Collagen Casings
Are edible and made from the hide
of cattle. They are the more common
inexpensive choice today and largely
what would be on the sausages you
buy from your butcher shop. There is
no preparation required - simply take
them out of the packing and feed on to
the sausage nozzle. There is no rinsing,
soaking or mess.
Natural Casings
Are the original casings used for the
manufacture of sausages and are
made from the intestines of animals –
mostly sheep, cows and pigs. They are
edible and still commonly used and
often preferred – they can be less cost
effective due to the process involved
in their manufacture. Preparation is
required prior to use - they need to
be separated into strands and the salt
rinsed off with fresh water and flushed
inside. They have great shelf life when
stored properly – refrigerated & packed
liberally in purified salt. If you don’t use
all of the casings, they can be re-salted
and kept in the refrigerator.

Fibrous Casings
Are synthetic casings which means manmade with fibres running lengthwise
giving them added strength. They are
NOT edible and are most commonly
used for making pepperonis, beef sticks,
bologna, cooked salamis, liverwurst, etc.
Before use soak the casings in tap water
for 20-30 minutes. Make sure that the
water gets inside the casing as well as
covering the outside.
