As I look back my wife and I almost did not make the trip to Terlingua
with the economy in bad shape and not knowing if you will have a job are not.
So glad we made it.
You know for me it is not the chili, I just love to cook; it is the people that

From the President
The 45th Annual Terlingua International Chili
Championship is in the book. A big congratulations to
our winner Larry Walton, a first time cook at TICC.
Way to go! And to our now former Champion Tom
Dozier, a great effort to come in Reserve Champion,
almost becoming only the second person to ever win
back-to-back. For the show winners, a job well done:
Large Show Rods & Wheels, Small Show Texas Chili
Chicks, and One Person Show Dream Catcher.
This month I intended to publish a list of the many volunteers that make the
Terlingua experience possible. TICC is like a large college show band, it has
many people playing different parts, all marching together for a common
purpose. With so many, doing so much, in so many areas, more time is going to
be needed to gather the names. So, look for the list next month … I promise.
Throughout the year, we also have volunteers that make things happen. At
the top of those lists would be our Great Pepper of the Year Dave Boone and
Chilihead of the Year Connie Collier. Thanks for all you do. For the President’s
Awards of which one went to the International River Runners and another to
Diane FitzHenry, congratulations for the years of hard work you’ve done to
deserve the award. As for the Pioneer Awards for Fred McMurry, Ray King,
and Richard Knight, without your early efforts and leadership, we would not be
where we are today.
Now, whoever ordered the weather for TICC should get a pay raise for
next year. Wow, it was great and made the many events throughout the week
much more pleasant. Well, that’s not counting the Wednesday dust storm that
blew in all the way from the Andromeda Galaxy, but it did bring in a whole host
of Aliens to celebrate with us.
Within all the good camaraderie that was shared, we did mourn the loss of
one of our own when Ken Swart was called to Heaven. Ken, we shall miss you
and shall look after those you have left behind. The loss of one of our chili family
is a reminder to live each day with gusto and to tell those close to you that you
love them.
Looking ahead, I still would like the opinion of the membership regarding
whether CASI will have a sit down meal on Friday before the Great Peppers’
Meeting. Please discuss this at your Pod meetings and have your Great Pepper
relay the Pod’s input to Adrienne Grant at [email protected]. She is
collecting your opinions and feedback. The crux of the issue is whether CASI
should spend approximately $3,000 for the meal on Friday evening, providing a
sit down setting, which will allow people to meet fellow cooks from around the
country and to share ideas. Alternatively, people can use that night to eat out in
the area or grab a bite in the hospitality rooms. It is YOUR money and so we’d
like your input. The GPM Committee is interested in getting your comments.
Let’s all look ahead to TICC 46 and enjoy the journey as we meet with
friends along the way, raise money for charity, and have fun cooking pots of
chili!

Reflections from the ED
We had a very successful Terlingua International
Championship! Thanks to all of you who assisted in this
event. Congratulations to all of our winners, especially
Larry Walton. The BBQ and the Dessert Contest were
very successful as well as all of Friday’s events. There
were lots of winners in these events. Congratulations to
each of them.
A special thank you to Boomer Kingston for his
part on Friday and Saturday. This was his 19th year
acting as the Master of Ceremonies! As always, he did a fabulous job.
A reminder that the new Rulebook is in the Resource Center on the web
page (www.chili.org). If you are a Great Pepper or a Referee as well as any
CASI member, please be sure to download this book and have it with you at
each of the cookoffs that you attend. There were some rule changes voted in at
the last Great Peppers Meeting.
At the Great Peppers Meeting, it was voted to require the use of the Show
Entrant’s Sheet. It is included in you package and must be returned to the
TallyMaster as well as the Chili Entrant’s Sheet and the Result Sheet. These
documents must be sent to Jenny Windsor. This includes the results from all
Texas Chili Cookoffs.
It is time to begin thinking about your Pod requirements to meet the
Credentials. Review these requirements in the Bylaws, Article 13. Have you
planned your Pod CCO? Remember that you must have one a year.
Do you need a CIS login? If so, please send your request to me at
[email protected].
Please do not forget to send me information for the blog. Watch it each
weekday for information about CCOs, Chili News, and some up-to-date
information.
Our Winter Board Workshop and Board Meeting is coming up soon. If you
have information that you would like to have discussed in either session, please
send it to me as soon as possible.
Now the holidays are upon us! Here’s hoping that you will have a
wonderful holiday!

teach them how to cook chili and share stories and laughs around the campfire that
is what I love.
I have to say thank you to so many people for helping me along the way but it
was Randy Duke that took me to my first cook-off; I got 10th place and was
hooked. As I said on the stage, I graduated from David Lefler University with a
degree in Dukester Chili. Thanks for your help guys. Others who graduated are
Gerald Casey, Jim (stink foot) Trietsch and their wife’s; they are the best friends
you could have.
I am looking forward to representing CASI and Central Texas Pod at all the
cookoffs I can make. Thanks again. Hope to see all of you on the Chili Trail.

Being on the board means I want to serve you and your Pod’s needs
as best I possibly can. It is a real honor to do so.
One area that has really gotten a lot of talk this year at Terlingua is
that of our computing needs as an organization. You know, 45 years ago
there weren’t even cell phones but as we all know, technology moves at a
very rapid pace.
Recently I have heard from many Great Peppers and cooks that our
computing technology needs a lift. Many of us went from hardly being able
to boot up a computer to user-friendly smart phones and became part of the
Facebook generation overnight. Others have chosen a different path and
elected to step aside. Regardless of your choice, it is clear technology is an
area that can and must constantly be changing to keep pace.
One thing I have heard as CASI moves forward is there are unmet
needs and opportunities being identified by Great Peppers and cooks in the
area of computers and the technology we use. This is more important now
for our future than ever before as communication races ever faster.
Over the next 6 or 8 weeks the board and I would like to hear from
you regarding your thoughts around our computing and technology needs.
We all know that cooking chili is not corporate IT, but as an organization
we hear you we want a system and interface that the general public feels
more comfortable with, and one that is user friendly enough to encourage
participation. Growing CASI remains one of our major areas of focus.
We are blessed in CASI with some very talented people, many who
are very tech savvy. I ask you to consider participating personally - we
need you - as well as sending in your thoughts around technology needs and
wants. You can send your ideas directly to me at
[email protected]. You can also send your thoughts and ideas to
our blog. During the next two months your thoughts, needs, and wants will
be compiled as they relate to technology and they will be presented at the
Winter Board Meeting. I would also like to encourage you to step forward
if this is an area you know well and are passionate about.
And speaking of change, check out the new face of the CASI website.
Jim Stateczny was swift to update the photos and feel of the site after our
new Champion Larry Walton won our 45th TICC.
Of course, any discussion about computers — technology — and
CASI must include Jim and his enormous contribution bringing us where we
are today. We salute you Jim, and we know your devotion to CASI and
technology has made us extremely strong. We do appreciate where we
have been and count on you to guide us collectively to where we are
headed. Why do you think his Chili name is “King James”?

Presents the 2011 Pioneer Awards
The Pioneer Award Committee presented the 2011 CASI Pioneer Awards at the annual TICC event. Renee Moore, CASI Outgoing President, explained the following
definition that applies to the awards: “When individuals distinguish themselves in such a way that they stand out clearly as leaders in the birth of an idea or development they
are recognized as pioneers. Whether through their vision, their drive, their business expertise, their ability to innovate or lead the way, these people have shaped the character
of chili competition and have become its heritage. They are the CASI pioneers.”
Renee explained the thought behind this year’s Pioneer award presentation, “The formation of CASI Pods and the original CASI Board of Directors was the beginning of
the true grass root movement of spreading CASI and chili cookoffs throughout the world.”
Renee introduced the Pioneer Award Committee: Richard Knight, Chairman, Pat Krenek, and Darrell Baxter. The committee then presented the following three awards:
Fred McMurry
In 1972, Fred McMurry of Houston attended a CASI meeting in Dallas and then returned to Houston determined to form a CASI “Pod,” as he called it. His friends Allegani
Jani and Tex Schofield assisted in signing up members and getting Fred elected “Great Pepper.” Fred, as the first Great Pepper in the Universe, thought up and implemented
most of the things that are now associated with CASI Pods.
The Houston Pod recognizes Fred as the “Grand Pepper,” a title he deserves rightly. Fred was the pioneer of the movement to develop the local POD structure for what
would become the organization of CASI. From that moment on, CASI changed forever. Things began to get organized.
Ray King
In the late 1970’s after competing in a chili cookoff in Oklahoma where there were no judging cups and the cooks were asked to turn in their entire pot of chili with the cooks
name and city written on a piece of duct tape, Ray King lead the movement to formalize cooking and showmanship rules where all competitors could have a fair judging and earn
their way to compete in the CASI championship in Terlingua each year. In a motorhome at a cookoff in Flatonia, TX, Ray lead a small group to write the basic rules which are
still used today by the CASI organization.
Ray then organized CASI into a corporation and developed the structure for the first Board of Directors which is still the business part of the CASI organization today.
Serving as the first president of CASI, Ray then lead the way in conducting the first Great Pepper’s meeting at Paul Smith’s Sky High Ranch in Mineral Wells, Texas. At this
first Great Peppers meeting the first CASI memberships and first sanctioned cookoff fees were developed to begin the revenue stream which is still the backbone of the revenue
needed to conduct CASI’s business operation on a day-to-day basis.
Ray was truly the Pioneer in developing the basis of the business infrastructure of which CASI still operates today.
Richard Knight
Richard was part of the movement to move the CASI organization from being known
primary as a Texas organization to building the structure for CASI to become an organization
that supported chili cookoffs for charity throughout the world.
In an early organization meeting in Dallas, Richard sketched on the back of a kitchen napkin
the initial CASI logo of the “world within a chili pepper” This logo today is recognized
throughout the world and after being developed into the TICC trophy is sought after each year
by hundreds of CASI competitors.
In the late 1970’s, Regional Referees were an extension of the CASI Board of Directors and
Richard served as the first Regional Referee for the entire North, East, and North Central Texas
area. Richard helped develop the structure for expansion of the regional referee concept as
CASI began to grow.
Richard served on the first organized Board of Directors as the first Tally Master of CASI
and developed the first computer program on a Commodore 64 to keep the cook’s and
showmanship team points.
Thirty five plus years later this pioneer still serves CASI as Great Pepper of the Heart of
Tennessee Pod, Chairman of the Pioneer Committee, and member of CASI’s Governance
Committee.

ALCALDE REPORT
We are home from Terlingua at last. We had a great
time in spite of me being one of the many victims of the
“Camp Crud.” I heard it even caught up with some of
the cooks after they got home. Other than that, I hope
everyone had a great time.
First and foremost, I want to say “Thank You” to
all of you that helped me with marking of the Old 320
arena and with registration. I appreciate everything that
each of you did to help me. You are the ones that help
make it possible for the cooks to locate their cooking site by having everything
properly tagged and marked for their convenience. This has to be done each year
and I have a wonderful group of volunteers to make this happen. Thanks also to
the volunteers that sat at registration with me for hours and to Blu Daniels for
passing out the stove tickets to everyone cooking in the Old 320 area. What else
can I say . . . I have a Great Team!
I would like to thank the Board of Directors for the great job they did in
having yet another successful TICC. Each of you put in many hours of hard
work and dedication to have the very best cookoff possible and I feel that you
reached your goal.
Congratulations to Larry Walton, our 2011 Chili Champion - Great job! Also,
congratulations to all the others that placed in the top 10, final table and to all the
show teams. Good job everyone; you were all winners!
We had 64 Old 320 Members present at our Annual Meeting on Friday night.
It was a short meeting, as we did not have thing to discuss or any thing to vote on
this year. Thank you to the members that made the effort to attend, I appreciate
it.
I want to thank all 240 Old 320 Members that cooked in the Old 320 Arena.
This year the winners of the Wendell Rankin painted stoves were Kevin Foley
from Galveston and Ron Barnes from Euless. Congratulations to both of you.

Dust: Thank the Good Lord that the dust
storm Wednesday didn’t come during the Ice
Cream Social. Most folks got enough dust in their
nose to plant a 20-acre cotton farm. I didn’t much
care, as I was drinking margaritas in a nice big
motor home with Maggie Montana.
Events: Beans, hot wings, salsa, BBQ, and dominoes; after drinking some
smooth Whitetail Whiskey and KRU Vodka, I am not sure who won what, but I
do know that Bruce Foods helped season up much of the food for the winners.
As far as the domino winner’s, the River Runners had longer oars and drank more
Bud Light and Lone Star than their opponents, according to winner, Dusty
Dingleberry. Jason Delgado won the BBQ championship. Thanks again to CASI
Sponsors for money and support.
Chili: It was a great and glorious time by people who enjoy coming and
having a week of fun, frolic, and fantasy and are in a hurry to get back to the real
world as soon as it’s all over.
I really enjoyed interviewing a lot of chili folks. I talked to a couple gals, Pat
and Max, who said they had worked for a taxicab company in Houston. Pat said
she quit her taxi-driving job, and after driving in Houston traffic for 25 years, was
going to get on the NASCAR circuit and start making her fame and fortune. Max
said the she also quit as cab dispatcher and was going to be Pat’s PR person. But
I heard a rumor that Max had been axed from her job because of complaints from
male taxi drivers over sexual harassment. The girls have taken on their pal Renee,
as pit crew chief. Renee was President of a food processing company until she
was canned at a board meeting for suggesting the company put beans in the chili.
They went on to say the Southwest Horn Toad Raiser’s Assn. has agreed to
sponsor a car and now they are looking for sponsors for the tires, helmets, etc.
Good luck girls.
Up-Date on The Chili Desperados: Seems the gang did some last minute
robbing in New Mexico before heading south. A short raid in Hobbs, and a pretty
big haul in Ruidoso. And when they said they were heading south, they really
meant south, all the way to Homosassa, Florida, where they took some pretty
good loot. The gang was on their way back from Florida, heading to Terlingua,
where they were planning on making a big raid, when the train was De-railed in
Del Rio. One member, who had caught an earlier train, made it to Terlingua and
stole a bronze pepper. He said the other gang members were at Lorina’s Cantina
having a good time while they fix the track.

CASI SCHOLARSHIP
PROGRAM
I want to remind all CASI members that the
scholarship applications for next year are now on
the website. The deadline for the applications to be
sent to the Great Peppers or Pod Representatives is
January 15, 2012. The Great Peppers or Pod
Representatives will need to send the completed
application to the Program Administrator no later
than February 1, 2012. The committee and I look
forward to receiving many applications. In the past
we have had many excellent applicants from which
to choose. CASI members need to make an effort
to let students know about our vocational or trade
school scholarships as well as our academic scholarships.
I have been in touch with several of our scholarship recipients and they are
doing well. In fact, at least one is graduating in December, 2012.

SPONSOR REPORT
Well TICC XLV is a fresh memory. I always like to
remember that the Terlingua event started in 1967, which is
also the date of the first Super Bowl. Maybe we should adapt
the Roman numeral representation. This was a year of
monumental contributions by our CASI sponsors. Every
competition, party, and venue had some sponsor presence.
Our sponsors attended and participated with us. They have
seen the loyalty of cooks to their products and made many
new commitments. For that, CASI is truly grateful. We could
not put on a world-class event in this remote locale without
outside financial support. The rising costs and weak economy would prompt us to put
on a much-scaled back version.
We have also diversified our calendar to provide almost a week of activities for the
participants. This allows us to spread the considerable overhead over a number of
events and derive greater revenues from our site. I know you can’t please all the people
all the time, but we at least offer a variety of entertainment choices.
The evolution of TICC has brought us to this expanded role. When I served my
first year as a CASI director, our responsibility was to report for duty at noon
Wednesday and put together the championship. Now, directors report early Monday
morning and spend the entire day getting ready. Cooks now come in a week early to
experience two weekends and then vanish on Sunday morning. By Tuesday of the next
week, the grounds are clean and the desert barely depicts what was taking place 48
hours before. It is striking to participate and then watch the aftermath as the Terlingua
world goes back to its slower, lazier normalcy. The flashing lights of the DPS depart as
suddenly as they arrive. The stories of what did and did not happen flourish and soon
winter descends on the desert. It is a unique area of the world that we have learned to
love and appreciate.
For the sponsors and chili heads, thanks for a wonderful year. Plans are underway
already to do it again. TICC XLVI anyone?

THANK YOU FROM ...
The 45th Annual TICC is behind us now and I’m
already looking forward to next year.
First, I would like to say congratulations to our new
Champion, Larry Walton. It is exciting to see a first
time cook win! I am very happy for him and I’m sure
he will represent CASI well.
Secondly, I would like to thank ALL my CASI
volunteers that helped in the Main Beer Concession and
those that drove around selling ice and helped load the
freezers. To Gary Brignon, Jeannette Cardenas, Pam
Clark, John and Blu Daniels, Kelly and Kim Draper,
Ted Fichtl, Diane FitzHenry, Spud Griffin, Norma
Homesley, Carol Kitchens, Bill and Pat Lundy, Renee Olswalt, Mike Park,

First, I would like to thank the CASI Board and Sponsors for another
successful TICC. I was overwhelmed with emotion and shock when my name
was announced for Chili Head of the Year! Even a week later, when trying to
tell friends and family about the award, I get teary eyed. It was such an honorthank you.
Secondly, I am grateful to the Friends of CASI for the trophy chair. They
are cherished and will promote CASI throughout the year. What a great addition
to the TICC award ceremonies.
Next, I also appreciate everyone’s well wishes, whether behind stage or via
email, text, or Facebook message. When Tim and I try to explain our passion
for our hobby to others, we always tell about how CASI raises money for
charities and the Scholarship program; but the personal impact on our lives
always comes down to our friendships-our “chili Family”. We truly feel blessed
to be involved with such a wonderful organization and are thankful for each of
you- the many friends we have made over the last 10 years.
And finally I would like to thank my husband, Tim, my best friend and
partner for 35 years. He has always been there to support, help, encourage, and
even “straighten me out” when I need it. We have shared every moment of our
CASI journey and none of this would be possible without him.

Terlingua Trails
Hello to everyone and congratulations to those who
placed and participated at TICC 2011. I was unable to
attend but my thoughts were with all of you. I was
going up the walls not being there but the doctors would
not allow me. I am on the way to healing and getting
back at it. During my absence I stayed in touch with
folks and was able to help somewhat via e-mail and
telephone.
I was very saddened to hear that we lost a great
Chilihead in Ken Swart. When I put out a call for help
on electrical work at the ranch Ken was the first one to
stand up and say, “Wappo I will be glad to help you and
CASI out.” That was just the kind of person he was, always willing to lend a
hand. Ken you will be missed but never forgotten.
Also, I want to thank Jim Ezell, John Goforth, Don Hoy and Don & Susie
Weber for stepping up and helping me fulfill my duties at TICC 2011. Great job!
Another great job and a big thanks goes out to all of the volunteers that make
TICC the event that it is; it would be impossible without you. Receiving reports
and all the pictures was really nice and it was almost like being there but you all
know there is nothing like being at TICC.
Believe me when I say that the Board of Directors has already started on
TICC 2012, as it is a 365 day a year job but a great job to have. I am now
ranch manger and plan on spending a lot of time at the ranch this coming year so
if you have any ideas for improvements, please feel free to give me a holler or
e-mail them to me. Remember no idea is a bad one.
Well I hope to see you all soon and I will be working hard to make CASI a
great organization.

Cowtown Moves CCO Date,
Goes Green
Holy cowtown chili cooks! The new dates for the Cowtown CCO are
March 16, 17, 18, St.Pat’s weekend. After many years of the traditional June
cook-off date, Cowtown has yielded to the summer heat and listened to the
countless requests to move the date to a cooler month. The venue has not
changed and Cabela’s Fort Worth will host the cook-off.
“The pod has given this a lot of thought and moving the date has not been
taken lightly,” stated Great Pepper Bobby Kirby. “We made a list of every
cook-off in the country held during March, April or May for the past two years
because we did not want to put our event on top of an existing or traditional
cook-off. Then we met with Cabela’s to determine when they would be able to
host the cook-off, and the St.Pat’s weekend emerged as the best time for
everybody.”
The weekend festivities start with salsa and bean competitions followed by
a potluck dinner on Friday, and then Saturday features the CASI and juniors chili
competition with a seafood boil afterwards. Sunday will have the ‘day after’
cook-off. No doubt there will be lots of green decorations in the cooking areas
and probably a green beer or two.
And yes, once again our Cowtown winner and spouse/partner/significant
other will be sent to the St.Thomas, Virgin Islands cook-off in August. For
additional information on the Cowtown CCO, check our listing in The Trails.
And so it goes on the trail to Cowtown.

The Woodbridge by Robert Mondavi Winery hosted the ninth CASI California
State Chili Championship on Saturday, October 15. This year’s event hosted a
record thirty-six cooks competing in chili, salsa, and guacamole and one hundred
seventy exhibitors in the annual car show. This cookoff has raised ten of
thousands of dollars for the Lodi Library. The competition featured a large
number of California cooks competing against a contingent of Texas cooks,
including 2010 TICC Champion Tom Dozier and 2008 TICC Champion Susan
Dean. These two International Champions represented well by tying for first
place.

Advice for the chili forlorn
What a great time in the desert this year. It was
really great to see all of you again. We sure
missed those of you who could not go and hope
you will make it next year. There was quite a
storm that blew in Wednesday. I found a pole to hold on to in Krazy Flats
when they started playing music for me. That did not turn out well.
A toast to this year’s champion, Larry Walton of Robinson, TX. Larry is
a first time cook at TICC so it can happen to anyone. A big toast to our
outgoing president Renee Moore; thank you for your hard work and dedication
to CASI.
Yes, I finally got a picture to that sweet editor Dana Plocheck. I was
having trouble with the Underwood so I took it in for a check up. The nice
man fixed it up so it works very well now. He replaced the flux capacitor and
recharged the ion generator.
The hurricane season is finally over and it is cooler everywhere. Still
many of us in the East have too much rain and those in the West need more.
We have cooks and friends still cleaning up from the storms and earthquakes.
Please take a minute during the holidays to do something for those we care
about.

I’ve been in a chili slump lately and can’t get into the top ten. What can I
do to improve my chili?

Dear DID,
You may need to tweak your recipe or you may need to try something
new. If you are getting to the final table regularly then try something small like
changing chili powders, or adding or subtracting salt. If you are not getting
off the preliminary table then maybe its time to get a new recipe. Check the
TICC winners’ recipes and start from there. Ask a friend who is placing for
some help. You might be surprised how helpful some people can be.

All Pods large and small need help. It is a lot of work to put on a cookoff
and if everyone in the Pod does one thing then no one is overwhelmed. Also
there is more to the Pod than the cookoff. There are records and minutes to
keep, money to account for, public relations, newsletters and websites,
scholarship activities, CASI committees, charities and many other things.
Please consider helping by going to the Pod meeting and helping out.
