magazine dedicated to offering the latest in local
country club news, parties and the posh life. Delaire
Country Club was truly a joy for me to explore.
From the club’s fabulous staff and outstanding new
clubhouse, there are plenty of reasons to dream of
living in Delaire. As beautiful as the club is, so are
its kind and caring members. It’s my privilege to take
you on a journey to a spectacular community where

“I worked as a chef for about 15 years

The food is very important to myself and
the members here,” Squire says. “We offer

focus a lot on briskets and corned beefs.
We’re open for all the major holidays and
Christmas is one of our busiest days of the
year. This year, we did 475 for dinner. And
we had 530 for Thanksgiving.”

Delaire’s GM and Chief Operating Officer
Trent Squire invites you to see the new Delaire

hen Trent Squire took over Delaire Country Club as
general manager in 2007, the clubhouse renovation was
still in a conceptual state. The two-phase project, which
broke ground at the end of 2009, was completed Nov.
15. After years of meticulous planning and a top notch crew dedicated to
its construction, Squire is delighted with the $21 million clubhouse that
is the centerpiece of Delaire. The completely rebuilt, 47,000-squarefoot clubhouse, which houses a state-of-the-art tennis and fitness center,
was given a fresh new look by Image Design, an Atlanta-based design
firm. “ A lot of our members have described it as understated elegance
with nice, warm brighter colors. It’s more transitional,” says Squire.
Renovations, which also involved revamping the front entrance to the
club, include a new grill room, spacious main dining room, locker rooms
and card rooms. “I’m very proud of the renovation. I’m also really proud
that I’ve been able to work with the tenured staff that’s been here. They
have some really nice longevity,” Squire says. “I know when a new GM
comes in, everybody’s always concerned they’re going to come in and
sweep the house clean and bring in their own guys, but that’s never been
in my character. I’ve had to make some changes but most of my team has
been here well over 10 years. They’re in a sense members of the Delaire
family and the members treat them as such.”
Part of the renovation also resulted in a new swimming pool and deck
area, which was part of fitness phase one. “We did our infinity pool and a
children’s water feature. That has been extremely well received,” Squire
says. “I was told the other day we went through 300 towels, so that tells
you the kind of use we’re getting out there. Members and their families
are really enjoying it and it has become a great place for social gathering.
The new pool really has a resort feel.”
With 326 homes, the mandatory membership community is a low
density club and the perks it offers members is impressive. “We don’t
have a tee time system here. We have 27 holes of golf. We offer all the
amenities the larger clubs do other than full spa services. It’s an intimate,
low density club and I think that gives it a lot of character,” Squire
says. “Our fitness center is state-of-the-art and we do offer massage by
appointment. We have a busy dining schedule. We have a very liberal
entertainment budget. It’s a full social calendar from season to the
summer.”
Due to the club’s low density, a more exclusive country club experience
awaits at Delaire. “You get to really know your members and I think it
says a lot for the membership that people have worked here so long. In
a smaller club like this, you don’t have lots of layers. It’s always been a
personal part of my makeup talking to my members and interfacing.
You make changes where you can to do things better and you’re always
listening.”
Another noteworthy aspect of Delaire is its one-up, two-down
privilege policy. “The program is very unique. Your parent, the one-up
and your two-down, your children and grandchildren can use the club as
members,” Squire explains. “There are some restrictions but whenever
your children and grandchildren come to the club, over the holiday, they
play golf without guest fees, have full use of all the facilities and fitness
center and dining.”
As a result, the membership at Delaire includes younger members.

“Our membership make up is changing somewhat and getting younger.
The average age here is going down,” Squire says. “We also offer a nonresident membership here with a cap of 50 members. We currently have
around 47. There’s a transition going on at this club that really isn’t as
prevalent at other clubs. People are even doing spec homes here. I don’t
know of any other community that has spec homes being built.”
While its a whole new level of luxury at Delaire’s completely renovated
clubhouse, the spirit of the club’s members remains the same –
sophisticated and caring. “People who buy here are brought into the fold
quickly. They can make friends quickly,” Squire says. “They’re invited.
It’s the type of club that if you come in as a couple and you sit down
alone, and you want to join somebody, you will certainly be asked.”

ITALIAN STALLION: “I was born in
Palermo and came to the U.S. at 18.”
NEW ADDITION: “I came to Delaire in
November 2011. We have 55 to 60 people
working in the dining room and kitchen.
I oversee the operations. My mission is
to give the members the ultimate in good
service and food.”
PAST PROJECTS: “In 1981, I was hired
as a maître d’ at Café L’Europe in Palm
Beach. Then I worked as Food and Beverage
director at Club-Collete, which was a small,
private club in Palm Beach owned by Aldo
Gucci of the Gucci family. In 1983, I was
one of the first people doing risotto with
truffle and champagne sauce outside of New
York City. I opened my own dining club
for a while and then Ristorante Mario. I
was also a manager at Banyan Golf Club in
West Palm Beach for six years.”
BRINGING THE BEST: “This is a team
effort. We have beautiful new china,
glassware and silverware and high-end
style. We’re doing the latest in presentations
- building up on our plates and using top
quality ingredients. We’re doing all those
little things that make a difference in the
overall experience for our members.”
TAKING CARE OF BUSINESS: “All
the people who work for the country club
always do extra steps to satisfy our members
and give them better service. It’s pretty
challenging to stay at the same level all the
time. I enjoy the members. They’re fantastic
and I just want to bring the best of my
experience to them.”
GRAPE EXPECTATIONS: “I’m new but
I wanted to make some changes to the wine
list to enhance our selection. I want to make
it the best value possible. We do not triple
or quadruple the prices on our bottled wine
like many restaurants do. A bottle of wine
that would cost $80 in a restaurant, we
want you to be able to get it here for around
$40.”
WINE AND DINE: “Our members like all
different wines, but I have one who really
likes Stags’ Leap Cabernet Sauvignon and
we also members who like Beringer Private
Reserve.”

EUROPEAN FLAIR: “I was born and
raised in Bulgaria and moved to the states
about 20 years ago. I was the project
manager on the operational side of the
clubhouse renovation and really went for
quality and look with our new features.”
ROYAL ROOTS: “Our china comes
from England and France. Our silverware
comes from Switzerland. Everything
is top quality. Our linen is French and
Italian. One of the patterns for our china
is from an English company that started
manufacturing china more than 250 years
ago for the royal family. The manufacturer
for our French china started making china
for Louis XIII.”

FINE DESIGN: “We were picky putting
the whole package together. It took about
six months because we wanted to match
quality and the look with the concept of the
clubhouse. We have really unique pieces.
The members love it and we have these
pieces available for sale for our members.”
CAREER PERKS: “Membership and
dealing with people and my team. I believe
90 percent of success in any individual
comes from attitude. In my career, I’ve
always hired attitude over experience. It’s
about attitude, personal skills and having
a great deal of self-control. I have high
expectations of myself and I don’t expect
anything less from others.”
A GOOD MIX: “We are always updating
our wine list and cocktail menu to
provide variety and spice things up for
our membership. We like to try different
things, especially when new products
become available. We like to keep it
exciting. Instead of having one wine list for
the season, we bring a few limited-edition
bottles and sometimes even update the
menu twice a day.”

Dr. Gary Rose, Club President
RESIDENT PRESIDENT: “I’ve been
president of the club a little over two years
and living at Delaire for seven years.”
BUSINESS AS USUAL: “I’m most proud of
how we managed to maintain the lifestyle of
the membership throughout the construction
of the clubhouse. The club is the centerpiece
of activity here and we managed to keep the
entire club open every day until we moved
into the new clubhouse Nov. 15. It took
about 22 months, but we had an adaptive
membership and management staff.”
MEMBERS ONLY: “One of the things
I really like about the club is our smaller
membership in comparison to a lot of the
other clubs in Palm Beach County. This
membership bands together to support
a lifestyle which is very comparative to
the larger clubs. We have tremendous
advantages because we have 27 holes and we
have no tee times.”
GROWING THE CLUB: “Our wonderful
one-up, two-down policy is very important.
It distinguishes us from many other clubs.
We can do it because of our size and the
size of our facilities. It works out very
nicely for the membership so children
and grandchildren can enjoy the club as
members. We have a lot of children who end
up buying homes here. It really sets us apart
from the competition. It brings a tremendous
family atmosphere into the club and it’s
attracting a younger membership too.”
HEAR HERE: “Because of our intimacy
due to our size , the membership has a
larger voice in the operations of our club.
When you’re dealing with a membership
of 375 versus 1,500, it’s a much closer
population. Everything is more open and the
membership knows what’s happening.”
A WHOLE NEW WORLD: “We’re working
on maximizing this clubhouse to its full
potential. We’re trying a lot of new things.
We’re really focusing on providing the type
of country club life our members expect. It’s
up to the membership to tell us what they
want and we have a very vocal membership.”

Rose Capalong, Events Coordinator
FUN COORDINATED: “I’ve worked
at Delaire for 26 years. I started off as a
waitress. Then I became a hostess, dining
room manager and I grew into coordinator.
I coordinate all the seating arrangements
in the dining room for the special nights.
I also book parties for the members and
help organize any of the big events we have.
I hire the music, get the flowers, get the
decorators and coordinate with the chef
to plan the menu and facilitate the whole
process.”

MOST MEMORABLE: “We had a very big
event for the opening of our new clubhouse.
On Dec. 5 we had our grand opening gala.
It was called The SS Delaire. We did a
cruise-type arrangement. We had a lot of
entertainment and the food here is superior
to a lot of other places. We had a dance
troupe from Miami and a wonderful band.
Around 300 people attended and had a
wonderful time. Our room was completely
full.”
PARTY PERSON: “I love planning
the parties and I love the people. I work
with three dining room managers who
handle the floor. We do a ladies card party
here the end of every January that’s just
phenomenal. We have about 300 ladies and
bring them in for lunch. The theme this
year was Queen of Hearts. We get ladies
from all clubs in the Palm Beach, Boca and
Fort Lauderdale areas.”
DREAM THEMES: “We have many events
here including Chinese New Year, a comedy
night, a Valentine’s Dance and a night we
call New York, New York, which is a deli
night that celebrates the different sections
of New York such as Little Italy, Chinatown
and Delancey Street. We even have a
Broadway singer for the night. We have a
Delaire golf charity tournament coming
up and this year, we hosted the Presidents
Council meeting which was a breakfast for
all the presidents from all the clubs.”

Joe Jones, Head Golf Pro
CLUB KID: “I was born in Los Angeles and
grew up in upstate New York. I’ve been playing
golf professionally for 37 years and been head
golf pro at Delaire for 24 years.”
SMART START: “As I think of the golf
economy and how it’s declined over the years,
this club has flourished because of the oneup, two-down policy, which they started at
beginning of club. Many of the children of the
members later took over the homes.”
IN THE SWING: “We perform 90 events a
season. We have a ladies tournament every
Tuesday and a men’s tournament every
Wednesday. And the participation is 60-80
players each day. We also have several major
tournaments. We host five to 10 large charity
tournaments each year. Our golf program is
very busy. We also have 27 holes with a density
of 350 golfing members. We have no starting
times due to that density so people can just
come up and play. They check in with the
starter and can play at any time. It makes the
golf program flourish.”
PAR STARS: “We’ve had many celebrity
athletes play golf here over the years. The
Archie Griffin Scholarship Fund is one of our
events we’ve had a couple of times. John Smoltz
has been here and Adam Sandler’s parents
played here. Adam’s dad had ‘Happy’s Pappy,’
on his golf bag, which was kind of funny. They
were guests of members here.”
NEW TRACK: “We’re in the process now of
combining golf and fitness. We’re trying to
make fitness help people get stronger and play
better golf. We have weekly clinics and play
with a pro program. We also have junior clinics
throughout the holiday periods. And due to
the one-up and two-down policy, we have a
lot of grandchildren who have become college
players and some have even become mothers
and fathers now and continue to play golf. It’s
nice to see all the generations coming together
at this club. I know every member, all the kids,
all the grandchildren and now we’re getting the
great-grandchildren. It’s pretty cool.”

WE ARE FAMILY: “It’s a family atmosphere
here – a total family club and I think that’s
what makes it succeed. We have a spectacular
$21 million clubhouse and a full service golf
shop. We give private lessons and we’re very well
respected in the community.”

GIVING BACK: “I’m involved with many
charities. Delray Citizens For Delray Police is
one of our club charities. We have an annual
event for the firemen, policemen and EMS of
Delray Beach. It’s an annual tournament we’ve
had for 23 years. This event is happening in
February and will be our 24th year.”
IMPROVING YOUR GAME: “The first tip is
to consult a PGA golf professional as opposed
to trying to learn from your friends or by
yourself. Learn the proper fundamentals - the
grip, posture, set up and alignment. The next
tip is to learn what the golf club’s job is and
the parts of the club and why they work. Learn
about the swing plane and how important
rhythm and balance is to help your form.”
IN THE SWING: “We have about 400-450
golfers participating in the program.”
ON THE GREEN: “The golf course was
renovated seven years ago by Joe Lee, the
original architect along with Brian Bowles, the
golf course superintendent at the time. It’s been
maintained spectacularly by Steve Verville
our superintendent now. So the design was Joe
Lee and Brian Bowles and the conditioning
has really been through Steve. It’s a memberfriendly course. It’s very challenging for the
skilled player and we do have golfers of all
levels. We also have programs to make it very
easy for all members to get golf games. If you
come to the club and want to play golf, we’ll
make sure you get a game.”
FORE FUN: “When I’m not playing golf, I
enjoy going to the movies, spending time with
my wife and children, traveling and wine. I got
to do a golf clinic in Rome, Italy once. It was
fantastic.”

Glenn Matusik, Executive Chef
INGREDIENTS FOR SUCCESS: “I’ve
been the chef at Delaire since 1996. I’m
originally from Long Island but live in
Boynton Beach now. I started as a sous
chef. I went to CIA and graduated in ’88. I
worked for Michel Fitoussi, he’s a renowned
chef. I worked with him about six or seven
years at Glen Oaks Club in Old Westbury,
Long Island. But I’ve been in this business
since age 12.”
FROM SCRATCH: “We’re a full scratch
kitchen. I’ve got a baker that comes in at 2
o’clock in the morning to make our breads.
He makes all our bakery items like Danish,
croissants and babkas. I have a full pastry
staff that makes great cookies and sugar
free items. I was always brought up with
older French chefs and it was all full scratch
– make everything yourself. We don’t buy
any hors d’oeuvres. We make them.”
BACK TO BASICS: “I like making
sausages and curing my own fish. I like
learning all the old-school stuff. The next
thing I’m going to start doing is making
cheeses.”
WHAT’S COOKING? “We’re probably the
only club that smokes their own fish. That’s
something I really enjoy and I learned to
smoke fish because everybody said I couldn’t
do it. It took me a really long time to learn
it. There’s such a huge mark up on smoked
fish. At our typical Sunday brunch, our
members are getting smoked salmon, grav
lox, sturgeon, sabel and smoked whitefish.
We do all that in-house. Sturgeon costs me
about $6.50 a pound, but to buy it smoked,
it costs $30 a pound. We can have sturgeon

EXOTIC EATS: “The menu changes every
week. Last week we did Hudson Valley Foie
Gras. I try to get as exotic as I can without
going overboard. The key is quality. We
buy the best we can. We only buy fresh fish
- never frozen.”

all the time. And you don’t see this at other clubs.”
BEYOND THE SEA: “Our best night is our seafood buffet. It’s allyou-can-eat large stone crabs, shrimp, raw bar, two pound lobsters - and
every one of them is de-shelled. I have four guys outside doing that. And
we also have prime rib available and poached salmon. We have all the
smoked fish out. We do a crab cake station and scallops and bacon.”
GRAND PLANS: “We do Italian night and oriental buffets. My favorite
night is Chefs on Parade. That night is one of our most popular. I started
it about five years ago and we were doing it monthly. But my purpose in
creating the night was an evening at the end of the season to showcase my
staff. I let my staff design the menu and do whatever they wanted to do.
Every chef was out in the dining room with their own table. They would
cook it there and make tapas-style plates. Then I would pair it with wine.
It was really cool.”
NEW MENU: “We’re doing Chefs on Parade once a year now and I
formatted our Wednesday night into our Chef’s Bistro. I still make the
menu but it’s more of a small plate dinner - a tasting kind of thing. We
have nice cheeses in the bar when members arrive. Then I put a flatbread
on each table in the dining room. I also do mini-Brie En Croutes with
blueberry sauce. I’ve also put out plates of clams oreganata with bread to
dip. It’s more of a family style-type of hors d’oeuvres. I also like sautéing
steak au poivre and making stations set up with snapper provencal. I’ll
do a softshell crab tempura with some Asian slaw. I really don’t like
anything sitting in a chafing-dish. That’s why I do a lot of stations. We
now have induction tables.”
FOOD ATTITUDE: “The wow factor has got to be there. We’re always
striving for the best. Most of my crew has been with me at least 10 years.
The reward of pleasing the membership is always the best part.”

in Parkland. I’ve been Tennis
Director at Delaire since 1989.
It’s nice when you can take a hobby
and turn it into a career. I love
going to work every day.”

You show up at a certain time and
we put you in a game. You don’t
have to call anyone to find a game.
Our staff is on the phone all the
time setting up games for our
members.”

want to exceed each member’s

tennis boot camp. We do cardio
tennis here and we offer a
tennis/golf combo tournament in
addition to running tournaments
every month. We have a ProAm
coming up and local pros in
the area come to play with our
members. We also offer free
seminars and fitness training to
our members.”

have full tennis and golf pro
shops for our members. We carry
fitness apparel from tennis to
aerobic gear. Nike, Under Armour
and Bolle are some of our most
popular brands.”

“We do a color war tournament
every year, which our members
love. We are honestly like a family
here. All the department heads
work together to make sure we’re
bringing the best to our members.”

program 16 years ago. I was a
therapist who worked for a couple
of chiropractors. They came to
me and asked me if I could put
together a package and we started
a fitness program.”
OM SWEET OM: “We have
aerobics, water aerobics, yoga,
Pilates and Zumba. Our most
popular class is still aerobics.
I have a class for strength and
conditioning in the morning for
golf. It’s very popular. I learn all
the members’ medical histories
so each member has their own
personal program.”

phases of a fitness program are
strengthening, cardio and diet. If
you do these three phases, you will
get a good fitness program started.
But you can’t skip one. You have
to do all three. Most people will
do strengthening and cardio, but
then forget about nutrition. We
work with our chef to come up
with ideas on healthy items for
a better diet. Portion control is
important. If it fits in your palm,
that’s the size portion you should
have. Many restaurants serve too
much. Stay away from salt and
simple sugars.”

here. It’s a medical product
we started to use here for
members with hip and knee
replacements who can’t really
use a treadmill. It’s a seated
elliptical. It’s very popular. We
have ellipticals and treadmills
with TVs. I programmed the
Biodexes with TV monitors.
We’re the only club that has
this. We made our own stands
with TVs on them.”
ON BOARD: “We have
personal trainers on-site. We
can have five to seven trainers
depending on appointments.
Over 70 percent of members
participate in the fitness
program. We have four
generations participating
in this program. People are
getting more familiar with
fitness.”
WARMING UP: “We’re more
personal. I make it a point to
memorize medical histories
of the membership. And I’ve
known many of their children
and grandchildren forever. It’s
a family affair here.”
PUT ME IN COACH: “I
used to coach baseball and
girls fastpitch softball. I like
to work out and coach. I’m
originally from Pittsburgh but
live in Delray Beach now. I
enjoy it here.”

Sophia Young moved from New York to South Florida three years ago and
brought a slice of Soho to Boca Raton. She opened Lucx Boutique a year and a
half ago and the chic shop holds a myriad of fun, fashionable finds. From beautiful
blouses and kicky cocktail dresses to exotic handbags and jewelry,
Lucx Boutique offers shoppers luxurious styles from around in the world in a
demure, approachable setting.
“The store is known for little black cocktail and party dresses,” Young says.
“We also do a lot of silk blouses and tops you could pair with your favorite jeans.
Many of our tops are so unique, you can’t find them anywhere else.”
Stocking designer lines from Los Angeles, Italy and Miami among many
other places, Lucx Boutique is a must-top shop for some of spring’s hottest trends,

“Our Jovani dresses are really popular,” Young adds. “These dresses are

Turkey and custom handbags from Italy, Young also hosts trunk shows at her
store and wine tastings. “I’ve always loved fashion and being from New York,
we’re always on the hunt for the next new look,” Young explains. “I’m going to be
carrying hammered cuff bracelets this spring and I’m also starting to incorporate
more basics such as tank tops into my store.”

AT BOCA WOODS
Boca Woods was honored to
host the Third Annual Fireman’s
Ball in January. The event honors
the firefighter paramedics of Fire
Rescue Station 51 who respond
to calls in Boca Woods. The affair
was a sellout with 270 Members in
attendance and the entire fire department, including the Battalion
Chief and Captains. Fire Station
51 was thrilled to be honored in
such a fashion.
Gleneagles is the place
to be for Family Fun
at the Holidays
A jam-packed schedule of
two weeks of family fun featuring
activities for adults and children of
all ages took place at Gleneagles
Country Club over the holidays.
The “Sun and Slide” inflatable
waterslide, poolside BBQ, daily
Junior Golf and Tennis Camps,
annual Golf and Fishing Tournament, and clever evening dining
options were all designed with
one thing in mind: family fun for
everyone! Members and their
families enjoyed the inaugural
Pirates of the Caribbean dinner
buffet featuring pirate décor and
costumes. Other events included
Karaoke, Family Dinner Dance,
and even a friendly game of Bingo.
Family friendly activities, including
a Sock Hop Doo Wop and Honky
Tonk Hoe Down, will be presented again during President’s
Week in February.

kicked off the new year in family
celebration style. The annual
Island Street Fair was attended
by about a thousand people of all
ages who enjoyed the carnivalstyle rides, games and midway,
which was lined with ethnic
culinary stations. In addition to
the fun and games, this event also
featured island music and the
Junkanoo Dancers.
Addison Reserve Country
Club, located in Delray Beach
recently opened its newly renovated and expanded clubhouse
to the members in December
2011. The expansion added over
24,000 square feet to the existing
structure to provide StYr, a 4,300
square-foot lounge, an expanded
Golf Pro Shop, two private dining
rooms, Vault, the Clubhouse’s
wine room and administrative offices. Renovations to the Clubhouse updated Card Rooms, the
Library/Media Center and Main
Dining Room that now features
two dining destinations – Taste,
a seafood, chophouse restaurant
and Trattoria, an upscale Italian
venue.
Addison Reserve is a Platinum
and Emerald Award-winning

around the three 9-hole Arthur
Hills designed golf courses. Two of
those courses were updated during the recent renovation project

Bernhard Langer Hosts
Junior Tournament
On January 7, Woodfield member and PGA Champions Tour
player, Bernhard Langer hosted his
annual junior golf tournament for
Woodfield members and guests.
Langer hosted 28 juniors and, for
the first time ever, the youngest players were able to utilize
the PGA Family Course that was
installed in 2011.
The day ended with a clinic
presented by Langer, who gave
valuable tips and techniques to
golf’s next generation!

The newly renovated Cabana
Grille offers breakfast and lunch

GALA IN PALM BEACH
ORT America, a Jewish organization committed to strengthening communities throughout
the world through education, is
a beloved charity to a variety of
local country club members. The
organization will have its Inaugural
International Major Gifts Gala on
Sunday, February 26 at Breakers
Hotel in Palm Beach. The Gala will
honor donors, feature dignitaries
from World ORT and a presentation by His Excellency Ambassador Ron Prosor, Israel’s newly appointed Permanent Representative
to the United Nations. “We are
thrilled that Ambassador Prosor
so early in his tenure has agreed
to address our group,” Shelley B.
Fagel, National President of ORT
America stated in a press release.
“He has impressed everyone with
his savvy, grace, and intelligence
and we look forward to hearing
his fresh, thoughtful commentary
on the relationship between the
United States and Israel.”

GLENEAGLES SOARS
The social scene at Gleneagles
ended with a very successful Eagles Have Landed party and New
Year’s Eve Celebration. Close to
400 members participated in the
annual welcome party in early
December. The theme for the
event was “Winter in Paradise”
and members were greeted
with a sparkling aurora borealis
cocktail upon arriving and danced
all night to the fabulous sounds
of Eduardo and Njoki. The New
Year’s Eve celebration featured
a red carpet leading straight to
an exquisite array of New Year’s
hors d’oeuvres and cocktails, and
exquisite entertainment by the
Masci Family.
Events planned for 2012 such
as the Annual Tennis Ball, Clint
Holmes’ performance and a “Pop
to Opera” dinner show promise
to keep the social butterflies of
Gleneagles very busy in the new
year.

at Woodfield! This year, the Club
hosted three sold out parties,
