sustainability We are now actively making an effort to ensure we avoid products currently being depleted or that have a negative impact on our health or the environment in their production. The traditional cuisine of sushi is destroying our oceans. We are acutely aware that the restaurant industry has a very harmful impact on the environment; therefore, we now strive to maintain ecological integrity at Harney Sushi. We have chosen the path less taken and are doing our best to abstain from the use of over-fished and environmentally harmful ingredients. As a result, our vast menu does not offer traditional sushi ingredients such as Toro, Bluefin Tuna, Big Eye Tuna, certain Yellowfin, Unagi, Red Snapper, Hamachi, Maine Sea Urchin, and Octopus. With this new ethos, Harney Sushi appeals to the growing population of sushi lovers who care enough about our planet to change the way they eat; they realize that consumerism, along with the public zeal for exotic seafood, is sucking the breath out of our oceans. Together, with our enlightened customers, we strive to eat in such a way that is nourishing for our bodies, our planet, and our souls. our products Best Choice Rating by Monterey Bay Aquarium Seafood Watch Good Alternative Rating by Monterey Bay Aquarium Seafood Watch Sablefish- also known as black cod and butterfish. It's known as Gindara when prepared for sushi. The fisheries in Alaska and British Columbia are well-managed, use pots and bottom longlines, and have low bycatch. Kona Blue Kampachi- Is a sustainable substitute for Yellowtail (hamachi). Kona Blue can raise Kona Kampachi without depleting wild fish stocks or harming the ocean environment. No genetic engineering, hormones, or preventative antibiotics are used in the process. Shrimp- U.S. or Thiland farm raised white shrimp (Penaeus Vanemei) has received the green rating from the Monterey Bay Aquarium program and FishWise. Rock Shrimp- Wild caught in the Gulf of Mexico using sustainable methods. Sockeye Salmon- Pacific salmon in Alaska is among the most intensively managed species in the world, with excellent monitoring of both the fish populations and the fishery. Mt. Cook Alpine Salmon (saikou) - Mt Cook Alpine Salmon Farm is high in the Alps of New Zealand. The Water is so pure that you can drink from it, above/below the farm. The pure water combined with high water flow means that the farm has never had any disease related mortality in a single fish. Striped Bass- Atlantic striped bass are at record levels as a result of effective fishery management and strong conservation actions. The hook-and-line fishery is highly selective and therefore low in bycatch. Yellow fin Tuna- Our Yellowfin tuna is long line circle hook caught in the Gulf of Mexico and is able to be fished year round because of its responsible, traditional hand line catching methods. This eliminates catching other species like dolphins and also prevents over fishing. Big Eye Tuna- Our Big Eye Tuna is from Garden & Valley Isle Seafood Inc. in Honolulu, Hawaii. Their fish are hook and line-caught. No gill nets, trawl nets or seine nets are used. Albacore - Canada pole and line and troll caught. There is little or no bycatch when albacore is caught with troll or pole gear. Mackerel- Boston wild caught. Scallops- Diver scallops caught from Baja California. Shell Fish- Our shell fish comes from Carlsbad Aquafarms, which include mussels, clams and oysters. Locally grown and sourced produce- Our produce is grown in surrounding farms such as Suzie's Farms, Polito Family Farms, McGrath and Yasutomi Farms and many others, as well as from our neighbor's organic garden. Poultry- Our chicken is grown from Fulton Valley Farms in Sonoma County. It is organic and hormone free and uses no other animal by products or antibiotics throughout it’s entire process. Pork- American Kurobota from Snake River Farms in Boise, Idaho. No extender, no sodium and no water are ever added to their fresh pork products. 100% all natural pure Berkshire pork is the finest pork available. Meyer Ranch Beef- Cattle are never given any form of hormones or antibiotics. Meyer Natural Angus is the only major beef company to receive “Certified Humane” designation from the Humane Farm Animal Care program. The cattle are raised on a strictly vegetarian diet.
