconstruction between 1993
and 1995, the developers placed great importance on
preserving the hotels original Art Nouveau character. The
high society interior designer Henrik Frischgesell from
Wiesbaden, who since 1987 had undertaken a variety of
hotel and resort projects, was responsible for the design
of the Park Hotel in the Art-Déco style with its bi-dimensional representation of floral motifs. The preferred
colours of this period, black and dark blue, contrasting
with gold and yellow can be found in the carpets and
decoration. Beautiful Art Nouveau lamps, table lamps
and mirrors, Art-Déco tables and chairs, all contribute to
the attractive overall appearance. Accessories such as hat
boxes and suitcases with original travel stickers were
acquired at auctions to give the hotel an individual and
authentic style. His colleague, Thomas Wenzel, drafted
a design concept exclusively for the Park Hotel which
included seven original oil paintings. These original
paintings and re-prints depicting Leipzig can be
found throughout the hotel – a picture for example of
the “Volkskunsthaus Lindenau”, the view along the
“Nikolaistraße” or pictures of the “Café Riquet” and
the ”Nikolaikirche”.
The specialty restaurant “Steaktrain” was designed to
look like a mid-western luxury dining car. The attention
to detail can also be seen here, and with regards to the
design the closeness to central station was no coincidence. Dark mahogany wood and soft lighting create a
cosy atmosphere for the 110 seat restaurant. A special
feature is the “lava-grill”, where specialty meat and fish
are prepared. The strong heat of the grill quickly seals
the meat, which means tender and juicy steaks are
served. The old park cafés have been replaced by the
“Nikolai Bistro”, its comfortable furnishings invite you
to sit down and linger whilst observing the hustle and
bustle on “Nikolaistraße”. A SPA area with jacuzzi, sauna
and solarium among other facilities complete the hotel’s
offer.
In the year 2013, we celebrate the 100th anniversary
of Park Hotel
In October 2013, we will celebrate this important
anniversary together with our most important partners.
We will be hosting a big birthday party. This event takes
place at the same time as two other anniversaries for
which the Park Hotel is patron. The Battle of Nations
Monument (100 years) and the famous artist Richard
Wagner (200 years) which will be organized by the
Richard-Wagner-Verband Leipzig e. V.

Above the rooftops of Grimmaische Straße discover
ten luxurious two storey suites at an affordable price. The
luxurious Vasano suites are defined by their stylish Italian
furnishings and state-of-the-art technology combined
with the comfort of individually designed suites of an
ample size; between 35 and 50 m2. Instead of high cost
employees, Vasano concentrates on the main objective
of a hotel: accommodation. And the aim is that this

convinced that today's travelers place more importance
on the standard of the rooms than being surrounded
by staff. “When I travel, the standard of the rooms and
the price are a priority, I place less importance on being
greeted at the door or someone carrying my luggage
to the room”, says Gregor Gerlach, “Today's travelers
do not need a Restaurant in the hotel or a separate
breakfast room – when as in this case there is a Vapiano
in the same building and a Starbucks over the road”,
continues Gerlach.
A mobile massage service replaces the SPA area and
the spacious suites have a free mini-bar and fresh rolls
delivered to the door daily to replace the breakfast room.
There is an automatic check-in in the entrance. A 24 hour
helpline can be contacted via video network. Not forgetting the daily maid service and the re-stocking of the
fridge and mini-bar that are standard.
“Chi va piano va sano e lontano”
The Italian saying “Chi va piano va sano e lontano” was
derived in 2002 from the now highly successful catering
concept Vapiano. After approximately 60 international
openings, Vapiano has come to represent a fresh fast
food restaurant with a Mediterranean atmosphere,
developed by the Italian designer to the stars Matteo
Thun. Wooden floors, lounge furnishings, olive trees and
Self-cooking Stations symbolize the spirit of the times,
good food enjoyed in a relaxing ambience. A limited
amount of staff are needed as the idea is to focus on the
real thing – and that at Vapiano is without a doubt the
freshness and variety of the Italian dishes such as pasta,
pizza and seasonal salads. The concept of Vapiano was
original and unique when first opened and has proven to
be successful.
Gregor Gerlach, co-founder of Vapiano, is now developing the second stage of the Italian motto “Chi va piano
va sano e lontano”, surprising us with a totally new
accommodation concept. There are luxury hotels whose
prices and service are in the five star category and at the
other end of the scale, there are two star hotels which
are inexpensive but this is also reflected in the standard
of the rooms. Vasano aims precisely at the gap that exists
in the market: the suites furnishings are of a five star
standard however the service has been reduced to offer
guests affordable prices. In this way guests can enjoy
five star standards at four star prices. Gregor Gerlach is

Italian Design Including ...
It is not just the name of “Vasano” that is Italian, but also
the furnishings of the ten “Premium Suites”. Unlike the
theoretical approach of the Bauhaus school in Germany
or the marketing and profit-orientated approach of
the Americans, Italian design continues to prosper by
daring to experiment with new ideas and taking risks, in
addition to the skills of local artisans and ancient
Italian cultural traditions – the typical characteristics of
these Italian designs can be found in the Vasano Suites in
Leipzig. Clean lines and shapes, in some cases a little
playful, modern and timeless at the same time. Lots of
wood and fresh colour schemes determine the ambience.
Brushed light or dark oak dominates the feeling of space
and flows like a natural thread across the two floors
of the suites. Two styles of décor await guests. Five of
the suites have large grey floor tiles blended with purple
carpeting. In the other five suites a shiny light brown
Terrazo stone from the famous firm Bisazza dominates
the décor.
Guests can encounter design everywhere: chairs in the
dining room from Zanotta, sofás and armchairs from
Minotti, Driade or Vitra, lamps from Terzani and Matteo
Thun. The bathrooms are also influenced by outstanding
Italian design: one version is covered entirely by a mauve
mosaic carpet of Bisazza stone, the second, is covered in
ornamental multi-colored iridescent Sicis mosaic. Italian
bathroom fittings complete the picture with walk-in
showers, cosmetic mirrors and hairdryers.
Up-to-date Audio-Visual Technology
In addition to the innovative design, Vasano has opted
for the most up-to-date communication technology.
All rooms have the most up-to-date LOEWE LCD televisions, free high speed 24 hour wire-less internet
connection, telephone calls to European landlines and
to Vodafone networks without charge round the
clock. The Loewe Connect TV is also equipped with a
USB/HDMI interface which permits the transmission and
retrieval of multimedia content, with an integrated MP3
and Media Player.
Vasano – elegant Italian design in spacious suites at an
affordable price with a wide range of additional services
included. This is a concept for the modern traveler which
puts emphasis on high quality facilities as opposed to
high levels of staff.

The tour operator TUI has nominated each year since
1996 the “Environmental Champions” who are chosen
from between all their hotel partners. Whilst competing
for the “Green Trophy” the management’s commitment
to caring for the environment is evaluated together with
the client’s perception of what they have achieved. It is
not just the hotel in question that is taken into account,
but all aspects of the destination as a whole such as saving energy, waste reduction and saving water. The winners are chosen according to the points assessment
which reflect the hotel’s environmental efforts combined
with the client’s opinion of their successful implementation. To achieve this the hotels complete a list of items
regarding the environment. This list is put together by TUI
together with their clients opinions as identified via questionnaires. Up to 1,000 environmental points can be
awarded. The TUI environmental champions each year
are the 100 hotels with the most points.
The Grand Hotel Residencia took part in the TUI environmental competition for the first time in 2008 and ever
since has been among the 100 best hotels in the world.
The next years entry is already underway. Taking a glance
at the list of objectives that are set out at the Grand Hotel
Residencia, it is clear the importance placed by the hotel’s
managements on environmental issues and sustainability.

Environmental purchasing policy
Preference for buying local produce, buying organically
grown produce, use of products free of CFC’s and the use
of biodegradable detergents.
In the social sector, the Grand Hotel Residencia delivers
food to “Caritas”, a local charity, 4 times a year for a one
week duration. This is a commitment to the community
that the hotel’s employees carry close to their hearts.
There are of course many more areas to consider to
enable the hotel’s management to optimize on environmental issues, hence highlighting the importance of the
hotel’s employees, who are able to assist by focusing
their efforts towards caring for the environment. Training
sessions are held periodically at the Grand Hotel to
ensure the self imposed ”Quality and Environmental
Issues Policy“ is adhered to. A daily transport service has
been provided which collects the staff from their homes
and takes them to the hotel and back to their homes at
the end of their shift, in this way each member of staff is
directly contributing to caring for the environment. In the
staff room there is a notice board where staff can make
suggestions or write down ideas they have to help care
for the environment. As a direct result of these ideas new
projects are to be implemented in the future. ”Clean up
Day“ for example, a day that will be spent cleaning the
hotel car parking areas. A joint project has been created
in collaboration with the diving school in which rubbish
and waste will be removed from the seabeds and
disposed of accordingly. Another of the ideas proposed
is for the 3 hotels of the Seaside chain in Gran Canaria to
organize a day dedicated to caring for the environment.
Clients can find out more about the environmental
projects being undertaken by the 5*L Hotel in the reception area where there is a notice board with all the relevant information. Clients are also encouraged to
participate in a bicycle excursion, with the Hotel Director.
This provides clients with the opportunity to discover the
wonderful scenery on the island of Gran Canaria in an
environmentally friendly way!

Figueroa said “I do” on the 30th
of May 2009 in Gran Canaria.
For three days Birgit and Theo
Gerlach celebrated together with
nobility, politicians and high society
guests, the church wedding of their
daughter Anouchka to Spanish born
Felipe Figueroa. Tying the knot in the
church of Santa Lucia de Tirajana
was the culmination of an extraordinary wedding.
The couple first met in London and
then again in 2005 whilst skiing in
Gstaad – where the romance began.
Four years later, a dream wedding
has taken place in Hamburg and
Gran Canaria. The celebrations were
spread out, as the family is directly
connected to the hanseatic city and
to Gran Canaria through their hotels.
For Felipe the wedding in Spain was
on home ground, as his family
are descendants of the Spanish Aristocracy, his father is the legendary
jockey Carlos Figueroa Marques de
San Damián. The couple live in
London where Anouchka works
successfully in hotel consulting and
Felipe is an investment banker.
On the 14th of May, after the civil

Altona in Hamburg, Birgit and Theo
Gerlach invited their guests to a
reception and cocktail. Approximately 180 guests celebrated the
civil “I do” ceremony in the beautiful
garden of her parents’ home in the
hanseatic city. The church wedding
followed on the 30th of May with a
banquet for 300 international guests
on the island of Gran Canaria. The
celebrations took place in the
families hotels on the island, the
Seaside Grand Hotel Residencia and
the Seaside Hotel Palm Beach.
Among the highlights of the 3 day
celebrations beneath the Palm Trees
is the stylish 70’s style dinner, the
perfectly decorated tables with
round candles and bright colours. An
island tour with picnic, a typical
Canarian dinner and the Black Tie
Gala Dinner on the night of the
wedding left the guests speechless.
To finalize the festivities a farewell
brunch was held at the Grand Hotel
Residencia.

Professional palm tree cutting is hard, dangerous and
requires a high level of concentration. – We accompanied
the palm tree cutter Antonio David Reyes Garcia (34)
during a hard day’s work. A native Gran Canarian, this
profession is in Antonio’s blood almost since birth. Many
members of his family have also dedicated their lives
to this profession, converting this into a tradition for
Antonio’s family. For almost 12 years now he has spent
many of his days looking down from a dizzy height.

Why is it necessary to cut palm trees?
Palm trees are cut mainly for safety reasons. Due to the
wind and climate the old palm tree leaves wither and if
these fall of their own accord from a height of 10 or 12
metres it could be dangerous. The leaves have thorns on
their stems and very sharp edges which could easily cause
an injury. In the past, the cut palm leaves were used by
artisans to make bags, baskets, etc. …
How often is it necessary to cut a palm tree?
Depending on the tree, once or twice a year. For the
Canarian palm trees once a year is enough, in comparison the Mexican trees need cutting twice a year.
How often can our clients see you in one of Seaside’s
palm trees?
Usually once a month, due to the decomposition of all
the trees leaves not occurring at the same time, it is not
possible to cut all the palm trees on the same day.
What equipment do you need?
My basic equipment includes shoes with spikes, which

help me to grip, in addition to a helmet, protective
glasses, gloves and a type of belt to protect my
kidneys. For cutting I use a type of axe which is similar
to a machete. It is also very important for my safety to
tie a rope round my waist which is then wrapped around
the tree to prevent me from falling to the ground.
With how many kilos then do you climb up the palm
tree?
It is quite a few in total, between 7 and 8 kilos. You can
only get to the palm trees’ leaves step by step. This occupation puts a lot of pressure on your knees and you have
to be physically very fit.
What is the most complicated part of your job and has
anything ever happened to you?
The hardest part is getting down. Especially when there is
strong wind or the trunk is damaged. These elements can
make the descent more difficult. Until now nothing
serious has ever happened to me, although scratches and
slight injuries are inevitable.

Swing, seesaw, climb ...
The outside play area promises no
end of fun. A sand pit, a colorful
climbing castle, swings, a slide and
seesaws, everything you could imagine to ensure great adventures. In an
area that exceeds 600 m2 the little
ones can play to their hearts content.
Paddling fun
A children’s pool was built as a complement to the newly renovated and
heated babies’ pool. Equipped with a
slide, a colorful fish mosaic and all
kinds of water toys, the kiddies can
splash and jump around as much as
they like. Also, the child minders very
often organize a variety of games.
A spacious new children’s play area dedicated with loving care to the little guests at Seaside
Hotel Palm Beach in Gran Canaria. A baby pool and children’s pool, a new Club House
and a big outdoor activity park for fun games, splashing around and letting off steam!
Seaside Hotels have paid a lot of attention to detail to make the little Seaside guests’
heart beat faster during their holidays. At the beginning of 2009 the new children’s
play centre was inaugurated. A Paradise for children has been created with pools,
infinite games to play and a mini club, all tucked away in its own special secluded area
of the hotel.
Pepes Club
In the new mini club the children’s mascot awaits: Pepe the Seahorse! He is quite a
cheeky little Seahorse and will welcome the kiddies each day from 10.00h to 12.00h
and from 15.00h to 18.00h. In Pepes Club you can paint, colour, do crafts and even
watch a film. Our child minders will of course make sure that the children have lots
of fun.

Entertainment programme
for all ages
There is a year round activity programme for children from 4 to 8
years, and a separate programme for
older children and adults. Both programmes are full of fun, games and
sports. For the younger children
there is a mini disco in the children’s
pool area, face painting, Cowboy
and Indian games, Pirates Day or a
hotel rally and circus games. One of
the most enjoyable days is the weekly walk with the brightly lit lanterns
they have made during their stay.
They also learn all about the sea life:
fish, shells and the enormity of the
sea – accompanied by our child minders they can enjoy a beach safari.
The Hotel also organizes excursions
to Palmitos Park and Go-Karting
(paid for separately). The sports and
activity programme for children from
8 years of age comprises of silk
painting, felt craft, bowling, darts,
shuffleboard or bingo and poker
nights. They can also go hiking; learn
about posture and participate in the
aqua-aerobics amongst many other
activities.

The organization “Africando” was founded in Gran
Canaria in the year 2004 and was officially registered on
the 15th of April ONG number 5,710. Today “Africando”
has 50 members that have taken it into their hands to
do something to alleviate at least some of the poverty on the neighboring continent. Their goals will be
achieved by the means of grants and contributions
which will be donated mainly to the education sector.
For example:
Since 2004, the organization gives financial support
for young women in Cameroon to learn hairdressing and
sewing skills.
In Gambia, during 2004, 2005 and 2006, more than
2000 kilos of school material, children’s clothing
and medications were distributed to the “Mandinari”
school, the “Jones Nursey” health centre and the “Royal
Victoria” hospital.
In Mali, “Africando” has built nurseries and schools
together with the ONG Assoprofen that is located in the
suburb of Niamakoro in the capital of Bamako. In the
years 2006 and 2007 the nursery school ”Les Petits
Anges I” was founded. School materials and toys were
bought and the rent was paid. In addition to this, 16
of the poorest school children were supported. In the
years 2007/2008 the second nursery school ”Les Petit
Anges II” and the primary school were founded.
Sandy Beach collects money for
”Africando”
Every year, the Hotel Sandy Beach
collects money for the people of
Africa.
In the month of November 2008
they began a new initiative. Together
with the organization “Africando”
they organized a raffle from which
the benefits were donated to Africa.
Hotel clients could buy tickets that

cost 5 Euro each. To ensure the
sale of as many tickets as possible,
there was the possibility of winning up to three prizes. The first prize
was one week’s accommodation in
the Hotel Sandy Beach. This yearly
commitment is attributed to the caring nature of Mrs. Ursula Matas
(Director of the Hotel Sandy Beach),
Mrs. Emi Sidler and Mrs. Sylvia
Bächtinger. Mrs. Sidler and Mrs.
Bächtinger are active members of the
organization “Africando”, which for
many years has been concerned
with the welfare of the African people and they personally take the
money that is collected to the black
continent.
In the same way, “Africando” took a bus from Dakar
to Mali, by land and by sea, to be used for medical
services.
Two months ago the president of the organization,
Daniel Perez Creus, was in Mali again. While there,
he inspected the projects that “Africando” have undertaken in 2008, such as the donation of a jeep for hospital
transport, the electric supply being connected to a
small village, in addition to other last minute new
projects that were undertaken. To enable more new
projects to begin, approximately 5000 Euros were
collected on the 10th of November 2008 by the Hotel
Sandy Beach. In one week, hotel guests bought almost
1000 tickets to support the people of Africa. The raffle
took place the following day in the pool-bar. The three
winning numbers were taken out. An accident or
destiny? The first prize – one week’s holiday at the
Hotel Sandy Beach – was won by Mr. Hans Finkbeiner
who is the baking advisor of the Seaside chain in
Gran Canaria.
Mr. Finkbeiner has his own bakery in Switzerland and has
given much advice to the bakers of the Hotel Sandy
Beach during his stays. You can find “Schweizer Zopf”,
amongst other typical Swiss patisserie in the hotels from
Seaside.
Mr. Finkbeiner was very proud to have had his number
chosen from the 1,000 tickets. For this reason, he is sure
to buy more tickets the next time. This raffle will take
place again in the next years as the benefits are donated
to a minority population on our neighboring continent
and in this way we can contribute to improving the life of
these people.

The Miniclub in Seaside Hotel Sandy Beach – Dear children, our seahorse, the Seaside
Hotels mascot is waiting for you! This little blue blow-up seahorse will keep you
company in the swimming pool, in the mini-club, in the playground and at the
mini-disco.
You will have great fun every day, from Monday to Saturday with all your new friends in the
mini-club. After having breakfast, at 10.00 o’clock we begin with our themed days, for
example one day is “the Olympic day”, with competitions, games and the possibility to
collect points. In the evening, you will receive the diplomas that you very much deserve in a
wonderful prize giving just before the mini-disco starts. At 19.30 hours the seahorse is going
to join in the disco fun. But before moving your feet and swinging your hips you need some
energy, the restaurant is ready; there are spaghettis, french fries, and pizzas especially
prepared for you! But this isn't all; on “Hawain Day” you can make flowers, on “Colour
Day” you can enter a competition. “Who can paint the nicest picture?”, or on “Party Day”,
you are sure to have a great time. There are lots of ball games to choose from, such as football or ping-pong and every day at 13.00 hours – freshen-up games in the swimming pool.
At Christmas Father Christmas will come to visit us with a Canarian Folklore group and
his big sack full of presents, but only if you have a poem or a lovely song ready for him.
At Easter the Easter Rabbit pays us a visit and while you are all busy in the mini-club he goes
to hide the eggs all around the hotel so that afterwards you can all go crazy looking for

As a result of the enormous amount of positive appraisals
the hotel received in the last year, on the 5th of March
2009 the Seaside Hotel Sandy Beach received their prize
at the ceremony that took place in the Hotel Villa del
Conde Resort & Thalasso. The evening began at 21.00h
when the Spanish hotel representatives were received
by Holidaycheck. Throughout the evening a selection of
delicious delicacies from the buffet were served, and
all the guests were able to relax and enjoy the evening
with time to chat in between the awards being presented. The awards ceremony was presided over by Dr. Axel
Jockwer, Communications and Marketing Director of
Holidaycheck.com. At approximately 22.30h, he presented the prize for Seaside Hotel Sandy Beach to the hotel’s
Director, Mrs. Ursula Matas. After a few words from Mrs.
Matas he proceeded to read a selection of clients’ comments regarding the Seaside Hotel Sandy Beach. After all
the awards had been presented, the party continued with
wine and tapas served on the terrace. Guests from the
hotel, tourism and gastronomy sectors exchanged pleasantries and enjoyed the rest of the evening in a relaxed
and friendly atmosphere.

Papas arrugadas
Mojo verde y rojo
A highlight of the Canarian kitchen is the most typical of
all the Canarian sauces: “Mojo”. It differs in many
respects from the “Salsa”, which is typical for mainland
Spain. There is no fixed recipe for the “Mojo” sauce.
Each restaurant has its own variety. The especially spicy
“mojo rojo” is perfect with “papas arrugadas”. The
“mojo verde”, which is made with a larger variety of
herbs and is more aromatic, is usually served with fish.
The First Commandment:
Discretion
Papas arrugadas – Canarian wrinkled potatoes
500 g of small potatoes · 10 g of sea salt for each litre of water
Wash the potatoes with their skins and cook as normal in
the salt water. When the potatoes are cooked, drain
away the water and leave the potatoes in the pan on the
stove, shaking gentle, until they are wrinkled and covered
in a crust of white salt.
Mojo rojo – Red “mojo” sauce

Head Concierge “Juan José Ortega
Peña”. For more than 30 years he
has been the soul of the place.
Always elegantly dressed, always a
smile on his face and “discretion” as
his top priority – as a result of these
qualities he is highly valued and
respected.
His working life began in his birth
place, Las Palmas de Gran Canaria.
After contributing to the opening of
a variety of hotels in the capital, he
arrived where he is today, Hotel Palm
Beach. Inspired by the high quality
customer service, he knew at once
that he had found there his true
vocation. That was exactly 33 years

ago, and today at the age of 63,
he still remains as passionate about
his work as on the first day. As Chief
Concierge of this hotel, member of
Design Hotels, he is responsible for
10 doormen and buttons. Together
with the other members of management, Sr. Ortega is responsible for
fulfilling the requests and needs of
his clients. He could tell many an
interesting story, finding guests that
had got lost during a hiking excursion or organizing the necessary
documentation for a wedding that
was to take place in the Hotel. His
daily tasks include booking flights,
providing information on things to
do and places to see whilst on the
island, golf bookings, limousine

time, this much cared for Head
Concierge enjoys long walks in the
Islands incredible countryside. Not
forgetting of course – his passion –
football and the team that makes his
heart race, it could be no other than

His recipe for success remains in the
respect he has for his profession:

objective, something that can only
be achieved by providing an individual and perfect service. What is more,
his commitment is substantiated
by the 2 gold keys that he carries on
the inside of his jacket, a distinction
that he received in 2002 from the
“Association of Doormen”. This
association’s emblem could not be
more appropriate – one key is to
open the doors that are complicated,
the other is for the doors that are
impossible.
1 red pepper · 2 red chillies · 2 fresh or dried tomatoes · 1 clove of garlic
1 teaspoon of cumin · 1 teaspoon of salt · 1 teaspoon of saffron (optional)
1 teaspoon of sweet or spicy paprika (of your choice) · 75 ml of vinegar
1 cup of olive oil
Purée all the ingredients together in the liquidizer. If the
sauce is too thin, it can be thickened by adding breadcrumbs. The most important thing is that it tastes good!
Mojo verde – Green “mojo” sauce
3 bunches of fresh green parsley · 1 bunch of coriander · 1 green pepper
4 cloves of garlic · 2 teaspoons of salt · 2 teaspoons of freshly ground
pepper · 1 teaspoon of dried thyme · cup of red wine vinegar · cup of
olive oil
Blend all the ingredients together with the vinegar and
olive oil in the liquidizer until it becomes creamy. In case it
is too thick, 1 or 2 teaspoons of water can be added.
Now taste and season if necessary.

”Der junge Wilde“
in the Seaside Hotel Palm Beach. At just 25 years of age, Michael Wolf
was the winner of the prestigious cookery competition “Junge Wilde
2009” (“Young Savages 2009”) in Vienna.
The kitchen has always inspired this young man, born in
Vorarlberg, Austria. When asked why he became a chef
he always replies: “while the other children were playing
with tractors, I was making mixtures with ketchup and
obliging my parents to sample the dishes”.
At the age of 15, he began an apprenticeship in the Austrian Romantik Hotel Schwarzenberg. During his three
year apprenticeship, the chef Jochen Pölz convinced him
of the importance of discipline and training and made
him see – the financial reward would come later.
Fillet of red mullet
with mediterranean
vegetables
Recipe for 2 persons
Red mullet: approx. 180 g · Vegetables: 1 pepper, 1 aubergine,
1 courgette · 30 g flageolets · 1 medium sized potato · Sauce:
balsamic vinegar / olive oil
Buy the red mullet filleted and with the bones removed
from the fishmongers. Cut the vegetables into small
bite-sized pieces and lightly grill. Remove the flageolets
from the pods and cook in a pan with a knob butter. Peel
and grate the potatoes then soak for 30 minutes in cold
water. Remove potatoes from the water, dry and fry in
oil. Lightly cover the red mullet with flour and fry in oil.
First place the grilled vegetables in the middle of the
plate, the red mullet is placed on top of the vegetables
followed by the flageolets. Place the potato nests on the
side of the plate. Mix together the balsamic vinegar and
the olive oil and then spoon over the dish. In addition,
you can use fresh parsley to decorate the plate if you like.

Michael Wolf’s first employment was in the Hotel Bareiss,
in the 3 star restaurant of the same name. He says this
was purely a stroke of luck, destiny placed him on the
path towards the pinnacle of the gastronomical world.
Following this experience, he began to work in “Villa
Cioia” in Portugal, where he met Dieter Koschina, who
he still considers today to be his mentor. In Portugal he
was able to develop and build on his abilities. He also
discovered other aspects of this world: between 12 and
16 working hours daily, low salaries, total discipline, in
other words pure passion for the art of cooking.
Led by his present boss, Chef Richard Nussel, Michael
Wolf arrived at the Seaside Hotel Palm Beach on Gran
Canaria. Since 2008 he prepares delicious culinary
delights in the specialty restaurants “Orangerie” and
“Trattoria” which belong to the only Design Hotel member on the island.
In 2009 he participated in the “Junge Wilde 2009” competition in Viena. This competition takes place yearly
during the Gastro Fair “Alles für den Gast” (Everything
for the client). In front of hundreds of cheering spectators, with a razor-thin lead, he won the most coveted
culinary award in Europe! The motivation behind
his participating is his interest in the kitchen of “El Bulli”
– the best restaurant in the world – an internship in
this famous restaurant is the prize for the winner.
The next step in his career has already been defined;
he will work in the OUD SLUIS Restaurant in Holland,
another exciting challenge, although it is with great
regret that he will leave behind the Seaside Hotel Palm
Beach.
When you stop for a moment and observe the career to
date of this young chef, you may ask “What is his
secret”, to which he responds: “You have to show interest, be constant, very disciplined and never lose your
sense of humour.”
His dream? One day, a Michelin Star ...

The new desire for meat: From fusion comes
[m]eatery in SIDE Hotel Hamburg
”Meat and Eat”, is the new motto from the SIDE
Hotel’s restaurant in Hamburg.
The [m]eatery concept: quality meat dishes served in a
modern steakhouse environment. Only the tenderest
cuts of Argentinean, American and German meats are
served. The quality of the meat at [m]eatery stands out in
addition to the traditional maturation process of German
beef in the restaurants own maturation rooms and the
unique way the steaks are grilled in a special infrared
oven. Not forgetting of course the restaurants Tartar
menu, the specialty burgers and the exclusive selection of
drinks.

The quest for the perfect Steak
Juicy, soft, pink, medium/rare – on the quest for the
perfect steak there are many factors to be taken into
account. Firstly is the quality of the meat. In the steak
world the general opinion is: ”The fatter the better”, a
piece of meat streaked with fat is always juicier, more
tender and tastier than a piece of lean meat. The best
pieces of steak come from the tenderloin, the part of
the back that has no tendons and is full of muscles. The
various names for the cuts of meat such as Rib-Eye,
T-Bone or Filet Mignon indicate from where the cut of
meat has been taken. ...

more tender and tastier. The thick outer layer of fat which
is removed before cooking ensures the meat does not
lose any moisture.
After the maturation process, the cooking method is
decisive in serving a first-class steak. The piece of meat is
taken out of the maturation room; the steak is sliced with
great care after which it should be allowed to rest for 30
to 45 minutes. For a steak to be perfect it must reach
room temperature prior to being cooked. Coated with
butter and seasoned with fleur de sel it is cooked for a
short time at a very high temperature. The infrared oven
“Southbend” imported from America heats up very
quickly to a temperature in excess of 800º Celsius. In two
to three minutes the meat is ready. As a result of the
shock heat, the meat retains every last drop of its juices
and at the same time is incredibly tasty and crispy on the
outside. The steak is then served to the client on a hot
plate with clarified butter.
It isn’t just Meat ...
In addition to fillets of fish, there are 18 specialty types
of Tartar. Eight of the variations are with meat and fish,
in addition to two vegetarian options. Depending on
which guest prefers, there are 4 flavours to choose from:
Classic, Mediterranean, Oriental or Asian. A selection
of specialty hamburgers enrich the extensive menu –
BBQ Bacon Burger, Avocado Burger, Tuna Burger or
Hamburger “á Cheval”. All the sauces, butter and oils
are freshly prepared. The varieties include chilli, lemon or
lobster flavoured oils, in addition to tomato, herb and
curry butters.
If the meat is processed quickly and accurately, nothing is
lost from its quality. Another important role is played by
the correct seasoning and preparation of the meat in an
infrared oven.
In the [m]eatery steaks from Argentina, America and
Germany can be found. Argentinean meat matures in its
own juices as a result of the vacuum-packaging that is
employed. Both the American meat and the pasture
grazed Husumer beef undergo the more costly method
of dry-ageing. The American meat is dried and matured
in America whilst the German meat is dried and matured
in the restaurants own meat maturation room.
According to the traditional artisans of Husum beef, the
meat should hang on the bone in the maturation room
for a minimum of 30 days with a humidity of 95% at 1 or
2 degrees Celsius until it is ready. During the dry-ageing
process the muscle protein is decomposed by the meats
own enzymes, when this process is complete the meat is

as an accompaniment and the sauces to go with it.
Home-made French fries, mushroom risotto “Carnaroli”,
herb and shallot puree, in addition to grilled corn on
the cob and onion rings fried in batter. The starters
and desserts are also a difficult decision. On the menu
there is a choice of Quail, Carpaccio, the original
[m]eatery Beef-tea or Coupe Denmark, Brioche Cocotte
or Zabaglione.
With the new food concept the restaurant has also been
given a face-lift: the refurbishment has made room for
110 services in comfortable leather chairs and benches.
Pastel green contrasts with the dark wood of the floors
and wall coverings. Two enormous collages undoubtedly
attract attention; the combination of leathers brings
together the different shades of green and brown of the
restaurants décor. ...

The [m]eatery Bar
The Bar has also been given a cure of colours: The new
benches and bar-stools have been covered in silvery
leather, the benches are various shades of green and
the curtains are pistachio green velvet. In the evening,
the green table lights add an unusual touch to the
decoration.
The wine list specializes in the same countries as the
meats originate from: America, Argentina and Germany.
Traditionally meat is accompanied by (but not limited to):
wine; stronger drinks are also acceptable.
Discover Classical Cocktails, made with unusual, quality
ingredients. Only freshly squeezed juices and top brands

Birgit Gerlach, Senior Manager of Seaside Group
is well known for her social commitments. Twice
a year, she invites a group of high-caliber distinguished guests to the SIDE Hotel in Hamburg to
collect donations for charity funds.
The “Ladies Lunch” that she organizes is legendary – this
took place in the year 2009 for the fourth time. Every
year, approximately 130 business women and high
society ladies receive an invitation for this enjoyable get
together and to make a donation. Famous names such
as Dana Schweiger, Alexandra von Rehlingen, hairdresser to the stars Marlies Möller in addition to Heike
Jahr, Uta Hertz, Edda Darboven and Barbara Ángel
(formerly Herzsprung) are among the guests. At each
event the ladies are entertained by a popular artist –
to date, readings with Christian Quadflieg, Ralf Bauer or
Friedrich von Thun were thoroughly enjoyed. The events
are not just relevant on a social level but also seek above
all to have a charitable purpose. Money has been donated, for example, to the “Friends of the Hamburg
Symphony Orchestra”, “Friends of the Hamburg Heart
Centre”, and “Sternipark e.V.” an association that,
among other objectives, provides help to pregnant
women and care for babies and children in need. Each
year, more than 10,000 Euros is collected in this way for
cultural and social institutions.
Another highlight is the charity concert that is held each
year, given that both Theo Gerlach and his wife Birgit
Gerlach are great music lovers. As a result of their strong
ties with the city of Hamburg, they have supported the
players of the Hamburg Symphony Orchestra for many
years. Following the concerts in the “Hamburger
Laeiszhall”, Mr. & Mrs. Gerlach invite guests to a dinner
that they organize at the SIDE Hotel to encourage generous donations in a pleasant atmosphere. Throughout the
years, guests have enjoyed a night with Peer Gynt, a
concert with the orchestra director Andrew Bireyko, who
returned in the year 2005, in addition to a speech from
the new director Jeffery Tate.

The Villa Esche
The Belgian artist Henry van de Velde designed the
Villa Esche, an example of architecture which is comparable to the Kassberg, one of the largest art nouveau
and Wilhelminian quarters of Europe from this period.
Chemnitz boasts some of the most impressive buildings
and greatest industrial architectural achievements of
this era ever produced. The Villa was lavishly restored
and rebuilt between the years 1998 and 2001. Today, it
houses the first Henry van de Velde Museum and serves
as a leading venue for social and cultural events. Included
in the art exhibits at the Villa in Chemnitz are many of the
original furnishings that were designed for the house by
Van de Velde. The former dining room on the ground
floor and the music room could be mostly furnished with
original pieces. On the upper floor there is a permanent
exhibition in the bedroom, in the children‘s rooms and in
the bathroom providing an insight into the magnitude of
the Belgian artists work. In the year 1911, the house was
extended according to van de Velde‘s new plans resulting
in a more unified form. In 1945, Herbert Esche moved
out of the Villa and took with him a large part of the
furniture before the building was used as the Soviet
Military Command Headquarters. Later it was utilized by
the Ministry of State Security and then as a training
centre for the district Artisans‘ Society. After the reunification of Germany, the Villa Esche was returned to the
heirs of the Esche family. In the year 1999, it was purchased by the Land & Buildings Conservation Committee,
who in the year 2001, after the successful restoration
project, returned the Villa Esche to the public. The Villa
Esche remains today an important landmark on the European van de Velde route that passes through France,
Belgium, Holland and Germany.

The Esche Family
The young Herbert Eugen Esche, co-proprietor of the textile company “Moritz Samuel Esche” – met the Belgian
artist Henry van de Velde in the year 1901. In 1902, Esche
made a request to van de Velde, who at that time lived in
Weimar. Esche asked van de Velde to build him a Villa
that would represent a work of art. Van de Velde had
previously designed furniture for the apartment that
Esche lived in, in the area of Kassberg in Chemnitz. The
request from the textile manufacturer was the first that
the Belgian architect was commissioned in Germany. The
industrialist family Esche, whose roots go back to the
17th century, moved from Limbach to Chemnitz in the
year 1870. Johann Esche was responsible for the international success of the company with his invention of the
first ”Strumpfwirkstuhl” suitable for use in Germany.
Theodor Esche was appointed as a juror in the world
exhibitions in Paris and London. ...

The Architect
Van de Velde, around the year 1900, belonged to the
“shooting-stars” of the European art scene of this time,
something that didn’t escape the attention of Herbert
Esche. Van de Velde was known as a painter, designer
and art theoretician. With the commissioning of the Villa
Esche, the Belgian created a work of art comprising of
three floors with a total surface area of 500 square
metres. Van de Velde began to build the Villa in the year
1902 in front of the city gates at a slight elevation. The
building was conceived in such a way that the shape followed the function. The house was therefore built from
the inside out; this is noticeable for example in the elevated windows of the nursery. In all his commissions van de
Velde pursued his goal of combining functionality with
artistic-aesthetic. He wanted to create a new style of life
and strived to achieve a total reform of all the areas of
life that could be reached with his design. For his first
architectural commission in Germany, he designed everything for the Villa Esche: from the façade to the lay out,
the doors, windows, carpets, to the furniture, china and
silver. The garden belonging to the house was also included in his plans, even the pavements of the house were
lowered in such a way that the ladies of the house looked
as though they were floating along in their long skirts.

The Saxon Mozart Festival
Which was really his first opera? –
Many would probably answer:
“The Magic Flute” by Wolfgang
Amadeus Mozart. An answer
that is understandable as it is a
“Volksoper” (People’s Opera).
The “Volksoper” make up just a
small part of the comprehensive
and impressive works of Wolfgang
Amadeus Mozart, but that does not
prevent them from being considered
to be great works that are easily
understood and were enjoyable to
write.
Wolfgang Amadeus Mozart was
born in 1756, the seventh and
second surviving child of a family
from Salzburg. At the age of four,
together with his five year old sister
Maria Anna Walburga Ignatia, he
received his first class of music and
general education from his father.
By 1762, at just six years of age,
Wolfgang and his sister had already
played at concerts in Munich, Passau
and Vienna. Following the success of
the child prodigies in Munich and
Vienna, on the 9th of June 1763 the
family commenced on an extended
tour of Germany and Western
Europe, which lasted for three and a
half years, until their return to
Salzburg on the 29th of November
21 May – 06 June 2010
1766. World Premiers followed their
return, which included “The Obligation of the First and Foremost
Commandment”, composed by
Mozart at the age of eleven together with Michael Haydn and Anton
Cajetan Adlgasser, two much older
court musicians. Initially working as a
concertmaster and court organist in
Salzburg, Mozart became a freelance
composer in 1781. On the 30th of
September 1791, a few weeks after
the premier of “The Magic Flute”,
Mozart became bedridden, and at
01.00 on the morning of the 5th of
December he died and was buried
the following day. He was not quite
36 years old. Despite his young age,
Mozart left behind him a rich musical
legacy, which still today is an inspiration to people from all over the
world. Mozart’s ample musical legacy
prompted the Saxon Mozart Society
from the year 1992 to organize the
yearly Saxon Mozart Festival. This is
the largest classical music festival
to take place in the Free State of
Saxony. Once a year, Chemnitz –
the modernist city – becomes a magnet for classical music lovers from
Germany and from across Europe. A
contradiction in terms? Only at first
glance. The fact that Mozart is still
today considered to be contemporary is displayed in the select group
of artists that are his following and
the exquisite venues that host his
works. International artists showcase
their skills in over 50 events in the
genre of chamber music, lectures,
symphony orchestra concerts, opera,
and of course in the modern implementation of Mozart’s works.
In the spring of 2009, a three year
network of festivals dedicated to the
life and works of Mozart begins.
“Mozart Network I” – the first year
asks what Mozart currently signifies and what it is that still fascinates the audience today. “Mozart
Network II” – in 2010 a retrospective
of 200 years of Mozart. And in the
year 2011, “Mozart Network III” – a
study of the role that Mozart plays in
the lives of future generations. For
the organization of this network,
national and international partners
and organizations were sourced with
the purpose of exchanging ideas.
Chemnitz no longer needs to hide in
the shadow of Bach’s baroque city
of Leipzig. Not without reason
Chemnitz has been affectionately
named the “Saxon Bayreuth”. The
Chemnitz Opera in particular is well
known outside of the city. It is well
worth a visit for all the friends of the
classics.

Approximately 10 years ago, Prof. Dr. Werner Schneider,
a great lover of Leipzig and its music, had the idea
of making people aware of this musical treasure and
founded the Leipzig Music Trail Initiative. The goal was
to initiate a selection of music orientated walks around
the city. The initiative evolved over the years into a
network of associations, cultural institutions, universities,
Leipzig Tourismus und Marketing GmbH and individuals
in addition to prestigious music institutions such as
the “Thomanerchor”, (Thomaner Choir), “Gewandhaus
zu Leipzig” (the Gewandhaus Orchestra), the “MDR”
symphony orchestra and the Leipzig Opera. The principal
objective of this initiative is to generate public interest
and highlight the exceptional music tradition in Leipzig.
Three different tours have been developed to date, by
which you can explore the unique musical treasures of
Leipzig on foot or by bike.
On completion of the “Leipzig Music Trail” in 2010, the
homes and places of work of the city’s most important
composers will be connected. The route extends over
5.1 km and can be explored on foot. The stainless steel
strips embedded in the pavements serve as a guide
along the routes. Their design was inspired by the poem
“Er ist’s” (It’s Him) by Eduard Mörike and set to music by
Robert Schumann in 1849.
The ”Leipziger Notenrad” (Music Cycle) is a 36.6 kilometers long ”musical” bike ride. It consists of an eastern
and a western loop which terminate in the city center.
The bicycle tour combines historically interesting musical
places and extensive green areas along the waterways
and through the suburbs of Leipzig.
For the future, there are plans to host music events from
jazz to rock under the name ”Notenszene” (Music Scene)
as an open exchange platform. The live music scene is
fundamental in shaping the face of music for the city of
Leipzig.
Kamprad publishing house has released a pocket guide
that brings together the previously dispersed information. The Illustrated Music Trail Guide provides in a
concise format the 23 places of interest of the future
loop trail ”Notenspur” (Music Trail), including the 16
places of interest which comprise the complimentary

Few cities in the world have a musical legacy equivalent to that of Leipzig, where there is
a unique concentration of original residents and the work of famous composers. From
Telemann to Bach, Mendelssohn and Schumann, Wagner, Mahler and many other great
composers; all have left their mark in Leipzig. To experience the 300 years of musical history
that exists in this city three “musical” adventures have been created “Notenspur” (the Music
Trail), “Notenrad” (the Music Cycle) and “Notenbogen” (the Music Sheet).
Worldwide legendary musical history can be experienced in Vienna or Leipzig. Leipzig has
been influenced by greats such as Johann Sebastian Bach, Edvard Grieg, Albert Lortzing,
Gustav Mahler, Felix Mendelssohn Bartholdy, Clara and Robert Schumann, and Max Reger.
Leipzig is unique in its concentration of composers.

The blue ribbon that is described creates association,
joins together and conveys messages. For this reason, the
idea of the blue ribbon to mark the route originated.
There are signs, panels and interactive music stations in
English and German along the way and audio guides can
be downloaded from the internet.
The “Leipziger Notenbogen” (Music Sheet) is a complementary ”musical” walk, 5.0 kilometers long, that runs
west through where the city and parks of Leipzig began.
The focus of the Music Sheet is the late nineteenth
and early twentieth centuries’. Amongst the places to
visit can be found: the Old Town Theater, the former
Blüthner piano factory the Synagogues, Apel Garden and
Gottsched Street.

The company ”Leipzig Tourismus und Marketing GmbH“
(LTM) is supported by many industry representatives and
is the official marketing organization for the city of
Leipzig. Utilizing a diverse variety of marketing and PR
activities they target for example: tourists, company
managers, potential investors, students etc. to promote
interest in Leipzig to hold meetings, congresses or as a
base for company headquarters. The event and convention business is of particular interest as this industry
segment represents over 70 per cent of the volume of
overnight stays in Leipzig. LTM work very closely with
representatives from the tourism industry such as the
hoteliers and restaurateurs to ensure that guests to the
city enjoy a perfect stay. Seaside Park Hotel in Leipzig has
been an important partner for many years. LTM have
approximately 30 employees in addition to a number of
apprentices and temporary staff throughout the year.
Interview with Mr. Volker Bremer,
Managing Director of “Leipzig Tourismus und Marketing
GmbH” – The development of the city of Leipzig as one
of the largest and most important tourist destinations.
Mr. Bremer, you have been the Managing Director
of “Leipzig Tourismus und Marketing GmbH” since
2006. Could you give us a brief description of your
professional life until the year 2006?
After studying economics in Hannover, I worked for 10
years in the marketing and distribution departments of
two well-known brand name companies. Following that,
I was self-employed for 8 years as an independent business consultant. The consultancy work led me to Leipzig.
One of my biggest clients was the Leipzig Zoo, where I
was responsible from 1998 for the marketing, and
throughout the course of the years was responsible for
various projects and interim operations.
Mr. Bremer, what in particular influenced your decision to return to live in the city of Leipzig?
First of all, the exciting new role as CEO, presented me
with the possibility to integrate tourism and marketing in
one association. My family was also very quick to become
enthusiastic about the move to Leipzig. It is such a beautiful city with its wonderful Wilhelminian architecture and
the historic city centre, the impressive leisure and cultural
activities, they all speak for themselves. Not forgetting of

course, the greenness of the surrounding areas and the
new developments of lakes etc. As you can see, there are
so many positive attributes to speak of with regards to
Leipzig. It is particularly worth remarking on the people
of Leipzig, their pride, their openness and the impressive
history that accompanies them.
Leipzig is especially characteristic for its diversity. In
your opinion which are its most significant features?
The city of Leipzig is alive thanks to its variety, although
this quite often makes the marketing difficult. Leipzig has
a real “luxury problem”. It is a priority to position the city
as an important city of music. Just think of the composers J. S. Bach, F. Mendelssohn Bartholdy, R. Wagner,
R. Schumann and the active music ambassadors of
Leipzig, such as the Gewandhaus Orchestra and the
Thomaner Choir. There is additionally the age-old tradition as a trade fair and congress city. Leipzig is also in a
leading position as a university city with a 600 year old
tradition. This is followed by the art and the historical
highlights, such as the Peaceful Revolution of 1989 and
the Battle of Nations. There are also the numerous historical personalities such as Goethe and Schiller. And just to
round off, there are the varieties of recreational activities
in the city of Leipzig; some examples of these are the
Leipzig Zoo, the “Neuseen Landscape”, the many parks
and the excellent shopping facilities.
What are the objectives of LTM with regards to
the planning, production, coordination and distribution of tourist information in Leipzig, What do
you consider to be the main concern of LTM?
Tourism is a crucial factor for the economy of Leipzig.
Starting from there, prosperous tourism is imperative for
our city to be sustained. For us at LTM this means we
have to be better than our competitors, create reasons to
travel, make creative publicity and convince guests to visit
Leipzig. This is an enormous challenge for me and my
staff; one that we want to succeed in together with the
service providers of the city of Leipzig.
Where do the majority of Leipzig’s visitors come
from?
Approximately 80% of visitors come from Germany and
20% from abroad. The majority of our overseas guests
come from the U.S.A., the U.K. and the Netherlands in
addition to Austria and Switzerland.
This means that you should look to increase the percentage of foreign visitors. How do you and your
team go about acquiring global tourism for Leipzig
and in which markets are you currently active?
We are achieving excellent results in this area. In 2008
Leipzig had almost a 20% increase in international
guests, the largest growth of all the big German cities.
We work very closely with the German National Tourist
Board (Deutsche Zentrale für Tourismus) and we are now
much more active in foreign markets than before. We
hold international tourism fairs and road-shows in
Leipzig, in addition to tour-operator presentations and
media presentations; these all form part of our international repertoire. We frequently make use of “our”
Ambassadors of Leipzig, such as the Gewandhaus
Orchestra, the Thomaner Choir or the painter Neo Rauch
as a reference for international performances and exhibitions. Key markets include the U.S.A., U.K., Benelux and
France, in addition to the markets which are showing
positive development in Eastern Europe and Asia.
Leipzig has always been known as the city of fairs.
How do you assess the position and future development of Leipzig as a trade fair city?
The recipe for success from the city of fairs and congresses has been proven for more than 500 years and we
welcome the future with innovative and new exhibition
concepts. Over the last 20 years, a portfolio has been
established of some of the best fairs at an international
level. As two of the best and most modern congress
centres in Europe, the Leipzig Fair “Leipziger Messe” and
the “Congress Center Leipzig (CCL)” which are next to
each other, offer the appropriate framework for a variety
of event formats – from professional exhibitions, to public events, scientific congresses and corporate events to
major sporting and entertainment events. The increasing
number of annual trade fairs and congresses are proof of
their success.
How do you assess the role that is played by the
tourist industry partners in our city?
Only together are we able to achieve our objectives for
Leipzig. For this reason, we place a high importance on
the co-operation of the large and small service providers
of our city. Here, we have achieved together with our
partners a great deal, and we look forward to our mutual continued success. It is also very pleasing to not
just see an interest in the benefits, but also, how the
industry commits in financial terms to joint tourism
projects with LTM.
From your own point of view: What is your opinion
of the Seaside Park Hotel?
Firstly, the Seaside Park Hotel has an excellent location
opposite the main railway station and a very good pricequality ratio. Almost all the cities sights are within walking distance. The hotel’s beautiful architecture and the
tradition with which it is associated have to be remarked
upon and not forgetting the always friendly and charming manner of the Hotels Management and staff. Also,
the fact that there are many long serving employees in
the hotel with very extensive local knowledge of the city
who are able to pass on some special tips to guests.

A fascinating island tour

An excursion into the impressive world of the mountains
belonging to the third largest of the Canary Islands. After
just a few kilometres, you reach a vantage point,
“Mirador de Mosca”, where you can admire the diverse

combination of rough stone deserts with areas of lush
green vegetation scattered with innumerable coloured
flowers. A gorge runs beneath you reaching as far as
the Maspalomas Sand Dunes, the full extent of which
can only be appreciated from this view point. We then
continue through the picturesque mountain village of
Fataga, with its many palm trees and orchards, reaching
the second vantage point at San Bartolomé, with views
of Santa Lucía and Taidia. Having passed across “Cruz
Grande” you reach the centre of “La Cumbre”, where
the islands landmark and focal point can be found, the
1,817 metre high monolithic rock, “Roque Nublo”. The
“Pico de las Nieves” is crowned by “Roque Nublo” and is
the highest point on the islands with a total of 1,949 m
height, located in the geographical depression of Tejeda
which was formed by a sunken basin.
The second part of the tour will take you to the east of
the Island to the “Barranco de Guayadeque”. The
numerous archaeological sites and the still-inhabited
caves suggest that the gorge was once an important
Aborigine settlement. The stone church and maze-like
cave system are unique. There is now a restaurant located
there “Tagoror” (old Canarian: Assembly Square) in
which you can try the traditional Canarian kitchen, such
as vegetable stew, goats meat or Canarian wrinkled
potatoes “Papas Arrugadas” with red or green “Mojo”
(recipe on page 27). On the way out from the valley, the
road leads to “Agüimes” where there was once the seat
of the islands only priest who governed the island in the
name of the Spanish Crown. Having passed through the
important centre of ”Agüimes” the tour of this diverse
island ends.

The whole island of Lanzarote carries his stamp: César Manrique. He was born in
Arrecife in 1919 and left his distinctive mark on the volcanic island as an artist, architect,
sculptor and ecologist. As a result of his neverending commitment, the island was protected
from the wave of tourist development in the 70’s. He convinced the people of his sustainable tourism concept and remained strongly dedicated to his belief in the protection of
the environment. From the mid 1960’s, art galleries, culture and tourism developed
on Lanzarote, to which Manrique made a major contribution. A valued artist, César
Manrique “Adopted Son of Lanzarote”, died in 1992 as a result of a car accident. The
“César Manrique Foundation”, which houses a museum and exhibition centre, is located
in his home of Tahiche, and was his gift to the people of Lanzarote in 1992, part of his
legacy. The architectural master of Lanzarote left an artistic and cultural inheritance that is

The majority of visitors to the Canary Islands could not
begin to imagine the fruity wines that the arid lands are
capable of producing. The grapevines in Lanzarote grow
across the black ashen volcanic mountainsides, surrounded by semicircular walls of volcanic stone, which protect
the plants from the relentless northeasterly winds.
“La Geria” – the wine cultivation centre of Lanzarote –
accommodates in its approximately 5,000 hectares a
wine museum and multiple wine cellars where you are
able to sample the different wines. The crops spread from
San Bartolomé to the centre of the island, in an easterly
direction until the perimeters of the “Timanfaya National
Park”. In the south, “La Geria”, almost borders with
“Tías”, in the north with “Tinajo” and in the southeast
with “Uga”.
The formation of “La Geria”
The reason that an almost 5 metre thick layer of lava
exists in the vine-growing region of “La Geria” is a result
of the forceful volcanic eruptions between the years
1730 and 1736. Many villages and fertile lands were
buried beneath the ashes and lava of the volcano.
Through the centuries an arid and rocky landscape
emerged that the people of Lanzarote have learned to be
grateful for, as the volcanic stone is porous and retains
the humidity from the mist, the morning dew and the
infrequent rainfall, channeling it towards the roots of the
plants, preventing erosion and protecting it from weeds.
Additionally, the volcanic stone prevents heat conduction, which means that on the surface it can reach 60º,
whilst the volcanic stone prevents that these high temperatures reach the deeper layers and protect the plants
from drought. The first references regarding the use of
“La Geria” and the volcanic stone date back to the year
1740, when the people of Lanzarote began to utilize the
volcanic lava ashes as if it were a blessing. On the island
of Lanzarote, the trade-winds blow almost throughout
the entire year, for this reason in “La Geria” a ditch is dug
around the vines of between 60 and 70 centimetres
depth and a wall of stones is built around them. The
stones are piled one on top of the other with no cement
to hold them, this way of building is more an art form.

Route 1
Between the small shelters a gentle breeze blows which
keeps the plants cool and humid. This gave way to what
is today known as the “Enarenado”, the typical dryfarmed crops. “La Geria”, resembles the crater covered
lunar landscape due to its natural stone walls. In a
hectare between 300 and 900 vines can be planted, this
is not very profitable if it is compared to the between
3,000 and 5,000 vines that can be planted on the same
size of land on the Iberian Peninsula. The reason is no
other than the large amount of space that each plant
needs to be able to support its own water supply. ...

The grapes ...
“El Malvasia” predominates among the wines produced
in Lanzarote, a small grape of excellent quality that has
adapted well to its environment. It is a wine that is particularly popular in southern Europe and is available in both
red and white. The name comes from the Greek city of
“Monemvasia” in the Peloponnese. The balanced taste
and aroma of this high quality grape are qualities which
can be further appreciated in the wine. It is this specific
grape that affords the wine a white-gold colour. Other
types of grapes that are produced on the island of
Lanzarote are: Moscatel, white and red Listán, Diego,
Burra Blanca and Negramoll.
Route 2
Harvest time, wine tasting and sales
February is the vine pruning season, this ensures that in
the spring the new shoots appear. The grapes are traditionally harvested by the entire family at the end of July.
The Malvasías are the first to be collected for the production of dry white wine, followed by the dark Listán Negra
and finally the Malvasia for the production of sweet
white wine. In mid-August the Moscatel grape is collected for the production of the famous Moscatel dessert
wine.

In Lanzarote there are approximately 20 wine cellars
members of “Consejo Regulador Denominación de
Origen”, the organization responsible since 1993 for
controlling the viticulture in Lanzarote. Some of the
most famous wineries are “La Geria”, “El Bermejo”,
“El Grifo”, and since 2008 the new winery “Stratus”.
The family business “La Geria” harvest in the region of
15.000 kilos of grapes each year, “El Grifo” handles
between 500,000 and 700,000 kilos per year and the
“El Bermejo” estate sells, depending on the harvest,
between 250,000 and 700,000 bottles of wine each year.
Some of the wines are of such exquisite quality that they
participate in international competitions.

Visit the different wineries on the island and discover
exciting new tastes and smells. At just half an hour from
the Seaside Hotel Los Jameos Playa you can discover two
routes that lead to the vineyards and of course enjoy tasting the different wines along the way. Both routes begin

the renowned North American golf course architect
Ron Kirby, who designed the fairways to emulate the
island’s natural sloping landscape and integrate with the
picturesque surroundings. The environmentally friendly

7. Palm Beach
Eagles Golf Trophy 2009
On the 15th of April, the yearly “Eagles Golf Trophy” meeting got underway,
chaired by Jörg Wontorra and his Eagles – Charity Golf Club, dedicated to providing
help for people in need.
The patron of this year’s charity golf event was “Theo Gerlach”, Director and Owner of
the Seaside Hotel chain. Mr. Gerlach was extremely generous both financially and materially. Seaside provided the catering for the participants on the golf course, donated
the trophies for the winners of the tournaments, paid for polo shirts to be made and
gave prizes for the raffle.
The tournament’s first official game, on the 16th of April, ended with an elegant
dinner on the terrace of the Seaside Grand Hotel Residencia. The 120 guests were invited
to stay overnight in one of the 2 hotels which belong to the hotel chain in the south of
Gran Canaria, the Seaside Grand Hotel Residencia and the Seaside Hotel Palm Beach.

After the second tournament, the
“Blackberry Trophy”, a party was
organized for all the participants at
the Seaside Hotel Palm Beach’s Italian
restaurant “Trattoria”, where the celebrations continued until the early
hours. The following day it was
another early start, the competitors
were meeting this time at Meloneras
Golf Course to take part in the
“Ritzenhoff-Invitational” tournament.
That same evening, a Gala Dinner
and awards ceremony took place in
the pool area of the Hotel Palm
Beach marking the grand finale of
these first enjoyable days. A raffle
took place during the evening organized by Jörg Wontorra with prizes
reaching a total value of 50,000
Euro, including a week’s accommodation for 2 persons at the Hotel
Palm Beach donated by Mr. Gerlach.
After the warm up of the first tournaments at Salobre and Meloneras
golf courses, the tournament that
the participants had been waiting
for, the 7. Palm Beach Eagles Golf
Trophy Tournament, began. The location for this occasion was the famous
Maspalomas Golf Course, where the
natural beauty of the course with
the sand dunes of Maspalomas and
the sea in the distance was an inspiration to the players. In addition to
Stefan Reuter, Mike Krüger, Carlo
Tränhardt and Dieter Thoma there
was also Jürgen Hingsen, Max
Schautzer, Laurenz Meyer, Simone
Carrell, Jörg Berger and Rainer
Bohnhof. In the evening the participants were invited to a party in the
newly renovated 70’s retro style
Hotel Palm Beach. The guests came
dressed accordingly, multi-colored
bell-bottom trousers in true “FlowerPower” style. The odd extravagance
and occasionally grotesquely admirable piece did not go unmissed! As
fitting of the occasion, the music had
to be of the same era, the “Baccara”
orchestra and “DJ Winni Appel”
were hired to ensure this occurred,
and they achieved an authentic retro
atmosphere.
The following morning the second
part of the tournament continued, in
which Rainer Bonhof, the ex-trainer
and world champion footballer in
1974, displayed his skills at the game
and made off with the trophy.
To finalize the Eagles-Golf-Trophy a
party was held at the bar of the Hotel
Palm Beach. The initial donations
that had been collected reached
the amount of 27,000 Euro. Jörg
Wontorra encouraged guests to continue emptying their pockets! As if at
an auction, the guests began to up
their offers one after another. Theo
Gerlach made the highest bid donating an additional 10,000 Euro. The
amount raised – a total of 80,000
Euro – will be donated to 2 children’s
aid foundations (“Hansestiftung”
and “Stiftung Mittagskinder”) in
Hamburg.

HOTELS, occupies the third place of

After maintaining the position of
“Best Business Hotel” for three
years, in 2009 the SIDE Hotel in
Hamburg achieved first place in
the “Design Hotels” category in
Marecellino’s Hotel Report 2009/10.
German Business Travel Association –
Verband Deutsches Reisemanagement e.V. (VDR) is co-editor of
Marcellino’s yearly hotel report. Since
2005, the Design Hotel in Hamburg
has achieved top ratings based on
their clients’ appraisals.
In 2009, it was also confirmed by the
VDR, that SIDE Hotel in Hamburg
has been recognized as a ”Certified
Conference Hotel”, as a result of the

Well known German television
programme “Unter Volldampf”
was invited to Hotel SIDE
The exclusive products from the luxury French brand L’OCCITANE promise
extra special care for the skin. For
more than 30 years, the company,
whose headquarters is in the town
of Manosque, has created natural
beauty products that combine the
Mediterranean way of life with the
traditional production techniques of
Provence.
Five contestants fought during the
month of January 2009 for the votes
of the 20 persons invited to experience the exquisite culinary display
that was prepared for them in the
SIDE Restaurant in Hamburg. For five
evenings the contestants demonstrated their expertise; four nights
were spent in the kitchen, and for
one night they were responsible for
the service. The cooking enthusiasts
each put together a starter, second
course, main dish and a dessert.
Tomato and orange soup with
stuffed chickpeas, salmon trout with
horseradish sauce served on a bed of
chardonnay-kraut with red lentils or
sweet potato tartlets with mascarpone topping, quince Carpaccio and
grenadine consommé, to name just
a selection of the mouthwatering
dishes prepared.
Grand Hotel Residencia guests will
find in their rooms’ shampoo, shower gel, bubble bath, body lotion and
body scrub from the Shea Karité
range. Made with Karité nut extract,
from which the Shea butter originates, it is a natural moisturizer
which has been proven to contain
healing and regenerating properties.
In the suites of the Grand Hotel
Residencia, there are luxury bodycare products from Bulgari.
The sister hotel Palm Beach on the
other hand has opted for the freshness of verbena. The original home
of this mauve flowered and rough
edged leaf shrub is by the Mediterranean Sea. During the month of
July, the recently collected leaves can
be found in the Provence markets –
a fresh lemon scent can be perceived that is soothing for the body and
soul. All bathrooms belonging to
the luxury category have shower
gel, shampoo, conditioner and
body lotion from the product range
“lemon-verbena” of L’OCCITANE.

How do Dr. Schiefelbein and
his team interpret preventive
medicine?
Preventive medicine is integral medicine, from the stem cells to the
organs. The objective is to measure
and balance existing deficiencies in
addition to biochemical and genetic
