SABAH (TADAU KAAMATAN) The Kaamatan Festival is an annual event in the cultural life of the KadazanDusuns of Sabah since time immemorial. In its deepest sense, Kaamatan festival is a manifestation of Creator and Creation relationship, as well as Inter-Creations relationship. It embodies the principal acts of invocation of divinities, appeasing, purification and restoration, re-union of benevolent spirits, and thanksgiving to the Source of All. It is part of a complex wholesome Momolian religious system centered on the paddy rites of passage and the life cycle of Bambarayon - the in -dwelling spirit of paddy. Tadau Kaamatan is a harvest festival celebrated in Sabah and Labuan. The festival marks the end of the harvesting season and the beginning of a new season. Visitors can watch traditional dances, musical performances and participate in other interesting activities. SARAWAK (GAWAI FESTIVAL) Gawai Dayak is a harvest festival celebrated by the state's indigenous people, particularly the Ibans and Bidayuhs, in their traditional costumes. Ceremonial offerings of various local traditional delicacies and 'tuak' (homemade rice wine) are made to the gods of rice and prosperity. This unique festivity is a 'must-see' occasion for local and foreign tourists alike. The mode of celebration varies from place to place. As the big day approaches, everyone will be busy with general cleaning and preparing food and cakes. On Gawai Eve, glutinous rice is steamed in bamboo (ngelulun pulut). In the longhouse, new mats will be laid out on the ruai (an open gallery which runs through the entire length of the longhouse). The walls of most bilik (rooms) and the ruai are decorated with Pua Kumbu (traditional blankets). A visit to clean the graveyard is also conducted and offerings offered to the dead. After the visit it is important to bathe before entering the longhouse to ward off bad luck For more information, please contact: [email protected] DOH RECIPE OF THE MONTH - PAPAYA & ORANGE JAM Preparation Time: 10 minutes Cooking Time: 40 Minutes Serving: 10 minutes Ingredient 1.2 kg papaya 400 ml orange juice (from 6 oranges) 1 lemon 750 g granulated sugar 4 cloves Method 1. 2. 3. 4. 5. Skin the papaya and cut into cubes. Cut oranges into halves and squeeze out the juice. Grate lemon skin for the zest, then squeezes out the juices Put papaya, orange juice, cloves and lemon zest in a large, heavybased, deep saucepan. Simmer gently over medium flame for 10 minutes. Add sugar and lemon juice and stir frequently with a wooden spoon over a gentle heat until sugar has dissolved. Bring to a boil, uncovered for about 40 minutes over medium-highheat. Keep stirring to prevent it from getting burnt. Simmer until jam jells when tested. Use a metal spoon to remove any scum that has surfaced. Leave aside to cool for 10 to 15 minutes then pour jam into warm, sterilized jars to store. * Use 80% ripe papaya for best results. DOH RECIPE OF THE MONTH - DRAGONFRUIT SMOOTHIE Preparation Time: 5 minutes Serving: 1 minutes Ingredient 1 Red Dragonfruit 3 tbsp rolled oats 1/4 cup of blackberries 1/4 cup of raspberries 1/2 cup plain yogurt 1/3 cup of pomegranate juice Method 1. 2. 3. Boil oats in 1/2 cup of water for a couple of minutes. Leave to chill overnight in refrigerator. Cut dragonfruit to cubes and put into blender together with chilled oats, and yogurt. Blend adjust to desired consistency but adding cold water if necessary.
