The Colony Cove Medical Loan Closet is open on an “on call” basis. If you are a resident
of Colony Cove and have need of a medical device (walker, knee walker, crutches, etc)
Contact one of the volunteers listed below.
There is no charge for the use of equipment, however a deposit is required. The deposit
will be returned when the article is returned. And cash donations are always welcome.
These donations help us to replace worn items.
We ask that you return the item clean and if possible it should be returned within 60
days. If you need the item for a longer period of time please contact one of the volunteers.
We also ask that if you know you will be needing something from the CCMLC that you
call before you need it. Our volunteers are not always available at the last minute. We are
available on Sunday, strictly on an emergency basis.

The fourth of July has come and gone and here in Colony Cove we celebrated it in style.
Our parade, sponsored by the 301 Cruisers Golf Cart Club, stepped off at 10:30 with 77
carts participating. After traveling the many streets in the community they arrived at
12:00 at Harmony Hall. After a short ceremony by our resident master of ceremonies,
Russ Uboldi, lunch was served consisting of hot dogs, hamburgers, potato salad, chips
and soft drinks. This annual event was hosted by the HOA Board with help from HOA
members and sponsored by community management. The attendance was appreciably
higher than in past years and many residents commented that they saw many unfamiliar
faces in attendance. This resulted in the workers who volunteered to serve being unable
to eat because all the food was gone after the last “resident” was fed. Management has
decided to issue tickets to future events which will give us a more accurate count so we
have plenty of food available. There will be no cutoff date as we always order a percentage
of food above anticipated guests. Out of state guests will be given tickets to attend. The
event will still be free but a ticket will be required.
As all residents know, what you hear at the pool is the honest to God truth, we want
to quell some of the new home rent rumors. It is very simple, whatever you heard is no
longer a viable option dealing with rents. As June 30, 2015 all previous new home rent
incentives have been discontinued. There was an eight year tiered discount plan but
again, it is no longer an available incentive plan.
One of the issues residents have been complaining about is the deplorable condition of the
furniture in our pools. We, the HOA, have been addressing this issue with management and
those efforts have come to a conclusion. Bids are being solicited to replace all pool furniture
with higher seat requirements, at all the pools except Harmony pool since that furniture is
relatively new. Management hopes to have this accomplished in the next 90 days.
One of the problems residents have had in procuring wrist bands when guests arrive on
the weekend is no longer a problem. The office is now open on weekends with Saturday
hours from 10:00am to 5:00pm and Sunday from 12:00pm to 4:00pm. This will eliminate
the excuse that residents could not get the wrist bands because of the weekend. Patrol
will be more diligent in checking to see that only authorized residents and their guests
use our facilities.
If you live near the Ellenton Hall area or use the club house you will find cross walk
signs erected at the 4 way intersection. We hope all residents will heed these signs and
give the right of way to pedestrians. This, too, was a project we have been working with
management to address.

• If you get a new vehicle, please remove the barcode and bring into the office for
replacement. This is the only way you are guaranteed to receive a new barcode at NO
CHARGE.
When selling your home
"For Sale By Owner"
A Few Things You Need To Know:
1. You need to request a "Rent Disclosure" from the Main Office.
2. You need to provide the Buyer of your home with your copy of the "Prospectus
Agreement".
(**Do not give your copy of the "Prospectus", until the Buyer has been APPROVED.)
3. You can obtain a copy of an application from the Office, so you have it handy for a
potential buyer.
**Important Reminder:
All Buyers/Homewowners have to be age-qualified, pass a
background and credit check.
All other Occupants who will be residing in the home, must be
age-qualified, pass a background check and be approved by the
Office.
**Even if the Buyer already owns a home in Colony Cove, they have to call the
Office and talk to Ashley about approval for the new home.**
4. The Office will schedule an inspection of the outside of your home & lot. If anything
is not “in-compliance” according to the “Prospectus” Rules & Regulations, these issues
will have to be corrected in order to bring the home into “compliance” status, before
the closing will be approved.

While we can’t say that our Saturday Coffee Hour menu runs from soup to nuts - since
it really includes only coffee and doughnuts - we can say that the “events” cover a wide
span of activities and interests running from music, comedy, congratulations, and even
helpful hints for general day to day living. Under that last category, and in line with our long-standing custom of caring and sharing, we want to advise you of some poisonous phone perpetrators and their scary schemes
now being inflicted upon the “elderly” here and everywhere. (This is not to say that we
are - or are among - the “elderly”, it is merely a heads up warning should one of these
phantom callers contact the “Young You”!)
1. The Grandma Scam - the caller will claim that your grandchild has been in an auto
accident (or some other dire emergency situation) and needs money wired to him immediately.
2. The IRS Scam - the caller will warn you of a serious problem with your income tax
return and threaten you with heavy fines or imprisonment unless you forward him money
immediately.
3. The Jury Duty Scam - the caller will state that you ignored your notice to report for
Jury Duty, and to avoid a serious penalty, or worse, you must send him money immediately.
Note the repeated use of the “immediate” and “urgent” need for money and/or the resulting request for your personal information, including possibly account numbers etc.

Boy, oh Boy, has it been a scorcher this summer! Our electric bills are just inching up,
aren't they?! You have to admit, though, the rain is oh so welcome, and the clouds, at least
part of the day, lend us some relief. Fourth of July came and went without incident in the Hood, meaning accidents or
injuries. The parade was quite colorful and impressive with the “Ol Red, White, and Blue”
waving proudly. The luncheon and ensuing pool party took the edge off all the oven-like
temps! We certainly hope the fish are biting, judging from the good use to which the
Riverside Pavilion dock has been put! Families are down visiting on summer vacations,
the boats are coming and going out of the “yacht club,” and the pools are brimming with
laughter and beautiful suntans to take back North.
The new homes all over the park lend a well-deserved elegance to our community! The
Spring push for spiffing up yards, spray cleaning home exteriors, new mulch, trimmed
trees/palms truly warrants the signs around the neighborhood as “thank you's” for all the
beautification. With that said, we hope all the new residents in the South, West, and North
ends of the park continue to investigate all the wonderful activities available in Colony
Cove on both sides of the highway.
The Summer Solstice, June 21st, swiftly passed us by, and now our sunlight slowly
slips away minute by minute, but that doesn't mean residents in the park—whether
South club members, residents old and new, or guests—should miss out on our weekly,
Saturday morning coffees. Bring your mug and a $1.00 to enjoy donuts, old friends, and
new acquaintances. The first and third Saturdays of the month offer a chance at 50/50, so
bring your coin/penny jar!
At our July Board meeting we are drumming up ideas to enhance coffee hour such as
Earth Box demonstrations, Pet Adoption/Rescue presentations, even a Salvation Army
visitor on volunteer opportunities for the holidays and/or an informative discussion on
community needs. We would appreciate any/all suggestions for making Saturday Coffee
Hour not only an opportunity for friendship and positive acquaintances, but something
productive and informative showcasing a wider variety of our community's diversity.
Membership business meetings have been put on hold until October when the Snowbirds fly south for the winter, once again to fill the park full of activities. South Club Board
continues to meet monthly throughout the year the first Tuesday, 9:30 a.m., at Bayshore
House.
Despite the absence of some members, South Club Board meetings are filled with
new and exciting ideas for the coming year and all of our new residents. For example, we
are “kicking the beach ball around” for late Summer/early Fall, possibly with an outdoor
cookout at the Riverside Pavilion with burgers, hot dogs, etc. and, of course, BYOB! Rumor
has it that little drink umbrellas, Hawaiian necklaces, a Tropical Shirt contest, and croquet
are in the works. We shall see how the membership chips in on the idea!
Alas.......the Dog Days are upon us, and that means getting out with your dog (or cat)
and catching a sunset or two with your beverage of choice because, before you know it,
three months of holidays will spur us into crazy mode!
In the Good Old Summer Time!

Colony Cove Friendly Social Club
We are certainly experiencing “The Dog Days of Summer” outside, however, inside The Friendly Social
Club has been creating some of their own heat!
Bob Sobon, once again, hosted a fabulous event. At the “Get Up, Get Down” dance, Sarasota Slim
entertained the crowd with great music for listening and dancing. Bob served up sandwiches and other
goodies FREE for all to enjoy. Thank you to Bob and all his volunteers for a great night!!
Becky Pierson will chair the “ADD Dance” on August 12th with the “Accidentals” playing some good
old rock and roll. FSC invites ALL residents to our summer events. Just get your tickets at Saturday’s coffee.
We are already in the final month of Summer. Time sure flies when you have to spend your days basking
in the sun at the pool but we have lots to look forward to this Fall. Two dances in September, our huge
Halloween dance in October, a dance AND our Thanksgiving dinner in November and wrapping up 2015
with our annual Christmas Dinner/Dance.
We invite any new residents, or even if you’ve lived in the Cove for years, to come out on a Saturday
morning and have coffee and doughnuts on us. See what we’re all about! Buy tickets to our events. Hear
what other clubs in CC are doing and catch up with neighbors and friends. We’d love to see you.
Meetings start at 8:30am but you can come and socialize from 7am on. Membership is only $10 per
person for an entire year. We have over 900 members and we would like to add YOU to our role.

Obituaries
Helen M. Willard died peacefully on Friday May 29, 2015
with family at her side, at Madonna Living Community in
Rochester, MN. She was 92. Her’s was a life well lived.
Helen was born November 18, 1922 in Champaign, Illinois
to George and Clara (Heintz) Alsop. She grew up in Champaign and was one of eleven children in a busy family. Helen
graduated from Champaign High School and entered the
U.S. Coast Guard, serving during the war from 1943 to 1945.
Helen married Ralph F. Willard on September 6, 1946, after
Ralph’s discharge from the U.S. Marine Corp where he served
in combat in the south Pacific islands.
Helen and her husband, Ralph, spent 30+ years as a military family in the U.S. Army. Their Army adventure took
them to postings across the U.S. and Europe. Helen was a
loving mother to two sons, Dennis and Mike. Whether she
was hiking the ridges of the Zugspitze in Bavaria, strolling the sidewalks of the Champs
Elysees in Paris or crossing the Atlantic with her family on the MST “Rose”, Helen was the
consummate military wife and mother --- self sufficient, courageous, and resourceful.
She endured “hardship” tours of separation from her husband when he was away for 13
months at a time in Korea and Viet Nam – raising her sons and keeping the home fires
burning. At her core she was tough and resilient --- all of these, traits that would define
her in her later years.
Helen and Ralph retired from the Army in 1972 and moved to Orlando, Florida. During
her years in Orlando, she worked in the retail department store business for Burdines of
Florida. In 1983 she and Ralph moved to Colony Cove, on the west coast of Florida where
she truly enjoyed her “Florida years” surrounded by great friends, good books, and the
Gulf of Mexico.
In 2002 with blindness setting in from macular degeneration, Helen relocated to Rochester, MN to be close to her son Mike and wife Barbara. True to her credo, she summoned
the courage and strength to move yet again at age 80 to build a rich life with new friends.
She made her home at Madonna Towers, a decision her family will always celebrate for
the care and kindness she received as a resident. Helen was an inspiration and touchstone
to many who needed encouragement to face the challenges of advancing age. Helen
embraced her faith in God at Zumbro Lutheran Church.
Helen is survived by her two sons and their wives, Dennis (Kathy) Willard of West Chester, PA. and Mike (Barbara) Willard of Rochester, MN.; two brothers, John (Betty) Alsop
and Robert (Carla) Alsop of Champaign, Illinois; grandchildren Heather (John) Sherwin
of Rochester, MN, and Tracey Willard of Clearwater, FL, Jennifer (Jamie Molin) Willard of
Jacksonville, FL, Andy (Irene) Willard of Rye, NY., and 4 great grandchildren.
Helen was preceded in death by her parents Clara and George Alsop, her husband
Ralph, her granddaughter Heidi Jones, and 8 brothers and sisters.
A private memorial service will be held at Madonna Towers for her friends at Madonna
Living Community at 10:00 am on Wednesday, June 3, 2015. In lieu of flowers, memorials
are preferred to Zumbro Lutheran Church, 624 3rd Ave. S.W., Rochester MN, 55902.
Helen was laid to rest beside her husband Ralph on Friday June 5, 2015 in Mansion
Memorial Park, 1400 36th Ave. Ellenton Florida, 34222, with final arrangements being
handled by Groover Funeral Home.

Nagle, Joseph Leo, beloved husband of Phyllis (Little) and loving father of 3 children.
passed away June 20, 2015. He was 95 years old and lived in Ellenton, FL for 33 years.
Leo was born in Everett, MA and grew up in Saugus, MA. He was number 4 of 13 children.
He is survived by siblings: Katherine Leonard of Salem, MA, Charles Nagle of Nashua, NH,
Theresa Garrity of Milford, MA, William Nagle of Swampscott, MA and Dorothea Tormey
of Nashua, NH. He also has 51 nieces and nephews.
He is predeceased by his parents Frank and Katherine Nagle and also siblings; Francis
Nagle, Rita Walsh, John Nagle, Lawrence Nagle, James Nagle, Thomas Nagle, and David
Nagle.
He served in the U.S. Navy during World War II and the Korean War as a Machinist Mate
First Class. In the South Pacific, he was in the battles of Okinawa, Guadalcanal, Leyte Gulf
and several others. He was also involved in the invasion of Sicily and North Africa.
After the war, he was employed by General Electric for 42 years as a machinist at the
Everett and Lynn plants. During his retirement he continued to use his machinist skills to
create beautiful works of art out of metal in Ellenton, Florida. For several years, he received
many first and second place awards for his works of art at the Florida State Fair. Some of
his award winning art sculptures from metal scraps include the “Eiffel Tour”, leaning tower
of “Pisa” and also a restored 1901 “Oldsmobile Roadster”. He made numerous pieces of art
sculpture for his family and siblings.
He is survived by his loving wife Phyllis of almost 70 years and his children, Sandra von
Holten and her husband Ernest of Wakefield, MA, Patricia Nagle and her husband JeanPierre of Paris, France and Robert Nagle and his long time partner, Cheri Davis of Largo,
Florida. Grandchildren include: Christopher Eckman and his wife Rebekah Pite, Melissa
Binette and her husband Martin and Lea Richard. Great-grandchildren include Sophia and
Elijah Pite-Eckman and Camden and Hadley Binette. He is also leaving behind his beloved
canine companion “Bella” the dachshund who was at his side constantly.

South Quilt Club July 2015
This month’s Breeze features an assortment of projects that are being done in quilting,
one being a beautiful wall hanging by Sue and a quilt as you go “chevron”.
We also received a large donation of beautiful hard covered and soft covered books
from our neighbor who had a benefit sale for son who has cancer and what was left over
she donated to our club, thanks so much Dorothy.
We are all very busy making an assortment of items for an upcoming bazaar in hopes
that we can bring some funds into our group for specialty items and also for repairs on our
loaner machines. Right now our members are paying for them out of their own pockets.
If you would like to learn how to quilt, now is the time for you to stop by and learn from
all of us our group is at its lowest since many of our members are snowbirds. So if you
would love to learn, please come down and join us. If you are not joining because you do
not have a sewing machine you should know that we have a few loaners on hand so you
can certainly join our group.
Would like to also remind everyone that we are always looking for donations of scrap
material or any type of sewing articles, we love to take donations. It’s amazing what this
group can create with scrap material. If you have a donation please drop them off at 315
Alkmaar Street or call and I will pick it up (722-5453). We would appreciate it if you did
not leave any materials or sewing notions at Barbara Clancy’s carport.
We meet every Friday at 9AM to 3PM at Friendship Hall. Many of us stay and have lunch
together. We are also extending our hours to Tuesdays between Noon and 4:00pm.
Remember our club is free, there is no membership fee. So please stop by and visit with
us. We all look forward to meeting you. Also remember that the Quilt Club continues all
year long, we still quilt for the summer months i.e.: May, June, July, August so please
stop by if you are interested in learning.

Rules for sale are as follows:
no firearms - No alcohol
No computer screens or printers, no curtain rods
or blinds, no dirty items will be accepted
Everything electronic must be checked before taken to check-in.
All items are sold "as is".
If your item does not sell and you want to take it back home,
it must be taken out of the hall that night or picked up in
side dressing room from 7:00am to 9:00am the following day.
If your item needs described while being sold,
please write out a description on a piece of paper the
size of a 3 x 5" index card and attach it to the item.

There are a variety of non-medical items for use by the residents of Colony Cove. We
invite you to drop by and check out the available items for yourself. Most of the items
that we have are based around short term visits by your kids and grand kids, but there
are some other items that you may require on a short term basis. These include a wheel
barrow, a four wheel dolly and a refrigerator cart.

The Art Club meets every Wednesday, 1 - 3pm at “Bayshore House” - 564 Bayshore
Drive. (Close to Pavilion, fishing pier & community garden). Come join us for only $10 yr.
First Wednesday of each month (Oct. through May) Business Meeting starts at 12:30pm
for officers and all members. We need your ideas and input for future classes, as well as
our Annual Show & Sale, scheduled for March 6th, 2016.

We bravely tried some fabric painting last month thanks to Mara Trumbo, her wonderful
patterns and expert instruction. Mara teaches at Keeton’s in Bradenton periodically. Watch
for her August classes - Colony Cove Art Club or Keeton’s on facebook. If you are new to
the area, Keeton’s also has great Art Supply pricing and monthly specials. Mara had Lucy
using oils this past week, and Lucy’s seascape is looking fabulous. It should be finished
for next months issue of the Breeze!
We are pleased to welcome prospective new members: Michael Ness, Charlie Covino
and Linda Web. Happy to have you join us, and hope you learn a lot as well as have fun!
Some of our members enjoyed the “Florida Highwaymen” (small group of African American landscape artists who began painting in 1950’s) opening reception July 10th. It was
held at Palmetto Historical Park & Manatee County Agricultural Museum, 515 10th.Ave.
W., Palmetto. The private collection exhibit will be through August 15th. Call 721.2034 if
interested in a tour.

Wisconsin/Minnesota Club
It’s hard to believe the fireworks are over and Labor Day is fast approaching. It won’t be too
much longer before our snowbirds feel the pull to come south.
Last year we missed out on any extra activities because of deadlines that were so far ahead. Not
so this year; the port tour reservations will be made in October. That is before our first meeting
of the 2015/­2016 Season. The reservations will hold a spot for us. Names and birth dates have to
be submitted well before the tour date. Security at the port is important and we want to abide
by their rules!
The first meeting will be the Welcome back Coffee on Monday, November 2, at Ellenton Hall at
9:30 a.m. This is always a nice time to see who is back and who is yet to come. We will also discuss
future dates and activities. Birth dates will be taken for those who wish to attend the port tour.
No dues will be collected.
The November Potluck is on Saturday, November 21, at Ellenton Hall. Social time from 12 to
12:30 p.m. Serving will begin at 12:30 p.m. The club will provide the meat, and members are asked
to bring a dish to pass that will serve at least eight. (We will determine what the meat will be at
the Welcome Coffee.) Please bring your own table service and beverage. Coffee will be provided
by the club.
Anyone with ties to either Minnesota or Wisconsin is invited to join us. We even have some
members who have ties to people who have ties to Minnesota or Wisconsin! We do not allow
cliques, complainers, or just plain grumpy people. Bring a good attitude and join us. Call the
Browns if you have any questions (224-­1424).

Only a few month away and then we will be back bowling at the Alley in Apollo Beach.
Don’t miss this opportunity to meet some new friends, exercise your heart out, and have
some fun.
We have 12 teams signed up to bowl this year. We still need some men and women to
complete a 4 person team, so if you would like to be a part of our league please call me
as soon as possible. Just a reminder that our teams may have no more than 2 men per
team. A team may have a team of 3 women and 1 man. Don’t wait too long as our teams
usually fill up by the beginning of our league play.
We have our beginning of the year meeting on Thursday, October 8th at 1 p.m. at the
Alley in Apollo Beach (it is easy to get there by going north on 75, exit Big Bend Road). At
our October meeting the bylaws will be given out to team captains. After the meeting we
will have time to bowl a few games to prepare for our opening league play on the 15th
of October.
Our league is a fun league; you won’t be disappointed by joining us. Life is too short
and unhealthy to stay home; get up, get out and come join us on Thursday afternoon in
October.

Ladies and Gentlemen, I am posting this from Yellowstone National Park,
way the heck out in Wyoming. We left in early June and this is early July. We
have seen many spectacular sights and will see some more as this next month
flows by. If you have not seen the Florida Caverns up in Mariana FL State Park,
it should be on your bucket list and its close. From FL to MS to OK we visited
family then the vacation started once we were headed to South Dakota for Mt.
Rushmore and the Crazy Horse Memorial. But we have been in the Bad Lands
(bridge out, 17 miles of washboard dirt roads), seen Wall Drugs and even visited
the Devils Tower without any Encounters of the Third Kind…haha.
We have another month probably on the road, some more Wyoming, Utah,
Arizona, Texas and home. The members have been doing an awesome job. I
heard that we got some walls painted, some bearings replaced in the LOUD
drum sander and some other odds and ends. Please enjoy a couple of my
photos. We intend on putting a lot on line at our website.

Garden Club News
Summer Gardening
WOW, have you seen the gardens lately? Many folks mistakenly believe you can’t grow
anything in the summer months and as a result some of our gardeners have given up.
Others have put forth the time and effort to obtain a bountiful harvest. Just like many of
us “older folks”, the HEAT affects the gardens as well. Watering remains the key to a lush
garden. REMEMBER water the dirt NOT the leaves. Water your garden early in the morning
or later in the day to receive the most benefit.
I’m including pictures of some of the gardens. If you see someone working in the garden be sure to stop by and tell them what a GREAT job they are doing in spite of the heat
index.
In order to obtain a plot you must sign an Agreement committing that you will attend
to your garden at least three times per week. In addition you commit to donate one hour
of your time per month to the overall appearance of the garden and to assist those who
might be ill or taking a short vacation. Monthly meetings are held every first Wednesday
of the month at 9:00am at the garden. Though these meetings are not mandatory, they
are very beneficial because much information and suggestions are shared.
There are still a couple of plots available so if you want one or know of someone else
that is interested in obtaining one, please contact me.

Ed Loeffler, Colony Cove’s Bus Driver is our Model Gardner for the month of July. Ed is a
prime example of someone who loves gardening and how dedication and perseverance
can produce a beautiful garden. He is shown here with a few of the crops he planted from
seed which are corn, tomatoes, bell peppers, beans, watermelon and cantaloupe.
Other gardeners have planted okra, hot peppers, squash, radishes, blueberries, carrots,
strawberries, sage, thyme, rosemary and bay leaves.

“29” ers Cribbage Results
A very quiet month again. This month again we had lower
numbers. 6/10/& 7 Players One week only 3 turned up so
we did not play. Disappointing for the 3, me included. We
like our Cribbage. Some of our players went to Daytona
for a Tournament and some came back with money. Well
done to them. Brian this month did well. He had money all
3 weeks with a 1st and 2 other places plus the quarter pot
2 weeks. He also had a 28 hand, but as the “Skunk” is out of
operation, did not get any money for it. Bad luck.
As you can see we are desperate for more players. We WILL
NOT BE playing for month of August. We will resume on the
1st Friday in September 2015@ Harmony Hall @1.00PM. Sign
in at 12.45PM. So if you can play cribbage do come and join
us. We had one new player join us on the 3rd July.

Poached Eggs with Asparagus
and Lemon Butter
by South Hobby Club
Pecan-Orange Salmon
1/3 cup orange juice
1 Tbsp. grated orange peel
1 Tbsp. Dijon mustard
1 Tbsp. honey
2 tsp. olive oil
1/2 tsp. salt
1/4 tsp. pepper
4 salmon fillets (5 oz. each)
2 Tbsp. finely chopped pecans
In a small bowl, combine the first seven ingredients. Place
salmon in a greased 11-in. x 7 in. baking dish. Pour orange
juice mixture over salmon; sprinkle with pecans.
Bake, uncovered, at 425º for 15-18 minutes or until fish
flakes easily with a fork.
Yield: 4 servings.
Summer Risotto
5-1/2 to 6 cups reduced-sodium chicken broth
1 small onion, finely chopped
2 Tbsp. olive oil
1 Tbsp.butter
2 cups uncooked arborio rice
3 large tomatoes, chopped
2 cups fresh or frozen corn, thawed
1/2 cup crumbled feta cheese
2 Tbsp. minced fresh thyme or 2 tsp. dried thyme
2 Tbsp.minced fresh rosemary or 2 tsp. dried rosemary, crushed
2 Tbsp. minced fresh basil or 2 tsp. dried basil
1/4 tsp. salt
1/4 tsp. pepper
Shredded Parmesan cheese
In a large saucepan, heat broth and keep warm. In a large
skillet, saute onion in oil and butter until tender. Add rice;
cook and stir for 2-3 minutes or until lightly browned. Stir
in 1 cup warm broth. Cook and stir until all of the liquid is
absorbed.
Add remaining broth,1/2 cup at a time, stirring constant­ly.
Allow the liquid to become absorbed between additions.
Cook until risotto is creamy and rice is almost tender (total
cooking time will be about 20 minutes).
Add the tomatoes, corn, feta cheese, herbs, salt and pep­
per; heat through. Sprinkle with Parmesan cheese. Serve
immediately.Yield: 12 servings.
1/4 cup butter, softened
1 1/2 tsp. minced fresh parsley
1 1/2 tsp. minced fresh tarragon or 1/2 tsp. dried tarragon
1 tsp. lemon juice
1/2 tsp. grated lemon peel
1/8 tsp. salt, divided
16 fresh asparagus spears, trimmed
1 Tbsp. white vinegar
4 eggs
2 English muffins, split and toasted
Dash pepper
In a small bowl, combine butter, parsley, tarragon, lemon
juice and peel and a dash of salt; chill until serving.
In a large saucepan, place steamer basket over 1 in. of
water. Place asparagus in basket. Bring water to a boil.
Reduce heat to maintain a sim­mer; steam, covered, 3-4
minutes or until crisp-tender.
Meanwhile, place 2-3 in. of water in a large skillet with
high sides; add vinegar. Bring to a boil; adjust heat to
maintain a gentle simmer. Break cold eggs, one at a time,
into a custard cup or saucer; holding cup close to surface
of water, slip eggs into water.
Cook, uncovered, 3-5 minutes or until whites are completely set and yolks begin to thicken but are not hard.
Using a slotted spoon, lift eggs out of water.
Spread 1 1/2 tsp. lemon butter over each English muffin
half; top with 4 asparagus spears, 1 egg and another 1 1/2
tsp. lemon butter. Sprinkle with pepper and remaining salt.
Peach- Ginger Chicken Thighs
1 cup peach preserves
2 Tbsp. minced fresh ginger
1 1/2 Tbsp. spicy mustard
4 peaches (about 1 1/2 lb. total), peeled,pitted and cut into 1/2-inch dice
2 red bell peppers, seeded and cut into 1/2-inch dice
3 scallions,finely chopped (about 1/3 cup)
1 1/2 Tbsp. chopped fresh basil
1Tbsp. fresh lime juice
16 bone-in chicken thighs, skin removed
1 lime, halved
2 tsp. salt
2 tsp. pepper
Stir together preserves, ginger and mustard in a small
bowl. Set aside 1/4 cup; put remaining mixture in a medium
bowl.
Add peaches, bell peppers and scallions to medium bowl
with preserves mixture. Stir gently. Stir in basil and lime
juice. Cover and chill until ready to serve.
Put chicken on a foil-lined baking sheet in a single layer.
Squeeze lime halves over both sides of chicken; season with
salt and pepper.
Turn on all grill burners and preheat to medium-high
(350ºF to 400ºF). When grill is ready, turn one burner off for
indirect heat and leave others on for direct heat. Brush grill
with oil. Place chicken on grill rack over direct heat. Cover
and grill for 5 minutes on each side. Baste chicken with
remaining preserves mixture and move to grill rack over
indirect heat. Cover and grill for 10 minutes longer, turning
once and basting often. Remove chicken from grill; let stand
5 minutes before serving. Serve with reserved peach relish.
Creamy Sun-Dried Tomato
& Chicken Frittata
10 eggs
1/2 cup heavy whipping cream
4 Tbsp. minced fresh basil or
4 tsp.dried basil, divided
1/2 tsp. salt
1/4 tsp. pepper
1 pkg. (8 oz.) cream cheese, softened and cubed
1 1/4 cups shredded cooked chicken
1/2 cup oil-packed sun-dried tomatoes, patted dry and chopped
4 Tbsp. shredded Parmesan cheese, divided
Preheat oven to 350°. In a large bowl, whisk eggs, cream,
3 Tbsp. basil, salt and pepper. Stir in cream cheese, chicken,
tomatoes and 2 Tbsp. Parmesan cheese.
Heat a 10-in. ovenproof skillet coated with cooking spray
over medium-low heat. Pour in the egg mixture; cover and
cook 8-12 min­utes or until nearly set. Sprinkle with remaining Parmesan cheese.
Bake, uncovered, 12-16 minutes or until eggs are completely set. Let stand 5 minutes. Sprinkle with remaining
basil; cut into wedges.
Yield: 8 servings.
Brown-Sugar Grilled Peaches
2 Tbsp. packed light brown sugar
1/4 tsp. cinnamon
4 ripe peaches, cut in half, pits removed
2 Tbsp. unsalted butter, melted
Vanilla ice cream, optional
Preheat grill or grill pan to medium. In a small bowl, mix
brown sugar and cinnamon. Brush cut side of peaches
lightly with butter.
Oil grill. Place peaches cut-side down on grill and cook
until grill marks appear, 3 to 4 minutes. Brush bottoms lightly with remaining butter, then turn peaches over. Sprinkle
sugar mixture over cut side of peaches, cover grill and
cook until sugar has melted and caramelized and peaches
are easily pierced with a sharp paring knife, 3 to 6 minutes
longer. Serve immediately, with ice cream, if desired.

Peach or Berry Smoothies
2 cups sliced fresh peaches, nectarines, and/or apricots
1 cup fat-free milk
1 16-ounce carton peach fat-free yogurt
with no-calorie sweetener
1 cup small ice cubes or crushed ice
In a blender, combine fruit, milk, and yogurt. Cover and
blend until smooth.
Gradually add ice through hole in lid, blending until
almost smooth. If desired, garnish each serving with fresh
fruit. Makes 4 (1-cup) servings.
Double Blue Berry Smoothies.
Substitute blueberry yogurt for peach yogurt and 1 1/2 cups
fresh or frozen blueberries and 1/2 cup fresh or frozen blackberries for peaches.
Double Red Berry Smoothies:
Substitute strawberry yogurt for peach yogurt and 1 1/2 cups
fresh or frozen sliced strawberries and 1/2 cup fresh or frozen
red raspberries for peaches.
Raspberry Sorbet
PREP: 5 MIN. + FREEZING MAKES: 6 SERVINGS
1/4 cup plus 1 1/2 tsp. lemon juice
3 3/4 cups fresh or frozen, unsweetened raspberries
2 1/4 cups confectioners’ sugar
In a blender or food processor, combine all ingredients;
cover and process until smooth.Transfer to a freezer container; freeze until firm.
PER SERVING 216 cal., trace fat (trace sat.fat), 0 chol., 1mg
sodium, 55 g carb., 5 g fiber, 1g pro.
Grilled Corn on the Cob
Prep: 10 min. Cook:10 min. Serves: 8
8 Tbsp. (1stick) unsalted butter, softened
1 Tbsp. grated orange zest
1 Tbsp. grated lime zest
2 Tbsp. lemon juice
16 ears fresh corn, shucked
2 Tbsp. olive oil
Salt and pepper
In a large bowl, combine butter, orange zest, lime zest
and lemon juice. Beat with a handheld mixer or a wooden
spoon until blended. (Butter can be prepared up to 2 days
in advance. Cover and refrigerate; remove from fridge 15
minutes before serving to soften.)
Preheat a gas grill to medium-high. Brush corn with
a small amount of olive oil and grill, turning often, until
slightly charred in spots and soft, 5 to 10 minutes. Season
with salt and pepper. Place on a large platter and top with
a small scoop of butter. Serve remaining butter on the side.
All-Spiced Up Raspberry and
Mushroom Salad
2 Tbsp. raspberry vinegar
2 Tbsp.olive oil, divided
1 Tbsp. red jalapeno pepper jelly
1/4 tsp. ground allspice
1 lb. small fresh mushrooms, halved
4 cups spring mix salad greens
1 cup fresh raspberries
2 Tbsp. chopped red onion
2 Tbsp. minced fresh mint
2 Tbsp. sliced almonds, toasted
1/4 cup crumbled goat cheese
In a small bowl, whisk vinegar, 1Tbsp. oil, pepper jelly
and allspice until blended. In a large skillet, heat remaining
oil over medium-high heat. Add mushrooms; cook and stir
until tender; cool slightly.
In a large bowl, combine salad greens, raspberries, onion,
mint and almonds. Just before serving, add mushrooms
and vinaigrette; toss to combine. Top with cheese. Yield: 4
servings.
Note: To toast nuts, spread in a 15-in. x 10-in. x 1-in. baking
pan. Bake at 350° for 5-10 minutes or until lightly browned,
stirring occasionally. Or, spread in a dry nonstick skillet and
heat over low heat until lightly browned, stirring occasionally.
Lemon- Blueberry Snack Cake
Prep: 15 min. Bake: 50 min. Yield 12 pieces
1 1/2 cups all-purpose flour
1 1/2 tsp. baking powder
Pinch of salt
8 Tbsp. (1stick) unsalted butter, at room temperature
1cup sugar
1 Tbsp. lemon zest
2 large eggs, at room temperature
1/2 cup buttermilk, at room temperature
1tsp. vanilla extract
1 Tbsp. lemon juice
1 pint blueberries
Preheat oven to 375°F. Mist an 8-inch-square baking
pan with cooking spray. Sift flour, baking powder and salt
together into a medium bowl.
In a bowl, using an electric mixer on medium-high speed,
beat butter, sugar and zest until light, about 4 minutes. Add
eggs one at a time, scraping down sides of bowl as needed.
In another bowl, mix buttermilk and vanilla. Beat 1/3 of flour
mixture into butter mixture until nearly combined, then
beat in half of buttermilk mixture. Repeat, ending with last
1/3 of flour mixture; beat until just combined. Stir in lemon
juice.
Spread batter evenly in prepared pan and sprinkle blueberries on top, pressing down lightly. Bake until a toothpick
inserted into center of cake comes out clean, 50 to 55
minutes. Let cool completely in pan on a wire rack.

outstanding singing voice of Vida Malcanas. The show will help pep
up the summer blues. The cost of this show is only $5.00. Yes we said
it would be only $5.00. Tickets will be available to
guests and will be available for pickup 5 weeks
prior to the show on July 25, 2015, at Saturday
morning coffee. This event will have cabaret seating so you can bring your favorite beverage and snack and enjoy
the show. A dance floor will be available for those inclined to do so.
The doors will open at 6:30 and the show will begin at 7:00. Tables
can be reserved.

Founded in 1989, the Entertainment Review has performed over 1,000 shows at
community events.The group is recognized nationally as an outstanding training group for
young recording artists and performers. Eight cast members have signed major recording
contracts. Entertainment Review has also produced four American Idol Finalists, top six
finalists on Dancing with the Stars and America’s Got Talent.This past season, three of its
cast members landed starting roles in broadway productions.

Gordy Wensel and Debra Kaye are from Branson, Missouri. They each have spent the last

perform an upbeat variety of country, 50’s & 60’s, gospel and patriotic music, splashed with

Duo Romantico
Duo Romantico are completely unique in today’s entertainment scene. They are two
classically trained singers. Atilio Marinelli is a powerful, dramatic tenor and his wife Christy
is a lovely, lyrical mezzo­soprano. When their gorgeous voices intertwine, it is nothing short
of magical. Their show brings to life all the favorite love duets from films such as “Moulin
Rouge”, “Pearl Harbor” and “The Godfather”. These two experienced stage performers
aren’t content to just stand and sing, they act out each song. Christy transforms herself,
just by pulling her hair back, into a dying Evita Peron and sings the heartbreaking “Don’t
Cry for Me Argentina”. The audience gets into the swing by helping out with such Italian
