Traditional Thanksgiving

The hustle and bustle of summer is winding down and our thoughts are beginning to turn toward
winter. Although it goes by very quickly, this is a time of year that produces beautiful aromas, sights
and memories. The scents consist of apples, grapes and cool fall air; while visions are filled with the
beautiful colors of the fall trees, seasonal decorations and the fast setting sun. The captions of these are
the memories that are made. Among all of these seasonal changes is a national holiday that brings us all
together. We choose to celebrate in many different ways.
When the word “Thanksgiving” is mentioned it conjures up many different thoughts. The first that
usually comes to mind is the turkey feast. Around the States it is prepared many different ways, slow
roasted, grilled, deep fried, smoked, covered with herbs, Cajun rubbed or stuffed. Whichever way it is
prepared, most of us enjoy a fair amount of turkey on this day. The traditional main course is usually
accompanied by a variety of potatoes, corn, cranberries and pumpkin pie. Many families utilize these
mainstays differently. Some will incorporate the cranberries in muffins, stuffing, jellies, jams and gravies.
Potatoes can be mashed, baked, roasted, scalloped or casserole style. Vegetables can vary from corn,
peas, slaw, carrots, cauliflower to broccoli. Each family has their own style and traditions to uphold.
Some traditions include waking up before sunrise to start the preparation of the traditional feast; or the
pleasant aromas of fresh made pecan pie and slow roasting turkey. Others include watching the parade
with huge floats and thoughts of football, a group of friends and family gathered around cheering for
their favorite team while snacking on trail mix and sneaking a cookie. It is a time to enjoy conversations
with people we only see at this time of year.
When the moment arrives, the traditional carver takes their place and the turkey is carefully portioned.
White meat will be separated from dark and the wishbone preserved for old passed down traditions.
Now the feast can begin and the partaking of time honored traditions or the creation of new ones.

Take Photos & Videos:
Use your mobile device to snap photos that
are relevant to your brand. Maybe daily
specials or signature items. Maybe a photo
to highlight the employee of the month or
an upcoming celebration. Add one of the
many filters available through instagram
then post the photo to your account. It will
be shared on the twitter and facebook feeds
that you linked when signing up.
Engage:
Encourage your followers to leave comments
and follow them back. If you use twitter,
include a hashtag on your photo or video post.
Make your followers feel like they are getting
a behind the scenes view with a sneak peek of
featured dishes, ingredients or even musical
guests to come. Have fun with your images

No, not who killed the hog,
who killed the pork?!
It has been a slow death, it took the
industry many years and there are many
factors, but it finally happened.
Remember when hogs were round and
fat? Well they aren’t anymore. The quest
was to have lean hogs and plentiful white
meat, you know - “The Other White Meat”.
Now we have rectangular looking very
lean hogs, mission accomplished.
Remember when Trichinosis was an issue related to undercooked pork?
The recommended internal temperature was as high as 185 degrees.
Wow - I bet that made for a tough, dry and flavorless pork entree.
OK...let’s try to revive this hog.
First of all the new USDA approved internal temperature for pork is 145 degrees.
It is now known that the Trichinella Spiralis Parasite (Trichinosis) is killed at
137 degrees. Keep in mind that the internal temperature continues to rise
after the product has been removed from the heat.
That should take care of the overcooking that has been
going on for years and giving pork a bad reputation.

The hustle and bustle of summer is winding down and our thoughts are beginning to turn toward
winter. Although it goes by very quickly, this is a time of year that produces beautiful aromas, sights
and memories. The scents consist of apples, grapes and cool fall air; while visions are filled with the
beautiful colors of the fall trees, seasonal decorations and the fast setting sun. The captions of these are
the memories that are made. Among all of these seasonal changes is a national holiday that brings us all
together. We choose to celebrate in many different ways.
When the word “Thanksgiving” is mentioned it conjures up many different thoughts. The first that
usually comes to mind is the turkey feast. Around the States it is prepared many different ways, slow
roasted, grilled, deep fried, smoked, covered with herbs, Cajun rubbed or stuffed. Whichever way it is
prepared, most of us enjoy a fair amount of turkey on this day. The traditional main course is usually
accompanied by a variety of potatoes, corn, cranberries and pumpkin pie. Many families utilize these
mainstays differently. Some will incorporate the cranberries in muffins, stuffing, jellies, jams and gravies.
Potatoes can be mashed, baked, roasted, scalloped or casserole style. Vegetables can vary from corn,
peas, slaw, carrots, cauliflower to broccoli. Each family has their own style and traditions to uphold.
Some traditions include waking up before sunrise to start the preparation of the traditional feast; or the
pleasant aromas of fresh made pecan pie and slow roasting turkey. Others include watching the parade
with huge floats and thoughts of football, a group of friends and family gathered around cheering for
their favorite team while snacking on trail mix and sneaking a cookie. It is a time to enjoy conversations
with people we only see at this time of year.
When the moment arrives, the traditional carver takes their place and the turkey is carefully portioned.
White meat will be separated from dark and the wishbone preserved for old passed down traditions.
Now the feast can begin and the partaking of time honored traditions or the creation of new ones.

No, not who killed the hog,
who killed the pork?!
It has been a slow death, it took the
industry many years and there are many
factors, but it finally happened.
Remember when hogs were round and
fat? Well they aren’t anymore. The quest
was to have lean hogs and plentiful white
meat, you know - “The Other White Meat”.
Now we have rectangular looking very
lean hogs, mission accomplished.
Remember when Trichinosis was an issue related to undercooked pork?
The recommended internal temperature was as high as 185 degrees.
Wow - I bet that made for a tough, dry and flavorless pork entree.
OK...let’s try to revive this hog.
First of all the new USDA approved internal temperature for pork is 145 degrees.
It is now known that the Trichinella Spiralis Parasite (Trichinosis) is killed at
137 degrees. Keep in mind that the internal temperature continues to rise
after the product has been removed from the heat.
That should take care of the overcooking that has been
going on for years and giving pork a bad reputation.
