Considered a favourite of many foodies along the
Metro, Cookbook Kitchen’s menu is full of delicious
surprises. But it’s not just Cookbook Kitchen’s savoury
dishes but also their yummy desserts that have diners
coming back for more – for the holidays, they’re
sharing their recipe for Decadent Dark Chocolate
Rum Cake, a dish that will surely put everyone in the
yuletide spirit!
Ingredients for the Dark Chocolate Cake
1 cup unsweetened cocoa
2 cups boiling water
2 ¾ cups All-Purpose flour
2 tsp baking soda
½ tsp baking powder
½ tsp salt
1 cup butter
2 ½ cups sugar
4 eggs
1 tsp vanilla
Ingredients for the Rum Glaze
¾ cup dark rum (not white)
½ cup butter
½ cup sugar
Procedure:
1. In a bowl, mix unsweetened cocoa with boiling water; mix with wire whisk until
smooth. Set aside and cool completely.
2. Sift all dry ingredients together, except the sugar.
3. In a large bowl mixer, using paddle attachment, beat butter, sugar, eggs, & vanilla
until light and fluffy.
4. At a low speed, beat in flour mixture and liquid cocoa mixture alternately, ending
with flour mixture.
5. Pour into 10”diameter bundt pan.
6. Bake in 350°F oven for 35 mins.
7. Mix all choco icing ingredients in a saucepan and bring to a boil. Pour hot glaze
immediately to cover hot cake.
8. Cool and invert onto serving dish.

Dulcinea has become synonymous for delectable Spanish
dishes and for the holiday season, they offered this recipe for
a heavenly Canonigo. Similar to the French Ille Flotant or
Floating Island, the Canonigo is a Filipino-Spanish meringue
floating in caramel cream sauce. This light and fluffy dessert
is the perfect finish for a heavy Christmas feast!
Ingredients for Cream Sauce:
1 can of evaporated milk
Ingredients:
3 pcs. of egg yolk
12 pieces egg whites
350 gms of sugar
300g of sugar
2 cans Nestle Cream
5g of cream of Tartar
20g Vanilla
Preparation Procedure for Meringue:
1. To make the meringue, put the egg white in a bowl mixer. Add Cream of Tartar and
beat until frothy but not dry.
2. Add the sugar gradually.
3. Continue mixing until fine bubbles appear and sugar is melted to fine mixture
4. Then set aside the bowl.
5. Melt 500 gms of sugar with 1 cup of water and then boil this until caramelized stage is
achieved.
6. Pour it into a molder and then add meringue up to a quarter portion of the molder
7. Bake for 15 minutes, then rest and cool.

2. Stir cook in a double boiler until thick.

Established by the Cravings Group of Companies, the Center for
Culinary Arts (CCA) Manila is one of the country’s pioneering
culinary institutions. Shoppers can get a taste of their sumptuous
cooking at the CCA Kitchen Studio, who provided this yummy
recipe for Walnut Brownies. Its simplicity makes it perfect for moms
busy with holiday preparations and its chewy-gooey goodness will
make it a sure hit.
Procedure:
Ingredients:
1. Pre-heat oven to 350°F and foil giant trays.

2. In a bowl, combine all dry ingredients (All Purpose Flour,

3. Melt chocolate and butter using baine marie.
1tbsp baking powder
4. Whisk in sugar.

5. Whisk in eggs.

6. Fold-in dry ingredients.

Desserts by Cara Mia Amici at Venice Piazza at McKinley Hill
Procedure for Pound Cake:
1. Preheat Oven at 325° F. Butter and flour 8 x 2.5” round pan
2. Combine flour, baking powder, salt and baking soda in medium bowl
and whisk until even. Set aside.
3. Sift cocoa powder into another bowl - mix in syrup and boiling water
until smooth and even. Cool completely.
4. Using an electric mixer and paddle attachment, beat sugar and butter
until light and fluffy.
5. Beat in eggs one at a time with an occasional scraping down of the
sides.
6. Add cooled cocoa mixture and melted chocolate until well blended.
7. Beat in flour mixture alternately with milk until evenly blended.
8. Transfer butter to prepared pan, smooth top and bake until tester
inserted into center comes out clean. Remove cake from pan and cool.
Apply Tentazione Icing and Filling
Ingredients for Pound Cake:
2 ½ cup all-purpose flour
1 tsp baking powder
¾ tsp salt
½ cup full cream milk
¼ cup Cocoa powder
¼ cup light syrup
Procedure for Tentazione Icing:
2 tbsp boiling water
Load all ingredients in a heavy bottomed sauce pan and cook while

stirring in medium heat flame. Cook until mixture is thick but still fluid
½ bar unsalted butter, soften at room temp.
