LETTER RIP
PLEASE DON’T FEEL SORRY FOR HOUSTON
WE ARE AS TOUGH AS TEXANS SHOULD BE
There might be a few misconceptions being
floated around the nation that Texas is underwater. In fact, I’ve even seen a “new” map of
Texas with the Gulf of Mexico reaching into
the Southeastern part of this great state and
touching the outskirts of
Dallas.
Let me reassure you
now, especially those of
you who are under the
impression that Texas is
soon to join Atlantis at the
bottom of a lot of water,
that we are still standing
tall. Regardless of where
you came from, if you are
in Texas, you are therefore
Ken Petty Texas-proud.
Texas-proud knows
no limits. We know no
boundaries as to what we can do. Boundaries
and limits are for those who think that the line
of acceptability is the ultimate goal. Texans go
beyond what is expected by others, and achieve
whatever their minds can conceive. Thank you
Napoleon Hill and W. Clement Stone (both
adoptive Texans).
Let’s have fun with this. Let’s assume that
everyone is correct (except us Texans) and that
a large portion of Texas has gone underwater
for good wiping out Houston, Austin and the
Tri-Cities (Beaumont/Orange/Port Arthur).
What would this mean to surviving Texans,
after all we do know how to make a good thing
come from a bad thing.
Firstly, Dallas and San Antonio all of a sudden would experience a tourist boom for those
who want access to a large city and its amenities plus close access to beaches! Abilene,
also a coastal city, would experience a boom
in population and tourism. The southern part
of Texas, between the Texas Sea and Mexico,
would be likened to an American version of
Italy with the Texan Hill County overlooking
the western shores of the Texas Sea. In between
the American Italy and Abilene would be the
great oil producing Texas Panhandle, no longer
a desolate and dry region, but one full of life
and farmland!
Unfortunately, we lost both major universities. So, Texas A&M would move whatever
materials they could save and create a campus
at Corpus Christi. The University of Texas
would move its salvageable campus to Dallas.
Traveling by plane between San Antonio
and New Orleans you would fly over the great
remnant of the city of Houston with her tall
buildings sticking out of the water like a modern metal Easter Island.
Texas would not lose population as one
would imagine, but gain some due to new
arable land, beach front property that didn’t
exist before May 1st and cooler climates due to
Texas Sea air meeting with the cooler moist air
from the north.
Texas would not be the only beneficiary of a
population boom. Oklahoma and her two major
cities, Tulsa and Oklahoma City, would be a
mere four hour drive to the Texas Sea coast.
Back to reality...
The Texas Sea, the new beach front property,
major college location shifts and all that is just
a dream, a ‘what if’ scenario that will never
happen.
So what do Texans do when it floods? We help
each other, that’s what we do. We don’t need
the government’s FEMA or Jade Helm 15 to
teach Texans how to survive. We’ve been doing
well and teaching others these skills for the last
150 years. Texans hurt together, strive together
and win together. After all, isn’t that the reason
most of New Orleans came here after Katrina?

A high-end Cuban experience is coming to
the FM 2920 corridor on June 10th with the
opening of El Mojito. El Mojito will join other
great cultural restaurants like Taco Crave
(Mexican), Rakuu (Chinese/Japanese) and La
Chef (Argentina) in the same center.
Driving up into The Woodlands on the east
side of Interstate 45 something large and made
of concrete was making its presence known,
somewhat. Its odd shape and concrete building material caused many north Houstonians
to wonder what was being built there.
Part of the cloak of secrecy was a great
marketing ploy for the Austin based company,
iFly, to put a contest together for residents
to guess what that structure was going to
become.
The answer; an indoor skydiving platform.

Gallagher found this new location in a bankruptcy sale from the previous owner, another

Outlaw player Ray Wylie Hubbard is best known
for penning the Texas anthem ‘Up Against the
Wall, Redneck Mother’, made famous in a recording by Jerry Jeff Walker in 1973. While not
indicative of Hubbard’s true body of work, that
tune thrust him into the spotlight in the progressive country genre and spurned the formation of
the band The Cowboy Twinkies, one of the first
cowpunk bands that blurred the lines between
country and rock.
While this most recent appearance on the Crighton stage won’t be a song swap, you can count
on some stories from Hubbard between songs
anyway. Ray Waylie Hubbard currently has a
book in production and he is due to release a
new album April 7, The Ruffian’s Misfortune.
Like the city that brought them together, Uncle
Lucius is a gumbo, with hints of Americana and
folk juxtaposed with a slow-cooked roux that is
steeped in classic rock ‘n’ roll and the blues. The
resulting flavor is familiar and unique, roots at
its most refined, albeit with a gutbucket foundation.
After 8 years of touring across Texas and to both
coasts and back, the band was named 2014’s
Best New Band by the Texas Regional Radio
Report. Their most recent release, Live at
Grady’s 66 Pub, is available for free download at
www.noisetrade.com/unclelucius. They are
currently in preproduction for their next studio
recording with George Reiff (Ray Wylie Hubbard, Shinyribs, Band of Heathens), with the
album to be released in early 2015.

The final production in TUTS Underground’s
14/15 season is the lighthearted musical
comedy First Date, playing at the Hobby
Center June 11 - 21. Fresh off Broadway,
this hilarious and hopeful musical chronicles
a blind date between Aaron (who has never
gone out with a stranger) and serial romancer
Casey. As the night unfolds, various patrons in
the busy New York restaurant transform into
supportive best friends, manipulative exes and
protective parents who sing and dance them
through ice-breakers, appetizers and potential
conversational land mines.

This is an ongoing weekly course, beginning February 5, 2015. The class meets

Painting in pastels is quick, easy, colorful,
beautiful, very portable - and FUN! Handled
correctly, pastels will last many lifetimes and
their pure colors never fade, crack, or peel.
No stress and no pressure here to paint a
masterpiece. You’ll learn how to turn “happy accidents” into a part of your painting, or
erase it - pastels are very forgiving. Everyone will hjave a chance to experiment with
different techniques and materials, and you’ll
develop your own unique style over time.
For those who are new to art, you’ll learn
the basics of drawing and painting. For
more experienced artists who are new to
pastels, you’ll learn the characteristics and
techniques that are unique to pastels. At the
end of each class, you’ll have a finished or
nearly-finished painting to take home, ready
for framing.
Each student is encouraged to learn at
their own pace. You are welcomed to do a
class-based painting from reference photos
provided by the instructor, or bring in your
own reference materials to use. We may also
paint from life, or go outdoors to paint as the
weather permits.
During this ongoing course, you will:
-Improve your drawing skills, including
proportions and perspective.
-Learn how to see and paint values, types of
underpaintings, both wet and dry.
-Create different effects using hard vs. soft
pastels.
-Layer and blend pastels to get exactly the
color you want.
-Develop and use a portable pastel kit for
outdoor painting and travel.
-Know how to paint trees, clouds and water.
-Learn how to paint and draw from life and
en plein air (outdoors).
There’s no pressure to develop a masterpiece or “do it right”. This class is all about
having fun and discovering the artist in you.
You’ll have lots of individual attention from
the instructor with helpful feedback so your
paintings keep getting better.
Your supply list has options to fit a budget,
and everyone is welcomed to register and

With all the recent
rain, I sat watching it
run down my drainage sewers and read
THIS startling comment. What was your
initial reaction to that
statement? shock?, sadness?, denial? None of
the above?
If it is shock you are probably one of those
who believes that the reported 5.4% unemployment rate, the quarter million jobs added
monthly, the record all-time stock market
highs, and the six year economic recovery
shows the statement to be ridiculous.
If on the other hand it was sadness, you
probably see the record high number of
working age out of the workforce, below the
poverty level and receiving food stamps and/
or disability, taking psychotropic prescription
medicines, and record national debt combined
with the general decline in civility, public
morals, and trust in our leaders as proof.

have been proven to be dishonest and/or shills
with an agenda. Their selection of “stories” is
even suspect.
The even more shocking statement by
Jonathan Gruber earlier this year that , “We
counted on the ignorance of the American
People” displays an elitist mentality that
makes me join the fourth opinion. I choose
“None of the above”. Yes, I acknowledge the
failures of the promised,
“Great Society” in our society and culture.
Anyone who doesn’t is as willfully ignorant
as an ostrich. But I also don’t believe it is
anywhere close to a “Hellhole’. Why would
the millions come here each year, both legally
and illegally, if it were?
Both sides throw out statistics and numbers
to support their claims. That is when they
bother to let the public know what they are
doing in the first place. This week we saw a
“Trade Bill” that was passed without knowing what was in it, (Those who don’t learn
I don’t believe the American public is all
that confused about our current plight. Many
are engaged in a political “mind game mentality” rooting for “THEIR SIDE” to win like
it is some kind of ballgame. in my humble
opinion, they are the ones responsible for the
government we now have. But most aren’t.
Their interests are “country first” and not,
“me first”. Unless we have independent media
which provides unbiased information, The
Public News, to those who are non-partisan
independents, the divide in our nation politically will become toxic. As long as you continue reading, we will try to be that source.
Our Founding Fathers, especially our first
three Presidents, all warned of the dangers
of political party affiliations that obscure our
country from clearly seeing through corrupt
politicians or candidates who seem to be more
interested in self promotion than problem
solving. Wouldn’t it be nice to actually vote
on candidates in an election based on their
RECORDS (and not their promises) and ideas
minus maybe their names or party affiliations?
THAT may sound crazy and unworkable, but
it might actually solve the growth of voter
indifference and apathy produced by a media
obsessed with “gotcha questions” and scandal
scoops.

The figure that greets all viewers walking
into the ancient Chinese exhibit, at the Houston
Museum of Natural Science, is monumentally
tall and post-thin from the Bronze Age in
southwestern China. The face is something
never seen before. A stylized mask that is riveting- simple and powerful: clear lines define
the eyes, nose and mouth. Arms held out as
holding something, now fingers and thumb in
perfect circle are wrapped around an empty
space. The joints of the hands are evident and
each finger is rendered separately. This is not a
cartoon generalization of hands but in contrast
to the highly stylized face these sophisticated
huge hands are more natural. Perhaps the figure
was holding an elephant tusk since elephant
tusks are found in the pit. We can only guess at
the reason why. This figure is wearing an embellished tunic that delicately flares to the hem
below the knee. Standing flatfooted and solid
on a pedestal that is engraved, embellished and
carved with stylized shapes that are reminiscent
of bird and beak, the foot of the base curls up
with a lyrical finish.
The resonance between the organic gesture of
life and the stylizations with softened geometry
is distinctive, enthralling.
Entering the gallery we are embraced by the
semi-darkness, comfortable but cool in temperature and warmed by music. Lights are focused
to allow the clarity, dimension and in some
cases cast shadow to define the forms. The
impact is a nonverbal invitation to relax and
join the mystery that surrounds these mesmerizing objects. There are ample places to sit in
reverie. This is a place for those who seek out
mysteries that almost go beyond the reach of
word. No one has seen faces like these. There
was no writing, no handy way to understand
them, archeologists are still in search.
To describe we can make some observations:
a mask like face, both bold and delicate. The
figure seems to be based on a square post. The
ears standing out from the head—is hearing
is emphasized with these stylized ears? The
mouth is wide and narrow, slightly open,
it stretches across and around the face and
in some the lips are gently curved up at the
corners. Are they smiling? The eye socket
as a protruding almond shape that tilts up at
the corner. A line across the face marking a
cheekbone again and again-- that line appears
on a face that’s smiling. Are they smiling at us?
The gentle chin stands out from the neck with
an indication of a square jaw, perhaps an echo
of the structure of the post underneath or some
other intent?
The only standing figure in the exhibit is tall,
dignified, to see this figure is to look up, tall
and yet higher on a pedestal. If this is meant
to be admired or intimidating in its power, I
am admiring and am in awe. These figures and
masks are powerful and there is something
modern about their simplicity: Picasso- known
to steal ideas from any studio he entered-would steal them.
But maybe others found their designs worth
emulating: the imagination of an art historian

could go into action here- a
look at the ancient Scythians metalwork and there are
similarities with some of the
objects. The Scythians were
nomads who roamed the Eurasian steppes and Central Asia
at their peak they dominated
Central China. They were
a few hundred years after
the Sanxingdui, but around
the same time as the Jinsha
peoples.
We enter here and are
invited in comfort to sit and
ponder about the possibilities
of what these objects might
have been understood to be—
Gods or idols, performing rituals for peacekeeping—good
weather, water, or warriors
calling troops to battle? And
what we might see them to
be: an extension of the love of
things Chinese as we love the
echo of the delicacy of designs
reminiscent in later Chinese
art, or curves of design found
in yet other civilizations.
The bold mask like face
with eyeballs that are posts,
as if posts were the act of
staring, capture abstraction
in the object and then live in
the viewer’s memory as only
iconic images are able to do.
Finding these objects was
much like finding archeology
all over the globe-- A chance
meeting, a chance digging.
There is a hole somewhere
something dropped in it. The
farmer digging a drainage
ditch came upon some jade in
this area as far back as 1929.
And there were wars and politics to digress
from their uncovering. There was exploration in the 1950’s and 1960’s and finally in the
1980’s an international professional archeological dig came into places that were further
southwest in China than things were ever found
and found these, upsetting the status quo and
story about what happened where and when,
giving archeologists new objects and new mysteries to uncover. We may join them here. The
exhibit continues through September 7.

Exuding passion and embracing wonder
in every endeavor may well be the most
defining quality of Asheville, North Carolina’s native-daughter and rapidly rising
star that is Rainey Qualley. She moved
to Nashville to pursue songwriting but
quickly embraced her desire to entertain,
and she is now the flagship artist for the
new label Cingle Records.
Born in New York, NY, Rainey’s family
moved to Missoula, Montana when she
was two. Living on a farm in the Big Sky
state with her parents, older brother and
younger sister afforded wide open spaces
to roam and play. Her love of the outdoors and animals were firmly entrenched
by the time the family moved to Asheville, North Carolina when she was nine.
“We didn’t own a television, so my
brother, sister and I and friends would be
outside playing catching salamanders,
climbing trees – everything most kids do
outside,” said Rainey.
A student of dance since the age of two,
Rainey always loved the performing arts
and was a passionate participant in school
plays, dance competitions, and choirs
throughout her childhood. She credits
dance for giving her an appreciation for a
wide variety of music genres and styles.
Between dance, the music her father
listened to at home and in his own bands
and her own eclectic tastes, she credits
Johnny Cash, Dolly Parton, Otis Redding,
Etta James, The Temptations and others
for helping drive her love of music.
“Being in the Appalachian Mountains,
those sounds are really native to my ears,
and I love the historical element of Country music – it’s so native to America,” she
said. “Country is innately earthy, which
I’m drawn to.”
Rainey began creating her own songs
as a young child, and her father taught
her how to play guitar. Her love of writing and performing eventually led her to
Nashville, where she immersed herself in
the creative community.
“I love the songwriting atmosphere in
Nashville. Everyone is making music,
and there’s a real sense of community
here.”
Second only to her passion for songwriting and music is her love for animals.
She calls herself the “crazy cat lady” and
confesses to carrying cat food in her car
to share with strays she encounters. Her
own two cats, Myrtle and Wizard, were
rescued from the basement of a vacant
house.
Rainey was recently announced as the
flagship artist on the new Nashville label
Cingle Records, and she is currently
working on her debut album with acclaimed producer Russ Zavitson.
Her song, “Turn Me On Like The
Radio,” was added as a “Highway Find”
on SiriusXM’s The Highway and rose to
#17 on their countdown. Her debut single
“Me And Johnny Cash” hits country radio soon. TURN DOWN THE LIGHTS
will be released on June 2, 2015.

The first time I walked into 5.ATE Café, I
really had no idea what to expect from this walk
up counter inside of a rock climbing gym. By
the time I left, I was using words like “delicious”, “genius” and “original” to describe my
experience.
5.ATE was recommended to me by a fellow
foodie, Matt Bessey, and
it’s a good thing word
was starting to get out on
social media about this
café, or I would never
have found it. Located
just inside the entrance to
the Inspire Rock Climbing Gym, owner/chef,
Charlie Renee Williams
and crew are cooking up
some absolutely amazNick Rama ing and wholly original
dishes from their small,
open concept, kitchen.
Upon walking up to the counter I was cheerfully greeted by Shane who after learning it was
my first visit to 5.ATE, was happy to tell me a
little bit about two of his favorite dishes. The
Vietnamese Banh Mi with Pork Belly is a slow
roasted pork belly, spicy pate, mayo, house pickled daikon and carrots topped with cilantro and
thinly sliced fresh jalapenos, served on a bolillo
roll. Shane’s second recommendation was the
Shar-Warma Burger, a crispy patty of freshly
ground certified angus beef, banana peppers,
feta cheese, creamy tzatzki sauce an a garlic
chili sauce on a house made sourdough English
muffin, topped with lettuce, tomato and onion.
Being a fan of Greek/Mediterranean flavor
profiles, I ordered the Shar-Warma burger with a
side of garlic fries. I’ve got to be honest, I love a
good banh mi and that is normally what I would
have ordered, but I couldn’t help but wonder if
I could really find good pork belly inside of a

rock climbing gym (a week later I would find
out, that I absolutely could).
I took a seat at one of the four top tables
and waited for my order to be delivered while
watching people of all ages and fitness levels try
their hands at indoor rock climbing. Once Shane
brought out my order, the first thing I noticed
was how incredible the food smelled! I took my
first taste of the burger and was instantly a fan of
Chef Charlie and 5.Ate Café.
The beef patty had crispy edges, while still
being very juicy; it reminded me of a good
gyro, which worked incredibly well with the
Greek seasoning in the meat. But was still juicy
and perfectly seasoned. The toppings and two
sauces work so well together with the tartness
from the banana peppers being complimented
by the creamy tzatzki sauce and the brininess of
the feta and the bit of spice from the garlic chili
sauce all combining to make this one of the best
burgers I have ever had. Holding this master-

piece together is a house made sourdough English muffin that is thicker and yet a bit lighter
than your standard English muffin. The texture
of this was a welcome change from your average hamburger bun and the served to soak up
those two wonderful sauces rather than having
them just fall out onto your plate as normally
happens with other burgers.
My garlic fries were perfectly cooked; slightly
crispy on the outside and tender and fluffy
inside. Generally, when you order garlic fries,
it’s a sad tablespoon of jarred garlic dumped
onto some fries, but not at 5.Ate. Chef Charlie
brushes the fries with garlic butter and tops the
fries with paper-thin slices of freshly sautéed
garlic. These things were the essence of garlic.
I finished my meal and went back to work
where I told a few of my coworkers about my
outstanding lunch. A few of them decided to
make the short drive and try it for themselves
and also became instant fans. Just as my wife
and mother-in-law did when I took them to
5.Ate for dinner that same night. Yes, this place
was so good I ate there twice in one day!
When I returned that evening, Chef Charlie
recognized me from my visit earlier in the day
and warmly welcomed me back. I couldn’t
decide which of their stone baked pizzas to try,
so Charlie suggested I try a half and half pizza. I
told him to surprise me and I’m really glad I did.
When my pizza was ready, Chef Charlie
brought it out and explained that half of the
pizza was the Ratatouille and the other half was
their Sausage and Peppers. The Ratatouille has
a layer of roasted eggplant and garlic spread,
topped with provolone cheese, sweet crushed
tomatoes, capers, thin and vertically sliced pan
dried zucchini and squash, finished with Grano
Padano cheese. The Sausage and Peppers
contained Chef Charlie’s Mediterranean red bell
pepper sauce and was topped with sliced Italian
sausage and provolone cheese.
I have never been to Italy; this is what I imagine pizza tasting like there, with a nice chewy,
light and airy crust with slight charred spots
from their stone baked pizza oven. I have found
that generally, when you put too many vegetables or meats on a pizza the crust becomes
soggy, especially in the center and Chef Charlie
manages to avoid this while still providing a
generous amount of toppings to his pizzas. The
toppings were so fresh and of excellent quality,
with the Italian sausage being the real stand
out ingredient here. It had a very nice texture,
and the flavor and the sweetness of the sauce
complimented it.
Since that first day and over the course of
10 months, I have tried just about every menu
item and what is so nice about being a regular
customer at 5.ATE, is that you never know what
type of specials you will find yourself walking
in to. So far they have all been incredible. Charlie had told me that his burgers are supposed to
be messy to eat, which is fine with me because
his flavor combinations always work so well
together.
While there are only six burgers on the regular
menu, I’ve been lucky enough to try about twenty different burgers at 5.Ate, thanks to Charlie’s limited special edition burgers, which are
occasionally posed on the café’s Facebook page
(when this happens, get there quickly because
they sell out fast). I have been so impressed by
Charlie’s offerings that I chose him as Chef of
the year on my 2014 Best Of list (see Public
News issue #7), along with Best Gourmet Pizza,
Best Gourmet Burger and Best Restaurant. We
even had a tasting with a group of 35 people for
our Spring/Woodlands Foodie Tasting and Deals
members. That night was all rave reviews.
Charlie’s creativity is unmatched in my opinion. I would love to see him on a show like Food
Network’s Chopped and let him go with a basket
of secret ingredients to see what he would come
up with. Some of Charlie’s off menu items have
been his over the top specials that have been
very successful. Here are a few highlights:
-The Peppercorn Burger that is a play on
a steak au poivre, and consists of a crispy
pressed Angus patty coated in Dijon and
cracked peppercorns then smothered in a
cognac and mushroom cream sauce.
-The Chipotle Triple-Threat, which had
crispy pressed freshly ground certified
Angus beef, spicy chipotle cream, chipotle
tamarind BBQ sauce and chipotle gouda
cheese with hickory smoked bacon and a
dill pickle slice.
-Turkey Day Burger, which was a Thanksgiving time special. In this one he used
turkey burger patty mixed with dried
cranberries, pecans and Gorgonzola
cheese topped with a slice of flat top grilled
cornbread stuffing made with duck broth.

sweet potato bun while the bottom half gets
a light spread of honey butter served with a
side of pickled green apple/red onion slaw.
-The Underground, which is a Wagyu
burger topped

I could go on and on about the specials I have
had, but another aspect of this place that really
I love is the friendliness of the staff. You really don’t expect any follow up care in a casual
environment like this, but they will ask to get
refills for you, ask how everything is with your
meal and if Charlie has time he will even come
out and check on and chat with his customers.
If you are looking for a fabulous gourmet meal
and don’t want to get dressed up to go dine out,
I highly recommend checking out 5.ATE Café…
you just never know what yummy goodness he
will have on the menu on any given day. If not,

I got to sit down with the mastermind behind
5.ATE Café and here is what he had to say.
What made you decide to open your establishment in a rock climbing gym?
Family. When my brother-in-law finally got the
go ahead for the gym, there was extra room and
he called my wife and me. The rest is history.
Please explain where the name 5.ATE Café
came from?
5.ATE is a play on the rock climbing difficulty
scale. 5.1 - 5.15
What are your most popular menu items?
We sell quite a few hamburgers. I planned to
be a pizza restaurant but we are in Texas. Folks
love to try the unexpected so anything off menu
goes quickly.
So, you set out to be a gourmet pizza joint inside a rock climbing gym. Tell us more about
your style of pizzas.
Dough is the key. I love thin hand tossed Italian
style pizzas. To be chewy but light and crisp.
The sourdough gives outs a little extra Flavor
as well.
I see you have some quirky names for some of
your regular menu items. How did you come
up with those names?
I try to keep with rock climbing related names if
possible such as the Hueco Tanks. A climbing site near El Paso. Also the Shar- warma is
named partially after a famous climber.
You have some off-the-wall crazy specials
weekly. What is your inspiration to come up
with them?
I shop for groceries every day, sometimes twice
a day, and I see all the fresh produce. That’s
one. Second would be great memories of food
growing up and things I’ve eaten while traveling.
I have personally had quite a few of your
burger/sandwich specials, my favorite being
The Peppercorn, The Underground and The
Chipotle Triple threat. How do you decide
what will eventually go on the menu and for
how long you run a special burger?
Hummm, some burgers are over the top and I
love them but they might not work in a quick
service setting like we have at the gym so they
wouldn’t last long as a special. Simple flavors
are more likely to stay on for the long haul.
I see you have pork belly on a few menu
items. Tell us about your cooking technique
on this?
Dry rubbed for a few days and then 4 hours low
and slow after a quick hot sear.
What is your favorite meal here? What has
been the most successful menu item?
I love love the Banh Mi. It’s not traditional
bread but sometimes food takes on local ingredients. Our Banh Mi uses a staple of the area, the
bolillo. I like to use the best of what’s available,
plus the roof of my mouth prefers the softer
less crumbly Mexican style roll. We also use a
large 1/4# portion of our slow roasted pork belly
which isn’t as common traditionally
The Classic is our most popular item. 1/4# fresh
ground Angus chuck, white cheddar and pickles
on a freshly made English muffin style bun
dripping with homemade 1000 Island (aka Cafe
sauce).
What can someone expect walking up to
order at 5.ATE Café if they have never been
there before?
A smiling face, a computer screen with our
menu and probably one of the only gyms
they’ve ever walked into that smells of garlic
and onions.
Quality seems important to you, from the
meat that you use all the way to the house
made English muffin buns and bread. Can
you tell us more about what special ingredients you use and a little more about the meat
and buns?
I only use the freshest most healthful ingredients, which is the main reason I shop so much.
The meat is Certified Angus and is hard to beat
for flavor and quality. The buns and pizza dough
are sourdough but the rest is a closely guarded
secret.
Where did you learn your craft?
I’ve had a few food related jobs during high
school and college, BBQ and fast food, also running a grill at the dining hall in college, but I’m
mostly self/TV taught. I started watching Great
Chefs of the West when I was little before there
was a Food Network.
What drives Chef Charlie Williams?
What a great job I have making people happy.
I always want to work to the best of my ability
like I was cooking for the Lord. I want to bring
glory to God by the way I run my business, how
I treat my employees and how that translates
into food. This is the best I can do.
Tell me about your staff. You have some culinary school students working with you; what
do they bring to the team?
We have three basically full time kitchen staff.
Elisa Godina de Chavez has completed the first
half of her culinary degree and Natasha Jiminez
has graduated, both from LeNôtre here in Houston. My Sous Chef Jared Hobson has grown up
in kitchens with nearly 10 years in the business.

The downtown Houston bar scene is hopping these days
and adding to that excitement is Houston’s newest gastropub,
Bovine & Barley. Gone are the days of slamming a generic
beer with a handful of bar nuts. Bars have finally realized that
foodies want a craft brew and a gourmet meal.
Partners Michael Collins (The Fish, The Refinery Burgers &
Whiskey) and Jason Lowery (Proof Rooftop Lounge) opened
Bovine & Barley in the former El Centro location at Prairie
and Main. The space has been completely transformed into
a sophisticated yet bold lounge filled with rich wood accents,
custom tables, and Edgar Allan Poe quotes. In the center
of the restaurant is a magnificent u-shaped bar that is very
comfortable and welcoming. Of course you can’t miss the
hundreds of light bulbs that adorn the wall spelling out HTX.
There’s also a private room upstairs that is perfect for meetings
or intimate gatherings. Plans are currently in the works for an
outdoor patio that will seat up to 30.
When it comes to the Barley part of B & B, they have really
taken care of business. Over 40 beers are available on tap
and many of those are from local breweries. Since the selection changes frequently, the menu is shown on computerized
screens. Don’t worry about feeling overwhelmed with the
selection. Matt Heer has created a superb bar program and
his staff, which include awesome bartenders like John Havens
(AKA “Red”), are extremely knowledgeable and ready to help
make a suggestion. I started with a Union Jack IPA; it was an
exceptional beer with notes of citrus and honey. Wanting to try
something a little bolder, my next pick was Deschutes Obsidian Stout Nitro. This luscious beer could easily pass for liquid

dessert. It was deep and robust with hints of
espresso and chocolate.
Although beer is obviously the main focus
of B & B, wine and cocktail drinkers will
find something to enjoy as well. They have
a full bar, but be sure to try one of their draft
cocktails. These barrel aged cocktails rival
any libation being served by local mixologists.
You have the benefit of a great craft cocktail
without having to spend 10 minutes watching it be made. Eventually, there will be up to
six choices. I tried three that were currently
being offered, the Sauvage Collins (Lone Elm
Vodka, Citron Sauvage Liqueur, Lemon Juice,
Simple Syrup), the Old Swine (Fat Washed
and Un-Fatwashed WhipperSnapper Whiskey,
Water, Turbo, Angostura and Mole Bitters),
and the Smoke & Fire Mule (Mezcal, Lime
Juice, Simple Syrup, Ginger Beer, Hellfire
Shrub Bitters).
Now about the Bovine part. B & B offers
a “beef-centric” menu masterfully created by
Chef Harold Wong (The Fish, Azuma). I was
interested to see how his approach would be
to this meat centered menu considering he is
known for his skills with a more delicate cuisine. I have to say I was quite impressed. B
& B has an assortment of “comfort food” type
entrees with a rich, beefy goodness to them.
The small bites are perfect for sharing and
include options like Meatloaf Muffins, Steak
on a Stick, Meatball Flatbread, HTX Sliders,
Cast Iron Queso, and Jalapeño Bacon Bites.
My favorites were the Steak on a Stick (beef
skewers with shishito peppers, grilled onions,
and Thai chili sauce) and the Jalapeño Bacon
Bites (pineapple chunks wrapped in jalapeño
bacon and stuffed with cream cheese). For a
heartier fare, I recommend the Bovine Burger.
It’s a ½ pound Angus beef patty topped with
bacon, cheddar cheese, fried onion strings,
lettuce, and tomato. B & B does offer a few
non-beef items like Southern Fried Chicken
and a Tuna Steak burger, as well as salads.
People of all ages will find something to
love about Bovine & Barley. They are open
for lunch, happy hour, and dinner. Bovine
& Barley is a great place to drink, dine, and

space?
We hope to someday open a second location
with a few more tables.

We are open Monday thru Saturday 11am – 9pm
You have specialty coffees and smoothies too.
What makes your coffee and smoothies different from the national chains?
Our Coffee is from Segafredo, an Italian
importer very popular in Europe and growing
in the U.S. You get handcrafted attention from
us that you might not get from a big chain. Our
smoothies are Island Oasis and although they
aren’t fresh fruit they are high quality ingredients and consistently delicious.
I heard that you have done some catering
and special events. Do you plan to do more of
those in the future?
We catered a wedding last fall for 200 and had
a great time! This summer we have another for
200 as well. Catering is fun because we get to
think outside the Café box and create whatever
the customer wants, so I hope there are many
more to come!

‘Return of the Jedi’:
Looking Back Before Looking Forward

As Public News looks back on the last two
weeks, I finally get to dish out my first Star
Wars piece with nothing better than a Star
Wars Day commemoration.
Now, to avoid any confusion regarding timeliness, I’d like to clarify that I’m recognizing
the true Star Wars Day—May 25—as opposed
to the other group of Star Wars fans who continually choose to celebrate the late Margaret
Thatcher’s 1979 electoral victory in the United
Kingdom—May 4. I wrote a similar piece last
year explaining the difference in significance
between the two dates, but as I am now serving a new audience, I’d like to briefly provide
the facts once more.
The phrase, “May the Fourth be with you,”
originally emerged as a congratulatory message not only for Thatcher’s general electoral
victory in 1979, but also she was the first female British prime minister. Her party bought
an ad in the London
Evening News stating,
“May the Fourth be
with you, Maggie.
Congratulations,” after
the election. Upon
Star Wars fans’ official
recognition of the date
in correlation to George
Lucas’ franchise four
years ago, May 4
became a gargantuan

celebration profiting
both the franchise, and now The Walt Disney
Company.
Myself and many other fans choose not
to pair May 4 with such significance, as we

perceive it to be nothing more than a gimmick. For us, May 25—the release date for the
original film in 1977—is the true Star Wars
Day, and the date which should be universally
acknowledged as such.
Of course, in light of such a debate, some
out there would probably say, “Who the hell
cares?” But the fact of the matter is more
people care about this than one would think,
as asinine as it is, and that’s exactly what the
nerd culture of the world has to offer.
As we have a new Star Wars film hitting
cinemas in December, I feel it’s important to
touch on the film preceding (chronologically/
numerically) Star Wars: The Force Awakens
before diving into any serious discussion
regarding the franchise’s future. The prequels
have certainly had their day in debates, discussions and being outright bashed, but now is
the time for post-Galactic Civil War subject
matter. And given the unfair criticism Return
of the Jedi (1983) often receives, I’ve elected
to focus this commemoration piece on its
defense, similar to what I did with Star Wars
Episode I: The Phantom Menace (1999) last
year.
Personally, I enjoy Jedi just as much as the
other films. Although it’s not my favorite (or
the best) of the franchise, as both those titles
belong to The Empire Strikes Back (1980) in
my opinion, I still feel Jedi is a well-made and
satisfying conclusion to the original trilogy.
The film has a few issues when compared to
its predecessors, but I don’t hold it in the same
negative light as many other fans. For this
piece, I’ve chosen to examine what I feel are
the three key issues many have with Jedi.

Jedi. It just prevents the film from diving into
a deeper sanctum of edginess and drama. And
quite frankly, I don’t know if I would enjoy
the film as much as I do had he been killed off,
because I’d probably think, “Oh, well Han’s
not in this one, so that’s no fun.”
Some fans may be disappointed that Han
lived on, but that doesn’t automatically make
the film terrible, and one shouldn’t regard the
film as such for that reason either.
Han Solo
One concern, which some might find odd,
with viewers as well as the film’s creative
team was the continued inclusion of Han Solo
(Harrison Ford). Of course, it’s unfathomable
to imagine a film in the original trilogy without the charming and witty space pirate. Han
is probably one of the most beloved characters
next to Luke and Darth Vader, so why kill him
off?
As it turns out, the making-of documentary
Empire of Dreams: The Story of the Star Wars
Trilogy (2004) discloses the fact both Ford and
screenwriter Lawrence Kasden wanted to kill
off Han as a means of upping the tension.
Ford felt because Han had no family to
leave behind, he should sacrifice himself for
Luke and Leia, as well as the Rebel Alliance.
Kasden felt one of the main characters should
meet a tragic end early on in the film so the
audience would begin to worry about the
fate of everyone else. Lucas was, of course,
against this. His reasons are his own, but one
can suspect that he simply wanted his heroic
trio to make it through to the end and have a
happy ending.
Us not losing Han doesn’t necessarily hurt
Boba Fett
A part of the film many fans have an
overwhelming grievance with is the death of
Mandalorian bounty hunter Boba Fett. Not
only was the character killed off in the first
act without having even uttered a word, but he
was also killed in what fans consider a cheap
and lame manner—tumbling down the mouth
of the Sarlacc Pit after his jet pack is unexpectedly and unintentionally activated by a
blind Han. The result of this untimely demise
led to one simple conclusion: Jedi sucks.
The death of Boba Fett is a subject for
which opinion is polarized unlike any other in
Star Wars fandom. Due to his overwhelming
popularity following Empire, Fett’s fate was
opposed to the point writers felt the need to
resurrect him in Star Wars literature (the now
non-canon Expanded Universe), giving him a
more significant place in the franchise. I, however, find this treatment to be unnecessary and
ridiculous, and rendering Jedi awful because a
minor character with an awesome outfit died
too early is outright absurd.
I often think of Jay Baruchel’s dialogue in
Fanboys (2009) when discussing Fett, which I
feel puts things into perspective perfectly:
“You guys have both got to stop perpetuating this myth that Boba Fett is some kind of
badass, alright? What? He has a jetpack! So
did The Rocketeer. Really cool! I mean, when
it comes time for battle, the man’s Michael
Bay: All style, no substance.”
The fact of the matter is Fett is a two-bit
character with only four spoken lines and six
and a half minutes of screen time (this does
not include the animated segment from the
Star Wars Holiday Special (1978), or Star
Wars Episode II: Attack of the Clones (2002)).
Yes, he succeeded where other bounty hunters
failed in tracking the Millennium Falcon in
Empire, and he had an awesome outfit, but
that’s it. At the end of the day, Fett only got by
on his appearance when considering what he
actually contributed to the trilogy. Hell, of his
four lines, none of them were even in Jedi.
Fett admirers act as if he were Luke Skywalker, or Darth Vader for that matter, and
deserved to go out in a blaze of glory. Why
should a minor character get such a meaningful exit when so much else has to happen?
Jedi isn’t about Fett, but about the relationship
between Luke and Vader, the fall of the Galactic Empire and Vader’s redemption. I don’t see
how making a huge deal of a random, coollooking bounty hunter adds to any of that. To
say Jedi sucks simply because Fett died too
early or not in fulfilling way is just stupid and
not fair to the film itself.
Also, to anyone who justifies Fett’s significance with random facts from a random EU
book about the character: It wasn’t in the movies, so it doesn’t count. That being said, if the
writers decide to include him in the upcoming
sequel trilogy, that’s a different matter altogether. And while I wouldn’t be particularly
happy with such a decision, there obviously
isn’t much I’d be able to do about it.
Ewoks
This is probably the most significant point
in terms of unfair Jedi criticism. I cannot even
begin to express how much this complaint
irritates the hell out of me. When Jedi bashers
insult the film because it was “only made to
sell toys” or “teddy bears defeated the Empire,” all I hear is narrow-minded ignorance
tearing apart a good movie. People my own
age weren’t even alive when Jedi debuted 32
years ago, so I know when they spew these
irrational comments, they’re only regurgitating their parents’ views or those of older fans
without applying critical thinking.
I will admit using Wookies instead Ewoks
would have been a more awesome way to
go for Jedi’s climax, as this was the original
intention when Lucas began drafting the story
in the early 1970s. But this was also before he
split the story into three parts, effectively making Han’s co-pilot a Wookie in fear of Wookies never making an appearance. When Jedi
finally came along, the Wookies in the forest
battle were substituted with Ewoks.
I don’t see the “selling toys” point as a valid
argument. It’s Star Wars, and anything with
the Star Wars name will sell itself. The filmmakers wouldn’t need to insert “teddy bears”
into the movie to make children’s merchandise
more marketable, so that point really doesn’t
even make sense. I simply see the Ewoks as
being a way to help differentiate Chewbacca
from the Endor natives since they were originally going to be Wookies. I can’t say I would
actually have a problem picking Chewie out
from the rest of the bunch, but I can understand that reasoning more than needing to sell
toys.
Plus, if you had essentially 200 Chewies
assisting the Rebels in battle, the Imperials
honestly wouldn’t stand much of a chance.
The damn thing would be over before it began. We’ve witnessed Chewie’s strength and
usefulness in combat situations, and that’s just
him. So in the context of what’s seen in the
film, an army of his kind would make the Empire’s efforts on the ground a waste of time.
On the subject of the forest battle and
Chewie, I’m going to say this: The Ewoks did
not defeat the Empire. Such a rationale for
denouncing Jedi is even dumber than Fett’s
death, not to mention inaccurate. Several elements contributed to the Rebels’ winning the
battle, and while the Ewoks certainly helped,
Chewie actually deserves most of the credit.
The Rebels didn’t start winning the battle
until Chewie commandeered one of the enemy
scout walkers. Up until that point, the Empire
had supreme firepower and weaponry, and
Chewie turned the tables on that disadvantage.
It’s actually pretty damn clever when you
think about it because the whole time you’re
watching the battle, you’re thinking, “Why
don’t they just take one of the walkers?” What
would make the battle stupid is if Chewie
hadn’t taken such action.
The Ewoks weren’t useless though. Their
numbers and surprise offensive caused the
Imperial troops to break formation, scattering throughout the forest to subdue them, and
provided the Rebels the necessary distraction
to escape capture; i.e. divide and conquer.
Some of the Ewoks’ weapons and methods
were ineffective, but not all of them. Stoning
Stormtroopers from a tree, which is actually
somewhat brutal when thinking about it, will
certainly do some damage. And before anyone
goes, “Yeah, but they’re wearing helmets
and armor,” think about the physical injury
football players endure. Regardless whether
you’re wearing a helmet, blunt trauma to the
head is going to hurt, and a stone the size of
your head still has the potential to kill you.
Besides, a Stormtrooper’s “armor” is essentially just a military uniform. Luke even
describes it this way in the original film. Off
the top of my head, I can’t even think of a
moment in the original trilogy where a Stormtrooper’s attire is even referred to as “armor.”
So I really don’t know where the notion that
Stormtroopers are invulnerable to anything
and everything comes from, especially given
the fact they’re always killed with ease (often
as a result of their own actions), and don’t
have accuracy worth a damn. Militarily speaking, Stormtroopers are pretty worthless, so the
Ewoks being able to take them on shouldn’t
come as much of a shock.
Regarding the walkers, the Ewoks’ traps
used against them aren’t that far-fetched
either. The swinging logs could totally crush a
scout walker’s hollow head—as was demonstrated in episode 208 of MythBusters—and
unless the vehicle is made out of vibranium, I
see no reason why this device wouldn’t work
given the right set of circumstances.
The rolling log trap was another ingenious
feat of the Ewoks, and strategically similar
to how the rebels brought down an AT-AT in
Empire. A scout walker seems like it would be
difficult to maneuver through rugged terrain
considering it’s basically a giant box balanced on two thin legs. I can only imagine
attempting to drive one over a stream of logs
wouldn’t end too well.
The Ewoks are certainly included in Jedi
for comic effect, but they do serve a purpose,
and when one breaks down the forest battle, it
isn’t hard to see the Ewoks aren’t 100 percent
ridiculous, or that Chewie is ultimately the
real hero.
Jedi may not be better than its two predecessors, but it does a fine job wrapping up the trilogy and keeping the space fantasy atmosphere
alive. It’s a good movie, and naysayers’ arguments for what drags the movie down only
diminish the film’s true quality and legacy.
Fans should appreciate Jedi for what it is, and
use the film as a catalyst to gear up for Force
Awakens in December.

boys, ages 7, 10, and 12. They’re good kids, but all
they want to do is play video games. I don’t want
them to fry their brains or just be lazy, but if I cut
them off their games they

to have something they
enjoy as an incentive for being productive each day.
Make a simple chart for each son that includes five
or six things they must do daily before they can
earn X number of minutes of screen time (video
games, TV, electronics, etc.) each day. Examples
include completing homework, 15 minutes of reading, 20 minutes of outdoor play, any type of chores,
random acts of kindness, etc. Be creative but not
burdensome, and you can tailor each chart to fit the
needs of each child. Place the charts in clear sheet
protectors, hang them in a convenient location,
and place dry erase markers beside them so they
can easily check off each item they accomplish.
Soon after the initial complaints of implementing a
new system, you will see positive changes in your
household. And the boys will see a positive change
in Mom, who is finally celebrating (not nagging)
that her sons are playing video games... because
they have earned it by being productive!

A conversation with James Nelson

Bravado Spice was developed by three guys
(two of them right here from Spring, TX and one
from Houston), who have created some really great
tasting sauces and products that are “Big. Bold.
Bravado.”
As their mission statement tells us, their goal is
“To craft bold, incredible hot sauces that are undeniably delicious; we focus on raw flavor instead of
just heat. Our products bring something awesome
to the table, from pineapples to ghost peppers,
Bravado Spice Hot Sauce is unlike anything else
out there.”
Originally selling their products at local farmers
markets around the Houston and surrounding areas,
the Bravado brand has been growing their business
by slowly adding having their products added to the
shelves of numerous retail stores.
Bravado focuses on handcrafted sauces that are
preservative free and that contain natural ingredients that you can actually pronounce, made in
Houston. These sauces are not mass -produced
and have very complex flavor profiles. I personally do not like hot sauces that are all heat and no
flavor, and Bravado perfectly pairs heat and flavor
together.
Bravado Spice currently has three hot sauces
that are all excellent and each are different from
the usual hot sauce offerings on your grocery store
shelves: Jalapeño & Green Apple, Ghost Peppers &
Blueberry, and my favorite, Habanero & Pineapple
(especially great on grilled shrimp). Bravado Spice
is currently adding two more products (and you can
actually help them with that - more on that later).
I got to talk with James Nelson of Bravado Spice
and here is what he had to say
Who are the minds behind Bravado Spice?
Bravado Spice is Jeremiah Tallerine, Ryan Harcourt, Vince Blasco & myself.
Where did the name ‘Bravado Spice’ come
from?
Bravado means brave or foolish, which is pretty
much what we are.
Who is the master creator/chef of your products?
I guess you could say me, but the entire team collaborates on our products
What are your best selling products and tell us a
little more about each of them?
Our Pineapple & Habanero is currently our most
popular product. The Crimson Hot Sauce, once
launched, will probably give it a run for its money,
though. Bravado Spice specializes in handcrafting
our three award winning hot sauces. Our focus has
always been on flavor first and heat second.
-Jalapeno & Green Apple Hot Sauce, a mild,
flavorful combination of jalapeno and granny smith
apples which is fantastic for breakfast tacos &
grilled chicken.
PUBLIC NEWS
-Pineapple & Habanero Hot Sauce, a moderately
spicy combination of fiery habaneros & sweet, hand
cut pineapples which is perfect for seafood, grilled
pork and cocktails
-Ghost Pepper & Blueberry Hot Sauce, a hot blend

excellent partner for smoked meats such as brisket,
and grilled beef.

What are your goals for Bravado Spice in the
future?
Keep growing, bringing on new vendors and keep
making products that our customers love.
I heard you are a little bit of a celebrity, tell me
more about your experience getting there and
where someone might have seen you before?
Ha, more like a d-list celebrity. I was on season 4 of
Fox’s Masterchef. I placed 5th.
How much do you use Bravado Spice sauces in
your everyday cooking?
Almost daily. I’m always finding new ways to use
our products.
Share with us your favorite recipes that uses
Bravado Spice?
Hands down, Pineapple & Habanero ceviche, it’s
simply a red snapper ceviche, Peruvian style, with
some hot sauce mixed in. It is divine.
Are any restaurants using your products in their
dishes?
Just a handful. We haven’t really broken into
restaurant service yet, but several locations such as
Ruggles Green and Royal Oak offer dishes made
with our hot sauces.
