CABERNET SAUVIGNON & BLENDS
Cabernet Sauvignon is the acknowledged "king" of red grapes in Napa Valley and some local vines date from the
19th century, although most vineyards have been replanted in the last 20 years. Cabernet Sauvignon's character
can emerge as black currants, cassis, black olives, green olives, herbs, bell peppers or combinations of these with mint,
leather, vanilla and cigar box aromas being just a few of the complexities associated with this wonderful grape and
the wine that it becomes. These wines age beautifully. When young, they are best matched to robust red meat
dishes; older Cabernets are superb accompaniments to roasts, chops, steaks and many cheeses.
Because Cabernet Sauvignon and its blends are the wines most often sought out by our customers, we have grouped
these wines with descriptions of the distinct appellations from which they come.
The American Viticultural Areas- The Napa Valley is itself an appellation, comprising some 226,000 acres. The
complexities of soil, topography and climate can produce vastly different wines within a relatively small area. Some
of the Valley's best wines are blends of fruit from a range of locations. Wines that draw from more than one
appellation are labeled with the Napa Valley appellation. Other Cabernets Sauvignons are derived from fruit
drawn from a specific appellation and take their identity from that appellation. Within the Napa Valley there are 16
subappellations, or AVAs including Atlas Peak, Calistoga, Chiles Valley District, Coombsville, Diamond Mountain
District, Howell Mountain, Los Carneros, Mt. Veeder, Oak Knoll District, Oakville, Rutherford, St. Helena, Spring
Mountain District, Stags Leap District, Yountville and Wild Horse Valley. Our wine director has secured some of the
finest wines from the subappellations to complement the 'classic American steak house cuisine' of Cole's Chop House.

CABERNET SAUVIGNON & BLENDS
NAPA VALLEY
"Land of Plenty" is what Napa meant to the region's original inhabitants, the Wappo Indians. This valley, snug
between the Mayacamas and Vaca mountains claims some of the most expensive agricultural land in the world. The
main ecological factor of the region is the cool wind and fog that is pulled up from the San Pablo Bay during the
afternoon, cooling the vines. Temperature fluctuations from north to south can vary as much as 15 degrees, even
though the valley is only 30 miles long and five miles wide. Due to these climatic differences the Napa Valley
benefits from many unique microclimates, yielding grapes with distinct flavors and characteristics that are blended to
create Napa Valley appellation wines.

ATLAS PEAK
The climate of this appellation is unique, partly because its elevation frees it from fog that can blanket the valley
below. Also since it faces west, the region benefits from extended, direct afternoon sunlight. The soils are volcanic
and porous, contributing greatly to radiant cooling. The temperature can drop as much as 30 degrees in the
afternoon allowing grapes to mature slowly, resulting in well balanced wines with remarkable complexity while still
maintaining good acidity. Located on the western slope of the Vaca Mountains, northeast of the City of Napa, this
AVA has over 1,500 acres of vines and was established in February of 1992.

HOWELL MOUNTAIN
East of St. Helena and with an elevation of at least 1,400 feet the Howell Mountain Appellation was approved in
January of 1984. Daytime temperatures during the growing season can be as much as ten degrees cooler than those
of the valley, protecting vines from the heat stress that typically weakens activity. The warmer night temperatures,
on the other hand, allow vines on the mountain to reach a temperature of 55 degrees, at which photosynthesis can
occur almost as soon as the sun is up, especially because the fog that creeps up the valley from San Francisco Bay
each night leaves the mountain's summit untouched. Well drained, nutrient-poor soils, and rugged hillside conditions
yield wines with great intensity.

SPRING MOUNTAIN DISTRICT
The Spring Mountain District is distinguished as the coolest and wettest region on some of the steepest and oldest soils
in the Napa Valley. The appellation gets its name from the many springs that come to the surface over the eastern
slopes of this part of the Mayacamas mountain range. While there is variation from location to location, wines from
the Spring Mountain appellation can be characterized by their deep color, soft tannins, lower acidity, higher pH and
rich flavors in the finish. This appellation was established June 1993 and represents 8,600 acres.

MOUNT VEEDER
At heart of the appellation stands the 2,677 foot-high volcanic peak of Mount Veeder. Over 90% of the
appellation remains wild, wooded with oak, madrone, laurel, fir and redwood. Several special climatic conditions
provide vines with a long, cool, even ripening period. The elevation places Mount Veeder above the morning fog
bank and the mountain slopes protect vineyards from the afternoon heat, and evening brings on a temperature
inversion-making Mount Veeder nights warmer than those on the valley floor and limiting spring frost. The wines tend
to be big, intense, briary, brambly and chewy with distinctive wild berry fruit flavors and magnificent spice.
Approximately 1,000 acres are under vine.

DIAMOND MOUNTAIN
Covering 5,000 rocky acres in the Mayacamas Range on the northeast side of the Napa Valley the region has just
over 500 acres under vine. Austere soils -- a patchwork of volcanic rock, volcanic ash, gravelly clay and sandy
quartz, vineyards as high as 2,300 feet and extended sun exposure a result of the steeply terraced vineyards. All
factor in to the quality of grapes grown in the Diamond Mountain Appellation. The Cabernets can be described as
rich and powerful with chewy textures and intense black fruit nuances; black cherry, blackberry, cassis and currant
flavors with aromatic spices -- chocolate, licorice, coffee and cedar.

RUTHERFORD
The Rutherford Viticultural Area is approximately six square miles and sits in the widest part of the Napa Valley.
Because of this unique location the vines spend more time in the sun than any other appelation in the Napa Valley.
However, warm summer days give way to cool evenings. This area experiences an average 12 degree drop in
temperature at sunset throughout the growing season. Great amount of sun exposure and the alluvial soils of the
area produce wines which are ripe and full flavored. This appellation covers some 6,650 acres and was established
August of 1993.

STAGS LEAP DISTRICT
A jagged outcropping of sheer rock and the legend of a nimble buck inspired the Stags Leap name over a century
ago. In February 1989 this became one of the first viticultural areas in the United States to be approved based on
the distinctiveness of its soils. The district is located in the eastern portion of the Napa Valley. Barely a mile wide and
two miles long, the district comprises roughly 2,700 acres, of which half are planted to vineyards. The wines of the
Stags Leap are known for their richness and supple tannins. The rock facades of the palisades reflect the heat of the
sun onto the vineyards below, causing temperatures to rise more quickly than in neighboring vineyards. As the
afternoon draws to a close, the hills funnel the cool, marine air flowing north from the San Pablo Bay through the
Stags Leap District. The combination of the warm days and cool nights allows the grapes to achieve an excellent
balance of acid and sugar.

OAKVILLE
An appellation that totals 5,700 acres it is virtually a flat field squeezed between the Mayacamas Mountains to the
west and the Vaca Range on the east. The gravelly, well drained soils are perfect for the Bordeaux varieties of
grapes planted here. The wines from the Oakville Appellation are characteristically rich and dense, with firm tannins
and often with notes of mint and herbs. The cooling wind and fog that rolls in during the afternoon greatly influences
the fine balance achieved in these wines. The appellation was established in August of 1993.

ST. HELENA
Covering just over 9,000 acres this appellation sits between the Mayacamas and Vaca Mountains, where the Valley
floor narrows north of Rutherford. This AVA is in an up-valley area where cool Pacific breezes from the north reach

YOUNTVILLE
Yountville was approved as the 11th sub appellation of the Napa Valley in 1998 and is comprised of 8,620 acres, of
which roughly 2,700 are planted to vines. The Yountville appellation boasts a rich history -- the first vineyards in the
Napa Valley were planted here by George Yount in the mid-1800s. Yountville offers a unique, patchwork
combination of soils and climates described by many of it's current growers as a combination of all that is possible in
the Napa Valley. Volcanic soils on the eastern flank are similar to the neighboring Stags Leap District but also
features centuries old coastal deposits, and both sedimentary and alluvial soils exist to the west, interspersed with
sandy and gravelly loam, as well as a little clay.
