DIRECTIONS
Preparation time: 20 minutes
Cooking time: 15 minutes
Yield: 6 servings
Place oven rack in center position and preheat oven to
375 degrees F. Place Muffin Tray on Perforated Baking
Sheet and set aside. Warm tortillas in microwave for 30
seconds or until soft. Coat each side with oil and place in
the muffin well letting the sides gently fold around edges.
Slice fish into 1" cubes with your Santoku Chef Knife and
place fish in Mixing Bowl. Use grater to zest lime. In a
Pinch Bowl combine the salt, pepper, Zesty Mediterranean
Herb Blend and lime zest. Sprinkle the spice mix over the
fish and coat well.

Juice of 2 limes

cup Greek yogurt

tablespoon finely chopped canned
chipotle pepper in adobo sauce
Begin filling the muffin well first with the cabbage and
then with the fish bites. Bake until cooked through, about
15 minutes.
In a bowl, toss mango, avocado, cilantro, green onions,
1/2 lime juice and salt to taste. In a second small bowl,
combine yogurt, chipotle chiles and remaining lime
juice. Serve Fish Tacos topped with mango salsa and
yogurt blend.

Place oven rack in lowest position and preheat oven
to 375 degrees F. Place Flexipan® Grande Mold on
Perforated Baking Sheet and set aside.

shallots, peeled with root end left intact
small new potatoes, halved
Bring ham to room temperature. Trim skin from ham,
leaving the fat intact. Score the fat in a crosshatch
pattern, making the cuts about 3/4" deep and 1" apart.
Place the ham flat-side down in the Grande Mold; add
water. Bake for 40 minutes, adding more water if the pan
gets dry.
Meanwhile, in your Petite Sauce Pan, add Apple Pear
Balsamic Vinegar; reduce by half by simmering vinegar.
In Mixing Bowl, whisk 1 cup jam or marmalade with
brown sugar, Sweet Tangy Mustard, Worcestershire sauce
and reduced Apple Pear Balsamic Vinegar. Remove ham
from oven; brush the ham with half of the glaze; tent
loosely with foil and bake 45 minutes longer.
Place carrots, shallots and potatoes around ham. Brush
ham with the remaining glaze and bake, uncovered, until
the glaze is browned, 40 to 50 minutes longer. Let rest
15 minutes before carving.

Dough: Follow package directions to prepare dough.
When the dough has risen, place a large ball on the
Roul’Pat® and roll to a circle that will completely cover
the reverse side of the Grande Mold plus extra for
shrinkage (an 18" circle). Baste the dough with olive oil.
Gently lay dough (oil side down) over the reverse side of
the Grande Mold. Bake for 12-15 minutes until center is
a light golden brown and edges are cooked. Remove from
oven and cool 5 minutes. Unmold onto the Perforated
Baking Sheet.
While baking, place vegetables, Sea Salt and remaining
olive oil in Mixing Bowl and toss. Fill baked crust with all
chopped ingredients. Top with cheeses and Herb Blend.
Place back in oven and bake for 5 minutes until the
cheese is melted. Drizzle with the Balsamic Vinegar.
Use extra 1/3 dough ball for breadsticks on Silpat®

Salmon: Place oven rack in center position and preheat
oven to 400 degrees F. Place the Grande Flexipat® on
the Perforated Baking Sheet and set aside. Season oil
with lemon dill blend. Baste salmon with 1/3 oil mixture
using the Silicone Pastry Brush. Season with salt and
pepper; place on Grande Flexipat®.
Vegetables: Boil potatoes until al dente (firm but not
hard). Rinse in cool water using your Colander Scoop.
Place in Mixing Bowl; add asparagus and tomatoes.
Top with remaining seasoned oil and toss. Position the
potatoes on Flexipat® together. Place asparagus in center
of your Flexipat® with tips towards the top like a bouquet.
Place tomatoes at asparagus tips like flower heads.
Place in oven for 15-20 minutes or until the salmon is
slightly crisp on the outside with a moist and flaky center.
Be careful not to overcook the fish – salmon is done when
it can be flaked apart in the center and has a nice pink
color inside.
Dressing: Combine all dressing ingredients in a small
bowl. Mix well with a fork. Top fish and vegetables with
dressing and serve.

Place oven rack in center position and preheat oven to 400
degrees F. Place Submarine Tray on Perforated Baking Sheet
and set aside.
Mix lukewarm water (105-115 degrees F) with active yeast in
small bowl. Once yeast mixture begins to bubble, allow yeast to
bloom (3-5 minutes).
Place flour in Mixing Bowl. Add Sea Salt, Roasted Garlic &
Chives Herb Blend and sugar, and mix well. Slowly add warm
water/yeast into center of Mixing Bowl, pulling dry ingredients
from the sides to center, hand kneading until dough becomes
firm; add olive oil. Turn the dough out onto a clean Roul’Pat®.
Turn
dough onto Roul’Pat® and break into four dough balls.

With each ball do the following: punch down to knock out
most of the air. With Beechwood Rolling Pin roll the dough
to 1/4" thick oval-shape. Fold dough by thirds. Bring third
from the left, press firmly with heel of palm; rotate and bring
third from the right, press firmly on edge. Flip 90 degrees,
with seam on top. Roll out to 10" in diameter, tucking in the
ends and pinching lightly to create rounded ends. Place in
Submarine Tray. Cover with plastic or towel. Place dough in
warm area and proof for 30 to 40 minutes.
Lightly baste top of bun with egg wash using Pastry Brush
and add sesame seeds to top of bun. Lightly score top of
bun with Cake Server Knife, or score lengthwise through
center of bun. Bake for about 25 minutes or until
golden brown.

Cooking and Caring for Silform®
Filling – Place Silform® on a Perforated Baking Sheet
before filling for support.
Baking – Silform® can be used in any oven. Reduce
temperature by 20 to 25 degrees and bake a bit longer
than you would in glass or metal pans. Silform® should be
used on a Perforated Baking Sheet because it maximizes
the circulation of air and optimizes heat transfer.
Unmolding – Thanks to its non-stick properties, it is very
easy to unmold anything baked in Silform®.
Stretch the dough away from you, fold it back, turn a quarter
turn and repeat. Once the dough is well incorporated, slap it
on the surface a few times. This will encourage more gluten
production leading to lighter, airier bread.
Cleaning – To clean, simply wash the Silform® in hot soapy
(mild) water using a non abrasive sponge.
When the dough is smooth and silky, continue kneading for
another several minutes. You can work it with both hands and
keep turning. Once the dough is thoroughly kneaded, place it
in an oiled mixing bowl; coat with oil all the way around. Cover
with Octagonal Silpat®, place in warm area. Allow to rise until
dough doubles in size; approximately one hour.

or even fill it with dry beans anymore.

Preheat oven to 325 degrees, F. Place Cake Pop Tray on
Perforated Baking Sheet and set aside.
Mix all cake pop ingredients together in Mixing Bowl for about
2 minutes until well blended.
Fill wells of Cake Pop Tray using your medium Mechanical
Scoop. Fill 3/4 full.
Cover Cake Pop Tray with Silpain® (print side down) and bake
18 to 20 minutes. Let cool until just warm to the touch in the
tray. Remove Silpain®.
Place 1/2 bag of candy melts and 2 squares almond bark in
the glass measuring cup and melt in microwave heating in
8 second intervals. (Do not burn).
One Cake Pop Tray will make 12 cake pops on sticks
To build one cake pop at a time, use the rounded end of
the magnetic teaspoon to apply a smooth layer of melted
chocolate on a cake pop cake. Top it with a dry cake pop
cake. Now, dip lollipop stick into melted chocolate and insert
into rounded cake pops. Repeat until you have 12 rounded
cake pops. Leave cake pops in their tray and place tray in
freezer for 20 minutes.
Re-heat chocolate and twirl cake pops (one at a time) in
melted chocolate being sure not to “dunk”. Tap stick on cup
to remove excess chocolate. Hold cake pop over clean bowl
and sprinkle with toppings. (Fallen toppings can be reused!)
NOTE: chocolate will need to be re-heated periodically.
There’s no need to put them in a holder to dry simply stand
upside down on your Roul’Pat®.
When pops are dry for about 15 minutes bag them in treat
bags and tie off.

CULINARY: The selection of salt is a critical decision for the world’s greatest
chefs and finest restaurants. Those who have not experienced replacing processed
“table salt” with organic sea salts do not realize that like all spices, different salts
provide different flavors. Salt is the only spice necessary for life and is the most
often used seasoning for food.
HEALTH BENEFITS: The health benefits of sea salts are found both in their
high mineral content (grocery store salt is devoid of minerals) and their high
sodium to chloride ratio.
Salt is a natural adversary to many fungi, bacteria and viruses and our bodies are
dependent upon an intake of sodium. The individual flavor is due to its unique
mix of minerals and the complex variations of salt crystals. Until you try sea salts,
you probably believe all salt tastes the same, but this is very inaccurate.
USAGE: Generally, it takes LESS sea salt for the same level of saltiness. What is
the shelf life of sea salt? As long as it is kept dry, at least 10 million years. If it
becomes damp and then dried, it will tend to form larger crystal structures though still usable and would dissolve. Salt does not decay and is highly resistant
to any micro-organism contamination. There is no shelf life to salt, only to the
container the salt is in.

Preparation time: 20 minutes
Baking time: 5 minutes
Yield: 6 servings
Place oven rack in center position and preheat
oven to 350 degrees F. Place Silpat® on
Perforated Baking Sheet. Place Texas Muffin
Tray on its backside on the second Perforated
Baking Sheet (bottom side up).

cups shredded Parmesan cheese
bunch curly parsley, finely chopped
cups whole grape tomatoes
lb. mini mozzarella balls in water, halved
small sweet onion quarter, thinly shaved
tablespoons olive oil

Place pecans in zip lock bag; crush using
Rolling Pin until finely crushed; set aside.
Form 3 large Parmesan circles on Silpat®. Top
with 1/2 the crushed pecans. Place in oven;
watch carefully. When edges begin to turn
golden (a few minutes), remove from oven
and let cool just until you can lift with the
Polyamide Spatula (one minute or less). Place
circles atop the Texas Muffin shapes one at
a time and squeeze gently to form a basket
shape. (Being careful not to burn your hands
though.) Repeat process for 6 baskets.
Salad: Mix the parsley, tomatoes, mozzarella
and shaved onion in the Mixing Bowl. Lightly
season with olive oil. Place in the Parmesan
baskets. Once plated, top with the sea salt,
pepper and a touch of the balsamic vinegar.
This is always a hit and so very healthy too!

DIRECTIONS
Preparation time: 10 minutes
Baking time: 10 minutes
Yield: 28 macarons
Place oven rack in center position and preheat oven
to 375 degrees F. Place Silpat® Macaron Mat on
Perforated Baking Sheet and set aside. In a food
processor, pulse confectioners sugar and almond
flour until combined. Sift mixture once and repeat.
Suggested Fillings
Peanut butter
Chocolate Ganache
Buttercream (can mix with coconut)
Peanut butter
Seedless strawberry jam
Using a mixer, mix whites on medium speed until
foamy. Add cream of tartar and mix again until
soft peaks form. Reduce speed to low. Add sugar.
Increase speed to high and mix again until stiff
peaks form, about 8 minutes. Sift flour mixture over
whites, and fold until mixture is smooth and shiny.
(Use our Flexible Scraper for folding in.)
Transfer batter to a Demarle Difference Pastry Bag
fitted with a large plain round tip. Pipe each round
form, dragging pastry tip to the side of rounds
rather than forming peaks. Gently tap bottom of
Macaron Mat/Perforated Baking Sheet on work
surface to release trapped air. Let stand for 15
minutes. Reduce oven temperature to 325 degrees
F. Bake until macarons are crisp and firm, about 10
minutes. Let macarons cool completely. Transfer to
a wire rack.
Sandwich 2 same-size macarons with 1 teaspoon
filling. Serve immediately, or stack between layers
of parchment, wrap in plastic, and freeze for up to
3 months.
