They have executed energy efficiency measures and environmentally friendly practices in stores and have embedded it in their corporate operations through their CSR platform by partnering with WWF-Philippines in Environmental Education. These brands are also using paper bags but for some stores they have been using oxo-biodegradable plastics for a number of years. This is the latest in plastic degrading technology and has distinct advantages over biodegradable plastic bags. Oxo-biodegradable plastic degrades best when it becomes litter. If the plastic is used properly it will also last many years, but once it becomes litter it could degrade in under 12 months. Oxo-biodegradable plastic will also not release methane as it degrades. In previous years, Penshoppe also recycled its old billboard tarpaulins through a campaign “Bag-a-billboard. Save-a-planet.” and made them into tote bags instead of just disposing of them randomly. Recycling these billboards for store promos, sponsorships and event freebies ensured that these materials don’t go to waste. BENCH Bench joins the green campaign by encouraging shoppers to bring their own shopping bags on Wednesdays. When purchasing any store item on Wednesdays, Bench paper and plastic bags requested at the counter will be billed accordingly to the customer and proceeds will go to the ABS-CBN Foundation. Bench is located at the 2nd Floor of Eastwood Mall, 2nd Floor of Lucky Chinatown and at the 3rd Floor of Newport Mall at Resorts World Manila. 9 CALL IT SPRING Call It Spring’s current campaign “Be Green” promotes the use of oxo-biodegradable plastics, which degrade within 24 months after disposal. To eliminate the need for plastic altogether, Call It Spring ingeniously attaches shoe strings to its shoe boxes, turning it into an alternative shopping bag. THE FACE SHOP South Korean beauty brand The Face Shop only carries cosmetics and skin care products made from natural ingredients and with minimal chemicals. It serves a twofold purpose of minimizing chemical exposure to the skin as well as the risk to the environment. The Face Shop products are also hypo-allergenic and packaged with recycled materials. Call it Spring is located at the 3rd Floor of Newport Mall at Resorts World Manila. CROCS Crocs is making this world a colorful place to live in more ways than one. The global footwear brand has been a partner of Soles4Souls charity since 2005. One of their programs is to give slightly used Crocs a new lease on life by sending it over to people from impoverished countries. Another one of their projects is providing shoes for less fortunate children. Crocs Philippines has also ceased the use of plastic packaging in all its stores, opting instead for recyclable bags. 100% comfortable. The Shucoon collection features a molded rubber outsole with pressed canvas and comes in a suitably fashionable recycled packaging. Brazilian Flip flop brand Havaianas is taking a leap towards saving Mother Earth. Through its partnership with the Institute of Ecological Research, seven percent of the Havaianas IPE Sandal sales goes to the preservation of the Atlantic Forest, the Amazon, and the Panantal. The company is helping to finance a marine biodiversity project on the coast of Brazil, made possible through an alliance with Conservation International. To add to these efforts, the company invests on scientific researches for the management of protected marine reserves. It also supports inventories, monitoring and other studies being done on Brazilian ecosystems, focusing on the Abrolhos Seascape. What is less known yet equally admirable about Me&U is its commitment to sustainable practices. The store is currently weaning itself off the use of plastic as packaging. For small packages, pouch bags made from kraft paper are used, while canvas bags are used for pillows and similar items. All these are designed to be sturdy and attractive as a way of encouraging the clients to reuse it as much as they can. By September of this year, Me&U expects to be completely plastic-free. Starbucks introduced “Grounds for Your Garden” which provides interested customers with complimentary five-pound (2.27-kilogram) bags of soil-enriching coffee grounds. Where commercial composting is available, many stores are able to divert any remaining coffee grounds and food waste from the landfill as well. These grounds will make excellent compost when you plant the tomato seeds that came with this magazine! VILLA DEL CONTE Villa del Conte, makers of delectable artisan chocolates and confectionary masterpieces, has eschewed the use of plastic packaging, relying instead on reusable paper bags and reusable fancy boxes, which are good enough to be repurposed as jewelry boxes, scrapbook kits, and many others. The tomato is considered the “queen” of garden crops, both for its beneficial effects on health, and for its color, improving all the gastronomy. The nutritional value of a tomato is much higher and has a more intense flavor when grown in gardens. Everything we eat comes directly or indirectly from plants and approximately 7,000 different plant species have been used as food by humans. And with tomatoes, there are over 100 dishes you can come up with, starting from appetizers like a Tomato Bruschetta or Nachos with Salsa to various sauces for pasta & pizza, salads and entrees. Plants also help in regulating the water cycle: they help distribute and purify the planet’s water. They also help move water from the soil to the atmosphere through a process called transpiration. Health benefits of tomatoes have been known to mankind since ages. Here are other health benefits from the world’s most famous fruit: Here are quick steps on how to grow the tomato seeds – good luck! Prepare your pots. Make sure they are clean and ready to be used. If you have used the pots before for other plants, soak them in a 1 part bleach and 9 parts water solution for 10 minutes and rinse. 1 Fill the pots with potting compost. You can also use equal parts peat and sharp sand to start the tomatoes in. 2 Place the tomato seeds 1 inch apart from each other. You can place as many seeds as you fit in a single pot as long as they are 1 inch apart. 3 4 Cover the seeds with a thin layer of potting compost and press it down lightly. Cover the top with a piece of plastic or cardboard to hold heat and moisture in and place the pot in a warm room. A sunny window sill in a warm room is perfect. 5 Water the seeds occasionally to keep the soil a little damp. You don’t want the soil to dry out but don’t over water the seeds either. It will take about two weeks for the seeds to germinate. 6 7 Remove cover when the seedlings appear and place in a well lit area. Transplant the seedlings when their leaves appear. Prepare a pot for each seedling. Gently grasp the seedling and pull upward to remove it from the soil. It should come easily. Photography by: Paolo Pineda | Styled by: Angela Alarcon | Make-up by: Jigs Mayuga 16 17 SA DAGAT AT BUNDOK LITTLE THINGS COUNT Her internet-savvy notwithstanding, Bianca Gonzalez is, for better or worse, every inch a product of her time. “I think in a way our generation is a bit unfortunate,” she says explaining how we are living the consequences of the previous generations’ excesses and irresponsibility in terms of its relationship with the environment. She’s “hats-off” to all the hardcore eco-warriors and their green living, which she admits is difficult and, in some cases, expensive. Although she doesn’t consider herself quite in that level, Bianca is an environmentalist and an eco-advocate in her own way. “Here in the Philippines, especially after Ondoy and so many landslides, it’s hard not to be.” “People think that to save the environment you have to do grand things and change your lifestyle, but the little things amount to a lot,” she says. She is conscious of the need for people to minimize their ecological footprint wherever they can and speaks against wasteful habits such as letting the water run while brushing one’s teeth, neglecting to turn off the lights and other appliances in empty rooms, throwing trash indiscriminately, and leaving mobile phones charging overnight. “Little things like that, if you put it together, it makes a huge impact,” she says. “Living with that in mind can help.” Heartbreaking as the devastation caused by the tropical depression was three years ago, it certainly did a good job in bringing a lot of pressing environmental issues to light. Bianca takes part in efforts, big and small, to keep these issues in the forefront of public consciousness. “When I started (in television) I was put in the entertainment side, but deep in my heart it was always current affairs,” she admits. Thankfully, she got her chance to dip her feet in the more serious facet of TV. “Just recently, I was lucky enough to be part of this environmental documentary called Sa Dagat at Bundok produced by ABSCBN with Kuya Kim (Atienza) and Atom (Araullo). Basically, it made me appreciate the Earth more, because it was a biodiversity expedition of scientists from California. Apparently, we are the center of biodiversity. We are blessed with the most diverse animal, water, and plant life.” Regrettably, she says, this is not thoroughly taught in schools and not many Filipinos know about the extent of our natural wealth. She herself only learned about it fully during her work on the documentary. “The saddest part about it is that we may be the center (of biodiversity), but we are also among the most threatened hotspots.” The way the scientists in the expedition put it, it means that a significant number of species of flora and fauna are doomed to extinction even before they are discovered. “These super important scientists from the States go out of their way to come here, while we who live here can’t even take care of our own backyard,” she observes. She’s also glad that through the documentary, she got to show the public the side of her that cares for the environment, as well as the side that can rough it up. “Whatever projects like that I do, if there’s any chance for me to help spread the word, I do it, especially through social media like Twitter and Facebook or through blogging.” 18 One thing she’s very happy about is Earth Hour and the number of watts we don’t consume in that one hour. “The Philippines is always on the top of the list of the countries that join,” she says. An hour out of a whole year may not seem like a lot to some but Bianca is quick to reiterate that saving the environment begins with these little choices that we make. For instance, she considers avoiding the use of plastic bags as one of her personal advocacies. Whenever she buys something from the grocery or convenient stores she avoids asking for plastic bags when she can. “I live in Paranaque, but we’re really close to Muntinlupa where they have a ‘no plastic’ rule. I see people in the supermarket, they bring their own bags. It’s not as hard as people think it is. I hope all the other cities can do that.” Speaking with the selfsame modesty she says, “whether or not you’re a celebrity or just a normal person, our contribution (in helping the environment) is the same, and we can all do something.” She concedes that her work in media gives her more opportunities to spread the word of her advocacies but unlike big celebrities or personalities like Kuya Kim, she doesn’t see her contributions as any bigger than a normal person’s. DOWNTIME She also loves visiting malls especially Eastwood Mall. “My boyfriend has a favorite restaurant there, Lucky Niku Kafe on the ground floor. It’s his super favorite. (He goes there) like every other week,” she says. “I like that it has a lot of outdoor areas and for me that’s important in a mall. It’s not like a huge cement block that you put there just for the sake of having a mall. You know you can go out and breathe fresh air. You can dine in or dine out while breathing fresh air.” Her love of the outdoors seems very fitting of her personality— fun, unassuming, artless, and very natural. It’s not hard to imagine why many see her as a good role model. In many ways, she’s also the ideal, if unofficial, face for environmentalism, especially for the young, socialnetwork-addicted set. As a testament to a lifestyle that’s both earth-friendly and down-to-earth, Bianca finishes with this bit of wisdom: “To make a difference, most people think you have to do something so grand or that you have to be someone or have this big name. You really don’t. I’m fortunate to be in the position where I can reach people, but if any regular person can influence one, two, three or five people around them then that’s as big an effect a celebrity can make.” The multi-hyphenated Bianca craves for the same things nearly every other person with busy careers hold dear: sleep and quality time with loved ones. Season meat with salt, then pan sear for a short while, just to ensure that meat juice won’t come out. Then roll in a clean wrap forming a roulade. Let it chill for 30 minutes. 2. For blanching; heat 1 liter of water. Blanch the meat depending on your choice of doneness, then prepare the sauce and garlic rice. 3. For the sauce; heat soy sauce and let it simmer, then add calamansi juice and onion rings. Let it boil a bit, then add all purpose cream. Repeat the same procedure depending on the thickness of the sauce. Add the meat and let it absorb the sauce. 4. Place 1 cup of garlic rice on the center of the plate, then lean the beef around the garlic rice. Scatter with a bit of sauce and put onion rings on top.
