WHICH PRODUCTS ARE POSSIBLE BY GEKKO? The GEKKO line is designed for the production of flat wafers and allows individual variations by • format: square or rectangular • number of wafer layers: max. 5 up to a height of 15 mm (standard) • cream flavor: chocolate, milk, nuts, strawberry, etc. • wafer sheet flavor or color • engravings: 3x3 mm, 0.6 mm deep, 90° or 45° (standard) 2x2 mm, 0.3 mm deep, 90° or 45° (option) 4x4 mm, 0.8 mm deep, 90° or 45° (option) standard engraving: 45° standard engraving: 90° WHAT DOES A WAFER PRODUCTION PROCESS LOOK LIKE? Optimal results depend not only on the quality of the machines, but also on the correct and exact implementation of production processes defined by our experienced food technologists. TMN-GEKKO SWAK-GEKKO WBK-GEKKO STMK-GEKKO KKV-GEKKO BATTER MIXING BAKING SHEET COOLING CREAM SPREADING & BOOK BUILDING BOOK COOLING Fluid batter is made of the main ingredients water and wheat flour plus minor ingredients. The batter is baked to wafer sheets for about 2 min. The wafer sheets are cooled down at ambient temperature. The cream mixture of fat, sugar and minor ingredients is applied onto the wafer sheets. The wafer books are cooled till the cream solidifies. AWD-GEKKO CUTTING The wafer books are cut to wafer fingers. scope of GEKKO package PACKAGING High-moisture barrier films are recommended to keep the crunchy texture of the wafers. WHICH INGREDIENTS ARE NECESSARY? The selection and quality of the ingredients and the flavoring of the cream filling are decisive factors influencing the success on the market. There are two line versions with different capacities available. Based on standard parameters like a baking time of 2 minutes, a weight ratio of 28% wafer and 72% cream and an approximate wafer sheet weight of 62 g, • the GEKKO 260 Line can reach a capacity of approx. 120 kg/hour • the GEKKO 460 Line can reach a capacity of approx. 185 kg/hour BATTER MIXER TMN-GEKKO The mixing tank is equipped with a mixing turbine which causes an intensive circulation of the components to produce lump-free batter within short time. BAKING OVEN SWAK-GEKKO Wafer batter is deposited onto the lower baking plates of heated baking plate pairs. The baking plates close and move through the oven. After one complete turn, the baking plates open again, the baked wafer sheets are taken off and transferred to the wafer sheet cooler. WAFER-SHEET COOLER WBK-GEKKO Wafer sheets coming from the oven are recognized by a photocell and fed one by one to the cooler where they are cooled in a stressfree manner by ambient air. SPREADING MACHINE STMK-GEKKO Cream is applied onto the wafer sheets by contact between a spreading roller and the sheets. The pneumatically activated book building device sandwiches the creamed wafer sheets to form a wafer book. For the top sheet, the conveyor belt below the spreading head is lowered so that no cream is applied. Wafer Book Cooler KKV-GEKKO Stainless steel compartments carry the wafer books vertically through the cooling tower. WAFER BOOK CUTTER AWD-GEKKO The cooled wafer books are fed to the cutter by a rope conveyor. Pushers press the individual wafer books through two cutting frames which are arranged at a 90° angle to each other. WHICH OPTIONS ARE AVAILABLE?
