I am an African American woman in my 30s. I
am a single mother of 3 who does not like to
depend on public assistance to provide for my
children. About 7 years ago I made a few mistakes and was convicted of a felony and successfully completed 1 year of state jail. I feel I
have paid my debt to society. I know what I did
was wrong and do not expect anything from
the public but would like a chance to be able to
work in order to provide for my family. It seems
as if every time I apply for a job and rightfully
let the employer know that I have done state
jail time the door is slammed in my face. Since
my conviction 7 years ago I have been faithfully attending a changes class, where other exoffenders talk about the reasons why so many
become a second-time offender. The most
common reason is society will not give exoffenders a chance to prove themselves and
show they can perform the same jobs as others. These individuals can fall into the same
category as workers who have been employed
for 15-20 years. I myself have a small margin
for error and know there is someone out there
who will give me an opportunity to prove

Cookies get a whole lot healthier with wholesome whole grains

TLANTA, Ga. (NAPS)—Whole
grains are an important part of
any healthy diet, but often
they’re not the most tasty item on
your daily menu.
Once you’ve made the decision to
add whole grains to your diet, the easiest place to start might be—perhaps
surprisingly—with cookies. After all,
who doesn’t indulge in cookies?
According to the new cookbook
King Arthur Flour Whole Grain
Baking: “Studies show that when
American bakers turn on the oven,
they’re more likely to bake cookies
than anything else.”
Cookies are sweet and flavorful,
full of chips and nuts, candy and dried
fruit. That’s why they’re so easy to
convert to whole grain.
Exchange whole-wheat flour for
all-purpose flour in a cookie laden
with dark-brown sugar, butter, toasted
pecans and chocolate chips and no
one will be the wiser.
“Our best hint: Let the baked cookies rest for 24 hours, at room temperature, before serving,” says Susan
Reid, editor of The Baking Sheet at
King Arthur Flour. “This rest gives
the bran a chance to soften, lessening
the gritty mouth feel some folks get
from whole wheat.”
If you’re looking for more ways to
enjoy whole grains, give these a try:
S’more Whole Wheat Cookies
3 cups King Arthur wholewheat flour
11⁄2 cups brown sugar
1⁄
2 teaspoon baking soda
3⁄
4 teaspoon salt
2 large eggs

2 cup buttermilk or yogurt

teaspoon vanilla extract
tablespoon molasses
cups (9 ozs.) milk-chocolate
or semisweet-chocolate chips
cup minimarshmallows
cup chopped nuts
Preheat oven to 350 degrees.
Lightly grease two baking sheets.
Whisk together flour,
sugar, baking soda and
salt in a large mixing
bowl. In a separate
bowl, combine buttermilk, eggs, vanilla and
molasses and stir into
dry ingredients.
Stir in melted butter.
The mixture will seem
dry at first, but keep mixing until the dough is
evenly moistened.
Stir in chocolate chips, nuts and
marshmallows. Drop dough by tablespoons onto prepared baking sheets;
bake for 12-14 minutes, until cookie
edges are golden brown.
Remove cookies from oven and
cool on baking sheet for 5 minutes
before transferring to a rack to cool
completely. Yields 31⁄2 dozen cookies.
Whole-Grain Cookie Tips
In plain-textured and/or lightcolored cookies, exchanging the allpurpose flour for whole-wheat flour
produces a noticeable but pleasant
change. To temper the sometimes
“tannic” flavor of the whole wheat,
add 2 tablespoons orange juice per
cup of flour if the recipe calls for liquid (milk or water).
In “craggier” cookies, substituting up to 50 percent whole wheat for
the all-purpose flour is almost unnoticeable. Substituting 100 percent
whole wheat flour for all-purpose
flour often works well, though success
can’t be guaranteed for every recipe.
If your cookie recipe directs you
to chill the dough, do it. Chilling will
create a more tender, lighter-textured
cookie that won’t spread too much
when baking.

All it took was a ball. Someone left us a bag of
tennis balls at the kennels and boy has Babe,
the Dalmatian-Pit Bull Terrier, enjoyed them.
Ever since she discovered them she has had
one in her mouth and seems more content. She
looks like Winston Churchill with a cigar! We will

This dog is leash trained and would respond

My favorite dessert is Creme Brule, but Chocolate Mousse is next in line. Mousse, the
Chesapeake Retriever-chocolate Lab mix is also

Unfortunately that
discovery caused him
to get overconfident. He
lost his concentration
and failed to qualify.
He was devastated.
Brian’s father called
me from the meet and
asked me if I would talk
with Brian about it.
Brian said, “Opa
Marv” (Brian’s grandmother, my wife, is
Dutch), “I really screwed
up today.”
I just told him that
sometimes losing can
be can a great teacher,
and, even though technically you might have
been the best climber
there, you still have to
prove it. That’s what
competition is all about.
He has never forgotten that, and it has
helped motivate him to
this day.

with Team USA when
he arrived in Beijing.
He came in 18th
overall out of a total of
45 in his class.
This year at 14 he
finally nailed first place
for the first time in
national competition
with 15- and 16-yearold boys.

he won a trophy, coming in third in speed
climbing shortly after
his 15th birthday (see

Brian is mostly a
straight-A student, with
an occasional B scat-
clearly welling up in his eyes.
That’s pretty heady stuff for anyone, but he seems to be able to keep
his life in perspective.
The curse of overconfidence
One year when competing at
nationals in Oregon, Brian just knew
that he could easily beat any of his
competition. He figured that out from
China in 2005

In 2005 Brian finished in second
place again and qualified for interna-
tional competition in Beijing, China,
in August.
Although only 13 when he boarded
the plane with his mother in Dallas, he

national competition this year, he gets
a bye on competing in his age-group
both in Texas and the Southwest
Division and can go directly to
national competition in 2007.
That does not mean, however, that
he will not be training. He will train
vigorously right up until the national
trials.
He tells me that this year, after
competing in international trials for
the two years, he is even more motivated to succeed.
If he finishes in the top five nationally in 2007 he will compete in
Colombia next August.
The 2008 competition is in Australia, and he hopes to compete there
as well.
After that Brian tells me he will
retire from competitive rock climbing, at 17 years of age, although he
plans to climb recreationally both
indoors and outdoors because of his
love of the sport.
Who knows? If my wife and I are
still around, we might join him in
Australia for his swan song.
