For eleven years, Rick Tramonto was executive
chef and founding partner at Chicago’s worldrenowned four-star restaurant Tru, a Relais
Chateaux property, in partnership with Rich
Melman of Lettuce Entertain You Enterprises.
Tramonto is president and culinary director
of Tramonto Cuisine, Inc., which developed
Tramonto’s Steak & Seafood and Osteria
di Tramonto. In 2010, Tramonto announced his
partnership with Louisiana native Chef John
Folse and the formation of a new additional
restaurant company, Home on the Range.
Tramonto and Folse opened their first joint restaurant project, Restaurant R’evolution, in
New Orleans’ renowned French Quarter in the Royal Sonesta Hotel in 2012. Their second
project together is Seafood R’evolution, in Ridgeland Mississippi which opened in November
of 2014.

Taste” where he was deemed America’s best undiscovered cook by
Anthony Bourdain, Nigella Lawson, Marcus Samuelsson and
Ludo Lefebvre.
Chef Hosea Rosenberg, owner of Boulder’s Blackbelly
Restaurant and Catering and winner of season five of Bravo TV’s Top
Chef. After his tenure at Dandelion, it was the Big Red F Restaurant
Group that became home, where he served as Executive Chef at Jax
Fish House for six years.
Elise Wiggins, James Beard winner, Executive Chef Elise
Wiggins’ love of food started young, as a girl growing up in Louisiana.
After culinary school in Colorado, Wiggins embarked on extensive
travels in Central America, where she broadened her culinary horizons
at outdoor markets and fine restaurants alike. In 2004, she returned to
Colorado when she took the position of Executive Chef at Panzano.
Paul Reilly, beast+bottle Paul C. Reilly is the co-owner/
executive chef of beast+bottle, a rustic American craft restaurant in
Denver centered on local, farm-focused food, which he co-owns with
his sister Aileen V. Reilly.
Ty Leon, Executive chef at Mizuna, chef and restaurateur Frank
Bonanno’s esteemed French restaurant in the Governor’s Park
neighborhood of Denver. Leon, who is 26 years old, grew up in Gilbert,
Arizona, where he identified his passion for cooking at a young age.
