Sincerely, Brigitte™ cheeses are the creation of Brigitte Mizrahi, who developed the line to
fill a niche of upscale kosher cheese. The cheese starts with premium milk sourced from
only small Wisconsin dairy farms using vegetarian microbial rennet. From there, Mizrahi
looks to her travels for flavor inspiration.
Roasted Garlic Basil Prairie Jack evokes the aromas of a kitchen in Tuscany while
Chipotle White Cheddar takes its cue from the smoky, spicy flavors of the Yucatan.
Other flavors include Blue Marble Cheddar, Jalapeño Cilantro Prairie Jack, Parsley
Chives Prairie Jack and Tomato Olive Prairie Jack.
New Prairie Jack flavors coming in 2015 include Tarragon Ginger, Orange Ginger,
Wasabi and Moroccan Spice.

For brie lovers on the go, Président has introduced Wee Brie,™ a
creamy, brie-flavored spreadable cheese made from Wisconsin
milk. These individually wrapped 40-calorie wedges—which
come in wheels of 8—can easily be added to lunch bags or
packed as a mid-afternoon snack. Try Wee Brie
on whole grain crackers with fruit or spread on
carrot and celery sticks.
This is the latest addition to Président’s line of brie
products, which includes brie wedges, a brie
log, brie wheel, brie spread and a Triple
Crème line of products.

Stella® Hand-Rubbed Cheeses are now available in 8-ounce
exact weight wedges. Mediterranean Parmesan is enrobed with
delightfully earthy flavors of tomato, extra virgin olive oil and a bold
blend of spices. Naturally aged for 10 months, this Italian-style
cheese offers buttery and nutty flavors enhanced with savory
flavors of paprika, sesame seeds and garlic. Rosemary Medium
Asiago is carefully hand-rubbed with extra virgin olive oil and
rosemary. Black Pepper Romano is cloaked with a veil of cracked
black peppercorns.
Made in Wisconsin, the cheeses are carefully aged for a minimum
of 5 months to allow the flavors to seamlessly meld together. All
three Stella cheeses make excellent additions to any cheese plate
and grate wonderfully over pasta dishes or steamed vegetables.

Association (IDDBA) for the 2014-2015
year. He has served on the board of
directors since 2002 and has been

In-Store Cheese Events Add Fun, Help Sales
It’s no secret that sampling is key to selling specialty cheese. As you plan your 2015 cheese
department promotions, consider stepping up your sampling game with in-store events
and promotions.
The Wisconsin Milk Marketing Board can help bring the artisans who craft award-winning
cheeses to your store with Meet the Cheesemaker events. These can include tastings and
recipe demos, as well as an opportunity for customers to learn about how the cheese is made.
Consumers increasingly want to know where their food comes from, and these events put them
directly in touch with the people who make the products. Meet the Cheesemaker events can
be combined with holiday, seasonal cooking or sports promotions. One recent event brought
Wisconsin Master Cheesemaker Kerry Henning to Rouses Market in New Orleans for a
friendly Cheesehead invasion as the Saints faced off with the Green Bay Packers.
Cheese carvings are another great way to bring attention to the cheese department.
Mammoth cheese wheels—which range from 12 pounds all the way up to 4,500 pounds—
can be carved into nearly any design to match your promotion. Shoppers can watch as
an expert cheese carver transforms a wheel of cheese into a work of art. Cheese carver
Sarah “The Cheese Lady” Kaufmann recently traveled to Bristol Farms in Palm Desert,
California, to recreate the town’s iconic Marilyn Monroe statue in cheddar cheese form.
A little healthy competition adds another layer of excitement to cheese promotions.
This fall, Buy for Less and Uptown Grocery locations in Oklahoma hosted a Wisconsin
Cheese Soup Showdown, highlighting new offerings in their prepared food department.
Representatives from six Wisconsin Cheese companies were on hand to serve samples
of their specialty soup recipes and shoppers voted for the winner.
