Honey Lemon Rack of Lamb
(Serves 4)
2 racks of lamb
2 cloves of garlic, cut in slivers
1/4 tsp salt
1/2 cup of honey
1/3 cup firmly packed brown sugar
1/2 tsp garlic powder
6 tbsp lemon juice
1 tsp fresh mint leaves, chopped
1/2 cup pecans, finely chopped
Preheat oven 350°F.
Cut small slits all over
the lamb and insert the
garlic slivers. Salt the
lamb. Bake lamb in oven
for 30 minutes, bone side
down in shallow roasting
pan. In small saucepan
combine honey, brown sugar, garlic powder, and lemon
juice. Heat on medium, and stir until sugar is dissolved.
Remove from heat and stir in lemon zest, mint and pecans.
Spoon mixture over the lamb. Continue roasting for 30 - 45
minutes, occasionally basting with mixture. Using a meat
thermometer cook until 160°F for medium well done.

Origins: Garlic
Native to Central Asia, Garlic has seen over
6,000 years of culinary and medicinal use.
Ancient Egyptians used to worship the garlic
bulb, feed it to slaves and workers for energy,
and even placed clay models of the plant in King
Tut’s tomb. Hippocrates, Pliny the Elder, and
Dioscorides, on the other hand, praised it as a

soldiers and Greek athletes ate copious amounts
of garlic to give them courage and strength.
While garlic has attracted many funny
superstitions over the years (vampires beware!),
ancient civilizations were correct in suspecting
garlic plants unlocked health benefits. Studies
show that garlic-rich diets help prevent cancers
and protect the heart. It might cause bad breath,
but it can enliven boring meals, and give you a
health boost!
