La Paulee, is a Burgundian event in which wine lovers and producers gather together to celebrate the region's wines. Each city in the world, in which Burgundy has an important market host one. In the event, each participant brought a bottle of their favorite village Burgundy. It was a very instructive exercise because it allowed us to revisit and learn about the different wines that two grapes can make: Pinot Noir for red and Chardonnay for wine. It is for their diversity that the climats of Burgundy were recently classified as a Unesco world heritage site. These are vineyard parcels on the slopes of the Côte de Nuits and the Côte de Beaune south of the city of Dijon. Each is different from one another due to specific natural conditions (geology and exposure) as well as vine types and have been shaped by human cultivation. This means, basically that you a are drinking a different wine from the territory. Manager for the Burgundy wines association www.mtltimes.ca 18 WEDNESDAY May 11, 2016 At the Paulée of Montreal, there was also a mini seminar that discussed a bit of the history, style and savoir faire of the Burgundian winemakers. It was a very convivial night. I had a chance to revisit some old apellations and discovered a few more. I hope to assist to the next editions. The region of Burgundy is located in the central part of eastern France and starts from the town of Auxerre at the northern end to the city of Lyon in the south. The region has been classified down into sub-regions. It is often said that Burgundy starts at the region of Chablis in its the northern frontiers. Chablis can make some very crisp wines but at the same time built for long term aging. WEDNESDAY WINE . Even further south is the Maconnais which is known for easy to drink wines and good prices. At the very southern end of Burgundy is Beaujolais. Beaujolais is technically part of Burgundy but the wines are very different and in fact are based on the Gamay grape. Beaujolais deserves an entire article on its own and will not be discussed here. The production of wine begun in Burgundy when the Roman invaded the region. Later, during the sixth century one of the local kings gave his vineyards to the church. At the time of the French Revolution most of the best Burgundy wines where produced by monasteries. During the Middle Ages, Burgundy was the seat of some of the most important Western churches and monasteries, among them Cluny, Citeaux, and Vézelay. Monks and monasteries of the Roman Catholic Church have had an important influence on the history of Burgundy wine. The merchant negociants followed the monks, taking Burgundy wines to connoisseurs all over the world. Financial weight allowed these big wine houses to create large-scale vinification and bottling facilities. The making and commerce of Burgundy wine remained firmly in the hands of the negociants until after the Second World War. After the war, the wine trade came back to the producer, which in turned developed their own network. To this day, the situation is like this. Do you have any favorites Burgundies? Please drop me a word. See you next week. Romanée Conti is one of Burgundy most famous vineyards Further south is the Côte d'Or which means “golden slope”. It is a thin strip of vineyards located in a series of sloping hillsides running more or less north-south. Most of the great vineyards in Burgundy are in this spot. The Côte d’Or is divided into two parts. The northern half is called the Cotes de Nuits which starts just south of the city of Dijon and runs a few kilometers past the village of Nuits-SaintGeorges. Some of the most incredible wines in the world are made here. The best red wines of Burgundy are made in the Cotes de Nuits, in fact, 90% of the grapes grown here are Pinot Noir. Twenty-four of the twenty-five red Grand Cru sites are located in this spot. The southern half of the Cotes d’Or is called the Cotes du Beaune. This is home to the best white wines (with the exception of Chablis).
