development company, Sanguine Hospitality.

passion for food, led to the roll-out of his
New York Italian restaurants in 2012.
Marco is now offering his Brand to selected
hospitality partners in this new venture. The
Brand is suitable for both new build restaurants
and the conversion of an existing hotel

and is always respectful to its surroundings,
history and the style of the hotel or building.

This is illustrated through our existing New York Italian
restaurants. The menu and pricing is varied to create an
affordable, casual dining experience that is family-friendly
and accessible to all.
ELEGANTE
A premium brand derived to create more restaurant theatre
and increase spend. This model is ideal for luxury hotels and
affluent locations. The design and fit-out will be more upscale.
Both the food and drink menus will have a greater selection of
high spend items including a diverse wine list.

Simon Matthews-Williams
Simon founded Sanguine Hospitality in 2006 to develop Hotels,
Spas and Restaurants. It develops hotels under franchise
agreements with Hilton Worldwide, InterContinental Hotels Group
(IHG) and Wyndham. The group began working with Marco
Pierre White in 2008 and has since developed restaurants under
his Steakhouse Bar & Grill and New York Italian brands, with a
number in development / planning.

Nick Taplin
Dubbed the godfather of modern cooking, Marco Pierre White
is a renowned chef, restaurateur and TV personality. He has
led the UK restaurant scene for 25 years and helped kick-start
the careers of Gordon Ramsey and Heston Blumenthal, both of
whom trained under him.
As the Chairman and majority shareholder of this exciting
venture, Nick has 25 years’ experience in the hospitality industry.
He has worked closely with Marco in recent years to develop the
Steakhouse Bar & Grill and New York Italian restaurant concepts.
He hung up his apron in 1999 and retired from cooking. Today,
he is dedicated to rolling-out his restaurant concepts to share
his love and passion for food. His restaurants focus on delivering
good, quality food at affordable prices.
Marco is an investor and share holder.
Iain Donald
Iain has 40 years’ experience in the restaurant industry. His
background includes starting and growing the Piccolino and
Restaurant Bar & Grill concepts, which he helped expand to 32
restaurants nationwide.
Before that, he was operations director at Est Est Est and helped
guide its growth from 8 Italian restaurants to 25 before the chain
was sold in 2007.
His experience expands beyond restaurants to branded
hotels, luxury health club and spas and bars. Today, in his role
as managing director of hotel and restaurant development
company, Sanguine Hospitality, Nick is responsible for driving
the group’s expansion strategy and overseeing its operational
activities across the portfolio. Nick is an investor in the new
Marco’s New York Italian.
Caroline Wilce
Caroline is finance director at Sanguine Hospitality and is a key
shareholder in Marco’s New York Italian. Her background spans
22 years in the hospitality and finance sector, having previously
spent a number of years at Forte Hotels and Macdonald Hotels.
Caroline sits on a number of external investment boards as a
non-exec director and manages assets of more than £120m.
