fundraisers for local artist Will Griffin to receive a critical back surgery. Due to your
participation, we were able to raise $3,700! With another $1,000 directly donated by
Pilgrim’s, Will was able to reach his $11,500 goal.
• We continued to donate to community non-profits and fundraisers. We contributed
more than $3,500 to local organizations from January to March!
• Our Facebook giveaways continued and we rewarded our customers with another

would take to make this market garden happen, he discovered that his local food system
didn’t fit into any of the current agriculture
provisions or regulations set forth in the
city’s code. Rather than daunting him, this
discovery merely inspired him to light the
spark that would start the city on the road to
establishing a future for market gardeners in
Coeur d’Alene, and perhaps even all north
Idaho.

continue to work unrelentingly to advance
the quiet fulfillment and undeniable excellence of farm-to-table culture.

Urban farming and community gardens
are wonderful ways to build community
and provide fresh produce to individuals
who otherwise would not have access. The
City of Coeur d’Alene has provisions for
community gardens, learning gardens and
community supported agriculture (CSA),
however, until recently, the City Planning
Committee and other city officials were unaware of a growing agricultural movement
called “market gardening.”
A market garden differs from your backyard
garden or a community garden. A community garden is a piece of land that is gardened
conjointly by a group of people, as embodied in the Shared Harvest Community Garden on the corner of 10th Street and Foster
Avenue in Coeur d’Alene.
On the other hand, a market garden is a
small-scale, high-efficiency production of
Innovative small growers, such as Curtis
Stone (Green City Acres in Kelowna, British Columbia), Will Allen (Growing Power
in Milwaukee, Wisconsin) and Jean-Martin Fortier (Les Jardins de la Grelinette in
Saint-Armand, Quebec) are paving the way
for market gardens throughout the U.S. and
the world.
On November 10, 2015, Hamilton brought
a presentation to the City of Coeur d’Alene’s
Planning Committee. First, he requested a
special use permit that would allow him to
establish a market garden and grow food for
sale on the purchased residential property
on North 5th Street. After brief discussion,
this permit was unanimously approved, with
only a few minor provisions.
The second part to Hamilton’s presentation
was a more in-depth exploration of market
gardening and a request to amend the current city code so that anyone could pursue
retail urban small-scale farming within the
Lake City. The Committee seemed highly interested in pursuing this and presenting information to the City Council for a possible
amendment. They are currently researching
other cities that have modified their codes
to create a positive environment for urban
retail growers.
As Hamilton and his team prepare for their
first growing season, he is looking forward
to not only setting an example of successful
market gardening in North Idaho, but also
educating the community on sustainable,
healthy growing practices. Through collaboration with local organizations like Kootenai Environmental Alliance, University of
Idaho’s Master Gardeners and the Inland
Northwest Food Network, he plans to continue developing the local food movement
and encouraging healthy, natural living.

Evans Brothers Coffee is a wholesale coffee roaster
and retailer based in Sandpoint, Idaho. EBC was
founded in Sept 2009 by brothers Rick and Randy
Evans, who share a passion for top quality coffee, using
their business to build community and connection.
The northwest local coffee duo is receiving
national acclaim for being one of the best coffee
roasters in the country. They’ve just won their
second Good Food Award for their Kenya
Gatundu Karinga AB. The Good Food Awards
celebrate outstanding American food producers
and the farmers who provide their ingredients by
recognizing them for taste and sustainability. EBC
is the only Idaho winner in 2016 and is the
region’s first two-time winner.
Roasting award-winning coffee is a common
occurrence for the Evans Brothers. In October, they
placed top 3 in “America’s Best Coffeehouse”
competition hosted by Coffee Fest in Portland, Ore.
Owner Randy was recently in Colombia to help
judge the “Best of Huila” competition, which
features 300 farms in the region.
Evans Brothers Coffee has a growing presence in the
coffee market. It’s a favorite among our customers
and can be found in the bulk department.

Whether you are growing herbs in a window box or plan to dig up half
your yard in preparation for a bountiful harvest, growing your own food
and nurturing little…or big…green things can be exceedingly satisfying.
If you haven’t already started your indoor seedlings, here are some tips to
begin your cultivation, right now.
First, assess your space. You will be more effective in your planning if you
know what grows best in the sunshine, soil and yardage you have available to you. I personally don’t have a yard, however, I don’t use a decent
portion of my driveway. Each year, my husband and I make the most of
our location by growing a vibrant garden in five-gallon buckets. This limits
the variety of what we can grow, but it is the perfect set up for peppers,
greens, herbs, tomatoes and a few other foundational vegetables.
Once you have a plan, it’s time to evaluate your mediums – soil,
water and plant food. If you’ve planted a garden in the same spot for a few years, your
dirt could be fairly depleted of vital nutrients. The University of Idaho Extension office in Kootenai County offers
soil testing, along with a wealth of resources on gardening, improving soil
fertility and growing sustainably.
If you are like me and use planters,
buckets or raised beds, be sure to start
with a nutritious organic soil. Compost, either store bought or home-
made, is a great place to start when seeking to supplement your
soil. Vermicompost is a specific nutrient-rich organic fertilizer
and soil conditioner that contains a biological mixture of bacteria, enzymes, worm-digested plant matter and earthworm
castings or cocoons. In addition, rotating cover crops, like
legumes and crimson clover, with your other vegetables
can add nitrogen to your soil each year and even suppress
weeds.
It’s time to begin! Utilizing seeds is the most
cost effective way to grow a garden. No
time or space to start your seeds indoors? Plant starts from local nurseries and farmers make it easy to
grow healthy, fruitful plants. Just
be sure you know where your
plants are coming from. Once your little
guys are in the ground, recycle egg carton cups, popsicle sticks, plastic
spoons and other miscellaneous items to identify and beautify each plant’s
spot.
In addition to what we are able to cultivate ourselves, the Inland Northwest
is teeming with wild edibles, and flourishing fruit and nut trees. Don’t be
afraid to ask a neighbor if you can pick the apples that are falling off of
their tree. I also encourage you to get out there and find your spots for
picking huckleberries, blueberries, mushrooms and other wild foods that
grow so abundantly right in our proverbial back yards.

Raw Sprout Salad
3 c. sprouted lentils
1/2 c. cranberries
1 apple
1 onion
2 tbsp. virgin olive oil
2 tbsp. apple cider vinegar
1 tbsp. of nutritional yeast
Directions:

Porter Mac and Cheese
2 1/2 c. uncooked macaroni noodles
2 tbsp. unsalted butter
2 tbsp. all purpose flour
8 oz. raw milk
8 oz. porter from a can
(recommendation: Sockeye Powerhouse Porter)
2 c. sharp cheddar cheese, grated
1/4 tsp. smoked paprika
Pinch of grated peppercorn
Pinch of nutmeg
Parmesan cheese, grated
Directions:
Preheat oven to 375°F. Cook macaroni per directions on the package (leave off about 2
minutes because pasta will cook in the oven).
Heat a saucepan on medium-high heat and add butter. Once melted, whisk in flour to
create a roux and cook for about 2 minutes (until golden in color). Add raw milk and
porter into the saucepan, whisking constantly. Add the cheddar cheese and stir until
melted. Turn heat down to medium and continue to stir for about 6 minutes until mixture slightly thickens (Note: it will not get as thick as regular cheese sauce because of the
beer). Stir in pepper, paprika and nutmeg.
Add cooked macaroni into a casserole dish. Gently pour and mix cheese into dish with
noodles. Sprinkle Parmesan cheese on top. Bake for 25-30 minutes, until golden brown

Salted Caramel Coconut
Milk Pot de Crème
5 large egg yolks
3/4 c. coconut sugar
1/3 c. water
1/2 c. canned coconut milk (or coconut
cream)
1/2 tsp. vanilla extract
sea salt for garnish
Directions:
Preheat oven to 325°F. Whisk the egg yolks in a small bowl until well blended. Set aside. In a heavy bottomed saucepan, combine the coconut sugar and water and
stir to combine. Begin heating it and stir until the sugar is dissolved. Turn up the heat to medium high and boil the mixture without stirring. Continue boiling on
medium high heat for anywhere from 5-10 minutes, until the sugar syrup starts to brown more.
Make sure to keep a close eye on it and be extra careful not to let it burn.
When the syrup is nice and brown, whisk in the coconut milk (it may spurt) and continue to stir while you lower the heat to medium. The caramel will be hardened
at first and will dissolve as the cream heats. Stir just until all the bits of caramel are dissolved. Slowly drizzle the cream mixture into the egg yolks – whisking as you
drizzle. Continue until all the cream has been incorporated into the eggs and is smooth. Stir in the vanilla extract.
Pour the mixture into 4-6 small oven safe glasses (small mason jars work well). Set the glasses in a baking dish and pour one or two inches of hot water into the
dish. Bake for about 30-40 minutes, until the custards are set on the edges, but still a little wobbly in the center. Let cool, then refrigerate until set and chilled. Serve

I started in the Produce department. I had been a long time customer and loved the atmosphere of
Pilgrim’s. While I was working in produce, I was asked to take over the Floral department and it kind of
grew from there. A year ago, I was asked to take over the Gift department.
What do you enjoy most about your job?
I really enjoy working with my coworkers every day. I love the fact that Pilgrim’s promotes natural, healthy
living. That’s important to me. I truly love my department. I treat it as my own little shop. I enjoy meeting
people in the community who are interested in selling their own stuff, such as
