Congratulations to Stuart Nelson of
the Palms, our Resident of the
Month for May!
Stuart Nelson, better known as “Stu”,
was born in September of 1915 and was

raised in Bakersfield, California.
Out of his esteemed career, Stu best
recalls being a Navy gunner and pilot in the

Pacific Theater during World War II and
also during the Korean War. We thank him
daily for his service and commitment to our
great nation.
Stu has two daughters Nicole and


Michelle. His favorite foods are anything
chocolate and he’ll never turn down a cookie.

Stu is easy going and friendly, he likes
to take short outside walks in the morning

where he can admire the flowers and birds.
He enjoys watching t.v., but will join in on
just about any activity from singing, to
BINGO, to going out on a scenic drive. Please

Aurea Beltran
Congratulations to Aurea Beltran
our May Employee of the Month!
Aurea is a Medication Technician in the Willows and
Elms Home. She has been with Sunshine Care since 2010
and has proven to be both hardworking and loyal. Aurea is excited to be engaged to her wonderful fiancé. She has one six year old daughter who is ready
for the summer after completing first grade.
In her free time Aurea enjoys spending time with her family, going to
the movies, shopping at the mall and going to the beach when she can find the
time.
Aurea has won the respect of staff and managers alike for her detailed
and positive work ethic. We are so glad she is a part of our team!
Congratulations Aurea! Keep up the great work!!

Farmer Roy’s FREE Garden Lecture is back
Join us on Saturday, May 16 at 10:30 am
Speaker: Giselle “G” Schoniger, Organic Gardening Educator at Kellogg Garden
Topic: Holistic Health Care In Your Garden
Description: At the core of great gardens is how we care for our soil; what we feed our gardens and how we can
maximize our efforts in the garden by using organic practices. Giselle’s goal, by getting back to the basics, is to
inspire some small changes that will garner big rewards in your garden soil, leading to an abundance of crops for
your overall health. Her workshops are upbeat, educational and
entertaining. Come and feel her “passion”!
Door prizes and refreshments are offered then a tour of the greenhouse and gardens follow afterwards.

Recipe of the Month:
Shrimp, Tomato & Spinach Pasta in Garlic Butter Sauce
Ingredients:

1 pound fresh shrimp, uncooked, shelled and deveined

5 medium tomatoes, fresh, chopped into large cubes

1 cup cooked spinach

5 garlic cloves, minced

3 or 4 tablespoons butter

1 tablespoon olive oil

1/4 small lemon

Salt and paprika

1/2 teaspoon crushed red pepper

10 oz fettuccine pasta

1/2 cup Parmesan cheese, grated
Instructions:
1. Heat a large skillet on medium-high heat, add 1 tablespoon butter and 1 tablespoon olive oil until melted. Add
fresh shrimp and half the minced garlic. Make sure shrimp is
not crowded. Cook for 1 minute on one side until pink on
that side. While it's cooking, generously sprinkle paprika and
salt over uncooked side of the shrimp. Flip the shrimp over
and cook for another 1 or 2 minutes until pink on other side.

2. Add to the skillet with shrimp, tomatoes, cooked spinach,
and remaining minced garlic. Add 1/2 teaspoon crushed red
pepper. Mix everything well, remove from heat while you
cook pasta.
3. Cook pasta according to package instructions. Drain and
rinse with cold water to prevent pasta from cooking further
and turning mushy.
4. Add pasta to the skillet with shrimp and vegetables with 1
or 2 tablespoons of butter. Add freshly squeezed lemon
juice (1/4 of small lemon). Don't add too much lemon juice.
5. Season with salt and more crushed red pepper. Warm it up
on medium heat until all ingredients are heated through.
Serve topped with grated Parmesan.

As part of our Music Therapy program expansion, Sunshine Care is need of gently used smart
phones (I-Phones preferred) and gently used headphones (all types accepted—traditional and ‘ear buds’).
To donate, drop your old smart phone or headphones into the donation box in the upstairs
administrative offices. Thank You!
Manager Spotlight ~ Roy Wilburn
Farmer Roy joined the Sunshine Care team in June of 2010. He was an Owner/Grower/
Manager of farms up and down the Baja CA Peninsula for twenty years. After his time in Mexico,
he was a Grower/ Manager of an herb operation in Oceanside, CA. There he grew 16 varieties of
kitchen herbs, both conventional and organic. On the third Saturday of every month at 10:30
am, he heads up Sunshine Care’s Free Garden Lecture Series.
Roy has supported the start-up of a number of community and elementary school gardens. He is Co-President of the Poway Valley Garden Club, Horticulture Committee Chairperson
for the Bernardo Gardeners Club, Board Member for the San Diego Horticultural Society and
Board Member of the San Diego Community Garden Network.
