Connect with us : Painting by Robert Amos Entertain * Engage * Enjoy I have to admit that I am a bit sad to see August days behind us…those beautiful sunny days, the lovely vegetation, the traffic tie-ups in construction zones….oh well. Now we are facing September…the beautiful bright days, the gorgeous fall vegetation, the traffic slowdowns in the school zones. Hey, I just realized…it is not going to be that different! Who cares anyway, the Club is always a great place to go at any time of year. Our patio furniture is set to welcome you for now but we all know that soon it will be time to put those sun umbrellas away. If you haven`t been down to the Club on a Friday recently…you have been missing a great chance to unwind. The TGIF barbeques are still on and the price is definitely right. Don`t you love the corn at this time of year…amazing! Celebrate the end of Summer at our Harvest Moon Sip & Savour Event on Thursday, September 29th featuring wines from Sandhill Winery in the Okanagan. The Club is very proud to host the Make-a-Wish Foundation`s inaugural event ``Unwined``on October 13th. This is a chance for you to support a wonderful organization that makes children`s wishes come true as well as have a great evening out. The event will feature food from local chefs along with liquid refreshment from some local wineries and breweries (aren`t we lucky to have such talent here). For those like me, who often like to take something home…there will be some items for auction. Let`s make this inaugural event a great success for both us and the kids! Tickets are available at www.hibid.ca – look for Events and then select Unwined. Well…what else is happening???: October brings with it the celebration of Oktoberfest. I visited Munich this past summer and they love to celebrate (and say prosit!) and of course so do we at the Club. Join us on October 22nd for Oktoberfest. We feature a Bavarian buffet and the talents of Johnny Vallis, singer, storyteller, impersonator. Call to make your reservations. Have your children ever seen a vampire? Well tell them that on October 29 th the Club will be become Club Transylvania and will be visited by a vampire…that is Vinnie the Vampire. Vinnie it taking the day off from his usual vampire activities and instead will be performing magic tricks! (I wonder if that involves making coffins disappear….). The kids will love the crafts, the entertainment and a spooky lunch. The current body of artwork features a bison print selected for Victoria’s Government House permanent collection, samples from a Saanich Hall exhibition earlier in the year, and a new selection of prints dealing with transformations of the Canadian prairies. These transformations depict a time of moving from ‘wild to tame’, when fences broke up the landscape into measured areas of containment and when grasslands were turned into pastures and grain fields with the advent of mechanization. ‘Don’t Fence Me In’ is about a world of contrasts, a world that fuses the old with the new. Bill Zuk is an award winning multimedia artist whose work excels in printmaking, sculpture, digital art, and film. He received the Ambassador of the Arts award from the Metchosin International Summer School of the Arts in 2015. The University Club of Victoria Contact us at 250-721-7935 or [email protected] Corn & Avocado Salsa Serves 4 3 ears fresh corn, husks and silks removed 2 avocados - peeled, pitted, and cubed 1 red onion, finely diced 1 red bell pepper, seeded and diced 1 tablespoon minced garli 1 tablespoon ground cumin 1 teaspoon crushed red pepper flakes 1/4 cup chopped fresh cilantro 1/3 cup red wine vinegar 2 tablespoons olive oil 1/4 cup fresh lime juice salt and black pepper to taste Method 1. Place the corn in a large pot with enough water to cover, and bring to a boil. Cook until kernels are tender but crisp, about 5 minutes. Drain, and cool in cold water. Use a knife to scrape kernels from the cobs. 2. Place kernels in a medium bowl. Stir in avocados, red onion, bell pepper, and garlic. Add cumin, red pepper flakes, and cilantro. Mix in vinegar, olive oil, and lime juice. Season with salt and pepper. Inniskillin Okanagan Estate Series Chardonnay: This Chardonnay is light straw in colour, with grapefruit and citrus aromas and hints of toasty oak. The well balanced palate, is fresh with a lively acidity. The wine is medium to light in body, and has a lasting finish.
