Downtown Holiday Cookoff
The weather in Golden, Colorado, in December can be brutally cold,
snowy, and generally freezing or it can be beautiful. Usually, for the Downtown
Holiday Cookoff it is somewhere in between. However, on this particular day
(and the whole weekend), the weather was on the snowy and generally freezing
side. But as they say - the cookoff must go on.
The Colorado Chili Pod showed what it is made of; no indoor cookoffs
for these folks. Bundle up, light those fires, and make the chili hotter. Thus
fortified for the day, the contestants went about their business competing in Red
and Green Chili and of course Showmanship. The Pod was determined that this
cookoff would be a success.
We had cooks travel down over treacherous road conditions from
Nebraska and Wyoming for this one. We had cooks picking up cooks due to
vehicle problems, as well as cooks changing tires in the snow. It’s easy to cook

when the weather is nice or even dealing with a little rain or wind. Try keeping
your fires lit when your propane bottles freeze.
The kids were a little disappointed that the Holiday Parade was cancelled.
No visit from St. Nick due to hazardous conditions on Main Street, but we kept
them warm with hot chocolate and apple cider.
In the end, John Montgomery came away with the win in red, Karen
Hendricks in green, and Steve Lee and his Warriors of the Crimson Pepper took
Showmanship.

Spread the Red
As I put aside the December Terlingua Trails
and think about January, two things come to mind. With
December, we are ending a great 40th year for CASI.
With January, we draw the blueprints for 41. After
TICC, the Board of Directors enters somewhat of a
quiet period. With TICC occurring such a short time
after the Great Peppers’ Meeting, there is a large
amount of energy expended in a short calendar. At this
time of year, email traffic slows and our batteries are
recharging. I cannot thank the Directors enough for the thousands of hours it takes
to do your CASI jobs and put on the championship.
By the January Board Meeting, however, everyone is refreshed, recharged,
and ready to tackle the new season. Once again I would like to see us resolve for
the New Year to grow membership and introduce more people to chili. “Spread the
Red” this year. Our job is not just the competition, but the proliferation of Chili
Appreciation. We must hawk our wares to the uninitiated.
The January Board of Directors’ Meeting is the most important of the year.
We will review TICC while it is still fresh on everyone’s mind and adjust and assign
for this year. Once again, we will have a workshop for everyone to come and offer
their input. We will look carefully at the financial statements and break down the
details. It is important that we are transparent in our actions and that each Director
have a comprehensive understanding of the mechanics. Planning begins early to
allow adequate time to implement our yearly programs. The workshop will be
January 27 and the formal Board meeting will be January 28 at the Elks Lodge in
Irving, Texas.
Thanks again to all who competed this year at Terlingua. Let me give a
special thanks to those who come out and do showmanship. The show teams are
the unsung heroes of CASI. Without the unusual costumes, accessories, and
spirited antics, the cook off world would be rather bland. When publicity is
generated, the cameras always go straight to the colorful booth or individual.
Showmanship is a vital part of CASI and we need more recognition of the folks that
perform. I am asking Bucky to devote more space in the Terlingua Trails to teams
in action instead of just receiving trophies.
I would like to also recognize Rodney Lilly of Amarillo and our TICC
champion, Dana Plocheck, for great articles in their local papers featuring their
involvement with CASI. Both were highly complimentary and speak well of the
caliber of our membership.
Be a cook. Be a showman. Spread the Red and have a Happy New Year!

I hope everyone had a wonderful holiday with family
and friends. Let’s make it a great New Year by getting
out and supporting the cookoffs and the many fine
charities they help.
Here is this month’s rules question: A cook
comes to turn in his chili at 2:15 (turn-in is at 2:00). The
cups are in the process of being marked but have not
gone to the tables as yet. What do you do with this late
chili? Do you take the chili and add it to the mix? Do you take the chili and discard
it? Do you tell the cook that he’s too late with his turn in to be judged?
Let’s see what the rules say. CR.II.E.2. “TURN IN TIME All judging begins
at the same time. No chilis will be accepted after judging commences. Contestants must
be notified at the cooks’ meeting of the turn in time.”
What do you think? Fifteen minutes after turn-in is pretty late but the example
suggests the cups are not quite ready to go to the tables. Judging has really not begun
and it would be easy to add this chili to one of the boxes. How many of you would do
that?
The next meeting of the CASI Board of Directors will be held at the Irving Elks Club
on Saturday and Sunday, January 27 and 28, beginning with a TICC workshop followed
by our formal meeting. I hope many in the area can stop by and see first-hand how CASI
works. If you have an item you would like on the agenda, please contact me as soon
as possible.

My Name is Cynthia Garcia and I would like to give my thanks to the Chili
Appreciation Society and to Donna Conrad. My daughter Gloria Garcia was
battling cancer, she was 28 years old and a twin. She would have been 29 years
old on October 20th but she passed on October 2, 2006. I was really surprised
when I was presented with a bereavement check. I will use this money for a
headstone. Thank you for all the hard work you do for people like myself. May
God bless each and every one of you. You are greatly appreciated.

Once again a big hello from beautiful Lamar,
Missouri, where things are about back to normal after our
blizzard.
The 15 inches of snow and 2 inches of ice have
been removed from the runways at Lamar International
Airport and flights are about back to normal. It has been
several years since we have even seen any measurable
snow to speak of in Lamar, but this past week it sure made up for it. Things have
to be bad when they close the airport and school for a week.
Remember I have told you what you are reading today was actually written
last month (December). The blizzard hit the first of the month; then would you
believe a week and a half later the snow and ice are gone and we are having temps
in the middle to upper 60’s? Growing up in the heartland of the United States, Harry
and I have come to accept what we have from day-to-day. Weather and daylight
savings time are part of what comes with the territory. We may not always like it,
but there’s nothing we can do about it.
The month of December has always been a very busy month in the Johnson
household, since Harry and I were married and our marriage dates back to when
you could buy a gallon of gasoline for 19 cents for regular. If you had one of those
souped-up cars like Harry and I had with 3 carburetors, you had to shell out 25 cents
for a gallon. I used to think when the kids were raised and moved out things would
slow down, but it hasn’t.
Several years ago (in fact many) when Harry was a young striving
politician, he had to do normal work in a factory. Since he knew I liked to bake and
cook, he thought it would be nice to make an old fashioned Christmas goodie box
for the 3 or 4 ladies who worked for him. That little project went from the 3 or 4 ladies
in 1967 to 25 ladies in 1992 when Harry had to leave factory work for greener
pastures. When talking of his factory days, he prefers to speak of his leaving like
that rather than he had to leave because of medical and health conditions.
The boxes didn’t stop with Harry leaving the factory. Instead of the ladies
working for him getting the boxes, they were replaced by different people in Lamar
getting them. After leaving the factory and being home by himself (I retired in
1994), Harry became the Goodwill Ambassador of Lamar with a regular daily
schedule. After taking me to work in the morning, he had his morning stops. Then
after taking me back in the afternoon, he would continue with his afternoon visits.
Harry went everywhere and 14 years later he still goes. That is why when he tells
me he is going to town for a few minutes I have to limit his time.

From last count, it looks like Harry will be
delivering 48 goodie boxes this year. The boxes are 24count cardboard beer flats covered in foil and filled
with 25 different types of old fashioned homemade
candies, cookies, breads, etc. In addition to the boxes,
the past three or four years I have started making chili.
The chili is my project and it goes to the Fire Department,
Electric Department, the bank (I have to keep them
happy for all the checks Harry writes), the supermarket,
and several other stops in Lamar. All the hours of
preparation, frustration and expense are forgotten
when you see the smiles on people’s faces.
So with all the baking and cooking, trying to do
Christmas shopping for myself, taking the grandkids
shopping, planning a family dinner when we can all be
together, a son on the Fire Department in Lamar, a sonin-law who is a fireman in Warrensburg, Missouri, a
daughter who does part-time dispatching and works
for the Johnson County Sheriff’s office, a soon to be
daughter-in law who is a Nurse, and then Harry, I stay
quite busy. For all of you who read this that are or have
been involved with emergency services, you learn to
take holidays when you can get everyone together.
Harry and I and all the rest of the crew here
at the Retirement White House want to say that we
hope 2007 will bring things to many people that will
bring some joy in the humdrum of everyday life.
A quick update – Precious, the Chow, is doing
fine after her battle with Witty Kitty. Witty is the Tiger
Stripe Mane Coon Cat, who was sleeping on the coffee
table and rolled off on Precious. Not sure what
happened but Mister Witty ended up with a broken jaw
and had to have surgery. He is okay now; it just
changed his meow to a different tone. YOYO, the
cream colored Mane Coon Cat, is really enjoying the
Christmas tree. He takes the gold-colored garland
rope off as fast as I put it on.
Austin and Cheyene are both doing fine and
making A’s in school this year. Time sure does fly. Oh,
really, it doesn’t seem as the 60 minutes in an hour are
the same as they were 6 years ago. When I started
writing my column, Austin & Cheyene were both in
grade school dependent on Grand Ma & Grand Pa.
Now both are in high school and we don’t have them
as much.
As if I didn’t have a full day trying to get this
out, Harry just called from the shop and wants some
help taking the dash out of our 1967 Grand Prix show
car. I know what that means; I will end up taking it out.
Well, Minnie Mouse says it is time to close.

NOBODY TOLD ME
The best laid plans of mice and
men….everybody in the world has probably heard that
lament! And it holds true in the world of chili cooking,
just like any other activity.
There was a cookoff in Springdale, Arkansas,
on December 2, and it was for the benefit of a charity
that that the Dumb Blonde and I wanted to support.
Weather at that time of year is very likely to be pretty
cool, say around 40º, but it could be as warm as 70º.
Besides, it would be 200 miles south of Kansas City, so the weather might be quite
nice. And if it turned out to be really cold, maybe we would cook inside.
So, we made plans. We made hotel reservations, bought meat and spices,
even called the contact person to let her know that we would be there; even called
a couple of friends to meet us in Springdale.
Thanksgiving weekend was more than beautiful in Kansas City, with high
temperatures in the low 70’s. We had record breaking good weather until about the
Tuesday evening before the cookoff. It was like living in a Twelve-Point State!
Then the temperature took a nose dive into the low twenties and the
prediction was for freezing rain followed by snow. About the worst weather that
we can get around KC is freezing rain. Ice collects on the trees, the branches break
and fall on the power lines, and the power goes out. And it stays out. Sometimes
it stays out for 6 or 8 days, or maybe even more. All-electric houses lose a great
deal of their charm under those conditions.
You folks in Twelve-Point State (you know who you are) will find the rest
of this story hard to believe. I find it hard to believe that I ever left Texas for life
in the frozen northland.
Nothing much happened until Wednesday afternoon. Then a light drizzle
began when the temperature was about 34ºF, and that’s not really too bad. If the
temperature just stays above freezing, we’ll be alright! Nevertheless, wouldn’t it
be good idea to go to the grocery store and hoard a few staples?
Our friends called and said “thanks for the invitation” and they chickened
out. I called Springdale and checked the weather. I started watching The Weather
Channel. The ice wasn’t too bad on Thursday morning, the limbs didn’t fall and we
still had power. We might make it yet!
Thursday afternoon, the snow started. This storm did not creep in on silent
cat’s feet. It came in with all the fury of a woman scorned. I couldn’t see the house
across the street. My wife had prevailed upon me, her hero, to take her to work
that morning and I just couldn’t leave her stranded there. The thirty minute trip to
her office took an even hour. The return trip took an hour and a half. Now, I can’t
see the house next door! I called the hotel and canceled our reservations.
Friday morning broke to just light snow, and the landscape was beautiful!
Eight inches of snow will cover a lot of unraked leaves and ragged lawns, and one
can’t help talking about how beautiful it is. Then reality sets in, and I realize that
I can’t get any car out of the driveway, much less get down the hill on which we
live. Even if I could, the only way to get back to the top of the hill would be by
helicopter or hot air balloon.
By Saturday night, our neighbor managed to get his big Bobcat into action
and our driveway was cleaned in a flash, and all it will cost me is a pot of chili for
his family and a few friends. Life is good.
Now, we’re making plans for a cookoff in Orland Park, Illinois on January
20. Surely it won’t snow in Chicago on that weekend; surely we can keep these
plans.
On second thought, maybe I’d better go back
and re-read the first eight words of this epistle.

TallyWhackers
During the course of my tenure as CASI
TallyMaster, I have received paperwork in all kinds of
condition. There have been chili (I hope) stains, water
spots, folded to recipe card size, and crumpled-up like a
paper ball. Plus many more, but as long as all the
information is all there and legible, it’s okay.
Recently, I received a new entry into the
Results Sheet Museum from El Paso, Texas. The top
and a little of the right edge on the sheet were singed!
Yes, as in burned. The Referee’s wife, a young lady we all know, offered several
explanations concocted by the cooks in attendance. They ranged from the
storytelling of a certain New Mexico cook, who we also all know, storytelling which
certainly could spontaneously combust paper to the fact that they were holding a
cookoff on Sunday. The real reason is not so colorful. It seems the envelope
containing the forms wandered too close to a stove lighter that didn’t turn off.
There are two very positive things that this paperwork brought to my
attention. First, I received the paperwork for this Sunday cookoff the following
Friday. This not only helps me but provides good service to the cooks in that region.
Second, the paperwork was obviously not in the same condition as it was sent to
them. They took the time to communicate the reason for the condition of the forms.
Communicating information about cookoffs to the appropriate CASI
Director is very important. The CASI Regional Referee is responsible for each and
every cookoff scheduled in their designated region. If there is a problem with the
conduct of the cookoff, it should be reported to the CASI Executive Director. If a
cookoff is canceled, it should be reported to the ED, Upcomings Director, or the
TallyMaster so proper notification can be made. If a cookoff fails to meet the
minimum number of cooks for CASI sanctioning and is not submitted, or canceled,
the TallyMaster must be notified. There are many instances when I track down
someone to get information on a delinquent cookoff only to find out it wasn’t held.
I understand that failing to get a cookoff sanctioned is not a pleasant thing to deal
with, but please let me in on it.
There will, from time to time, be the necessity for a Regional Referee to
assign someone to referee a cookoff who is not currently an Area Referee or Great
Pepper. This is perfectly acceptable. There are many people qualified to referee a
cookoff who are not currently a Pod’s Area Referee. The CASI ED supplies me
with a list of Referees. These are the people authorized to referee cookoffs. When
I get paperwork from someone who is not on that list, it delays processing the
cookoff results. I first check with Mr. Dean to see if he knows anything about the
situation (occasionally he does) and then with the Regional Referee responsible for
the cookoff to see if he/she authorized that person to referee the cookoff. If the
Regional Referees will communicate this information to me before the cookoff, it
will save time getting the cookoff results entered into the CASI database.
By time you read this, the holidays will be behind us and I hope you all have
a great 2007. I’ve always maintained the best part of this job is sending out
qualification cards. I hope all of you will hear from me.

Advice to Louis Gonzales
Regarding his Naked Hen
I’ve been intending to get in touch with Louis
Gonzales’ regarding his plea about the naked hen
problem out at the Ranch. The story I’m about to
share has been kept “a secret” between my siblings
and me ever since the day it happened. We have
shared the laughter over this chicken many times, but
only among ourselves. At least my siblings thought it was a family secret, but I have
to confess, about 4 years ago I shared this story with Norma Homesley and Carol
Kitchens at the Horn Toad Chili Cookoff in Rankin, Texas.
We were sitting in the Homesley’s motorhome, just gossiping about nothing
important, except Carol winning the coveted Horn Toad that day. I can’t for
the life of me remember why I told them this story, but Norma, Carol, and I laughed
so hard; we kept adding “what ifs” and the story became funnier and funnier (and,
NO, we were not drinking).
I’m sure that most of you know that I grew up a real country girl. I lived on
a farm until I was 7 years old (then moved to the oil fields). While living on the farm,
one of the many things we raised were chickens. My siblings and I shared in the
feeding and caring of the animals. We had what we referred to as “the chicken
yard”. This was a fenced off area using what my Daddy referred to as “chicken
wire”.
One day while feeding the chickens, my siblings and I found that one of the
young chicks was losing her feathers. Every day it looked as if she was losing more
and more feathers and in about a week, she was stark naked, absolutely featherfree. We told our Mother about this chicken and when we told her the chicken didn’t
have any feathers left, Mother went to investigate.
She gathered the chick, holding it in her hands, and exclaimed to us, “This little
thing is so sunburned! I’m taking it into the house and putting some salve on it.”
Once in the house and the chicken had its salve rubbed on, Mother said that this
chicken could not tolerate another day in the hot sun. She declared that she was
making this chicken a dress to wear. And that’s exactly what she did. She took
a flour sack (flour came in cloth sacks in those days), cut a rectangle strip of cloth,
folded it in half, cut a place for the chick’s head to poke out, brought it under each
wing, and safety pinned the front and back together. We kids were in awe at the
fashion she had created for this poor naked chicken.
We returned the chicken to the yard and set it down – the other chickens
scattered, running in all directions. The “dressed chick” tried to fit in among them
but they wouldn’t let her. Mother said that they would get used to her after a while
and it would be okay. We kids thought she was so cute wearing that dress.
One of the other duties my siblings and I shared was to scare off the chicken
hawks. Mother taught us that when we heard the chickens squawking and cackling,
we were to run out to the chicken yard and start clapping our hands and making
noises to scare off the hawk before he could fly off with one of the chicks. Every
now and then we would be too late and would see the hawk in flight with a chicken.
You have probably guessed where this story is going by now. Approximately
3 days into the fashion show in the chicken yard, we heard squawking and cackling,
so we kids went running out. We were too late. Flying up and away from the yard
was this hawk, carrying our chicken with the little dress on far away, never to be
seen again. Of course you may know there were some tears falling that day.
Norma, Carol, and I said that if that had happened in this day and time with all
the modern outreach of media that we have, and that hawk had flown over and
dropped that chicken in a crowd of people, could you imagine the TV coverage and
news headlines: “Alien Baby Girl Drops from Sky”.
Now, Louis, I don’t recommend that you make that hen a dress out of a
Gladiola flour sack, because that hawk probably thought our chick had already been
battered and fried by the sun. But you might try cutting a small hole in a stocking

cap, just large enough for the hen’s head, then cut some slits down the sides for her
wings to fit through, being careful, leaving a wide band at the cuff of the cap to go
around the hen’s waist. This will keep the hen warm. And remember, you, Dave
Boone, and Roger Bains all swore to me that chicken hawks and buzzards all
migrate down into Mexico for the winter, so you won’t have any worries at this time
of year.
Another suggestion - Popeye’s Fried Chicken now offers “Naked Chicken”
on their menu. You could contact Popeye’s and see if they would be interested in
buying these ready-made chickens. Let me know if they are, I’d like to invest in
some NAKED CHICKEN STOCK.

Public Relations
What should a newsletter include? Certainly recognition of POD members
working for the POD and CASI. How about our new POD members as to who they
are, highlights of the meeting(s) since the last newsletter, recognition of cookoff
sponsors and hosts, information on CASI programs, upcoming events and meetings,
POD promotions of chili and CASI, information on CASI membership and why
members should join CASI, information received on CASI Directors’ Meetings, etc.
We will have a POD newsletter contest again this year with a couple of
changes. First their will be two categories: Monthly and Quarterly. Next we will
recognize the top two places in each category.

Public Relations
The first “POD Newsletter” Contest is in the books with Puget Pod taking
the top honors with a close win over Rose City POD, Houston POD and Black Gold
POD. The nine Great Peppers, along with the two newspaper people, who were
the judges all agreed the task of scoring the entries was not nearly as easy as they
thought it would be. The success of the first year exceeded expectations; it created
excitement and it appears a few more PODS will have newsletters this year.
Newsletters are very important to the success of the POD. PODS that are
very successful have newsletters and PODS that are struggling do not have
newsletters – for the most part that is the bottom line. Newsletters don’t have to
be sent out each month but probably should be at least quarterly.

Wow, what a party at our 40th TICC this year.
Directors, you did another great job in putting it all
together. And another great champion, another
chili daughter, Dana Plocheck, came forward and
captured the crown. We were so proud of all the
winners and can’t wait for next year to get here.
It was exciting on Scholarship Day and I was very excited when my number was
called for 2nd Place Beans and was told it was a 4 way tie for 1st. Guess I used
up all my mojo on Beans, cause it didn’t happen in Chili. But we were just very
happy to be able to be there.
Farmer and I wish to thank everyone who helped us all week long. You
know the Farmer, even on a crutch, he thinks he can still do a bunch. So he was
the driver and pointer for the sign crew on Monday. Thank you Rick Thomas and
Clyde Rogers and Doyle Smith for letting him be in charge…..Thank you Dee
Palmer for bringing us water. Thank you Ray and Dani for checking on us several
times a day. Thank you Sot Pod members for all your work at the Central Texas
Happy Hour and Membership drive. A big thanks to our River Runners for handling
the Bar one more time and helping tote everything to and from the trailer. As I
promised, I did not volunteer us for another year. Jessie and Jeannette and Billy
and Neal were constantly helping running back and forth. And I think we all had
a great time. Thank you Stateczny circle for having us there another year. And
thank you all seven Pods that helped put it all together.
TICC is a very large project and so much planning goes into it every year.
But so much cannot be done until that very week.. If you do not volunteer to help
in areas, you are really missing out. If you want to really have some fun, get with
the veggie cutting group next year, the shirt folding group, the “Trashy” bunch, the
sign crew, Krazy Flats, or work the bar. Sign up for the gate, work registration, and
help on Friday and Saturday on the big days. If you don’t volunteer ahead of time,
go up and ask a Director where help is needed. They will welcome your help. It
takes a whole bunch of folks to run this wonderful exciting event.
Thank you to Bud Barrick and Jim Parker, who I casually invited to our
party Thursday afternoon when we put up the awning, when we have the annual
Kinnison, Barkley, put up your awning party. Thanks to Bucky and Carolyn who
helped us take it down on Sunday morning.
Hope we can all go next year and have another great time. See you on the
Chili trail. Get lots of points and get qualified……

My name is Grace Ester Lim, from Sierra Vista, Arizona. I attended Buena
High School and am currently attending Georgetown University in Washington,

Psychology with a minor in Korean and taking pre-med classes in hopes of going
to med school upon graduation. My dream is to become a pediatrician, since my
passion is for working with children. Growing up, I taught Sunday school, and
tutored kids of all ages and truly love working and helping children. With my
education from Georgetown and med school, I hope to help children not only
around me, but also those in third-world countries, especially North Korea. I
sincerely thank the CASI organization for supporting me in achieving my dream.
The generousity of the CASI cooks who donated Christmas presents bring big
smiles to the Terlingua area children.

Free Quarter Page Ad
to CASI Pods, State, Regional and
International Opens
As a CASI Pod you are required to put on a pod cookoff
once a year. To help you advertise your pod cookoff we allow
each pod to place one quarter page ad in the Terlingua Trails,
each year, free of charge. This ad should run the month before
your cookoff occurs. Should you decide that you need an ad
larger than a quarter page we will simply bill you for the difference
in price. This ad should not be confused with the article
advertising your cookoff in the "Cooking with CASI Calendar"
section in the Terlingua Trails. That article will start to run as soon
as you request your cookoff packet and will run until your
cookoff occurs.
