When it comes to pasta sauces, we have standards — high standards: totally fresh ingredients with no preservatives or added sugars, 100% imported Italian plum tomatoes, imported olive oil, real cream and freshly chopped herbs and vegetables — never dried. We have a thing about “the best.” And how we make it? Even better. Cooked in pan-shaped sauté kettles for small-batch quality, our authentic sauces are crafted according to traditional recipes developed by our Culinary Team and our hand-picked producer. Then, the sauces are made in a state of the art, LEED certified, green facility with results that replicate honest-to-goodness Italian sauces from a host of regions, like these: Tomato Vodka Beginning as a soffritto of fresh chopped garlic, carrots, celery and onions, this sauce is transformed with 100% imported Italian plum tomatoes, the finest Romano and Parmesan cheeses, real cream and vodka for an exceptionally flavorful, rich and indulgent sauce. Its regional origin is questionable, but not its universal popularity. Tomato Basil Made with fresh, chopped basil, fine imported Italian olive oil and 100% Italian-grown plum tomatoes, our basil sauce is delicately prepared to offer the light texture, balanced taste and unmatched quality typical of traditional southern Italian sauces. Arrabbiata A spicy Roman sauce made with 100% Italian plum tomatoes and imported olive oil, with fresh chopped basil, garlic, onions and crushed red pepper, this variety has a little kick. Marinara A classic made with a soffritto of garlic, onion and olive oil, and 100% imported Italian plum tomatoes, this sauce is slowly simmered to create the delicate texture of a high-quality homemade sauce finished with fresh, chopped basil and thyme — super versatile and always delightful. A staple all year round, our sauces are particularly handy during Lenten season when meatless Fridays lend themselves to tasty pasta dishes. We also like them ladled over our freshly prepared turkey meatballs, on our bruschetta topped and broiled with fresh-pulled Mozzarella or in the original recipes on pages 4-6 from our Market District Recipe Development Team. Drain potatoes and cool for 10 minutes before handling ; peel and discard skins. Press potatoes through a potato ricer into a bowl. Fold in Mascarpone and transfer to a lightly floured surface. 3.Create a well in the center of the potato mixture, and sprinkle 1 cup flour on top. Add remaining ingredients to center of well and use a fork to incorporate until crumbly. Shape into a ball and knead for about 4 minutes, adding remaining flour, until smooth. 4.Cut dough into 4 equal pieces and roll each into a rope, 3/4-inch in diameter. Cut each rope into inch-long pieces, and place onto a lightly floured surface. 5.To shape gnocchi, rest bottom edge of board on work surface, and tilt at a 45-degree angle. Lightly press each piece against the board with your thumb, rolling it down the board away from you to create ridges on the top of the gnocchi. Return shaped gnocchi to floured surface and repeat with remaining pieces.* 6.Fill a medium pot with water and bring to a boil. Cook gnocchi, in two batches, until they rise to the top, about 2 minutes. Using a slotted spoon, remove gnocchi to a bowl and toss with sauce. Sauce, Charcuterie Style Locally made in Pittsburgh, PA, Parma pancetta tessa is an excellent, unexpected and rich addition to any of our sauces. Made with Berkshire pork bellies (slab bacon) that are cured with sea salt and spices, it is aged up to 30 days, which gives it a mild, delicate flavor that adds surprising depth — savory and sublime. Sizzle on medium heat for a few minutes and when crispy, mix it in with heated sauce. It’s a well-kept secret and we’re not sure why, because our turkey meatballs are outstanding — ask anyone. Well, not anyone, because it’s all hush-hush. Rich and wholesome with a unique, nutty taste, these classic, old-fashioned Irish oats are a healthy way to celebrate Irish cuisine — and you can start first thing in the morning! Grown in the temperate, humid climate of Ireland to promote the slow ripening of the grain, these are perhaps the finest oats in the world. If you want a chewy bowl of oats with a nutty flavor, go with the steel-cut. But, if you’re making a bowl of cinnamon-raisin oatmeal, stick with rolled or even quick oats. BREAKFAST IS READY! Short-Cuts to Steel-Cuts If you don’t want to spend 30-45 minutes watching over your steel-cut oats (they boil over pretty easy, truth be told), then consider soaking them the night before. According to McCann’s, you can boil four cups of water in a pot, add one cup of oatmeal. Simmer 1 minute. Cover pot and store overnight in refrigerator. The next morning cook the oatmeal on low for 9-12 minutes; stirring occasionally. The extra oats will keep up to five days sealed in the refrigerator for easy microwave re-heating! 10. Not so terribly long ago — and all too often — the official beer of Saint Patrick’s Day was a light lager liberally dosed with green food coloring. Fortunately for us, we live in hoppier, more enlightened days, in which traditional Irish brewing styles — and their American craft brew counterparts — rank among our most cherished beverages for celebrating Saint Patty’s. So, save the green for the wearing on March 17 and pull a pint of one of these popular Irish (or Irishinspired) brews instead! Guinness® Is it even possible to talk about Irish beer without bringing up Guinness? Enormously popular around the world, this creamy, chocolaty Irish dry stout is a wonderful introduction to dark beers. Deep-roasted barley malt gives Guinness its signature dark color, while water from the Wicklow Mountains lends nuance to its rich palette of flavors. Intense, yet surprisingly low in alcohol, this is a quintessential Saint Patrick’s Day beer that is just as comfortable around robust meats and cheeses as it is with a plate of oysters on the half shell. Murphy’s Irish Stout The flavor of this stout is similar to Guinness but with a bit more chocolate on the finish and some bitter peat, too. Brewed in County Cork since the 1850s, Murphy’s relatively low ABV also makes it a nice session beer that complements a wedge of Irish Cheddar, lamb stew or corned beef and cabbage. Harp Part of the Guinness empire, this dry, easy-drinking golden lager doesn’t quite fit the popular profile of Irish beers, but it’s refreshing any time of the year — and at 5% ABV, definitely sessionable. Try it with shellfish. Conway’s Irish Ale Sporting a picture of the owner’s grandfather (an Irish immigrant and Cleveland police officer), this fullflavored, malty red ale from the Great Lakes Brewing Company is great for cooler, early spring evenings. Its 6.5% ABV makes it a little too potent for a session beer, but don’t hesitate to pour this with braised short ribs or oxtails, or a thick-cut steak.
