Here is an excerpt from the conversation.
How would you define food?
Well, I believe, food is something that can unify the world.
There are many things that divide us but food in it’s diversity
can unify people; it is something
which makes us one. Through
food we can create a global community which is one. Take for
example the problems around
you. First we are divided by
country boundaries, then city
boundaries, then house boundaries. And even in a house we have
rooms that create precincts. But
for meals you can see that family
members from different rooms
come together and so they become one. Now, if you look at
this in a larger context, you can
easily see that food has the power to unite. It’s not my food or
your food - it’s our food.
What motivated you to become
a chef ?
My main motivation was the fact
that I wanted to do something
very different; probably something that would be categorized
as bizarre. Even in India, in my
early days, it was not acceptable
for somebody who was educated
to become a chef. It was my desire to be different from the crowd
that motivated me to become one.
How did people react to your
decision?
People always taunted me. However, my family was always very
supportive. I’m also very stub-
born and even though many
people tried to change me, I
never changed my path.
What is the biggest challenge
of being a chef ?
The biggest challenge is to prepare
food that is delicious and appealing,
but at the same time healthy too.
What is your biggest mistake
when you were new at cooking?
I’m sure I’ve made many mistakes. If I knew that one day I
would be famous and reporters,
they learn. I’m there to correct
them. But after they’ve learned,
they are not allowed to make the
same mistakes repeatedly.
What are the qualities that
make a person better at
cooking?
If you want to cook better start
appreciating the food. Look at
what is good rather than what
is not. A virtuous chef should
always be open to change and a
constant learner.

people who have positive energy
can impact many things around
them. It’s very much like temples;
the countless number of humans
and their energy make temples
powerful. It becomes the center
point for good energy. So, in the
same way, in a restaurant if there
is a lot of positive energy, the
place itself becomes better.
What is the kitchen tool you
cannot live without?
A frying pan (laughs).
I believe, food is something that can unify the
world. There are many things that divide us

down my mistakes (laughs). I’m
sure I’ve made my share of mistakes but I’m a quick learner. I
don’t remember such a huge mistake, but all I know is that I don’t
repeat a mistake. I don’t take my
mistake as a ‘mistake’, but rather
as an opportunity to learn something new. I don’t tolerate a mistake as well which puts a lot of
pressure on our team. I’m very
sensitive to that. That doesn’t
mean I’m impatient with those
who make mistakes during their
learning process. My students
are always welcome to ask questions and make mistakes when

you take into account?
First I keep in mind who it is
for. I do not do cook blindly. I
will first consider his/her taste
preference. Food to begin with,
should touch all your senses. It
should be good to look at, nice to
feel, pleasing to smell and fantastic to taste. Then I’ll think about
how I can make it healthier.
In your restaurant who would
be your ideal diner?
Someone, who appreciates good
food, understands the overall
value of goodness and has a lot
of positive energy, would be my
What is your favorite dish?
My favorite dish depends on
where I am. My problem is
that all dishes are my type.
But, I think it is natural for
anyone to like the dishes that
you’ve grown up with the most
as they become your comfort
food. I’d say mine is the Punjabi home-style dish; the Punjabi Kadi.
You are widely regarded as one
of the greatest chefs. Would
you say you are the king of the
kitchen at home?
At home I only cook sometimes;
not always. My wife is a great
cook and we also have a lady
who prepares meals.
You said that both your
mother and wife are great
cooks. But who would you say
is the better one?
Mother (pause)…and motherin-law (laughs).
What dish do you like to cook
the most?
Hmm...difficult question. I hate
cooking a dish twice. I’d say it’s
based on the taste preference of
the person I cook for.
What is your favorite Nepali
food?
I haven’t tasted all the dishes yet.
But from whatever, I’ve had, I
like the chatamari. It’s a complete
food, and that can give pizzas a
run for their money. It’s unique
and seems healthy as well.
So far, where have you had the
best meal in Nepal?
In terms of quality, I’d say Fire
and Ice. I still have to go to other restaurants, but till now it’s
Fire and Ice.
How can we promote our
Nepali food?
It starts with taking pride in
your food. Once the local people believe that the local food
is good, it promotes itself.
As I’m associated with Nepal
through Yellow Chili I believe
it is even my responsibility to
promote it and I do have the
power to promote it. I’ll do
my bit in promoting Nepali
food. !

Kunda Dixit launches
Peace Museum with
‘FRAMES
OF WAR’

E
minent Nepal publisher
Kunda Dixit is bringing
sustainable peace into the
forefront of public consciousness in Nepal. His newest
effort is building a peace museum
– with the innovative ‘Frames
of War’ photo exhibit as its
foundation. For this initial project, Dixit has brought together
a selection of powerful photos
from his trilogy of books on the
‘People’s War’ and its aftermath,
and the work of accomplished
Sri Lankan photojournalist Gemunu Amarasinghe. The exhibit
is displayed at Madan Puraskar
Pustakalaya, in Patan Dhoka
through January 11.
The ‘Frames of War’ exhibit
is placed in a simple, open room,
in the future home of the ‘Shanti
Sangralaya’ peace museum. The
photos are at once obviously
part of the same exhibit with
similar themes, and stand in
stark contrast with each other.
Photos of and after Nepal’s
‘People’s War’ of 1996-2006
war are mounted on white
backgrounds on the walls, while
Amarasinghe’s photos of Sri
Lanka’s 25-year armed struggle,
mounted on black backgrounds,
are suspended from the ceiling
in the middle. This arrangement
provides metaphors for the
conflicts themselves: the conflicts
are separate and exist in the
same space and time in South
Asia. The images are sometimes
similar, though the contexts
contrast. The violence of war has
represent recent memories and
on-going realities that must be
attended to. The photos focus
on the suffering of the war and
the need for healing rather on
traditional “war reporting”. As
Gemunu explains, “We usually
hear stories from the people
who win it, but these photos tell
the stories of the victims who
are left behind.”
The stories told are deeply
painful and personal. In Nepal,
dressed in camouflage fatigues
weeps over his father’s grave;
Tamil school children pay
somber homage at the coffin of
a suicide bomber.
Although the photos are
sometimes graphic, with dead,
bloody and/or mutilated bodies,
they are usually balanced by the
presence of a survivor: a grieving
family member or innocent
witness. This juxtaposition
seems to prevent overwhelm or

Nepal, and artificially suspended
(through the “victory” of the
government over the Tamil
Tigers) in Sri Lanka.
Both sections of
the
exhibit serve as “post-conflict
retrospectives” – yet they

incidents in the same week. In
Sri Lanka, a very young boy
desensitization to the violence
while building empathy with
the many thousands of people
whose lives have been changed
forever by it. The psychological
impact of violence is also shown
through iconic images such as
two young boys with bewildered
expressions framed by the
jagged hole in a wall, apparently
created by a bomb blast. This
image serves as the poster for
the exhibit.
An important aspect of the
Nepal section is the return to
individuals in the first round of
photos to continue their stories
over time. So when we see the
grim-looking young woman
holding the rifle close to her
sari-wrapped face and learn that
she was a Maoist, we look at the
photo below and see her again
a few years later, now beaming
happily as she is reunited with
her brother, a former soldier in
the Royal Nepal Army (Kunda
points out that the war in Nepal
was not only a civil war, but
also a “sibling war”). When we
see a courageous young civilian
standing over a policeman to
protect him from an angry mob
wielding bricks, we learn in
the text below that this civilian
survived and considered his
actions very ordinary, that
“anyone in my place would
have done the same.” As Kunda

observed, each of these stories
are so compelling that they could
be developed into feature films.
The Nepal section of the
exhibit, called ‘People After
War’, has already had an
enormous impact, having been
shown in 31 locations in Nepal
and viewed by 350,000 people.
It has provided a powerful
experience of catharsis and
healing. Kunda reflected on
the many examples of positive
reactions, “I remember one
college student told us, ‘I used
to want revenge against the
people who killed my father, but
I saw this photo and I realized
they are orphans like me – and
my revenge was gone.’”
The difference between the
two civil wars shows up in the
photos. The Sri Lanka photos
are figuratively as well as
literally darker, showing more
violence, more ethnic hatred,
and no reconciliation. As Kunda
explained, “Ethnic wars are much
more brutal (than the class war in
Nepal). Entire villages were wiped
out in revenge killings. Truck
bombs would kill 100 people at
a go. The civilian casualties were
much more severe. As a result, the
Sri Lankan healing process will
take much longer.”

together on this project

recognizing that they had a
common approach to peace
journalism, and that Sri Lankans
and Nepalis have much to learn
from each other. In fact, both
men have worked in the other’s
countries. Kunda worked as a
reporter in Sri Lanka in 198788, while Gemunu has worked
as a photojournalist for the
Associated Press in Nepal
on and off since April 2009.
Both are seasoned reporters
on the many conflicts in South
Asia and beyond. In defining

the raison d’etre for the joint
photo exhibit, Kunda says,
“Governments and military
learned from the Vietnam
War that you have to control
the image. War is fought at a
propaganda level. Independent
photojournalists
challenge
this; we show the human cost
of war.” Gemunu adds, “This
exchange can be a role model –
we are photographers who want
peace, who want democracy
and a civil society.” Both men
are motivated to help prevent a
return to war in their respective
countries. Kunda says, “We have
to treat the war as if it hasn’t
ended – to go to the families
who have lost relatives, to find
out what is happening with
reconstruction. It’s important
not to forget – right now people
remember they’ve lost a friend, a
family member, they understand
they don’t want war. But already
people threaten to go back.”
Gemunu adds, “People need to
understand that even if one side
vanquished the other, the legacy
of war is still violence.”
Kunda also sees Sri Lanka
as a cautionary tale for Nepal.
“Sri Lanka has only two ethnic
groups: we have 103. If we have
an ethnic war, it will be multiethnic, not just hill-plain but
hill-hill. Having the Sri Lanka
and Nepal photos in the same
room, we can see a possible
future. And we can make a
different choice.”
For Kunda Dixit, the
‘Frames of War’ exhibit is
the nucleus of an expanding
museum of peace that will
help all people recognize
that “the great pain societies
have gone through in war is
unnecessary”. The museum
will not only provide important
historical perspectives on wars
(the next photo exhibit will
be on the Maoist conflict in
India), but will also feature
great non-violent struggles
for social change, such as
Gandhi’s
movement
for
Indian
independence,
the
South African anti-apartheid
movement, and Ang San Su
Kyi’s democracy movement for
Burma/Myanmar. Look for
the opening of this groundbreaking museum in April.

What aspects of the district have been portrayed through the event?
mugu is ranked 75th in the development index of nepal. through this event
we want to share, interact with people and portray the present scenario of
mugu to a wider audience. In the program different aspects of mugu will be
brought out. the documentary being screened focuses on the sorry state of
development in mugu and the changing world. the play “suinea karnali-ka”
(dreams of karnali) portrays the inspiration and dreams of the locals to
see development in their region and people. whereas, the photo exhibition“places and faces of nepal”- shows different aspects of natural beauty and
the way of life (especially of the children) from the district.
On the basis of your experience and involvement with this project,
how do you think the Tourism Year will turn out for Mugu?
we are not sure how mugu will exactly benefit from the tourism year.
we sincerely hope that the tourism year will bring in opportunities for
mugu and its people. easy accommodations in mugu and proper mode of
transportation to get there (which aren’t available yet), would definitely
encourage tourism in mugu. however, the tourism year 2011 is a distant
reality for mugu as most of the people there do not know what the tourism

inaugurated the program. the chief
guest wished the artists in nepali
saying,“tapai harru ko bhaveishya
ramro hoss ra uttaruttor pragati hoss.”
“It used to be a store room before,
but sarita dangol, the coordinator
of the gallery gave us the idea of
turning it into an art gallery. we
are trying our best to support our
culture and involve the youth in
doing so.” said the owner of newa

science both assume that the soul never dies. directed by dev kumar
shah and produced by nirmal ratna shakya, this one-of-a-kind movie is
about a group of friends who are on a quest. the movie premier was held
on december 30 where the crew members of the movie were dressed in black and
white to match the movie name “ek din ek raat”.the premier was attended by singers,
reporters, artists, actors, directors and producers from the nepali film fraternity.
the concepts of the paintings ranged
from attraction to stages of life to
silent moments with nature and
culture. “I am very impressed by the
quality of the pictures and the way
they were able to capture minute
details. all the newari people should
be proud of themselves and I think
we should take inspiration from
nepali culture.” said ms. elisabeth
gislesen, as she was departing from

the story starts with interrogations on a road accident. majority believe it’s due to
some mismanaged traffic problem but utsav(vinay shrestha), a news reporter, is sure
that it’s due to some unseen power that is leading to these accidents. his version
doesn’t satisfy any of his colleagues. he is not believed by anyone, not even his boss
who challenges him to bring the proof within 24 hours. so he embarks on a mission to
prove his point with his team of friends: Ichchha, Jen, rushan, nil, sabhya and pralaya.

How was your experience in ‘Ek Din Ek Raat’ different from other
movies that you have done?
well, ‘Ek Din Ek Raat’ is not a love story nor is it a triangle love story. ‘Ek
Din Ek Raat’ is a mixture of a little bit of everything. a little bit of horror, a
little bit of thriller and a little bit of love. so, it was a wonderful experience
doing this movie.
Do you think the movie was successful in expressing the director’s
ideas to the viewer?
well, to some extent it has been successful in expressing the director’s
ideas and to some extent it has not. It’s not been successful as for the
feedbacks I got after the movie. the whole plot is confusing is what some of
the viewers had to say. well that might be because the nepali viewers are
not habituated to such a plot.
What kinds of comments did you get about the movie after the
premier?
I got mixed reviews about the movie. there were comments on scripts;
some found the story line to be a bit difficult to understand. they praised the
producer for being so gutsy for picking up the theme as it is different from
other nepali movies. It’s more of a creative fiction work where it has thriller
and horror which is a new kind of genre in the industry. and of course there

being involved in the conflict. Jay,

three such children who left home
at the age of 12 to join the maoists.

Radisson Hotel Kathmandu in cooperation with Digital Party Event had
organized and managed this New Year’s Eve Event theme party “Club 11”
on December 31. Radisson had been hosting New Year events since its
establishment which have always been tremendous successes. This time,
artistes from Thailand performed live and exclusive during the eve at Nepa
Dhuku Banquet Hall 7 pm onwards.
DJ Remi – the official DJ from Fashion TV Bangkok and DJ Baby BombResident DJ, Xperia Club Bangkok were burning the floor with their soul
stirring beats. They were accompanied by DJ Sishir, Star DJ from Kathmandu.
The program was purely focused on a club theme with dancing sessions
throughout. The entire Banquet Hall was decorated in “Black and White” to
match the theme. The additional appeal for the event were dancers August,
Arm, Pony and Vannessa, from a professional dance troupe based in Thailand.

As it happens, I’m writing this on a cold, frost-bitten day –
clear, bright and sunny, but icy underfoot and lacy around
the edges of the windows. On top of that, I’m brewing up
a minor cold and have that strange shivery, sneezy feeling. Could
there be anything better right now than a warming hot rum drink?
“Hot rum punch is basically any hot drink which incorporates
rum,” says Rupesh Khadka, the bartender of Juneli Bar, Hotel de
l’Annapurna. He explains that there are many variations of the hot
rum drink. For example there could be a tea rum punch where you
make tea by adding rum and honey or simply a hot lemon drink with
rum. “If we consider the taste preference of the Nepali people, cinnamon, cardamom and clover could be added in boiling water with
rum,” adds Khadka.
Why did I consider this to be a remedy for my cold? Well according to natural-holistichealth.com the hot steam from the boiled water help loosen the mucus in your nose and throat and enable you to
breathe more freely. Usually the drink consists of lemon and honey;
the lemon dislodges the mucus from your throat and adds muchneeded vitamin C. The honey not only coats your throat to prevent

mucus, as well as adding nutritional benefits. The alcohol helps to
“sweat” out whatever fever you may have and helps you sleep better.

chowmein in the few
popular restaurants
in town was equivalent to having a gourmet dish. The craze
for it just went on and on and
soon my father started making
it at home. Guess what - the
first condiment to arrive in our
kitchen was soya sauce. It looked
pitch dark, tasted bitter-salty and
smelt pungent. When it got sprinkled on the chowmein or fried rice
it provided just the right appetite
for the eye and stomach. Today,
imagine our nation sustaining on
fried rice, chowmein, hot and sour
soup and more - all adapted Nepali
versions of the original Chinese.
And all these dishes are incomplete without a dash of soya. The
king of condiments - soya - has
not only ruled our nation but the
whole of Asia along with Middle
East and Europe, with its magic.
Soya makes dry food juicy and
simply tantalizes your buds.
There may be a million references as to how soya sauce
came to the scene but only a
few does true justification as to
its origins. One thing is for sure
- this condiment holds more
than 2,500 years of history. The
simple procedure of fermenting
a mixture of mashed soybeans,
salts and enzymes initiates the
journey of soya sauce. When
there were no freezing technologies available, the simplest way
to preserve food was to sun-dry
it or to treat it with salt. It is
practiced today as well (Parma

What is so different in Jeanswest in comparison to
other branded Jeans?
Jeanswest is an australian brand established in1972. It has
become a market leader in its segment in a very short span
of time. one of the main reasons behind that is Jeanswest
products are made of the best of fabrics and it ensures a good
fit. moreover, Jeanswest has a full range of casual wear having
jackets, sweaters, tee shirts, pants and accessories apart from
jeans. even the jeans comes in a variety of designs like straight,
slim, boot cut, stretch skinny, stretch slim, body fit, low waist, etc.
so, there is something for everybody.
There are a lot of cheap denim products spoiling the
market for good denim products these days. What is
your take on this?
nepal is flooded with a lot of fake readymade products these
days. everywhere we go we only find fake guccis, cks, armanis
and d&gs, and such other fakes of international brands. I think
a brand like Jeanswest is a good solution for people who are
looking for branded stuff at a very reasonable price.
What is the price difference of your product in
comparison to other competing products in the
market?
though Jeanswest is one of the most premium casual clothing
brands till date in nepal, our prices are very reasonable
compared to any other brands. pricing has always been a major
factor for Jeanswest products. company controlled prices
makes it very affordable for the nepali market as well.

getting drunk 5 hours before midnight, waking up the next morning mortified
that I slept through the all important midnight hour, in a flat with 5 people I
barely knew; learning to say happy new year in 8 different languages; a really
crap time in a hotel with high-school kids throwing up all over the room; and
yes, a memory that involves a glass of champagne and a perfect sunrise. these
are just a few of my memories of new year’s eve celebrations over the years.
many have been wonderful, some (very very) terrible but the one thing that’s
common to all of them is this: ludicrously high expectations. there are some
things that we imagine (or wish) to be so good that nothing real can possibly
match it: the ideal job, the dream home, the ever-elusive soulmate, of course,
birthdays,valentine’s day and yes, new year’s eve.
new year’s eve is probably the mother of all over-hyped days. so much
expectation is built around it (fantastic or special or wild, and one can add on
adjectives endlessly) that often we land up not enjoying them as much as any
average day in the year.

days, try something called lowering your expectations- it’s amazing how many
more ‘awesome’ days that alone will allow you to have. It seems counterintuitive since everyone these days is telling us to raise our expectations- and
rightly so, but in just this one area perhaps it’s ok to lower them just a little
bit...just a few days a year...for the days which you have trouble enjoying
because you want everything to be so darn perfect.
with a full year of birthdays and ‘special days’ coming up, let’s just keep
in mind that these days are meant for fun and some amount of ridiculous
indulgence-so don’t go screwing it for yourself by trying to make it all perfect.
the aim is to develop an ability to look at the whole event with a degree of
humour and cynicism-to recognise the hype and still be able to indulge in it
for fun.
