Festive Egg Squares

Ingredients:
1 lb. sausage, cooked, drained
12 Eggs
4 oz. Mushrooms, sliced
1 cup milk or cream
1/2 cup chopped green onions
1 1/2 tsp. salt
2 med. tomatoes, chopped or (½ Large Jar
Medium Chunky Salsa)
1/2 tsp. pepper
2 cups shredded mozzarella cheese
1/2 tsp. oregano
1 1/4 cup Bisquick
Directions: Layer sausage, mushrooms, green
onions, tomatoes and cheese in greased
9"X13"X2"
baking dish. Beat together remaining ingredients
and pour over layers. Bake at 350°, 60 minutes or
until golden brown. 12 servings. May be prepared
the night before and baked the next morning.
Serve with side dishes of salsa and sour cream
Crispy Crab Cakes with Sweet Corn
Sauce

Ingredients:
16 oz. crab meat (fresh or canned)
1 cup mayonnaise
1/2 cup cracker crumbs (unsalted)
juice of 1 lemon
1 teaspoon dry mustard
1 egg white
1 dash cayenne pepper
1 cup Japanese bread crumbs
salt and pepper to taste
1 cup clarified butter
8 oz. Sweet Corn Sauce (see recipe)
2 cups cooked rice pilaf
16 asparagus tips
2 cups colorful julienne vegetables, sautéed to
tender
Preparation:

Combine mayonnaise, lemon juice, egg white,
cayenne pepper, and dry mustard in large bowl.
Wisk until incorporated. Fold in crab meat and
unsalted cracker crumbs until incorporated.
Note: do not break up lumps of crab meat. Divide
into 8 equal portions and form into cakes. Coat
the outsides with Japanese bread crumbs. Hold
in refrigerator until ready to cook.
Sauté prepared crab cakes in large sauté pan in
clarified butter until golden brown on all sides.
Remove from heat. Place 1/2 cup of rice pilaf in
center of each plate. Place 2 crab cakes 1/2 on
and 1/2 off of the rice. Garnish with vegetables
and pour 2 ounces of Sweet Corn Sauce in front
of crab cakes.
Sweet Corn Sauce:
3 ears corn, shucked and kernels removed from
cob
1/2 onion, diced large
3 garlic cloves
1/2 tablespoon turmeric
2 cups heavy cream
corn starch slurry
salt and pepper
Sauté corn, onions, and garlic together until corn
is cooked (without browning). Add heavy cream,
turmeric, and salt and pepper to taste. Bring to a
boil. Puree sauce in blender, return to heat, and
thicken with corn starch slurry. Pass through a
chinois.

Pesto Chicken Breasts

4 Boneless,skinless chicken breast halves - (3 ½
oz per person)
1 egg white
½ cup plain dry breadcrumbs
2 teaspoons extra-virgin olive oil
Cream Cheese-Pesto Filling:

2 tablespoons reduced-fat cream cheese
(Neufchatel)
1 tablespoon (homemade) basil pesto
¼ cup of finely chopped mushrooms
Fresh ground pepper, to taste
Directions: 1.Pre-heat oven to 400 degrees 2.
Coat a rimmed baking sheet with cooking spray
3. Cut a thin horizontal slit along the edge of each
chicken breast to create a pocket 4. Fill each
breast with ¼ of the filling. Close and seal by
pressing the edges together. Repeat with the
remaining chicken breasts and filling.
5. Lightly beat egg white with fork in a bowl. Place
breadcrumbs in a shallow glass dish. Hold each
chicken breast half together and dip in the egg
white, then dredge in the breadcrumbs. (Discard
leftovers) 6.Heat oil in a large skillet over
medium-high heat. Add chicken breasts; cook
until browned on one side about 2 minutes. Place
the chicken, browned-side up, on the prepared
baking sheet. Bake until the chicken is no longer
pink in the center or until an instant-read
thermometer registers 170F degrees, about 20
minutes.

Cashew Encrusted Halibut

7 oz. Halibut Filet
1/4 cup pineapple salsa
1 tbls lemon juice
1 oz. white wine
1 oz. melted butter
1 oz. cashew ritz cracker mix
1 tbls chopped parsley
Place Halibut on baking pan, pour lemon, wine
and butter over fish, sprinkle with salt and
pepper, now sprinkle some cashew ritz crumbs
over top, bake at 350 degrees for 10-12 minutes.
Place on plate and cascade salsa down over it,
pour a little of the butter wine over whole fish and
garnish with chopped parsley.

1 1/2 cups water
1 vanilla bean, split
1 1/2 teaspoons aniseed
2 oz. chopped candied pineapple (optional)
1/2 teaspoon banana extract
1-750 ml. bottle gin
2 drops yellow food color
In a small saucepan, combine sugar, water,
vanilla bean and aniseed. Bring to boiling. Boil
hard for 5 minutes. Remove from heat. Stir in
pineapple and banana extract. Cool to room
temperature. In a large glass container, combine
the sugar mixture and gin; mix well. Stir in a few
drops of food coloring. Cover tightly. Store at least
2 weeks before serving. Present as a gift in a
decanter. Makes 5 cups. Strain before serving.

Add to a large skillet with butter. Add maple
syrup, nutmeg and raisons. Simmer over low heat

*1 butternut squash, 2 – 3 pounds
*1 large onion, chopped coarse
*1 large carrot, peeled and sliced into ¼ inch

*2 tablespoons fresh sage, finely chopped
*6 cups chicken or vegetable stock (low fat)
*pinch salt
*pinch pepper
1) Preheat oven to 350 degrees Fahrenheit.
2) Cut the butternut squash in half and remove
the seeds with a large spoon.
3) Place the butternut squash cut side down on
an oiled baking sheet and bake for 40 – 50
minutes, or until the flesh of the squash is very
soft.
4) Remove from the oven and let cool for 20
minutes in the fridge.
5) Once cool, scrape the flesh from the skin and
place it in a bowl. Discard the skin.
6) Place all of the ingredients (except sage) in a
medium sized pot and simmer for 35 – 40
minutes. Remove from heat and let cool for 15
minutes.
7) Puree in a blender on high speed in small
batches, until all of the soup is blended and
smooth.
8) Reheat the soup, add fresh sage and salt and
pepper to taste.
9) Serve with apple and pear compote.
Chef’s note:
Substitute pumpkin for butternut squash and the
result is equally as delicious!
Apple Pear Compote
*2 Braeburn, Granny Smith or Royal Gala apples
*3 Bosc, Bartlett or Anjou pears
*1 cup apple juice
*¼ cup white wine vinegar
*¼ cup honey
*1 teaspoon mustard seed
*2 tablespoons minced ginger
1) Peel and dice the apples and pears into ½ inch
cubes.
2) In a large sauté pan place ½ cup apple juice
over medium high heat.

3) Add apples and pears and sauté for 8 – 10
minutes or until the fruit starts to soften.
4) Add all remaining ingredients and reduce,
simmer on low, until the liquid is barely visible.
5) Remove from heat and place one heaping
tablespoon in the middle of each serving of the
soup.
Chef’s Note: Pears should be firm and not overripe. Replacing the honey with maple syrup also
works well. When reheating the compote, add a
little apple juice.
