delights are perfect to pack for an on-the-go snack or serve at just about
any occasion including graduation parties, baby showers and more.
Estimate about two to four small sandwiches per person and use cookie
cutters to have fun with the shapes. There’s only one rule of thumb for a
finger sandwich – cut off the crust! Try freezing the bread before cutting
and spreading... this will make it much easier to handle.

and coarsely chopped
thin slices rye bread, crust removed

Cut sandwiches into squares, triangles
or rectangles with a knife, or use cookie
cutters to cut bread and sandwich fillings
into shapes, then assemble sandwiches.
Serve with accompaniments such as
pickles, olives, pickled vegetables, cherry
tomatoes and green onions.
1. Combine mayonnaise, dressing and sauerkraut
in medium bowl; set aside. 2. Evenly top
2 bread slices with 2 the cheese slices, corned
beef, remaining cheese slices and remaining

Summer’s bounty saves the day when you
want to save time and effort in the kitchen, and
simple dishes featuring fresh vegetables and
fruit make healthy eating easy. After all, who
wants to be stuck in the kitchen on summer
evenings and weekends?
Make-ahead meals are always smart, whether
everyone heads in different directions after
dinner or the family goes out for the day. You
could stop for fast food on the way to the
woods, the lake or the theme park – but you
will save money and eat better if you pack a
cooler with portable, quick-to-fix items such as
Little Italy Pasta Salad (see next page).
This pasta salad tastes as good as it looks, and
provides plenty of protein and fiber as well.
Chicken is another good source of protein
that complements many a dish, so whenever
you fire up the grill, cook some extra chicken
breasts to keep in the freezer.
What could be easier on a summer night than a
big green salad topped with chopped chicken?
Set out a selection of low-fat dressings and
bowls of additional “toppers,” including:
• cherry tomatoes
• sliced hard-cooked eggs
• petite carrots
• pumpkin or sunflower seeds
• crumbled feta cheese
• pitted kalamata olives
• sliced dried figs or dried cranberries
Keeping it vegetarian? Skip the chicken and
add colorful kidney beans, cannellini beans
or garbanzo beans (be sure to rinse canned
beans). Or spread some hummus on a whole
grain tortilla, add sliced bell peppers and
cucumbers, fresh spinach leaves, a tomato
slice or two and some sprouts – then wrap it
and go. The same combination works with pita
pockets, and if you prefer, you can substitute
spicy mustard for hummus.
Another easy option that tastes great at
home or on a day trip is a chopped salad. For
four servings, chop two ripe avocados, two
cucumbers, two bell peppers, two tomatoes,
half a red onion and two cloves of garlic.
Just before serving, combine the ingredients
and add the juice of two fresh limes mixed
with four teaspoons of olive oil. These same
ingredients, mixed with spicy tomato juice,
make a refreshing gazpacho.
Homemade snacks save calories and money,
and they slip easily into pockets, purses and
backpacks. Here are some ideas:
• Make your own cereal “energy” bars.
• Bake breakfast muffins with fresh berries.
• Develop a “family favorite” trail mix.
• Freeze grapes in small plastic bags.
In the mood for a light dessert? Have a big
bowl of fresh fruit salad in the refrigerator
at all times. Add protein by topping the fruit
with yogurt or serving it with cheese wedges
and whole grain flatbread. If your family likes
Greek yogurt, stir in a few sliced apricots (fresh
or canned) and some chopped walnuts, then
drizzle a bit of honey over the top. This sweet
treat packs plenty of nutritional punch.
Concerned that the kids indulge in ice cream
too often? Introduce them to frozen yogurt,
which is lower in calories and available in
many popular flavors. Sorbet is an even better
bet, calorically speaking, and now comes in
chocolate. Frozen sorbet bars (look for mango
and raspberry) will cool down your family on
the hottest of days.

15 grape tomatoes, each cut in half (1 cup)
2 slices (¼-inch-thick) Genoa salami, each
cut into ¼-inch pieces (4 ounces)

1 pickling cucumber, cut lengthwise in
half and thinly sliced (about 1 cup)

Barbecue is as American as “mom and apple
pie,” but have no doubt, there are fierce
opinions about which region serves the best
barbecue. Geography plays an important role
in determining how we come to favor certain
sauces (sweet, spicy or tangy); how it’s cooked
(over wood or charcoal, in pits or on spits); and
whether it’s served with a bun or plain white
bread. Regional variations all have distinct
flavor and meat preferences, with recipes as
vast as the Texas landscape.
Texas-style barbecue is for the cowboy in the
crowd. Chicken, sausage and pork all take a back
seat to beef brisket. Basic seasonings like salt and
pepper with a sprinkle of cayenne are the norm.
The whole meal is served up on butcher paper
with a cup of beans and white bread.
Memphis barbecue features pulled pork
sandwiches and ribs. The pork sandwich is made
from the pork shoulder that is slow roasted over
charcoal, served either with pulled white meat,
the chopped crispy outer pieces or a
combination of the two. All this is piled on a
hamburger bun and topped with slaw.

cooked on the grill. A simple barbecue
sauce consisting of ½ cup catsup to
every cup of Coke has been a longtime
Southern tradition. Try our Super

North Carolina barbecue features pork.
The western part of the state prefers pork
shoulder, while the eastern half likes to roast the
whole hog! The pork is cooked over wood or
charcoal and chopped or shredded, guaranteeing
the maximum absorption of the thin vinegar and
hot pepper-based sauce.
St. Louis barbecue uses a special rib cut –
spareribs with the brisket bone removed, but
more often it’s the “pork steak” that distinguishes
the St. Louis style. One method of preparing “pork
steaks” is to slowly grill until done, then simmer,
swimming in a pan of sweet-tangy sauce.

1. In saucepan, blend sugar, mustard, salt and
pepper. Stir in remaining ingredients, except ribs,
to make a sauce. Bring to a boil, cover and simmer
10 minutes. 2. In a conventional oven, brown ribs
in a roasting pan at 350°. Pour off fat and spoon
sauce over ribs; cover tightly with foil and cook
about 1 hour.

and pour sauce over ribs. Bring to a boil. Cover and
simmer 1 to 12 hours. Baste and turn ribs often.

16 frozen fully-cooked meatballs

4 long hard rolls, split

1. Heat sauce and meatballs in 3-quart
saucepan over medium-high heat to a boil.
Reduce heat to low. Cook 20 minutes or
until meatballs are heated through, stirring
occasionally. 2. Spoon meatballs and sauce into
rolls. Top with mozzarella and Parmesan cheeses.
Serving Suggestion: Serve with a tossed salad
with Italian vinaigrette. For dessert, serve a vanilla
yogurt and granola parfait.

or until chicken is cooked through. Serve
with rice.
Serving Suggestion: Serve with steamed cut
green beans. For dessert, serve lemon sorbet.

1 pound boneless, skinless chicken breasts
1 pound pork tenderloin, sliced ½-inch-thick
1 pound 36-40 count raw peeled and
deveined shrimp
2 green, orange and/or red bell
peppers, sliced
2 medium red onions, sliced
3 teaspoons IGA salt
2½ teaspoons IGA ground black pepper
12 (6-inch) flour tortillas
Toppings: shredded lettuce, shredded
Mexican cheese blend, diced tomatoes,
guacamole, sour cream, salsa, chopped
cilantro, lime wedges (optional)
1. In blender, combine green onions, garlic,
orange juice, all but 3 tablespoons oil, lime juice,
cilantro, oregano, cumin and hot sauce. Blend
until all ingredients are finely chopped and well
combined. 2. Place chicken, pork and shrimp in
separate large zip-top plastic bags. Evenly pour
marinade into each bag. Seal bags, pressing
out excess air. Massage ingredients in bags to
combine. Refrigerate 2 to 4 hours to marinate.
3. Cover grill rack with aluminum foil; with fork,
poke several holes in foil. Prepare outdoor grill
for direct grilling over medium-high heat. In
large bowl, toss bell peppers, red onions,
1 teaspoon salt, 1 teaspoon pepper and
remaining 3 tablespoons oil. Remove meats
and shrimp from marinade; discard marinade;
sprinkle with remaining 2 teaspoons salt and
1½ teaspoons pepper. 4. Place shrimp on
1 side of foil-covered grill rack and bell pepper
mixture on other side. Cover and cook shrimp
4 to 5 minutes or until shrimp turn opaque
throughout and reach an internal temperature
of 145°. Remove shrimp from grill; keep warm.
Stir bell pepper mixture and cook 4 to 5 minutes
longer or until just tender; remove from grill and
keep warm. 5. Remove foil from grill rack. Place
chicken and pork on hot grill rack. Cover and
cook chicken 10 to 12 minutes or until chicken
loses its pink color throughout and internal
temperature reaches 165°; cook pork 6 to 8
minutes or until internal temperature reaches
145°, turning chicken and pork once. Transfer
chicken and pork to cutting board; let stand
5 minutes. 6. On microwave-safe plate, place
tortillas between 2 damp paper towels; heat in
microwave oven on high 35 to 45 seconds or
until tortillas are warmed. 7. Thinly slice chicken
and pork; transfer to large platter with shrimp.
Place bell pepper mixture and toppings, if
desired, in separate serving bowls and serve
with warmed tortillas.

1. Cut each avocado lengthwise in half around
seed. Twist halves in opposite directions to
separate. Slip spoon under seed to remove
and discard. With spoon, scoop out avocado
flesh and place in medium serving bowl. Add
lemon juice and salt; with fork, mash until
mixture is almost smooth. 2. Stir in garlic,
cilantro, jalapeño and hot sauce; fold in tomato.
If not serving right away, cover and refrigerate
up to 2 hours. Just before serving, sprinkle
guacamole with red onion, if desired. Serve
guacamole with tortilla chips.

It’s time to put your grilling skills to the test. Boneless, skinless chicken
breasts are one of the easiest things to cook on the grill. They quickly
absorb the flavors of a marinade and don’t take a long time to cook. You
should always marinate meat in a glass, ceramic or stainless-steel container
– never in aluminum, because most marinades contain acidic ingredients.

Honey Chicken
Serves: 4

boneless, skinless chicken breasts
Marinade
1 onion, finely diced
3 tablespoons fresh lemon juice
12 ounces Bud Light Beer
2 tablespoons IGA vegetable oil
2 tablespoons IGA honey
1 tablespoon IGA soy sauce
1. Mix together all marinade ingredients.
Place chicken in shallow dish and pour
about ½ cup of the marinade over chicken.
Turn over to coat. Place in refrigerator for
4 hours to marinate. 2. Pour remaining
marinade mix into saucepan. Simmer 5
to 6 minutes until it reduces and thickens
slightly. Set aside for glaze. 3. Prepare
BBQ on medium high heat. Remove
chicken from marinade, shaking off excess.
Carefully brush grill rack with oil. Place
chicken on grill, cover and cook 5 minutes,
brush with glaze and cook another 5
minutes. Turn chicken over and repeat the
same steps. Make sure chicken is cooked,
the juices should be clear. Remove from
grill, divide the rest of the glaze over the
chicken and serve.

Since the pharaohs ruled ancient Egypt,
honey has been used to sweeten many a
dish, but honey adds far more than tantalizing
taste to barbecue marinades. As chicken cooks
on the grill, the honey caramelizes, resulting
in a crusty brown glaze that locks in both
moisture and flavor.
Composed primarily of carbohydrates and water,
honey is well known as an energy-boosting
food. Honey also contains a variety of flavonoids
and phenolic acids that act as antioxidants. And
honey is a source for the following vitamins and
minerals, all present in small amounts:
• Niacin
• Riboflavin
• Pantothenic acid
• Calcium
• Copper
• Iron
• Magnesium
• Manganese
• Phosphorus
• Potassium
• Zinc
Darker honeys have higher antioxidant content
than lighter honeys. The color of honey, ranging
from pale gold to dark amber, depends on the
nectar of the flower from which the honey was
drawn. Currently there are about 300 different
types of honey in the U.S., with clover, orange
blossom and sage the most common.
According to the National Honey Board, honey
is produced in every state and most countries.
More than 60 percent of U.S. production takes
place in California, Florida, Minnesota, Montana,
North Dakota and South Dakota. The per capita
consumption of honey in the U.S. is about 1.29
pounds per person per year.
So should a bee buzz around you when you
grill Honey Chicken – instead of swatting at it,
consider a friendly wave and a hearty “thanks.”

The combination of melted chocolate, a gooey marshmallow and
crunchy graham cracker is definitely a favorite summer staple. People
love this tasty treat so much that August 10th has been named National
S’mores Day! You’ll enjoy this variation that includes decadent chocolate
ice cream and layers of the classic ingredients. Don’t forget to check out
“s’more” ideas on this page or be creative and make your own!
S’mores Ice Cream Pie
Prep: 30 minutes plus chilling
and freezing
Broil: 20 seconds • Serves: 8

containers (1 pint each) IGA chocolate
or IGA vanilla ice cream (4 cups)
2 cups graham cracker crumbs
½ cup IGA butter (1 stick), melted
3 cup plus 1 tablespoon
IGA granulated sugar
4 bars (1.55 ounces each) Hershey’s
Milk Chocolate
1½ cups IGA marshmallow creme
2 cups IGA miniature marshmallows
1. Refrigerate 1 container of ice cream
15 minutes to soften. Meanwhile, in medium
bowl, stir together graham cracker crumbs,
melted butter and sugar; reserve 1¼ cups
crumb mixture. With back of large spoon,
firmly press remaining crumb mixture on
bottom and up side of 9- to 10-inch pie plate;
freeze 5 minutes. Coarsely chop 2 chocolate
bars. 2. With rubber or offset spatula, carefully
spread softened ice cream evenly in bottom
of pie crust. Sprinkle chopped chocolate
evenly over ice cream; firmly press reserved
crumb mixture over chocolate. Freeze pie
15 minutes. Meanwhile, refrigerate remaining
container of ice cream 15 minutes to soften.
3. Remove pie from freezer. Spread softened
ice cream evenly over first layer. Freeze pie at
least 4 hours or until firm. 4. Place marshmallow
creme in center of pie. Moisten spatula with
hot water, and spread marshmallow creme
evenly over ice cream filling to edge of pie
crust, covering top of pie completely. Lightly
press mini marshmallows evenly over
marshmallow creme layer. Loosely cover with
plastic wrap and freeze 4 hours or until firm.
5. To serve, preheat broiler with oven rack 4 to
5 inches from source of heat. Broil pie 20 to 30
seconds or until marshmallows are golden
brown, rotating pie occasionally for even
browning and watching carefully for burning.
Break remaining 2 chocolate bars into pieces
and insert chocolate pieces into marshmallow
creme around edge of pie.

In a pairing of decadent proportions, the cheesecake and brownie have joined
forces to create this berry-drizzled delicious dessert. With two layers of goodness
and strawberry jam topping these bars have an interesting twist, plus they are
easy to make and are great for larger crowds. Create the perfect ending to a long
day and pass these out after a family meal... but we will warn you, they go fast!
Strawberry Cheesecake Brownies
Prep: 20 minutes
Bake: 1 hour plus chilling and cooling
Makes: 18 bars

1. Heat oven to 350°. Spray 13 x 9-inch baking
pan with no-stick cooking spray. Combine brownie
mix, oil, water and 2 eggs in large bowl; stir
50 strokes with spoon. Stir in nuts, if desired.
Spread into prepared pan. Bake 20 minutes.
2. Beat cream cheese until fluffy in large bowl.
Gradually beat in sweetened condensed milk. Mix
in remaining 2 eggs, lemon juice and vanilla until
smooth. Pour evenly over warm brownie.
3. Stir jam until smooth. Drop by teaspoonfuls
over surface of filling. With a knife, gently swirl
jam through filling to create marble effect. Bake
additional 35 to 40 minutes or until top is lightly
browned. Cool 1 hour. Loosely cover and chill in
refrigerator for 2 hours or more. Cut into bars.
