Dear Cesar Milan, I am the coolest dog at
Camp Laid-Back. I even like cats! Okay, I am a
bit of a show off for a lanky black and tan hound
because a counselor, who sometimes walks
with me, tried some your Dog Whisperer training techniques with me and says that I am very,
very smart. I did everything right and I had her
heeling to my right side in about 2 minutes. But
I can’t figure out how to get her to take me to a
forever family after camp is over. I need your
help. The yard here is a bit overcrowded, so I
spend most of my time in a crate with a fan on
me full speed. They walk me every few hours
so I don’t get bored. It is very hot outside! Boy
would I be a nice addition to any home. I don’t
bay so I am on the quiet side. I would be great
around anyone. Well, I have to go now. They
are teaching us how to get humans to bring
you ice cream. You will just love my camp pics!

Dear Pastor Billy, this is Riley the Rhodesian
Ridgeback mix. Thanks for sending me to Christian
Dog Camp. As you know, I was not really loved in
my other home, but the counselors have been
treating me so tenderly and saying that Jesus
loves me. They do, too. I let them hug me and pet
me all they want. Sometimes I even melt onto the
floor! They even like my big, beautiful, lean,
caramel-colored body and my oriental golden
eyes. What a swell camp! Did you know that dogs
like toys? I had never seen any and I just throw
them up in the air and play so hard. I heard them
laughing with me the other day because when I am
playing I have a big smile on my face. This is the
best time I have ever had in my life. Most evenings
they sing to me, too. They sing Jesus Loves Me to
all of the dogs, and they say my name. They don’t

Dear Uncle Jasper, this is Flora and Camp
Really-Sweet is just my style. I am such a
petite black Lab mix with a white chest that
they were able to put my whole face on a camp

Restaurant entrepreneur turned sizable fortune into a small one

In the 1980s I met Mary B.
Davis, who was a fellow member at
the First Unitarian Church in
Dallas.

last week’s column, about
events in my life while I
was still in high school, I was baking bread at
age 18 at Fair
Maid Bakery in
Houston.
After that came
a brief stint working as a waiter
and busboy at
Miss G’s homecooking cafe off
campus at what
was then North M.L. Myers
Texas State College in Denton.
The most fun I had there was the
day a pretty young black girl, who
worked in the kitchen, smacked me
in the face with a lemon-meringue
pie on a dare.
The lesson learned, although not
in a college classroom, was to never
test a lady with a lemon-meringue
pie in her hand.
At the end of my freshman year,
in 1950, the Korean War broke out
and the Marine Reserves called me
to active duty.
Guess where I was assigned initially?
In the mess hall, of course, both
the enlisted men’s and the officers’
mess.
The Marine Corps wrote the
book on cleanliness when it came to
large-scale food-service operations.
They had no problem calling an
inspection without notice anytime,
night or day, and we had better pass
muster or else.
Now fast-forward some 30 years
to my next big adventure in the
Gathering no moss
Mary owned a catering business
and often provided food services
for religious retreats and other
church-sponsored events.
On several occasions these took
place at a couple of cabins we
owned on Mineola Club Lake, outside Mineola.
In addition, Mary had connections to concert events that
would travel through Dallas
from time to time.
My two sons worked for her
on a contract basis on occasion.
They loved the work.
What was not to like? The
pay was good for a week
or more at a time, and
sometimes they got the
opportunity to meet some
of their idols in the music
business.
For example, one time in the
’80s the Rolling Stones came
through Dallas on a world tour. For
an extravaganza such as this it
would take stagehands and other
“grips” many days to prepare lighting, sound and other stage effects
for the concert.
After the concert it would take
days to tear down and pack up for
the next gig.

Bowl at Fair Park in Dallas.
Concert employees were required to eat, sleep and live on the
compound for the duration.
The management could not take
a chance that some might stray
from the compound and not be able
to perform their highly technical
duties.
Otherwise the entire operation
Ignorance is bliss
It could have been worse, I suppose. The stale oysters could have
poisoned the patrons. That would
have been worse.
Thank heavens for small favors.
Faced with the inevitable, I
decided to pull the plug.
As most bankers know, and others before me have learned, the
restaurant business is a tough mistress at best. She can be unforgiving
even for those who come to the
table with considerable expertise
and experience in hand.
Thankfully, I never knew exactly
how much money was lost on the
failed venture, nor did I want to
know.
Some life experiences are better
left a little ambiguous. I decided to
mark it up as an expensive education.
Perhaps the lessons learned
would come in handy later in another time and place.

After three years of operation it
was clear that the catering operation
was more of a hindrance than a help
to the overall operation, so it was

Her catering business was growing and she needed a business location where city food inspectors
could ensure the business was
being operated according to code.

the catering business would use
the facility mostly after
hours preparing food
for the intermittent catering jobs.
