Editorial
Lakes and mountains; sun and snow; water and salt; leisure and hard work; tradition
and modernity; high-profile international events and local traditional events. This is a
region of contrasts. You cannot separate one from the other. They form part of a larger
picture which has been an inspiration for centuries: the Salzkammergut.
Sometimes know as the “tenth province of Austria“, its range of diversity in such a
relatively small area is unique. The Salzkammergut covers 67 crystal-clear lakes and
various mountain ranges.The region has been blessed with enchanting landscapes,
delightful valleys, and interesting people.
Although it may be geographically small it has a lot to offer. Searching out its many
distinctive features may be impossible in one life-time, but it‘s worth trying. To help you
on this quest we have gathered together a host of tips and stories. Also included are
recipes for you to try out, and a collection of the most popular events. Read about wild
artisans, via ferrata, and hiking with diving goggles; about operettas and the creation of
a Narzissenfest figure; about lakes, experiences, beautiful places, Advent markets, ski
slopes, cross-country trails, and a village magistrate; and of course, about the Emperor,
and “the spice of life“ that has bound this region together for thousands of years. Enjoy
life to the full, because that is what we do in the Salzkammergut.

the locals, each speaks its own language, and each
leaves you with a special feeling. They are unique and
distinctive, a bit like the people who live there; they have
character. Upper Austrian, Styrian or Salzburg. Honest,
distinctive, and elegant. The 76 lakes, scattered over the
three provinces, provide the Salzkammergut with a
colourful palette of watercolours. What‘s more is that
they all have drinking water quality.

Not difficult to find, but still an insider tip: Lake Irrsee in the Mondsee area.

TASTE THE
STYRIAN SEA
The Grundlsee is the largest lake in Styria and this is why it is also known as the “Styrian Sea“.
But the water is not salty, quite the opposite - you can drink it.
Lie on the pebble beach in Gössl, which sits on the narrow
eastern shore of Lake Grundlsee, and with eyes half
closed look across the lake: you will see the illusion of an
infinite horizon. It looks almost like the sea. The sound of
the waves gently rippling, the small container ship going
by (a small steamer named Rudolf or Traun), the icecream man says “Griaß Di“ instead of “Ciao“ and - then
when you open your eyes fully again - the horizon is

and Zlaimkogel, Backenstein, Siniweller or Gössler Wand,
this is definitely Austria and not Italy.

and clear, pale green by the shore, dark blue towards the

Crystal salt World in Strass in Attergau

The Crystal Salt World in Straß is a microcosm of well-being. Behind it are three ladies from Bavaria. They
work with positive energy and the natural salt from the Salzkammergut.

Hollacher explains about the natural salt from the

artificial iodine, mined by hand from the mountain, it

the foundations of life,“ she says. She is particularly

In the Salzkammergut, where the traditional crafts live on, the next generation of craftsmen are
ready and waiting in the wings: an oven builder, two violin makers, and a gentleman‘s tailor.

Building ovens is not easy work. But it‘s the only work that

a stone mason and tiler in Hallein, he completed his
military service and then started his apprenticeship in
Mondsee at 19. “I didn‘t want to train at home and be the
‚son of the boss‘.“ So Mondsee was where he achieved his
master qualification from the Kachelofen association. After
working in the family business for a year and a half, he
then decided to go it alone - as Rothschädl‘s Enkel. Quality

something. And that is what excites me about my job“,
says Rene Haselnus. The splendour of his work is
emblazoned above the entrance of his bespoke tailoring
company and shop. Inside: traditional local jackets,
waistcoats, trousers, and dirndls, along with clothing by
such names as Habsburg or Schneider. The main activity
is tailoring. The ironing machine steams, sewing
machines whir, patterns and fabric cover the large tables.
Custom made and unique
Since 1932, the men of the Haselnus family have tailored
clothes for men. Traditional and modern. In 2012 Rene

from St Wolfgang, Bad Mitterndorf, Bad Goisern, Lake Traunsee, the Attergau and Lake Fuschlsee. Try them out!

Holzknechtnocken

(Fried Dumplings)
(Lamb Dumplings)
(Wild Herb Strudel)
Ingredients:
320g wheat flour
½l water
½tsp salt
150g clarified butter
Ingredients (Dumplings):
600g floury potatoes
20g melted butter
50g breadcrumbs
30g flour
1 egg
mixed herbs
nutmeg
salt
Ingredients (strudel):
250g flour
20g oil
1 egg
salt
splash of vinegar
lukewarm water
Mix flour and salt together, add
boiled water to the flour mix and
knead to a dough. With wet hands
form dumplings (5cm diameter) and
cook in salted water for 8 minutes.
Melt the clarified butter in a large
frying pan (ca ½cm deep). Place the
drained dumplings close together in
the pan, forming a wreath (the
dumplings should stick together).
Brown on both sides and serve in the
pan. They go well with butter and
sauerkraut.
Or, for a sweet variation, place a
thick layer of blueberries (or thinly
sliced apple) on the cooked dumplings
and steam for about 10 minutes over
a low heat.
Recipe comes from Bad Goisern.
Holzknechtknocken were originally prepared by
forest workers. Best eaten with your fingers.
Ingredients (filling):
1kg organic lamb belly/neck
or
500g organic lamb shoulder &
250g root vegetables
2 eggs
garlic
rosemary, thyme, marjoram
pepper, salt
1 dash of red wine
Dumplings: Boil potatoes, peel
whilst hot, and pass through a sieve.
Allow to cool and mix with remaining
ingredients into a dough. Filling:
Season half of lamb & root vegetables
and cook for about 1 hour (use the
resulting liquid for a good lamb
soup). Roast the other half in the
oven at 180°C for about 1 hour.
Baste with a little red wine and keep
the gravy to serve with it later..
Mince the cooled meat and
vegetables together. Mix in the eggs,
adjust seasoning and form into small
balls. Freeze on a plate.
Ingredients (filling):

Strudel: Mix all ingredients together
(except for the egg) and knead to a
smooth dough. Leave to rest.
Filling: Blanch ingredients, chop
finely, season with garlic and rose
salt. Roll and stretch out the dough
on a cloth, spread with herb stuffing
and butter and roll up. Brush with
beaten egg and bake for about
30 minutes at 170°C. Serve in a clear
soup.

Lamb Dumplings: Wrap the frozen
balls in the potato mixture, pressing
firmly. Cook for about 15 mins in
boiling water until the dumplings
float. Serve with gravy and cranberry
red cabbage.

on spinach purée with spring onion
quiche, pearl onions, and

(Farmer‘s Doughnuts)
Ingredients:
50g butter
1 medium red onion
1 medium floury potato
4 celery stalks without leaves
2 handfuls of sorrel leaves
lemon juice
1/8 l sweet white wine
1 tsp salt
freshly ground pepper
pinch of ground nutmeg
1 tablespoon vegetable or meat
stock
1 egg yolk
3 tablespoons cream
Fry chopped onion in butter, add
diced potatoes and thinly sliced
celery. Add wine and cook gently for
about 15 minutes. Add the wellwashed sorrel leaves, cook for a few
minutes, then stir well with a whisk.
Add remaining ingredients, simmer
for about 12 minutes. Beat egg yolk
with the cream and stir into the soup.
Serve with bread (preferably baked
in a wood stove) .
Recipe from the Koptuchfrauen from St.
Wolfgang. From the book “Altbewährtes und
Neues aus den St. Wolfganger Kochtöpfen“
(“Tried and tested, and new from the St. Wolfgang
Cookpots“)
Zander ingredients: 720g
zander
Spinach Puree:
500g spinach, 200g floury
potatoes, 50g butter, 50g milk,
salt, pepper, nutmeg, sugar
Spring Onion Quiche:
Dough: 200g flour, 100g butter
salt, dried beans
Filling: 2 bunches of spring
onions 1 onion, 250 ml cream
reduced to 150 ml, knobs of
butter, salt, pepper, parmesan, 2
egg yolks, 1 egg
Zander: fry fillets skin side down.
Before serving, put a knob of butter
on the flesh side and let melt.
Spinach Puree: cook potatoes until
tender, mash. Blanch spinach and
blend into a paste. Mix the potatoes
with butter, milk, and spinach paste
and stir to a creamy puree. Season
well.
Quiche: Knead flour, butter and salt
into a dough, roll out and line a
baking tin. Fill with dried beans and
bake blind for about 20 mins at 180°C
(edge rises, bottom remains flat).
Quiche Filling: finely slice onion and
leek and fry in butter until transparent.
Stir in cream, egg and egg yolk. Put
mixture in pastry case, sprinkle with
parmesan. Bake in oven for about 30
mins at 180°C.
Mushrooms, pearl onions: sauté
mushrooms in butter, season. Sauté
pearl onions, caramelise, reduce and
season.
Ingredients:
500g flour
2 eggs
1 packet dry yeast
60g butter (at room temperature)
1 tablespoon sugar
1/3 l milk
pinch of salt
2 cl rum
clarified butter for cooking
Mix together flour, yeast and salt. Cut
up the butter into small pieces and
add. With the rest of the ingredients
combine to form a smooth dough
and knead well. Cover the mixing
bowl with a cloth and leave to rise for
about 1 hour in a warm place. Divide
the dough into portions using a
spoon, place on a floured board,
shape and let rest. Press the
doughnuts in the middle, and shape
the edge so that it is uniform.
Fry them on both sides in enough
clarified butter so they can float.
Baste so that the doughnuts rise
nicely. Drain on paper. Serve with
sauerkraut or sprinkled with icing
sugar.

The idyllic Brunnwinkl am Wolfgangsee has been indirectly responsible for a Nobel Prize: It was in this district of
St. Gilgen that the zoologist Karl von Frisch (1886-1982) began his study to understand the language of bees. In
1973 he received the Nobel Prize for his work. Take a walk to the Frisch houses in the bay of Brunnwinkl.
His tools still lie there as if he had just got up from his
work. The splashes of colour on the glass tubes and
pipettes indicate that a scientist was at work here: as part
of his research Karl von Frisch marked countless bees
with splashes of red, green, blue and yellow. The colours
allowed him to differentiate between the bees and to see
where and how far they flew. St. Gilgen‘s Local History
Museum contains Frisch‘s zoological collection. Among
the curiosities are a grass snake that ate a toad and
choked on the beanstalk it also swallowed. A silent but
eloquent witness from his observations of natural history.
Bee experiments in Brunnwinkel
It was over 100 years ago that the zoologist began his first
experiments with bees. The summer holidays were when
his family gathered at their summer residence in
Brunnwinkl. His parents had purchased Mill House, the
nucleus of the five legendary Frisch houses in Brunnwinkl.

The path, about two kilometres long, leads from the
museum through the village towards Brunnwinkl on the
old Mondsee road (signpost “Uferweg Furberg“). Where
the path branches (memorial plaque) towards Fürberg

The centrepieces of the annual Narcissus Festival in Ausseerland-Salzkammergut are the ornate, dazzling,
white flower figures. Behind every figure is a creative mind. Stefan Pucher has one of those minds and
gives an insight into how an idea is transformed into a narcissus figure.

hour for this. Allow two hours for the via ferrata climb to the summit of the
Drachenwand. The descent follows the marked Alpine Association route
(AV path no. 12a). It is a route with ladders, surefootedness is required.

hay. “We have had tears when someone has missed the
nightly ritual of putting the animals into the barns,“ said
Putz. She runs the farm with her husband as a sideline
business. The two sons help out if there is a lot to do. Ten
hectares of land, eleven cows and a few small animals, is
no small task. Wonderful, says Martina.

with Philip Glass, Al Di Meola, Katja
Buniatishvili, and Fazil Say, star-studded
literary projects with Peter Handke, Christoph

2015, a focus on architecture is amongst the
highlights of the festival. For about 30 years
the Salzkammergut Festival has been one of

In Grundlsee there‘s a house which is over 100 years old

This remarkable festival has already been going for more
than 20 years. Its success story began in 1995 in
St. Mary‘s Church. Since 1996 it is has taken place every
two years and is always held in a different part of the
region. Admission to the events is free. It takes place in all
weathers.

come out from the shadows of alpine skiing - crosscountry skiing. Anyone who has been to the Blaa Alm, an
