Dues
Association and the Women’s club, dues are still being accepted for year 2011!!!!
from the Association President
We reported the results of our meeting with Scott Heiler, Owner and Paul Johnson, our new
General Manager and their agreement to meet with the Board in August to negotiate future rent
increases.
In the past month, it has been a pleasure to get to know Paul. He has shown a keen interest in
Soutfork, and our residents. We have shown him that we care about our neighbors and our
homes.
The Association Board spends many, many hours planning the many activities throughout the
year, as well as communicating with the management when there are individual situations that
they should be made aware of.
Some things are obvious but to “negotiate” it will require give and take…….What is most
important to you?
Now, I am speaking directly to the residents who are not members of the Association.
Membership is more important then ever! It is your opportunity to speak at our March 28th
meeting and have an influence on future rent increases…….Membership of majority of the
homes in our park is needed to show that the Association Board is representing the best interest
of everyone. We will do our part, it is up to you!!!
Dot Cady, President

Annual Recycle Dinner/Cookout
Its that time of year again to thank all of you who place their paper and cans in back in the RV section.
For all residents and all the “renters” check out our bulletin board because at the time of this writing all
the details are not known except it will be held:
March 26, 2011 @ 4p.m.
Please sign up and come and enjoy the freindship of neighbors and friends and
This is our way of thanking everyone for placing their cans and paper for recycling in the bins and this
also helps any costs incurred during the year!
Women’s Club
38 Ladies met in the clubhouse for their monthly meeting on February 2nd.
read and approved and each committee gave a report.
The minutes of January were
The Charity committee mentioned that we received thank you letters from the schools that were helped at
Christmas.
Shirley Rouer is looking for new speakers for our meetings……keep up the good work Shirley!
Mary Bolin asked the question, “Do We Want a Bazaar?” The Ladies all agreed that we would like to have
one and the date selected will be on November 19th of this year.
Then it was Election Time…………….No One wanted to run for the Board positions, so the same Board
members were re-elected for another year. I can say that the past year was a good year and we had lots of
fun and did a lot of things together and Charity was our main goal.
We talked about the Chili Supper and everything is on target. The Men’s Club is giving us their support
and it is well appreciated.
It is time to make sure your 2011 Dues are paid.
After the monthly meeting quite a few went to visit “Hospice.” We saw the bricks that the club had
purchased and engraved for our Loved ones who left us for a better place (we hope.) A few of us went
inside to look at the premises, and everyone was impressed with the place.
After the tour of Hospice we all went to the Village Inn and all had a great time and enjoyed the good food.
Next month, on March 2nd, we will have the “Line Dancers” who will give a demonstration of what they learned during
the year.
See you there,
Marielle

Trips are planned for a baseball game, train depot visit and for another trip to Palm Harbor for those who
were unable to attend the recent outing.
34 people attended the Super Bowl party and all had a great time with lots of wonderful food. Someone had

Southfork Makes “Little Dresses” for Africa
A big “Thank You” to all the ladies that made donations of materials and their time to make pillowcase
dresses on January 12th. Also, to the number of ladies who couldn’t make it to the club house but made
the dresses in their homes to donate, thank you.
Thirty-three ladies of Southfork gathered at 8:30am and by 9:00amwere in full production with eight
sewing machines and five irons going till 1:00pm. 106 was the total of all the dresses made.
After being on display at the Women’s Club annual Chili Supper, the dresses were sent to Nancy’s
Notions in Wisconsin, a sponsor of “Little Dresses for Africa.” Nancy’s Notions will cover the costs of
shipping the dresses to Africa.
This is just one of the many projects the Southfork Women’s Club sponsors.

BOCCE BALL
Well the Bocce Ball game has finally hit Southfork. Bill & Diana Strickland have formed a group who
started on Wednesday February 2nd for the first time and there were 8 people who played.
There will be 2 days that this game is played and that is on Wednesday’s at 3pm and on Saturday’s at
1pm.
This is a game similar to bowling and is really lawn bowling but with a much smaller ball, almost the size
of a softball.
So call Bill & Diana to see about playing and there are a few residents who have the Bocce Balls and will
loan them out if needed.
Try it out!!!!!

Restaurant of the Month
ACROPOLIS BAR & GRILL
14947 Bruce B Downs (Tampa Brickyard)
Tampa, Fl 813-971-1787
Happy Hour 3 to 7pm
Daily: 11am until late (3am)
2 for 1 Margaritas & Sangria (all day, every day)
Its menu offers a wide variety of Mediterranean cuisine as well as American choices. They serve
Appetizers, Salads, Wraps, Sandwiches and Entrees, which make it a good choice for lunch or dinner.
Acropolis serves a different purpose entirely a friend tells me. The kitchen is open until 3a.m. on the
weekends, midnight during the week.
The staff is young, attractive and prone to launching into fits of a grapevine dancing at the slightest
provocation. They yell “opa” and break plates, a belly dancer undulates on the weekends, a DJ spins world
music late into the night. During the dinnertime hours there is the extra bonus of seeing the servers gather
together to dance the “Zorba.” I was told they do this numerous times throughout the evening, followed by
the patrons throwing paper napkins in the air. I bet this is fun to watch and something which so different
then other restaurants.
Generally, portions are big and entrees come with a choice of soup or salad, hard to choose from, because
the soup is often a delicious lemony “avgolemuno” (like egg drop soup, Greek style) and the generous
Greek Salad is topped with a wedge of perfect (not too salty) feta.
Prices: Sandwiches and wraps $6.00 to $8.00; Entrees $10.00 to $19.00.
If your taste buds are crying out for Greek Food and Tarpon Springs is further than you would like to drive,
this could be a satisfying alternative.
I was never there but I have a few who tell me it is a real good time and the food was great!

Southfork Phone Directory
Well, the phone directory publisher let me know that the directories will be printed in March and I do not
know how long it will take for them to be completed.
Usually it is delivered to Southfork by the beginning of March so now I cannot tell you the actual date of
when they will be delivered.
I am so sorry for any inconvenience this has caused and thank you for your patience.
Phyllis Grossi
This article is being written to remind Southfork residents, especially new residents, to recycle several
different types of materials. Recycling keeps certain types of material out of landfills.
Here at Southfork a truck comes thru the park every other Saturday to pick up aluminum cans, steel
cans, glass bottles, newspapers and plastics. This service is provided by Pasco County and the
materials are taken to a center where those items are sorted and then taken to smelters to be melted
down and made into new metals. Old Newspapers are used to make new newsprint and plastics are
melted down to be used in many products.
If you put these items into your regular trash containers they may end up in landfill areas where it
takes mother nature thousands of years to break them down. Landfills are a constant problem
leaching toxic materials into the earth and into our water supplies. Recycling is the answer to many of
those problems.
To take this process one step further there are containers located in Southfork's RV storage to place
aluminum beer and soda pop cans. A couple of Southfork men then bag the cans and take them to a
local recycler which generates funds ($$$) which is put into the association treasury which is then
recycled into entertainment here at Southfork. There is also a dumpster in the same area for
residents to place their old newspapers. A company picks up that dumpster, recycles the newspapers
and then sends the association a check.
If you are unable to take your aluminum cans or newspapers down to the RV area please call Bob
Downs at 523-3502, Bill LaForest at 437-4075 or Jim Morvatz at 437-4782 and they will come by your
home and pick up those items.
PLEASE RECYCLE, it helps the environment, it helps you and your neighbors and it helps the
association. Thanks for your support.

Recipe of the Month
Toffee-Butterscotch Bars
So good, and easy too!
Ingredients:
1 package 2-layer-size yellow cake mix
1/2 cup packed brown sugar
1/2 cup butter, melted
2 eggs
1 cup cashews, chopped
1 8-ounce package toffee pieces
Butterscotch sauce
Directions:
1. Preheat oven to 350 degrees F. Grease a 15x10x1-inch baking pan; set aside.
2. In a large bowl, combine cake mix, brown sugar, melted butter, and eggs. Beat with an electric mixer
on medium speed for 1 minute or until combined, scraping bowl occasionally. Stir in the cashews.
3. Pat dough into prepared pan. Sprinkle with toffee pieces. Bake in the preheated oven for 15 to 20
minutes or until a toothpick inserted in center comes out clean. Cool completely in pan on a wire rack. Cut
into bars and drizzle with butterscotch sauce.
Chicken Crunch
1 can (10 3/4oz) Campbell’s condensed cream of chicken soup
½ cup milk
4 skinless, boneless chicken breast halves
2 tablespoons all-purpose flour (more if needed)
1 ½ cups Pepperidge Farms Herb Seasoned Stuffing, crushed
2 tablespoons butter, melted
1. Heat oven to 400 degrees. Stir 1/3 cup soup & ¼ cup milk
2. Coat the chicken with flour. Dip the chicken in the soup mixture. Coat the chicken with the stuffing.
Place the chicken onto a baking sheet. Drizzle with the butter.
3. Bake for 20 min or until chicken is cooked through. Rest of soup/milk can be heated & serve with the
chicken.
COUGH CPR
Since many people are alone when they suffer a heart attack, this article seemed to be in order. Without help, the
person whose heart is beating improperly and who begins to feel faint, has only about 10 seconds left before losing
consciousness.
However, these victims can help themselves by Coughing repeatedly and very vigorously. A deep breath should
be taken before each cough, and the cough must be deep and prolonged, as when producing sputum from deep inside
the chest.
A breath and a cough must be repeated about every two seconds without let up until help arrives, or until the heart is
felt to be beating normally again. Deep breaths get oxygen into the lungs and coughing movements squeeze the
heart and keep the blood circulating.
The squeezing pressure on the heart also helps it regain normal rhythm. In this way, heart attack victims can get to a
hospital.
Article from, Health Cares, Rochester General Hospital via Chapter 240s newsletter “AND THE BEAT GOES ON.”

There is a trash dumpster that is located in back of the Park which was always off limits to the residents,
well now it is available to everyone if needed for your (cuttings, brush etc.)

There never should be a problem with an overflow.
If any questions on this, please ask Andy, who will be able to help you.

Your Car License Plate Tags
Well, I found out something today by accident and thank goodness for a kind hearted soul.
Our license plate was expired from August 2010 when they should have been renewed, and today this
person asked me if I knew they were expired and I said no.
My husband and I proceeded to go to city hall here in Dade City to see if we did renew, after thinking my
husband had forgotten to place the new tags on, and, lo and behold we had not renewed them (I owe him
an apology.) I ask the clerk if they had sent out a reminder and they said that was a courtesy only and most
times they do send reminders and it is up to a car owner to come in on their birth date or just before to
renew in cases that one was not sent.
I did not know this was their policy and had been receiving notices yearly until this past year.
We had to pay a late fee of $10.00 besides the license fee of $70.65. If we would have been stopped by the
law it would have been another $120.00 for the fine. So please, as a reminder. Check your tags to see if
you are current and even more difficult the tag was the same color as last years………….
I’m surprised no one here in the park noticed this and may be we should be more eyeful and kind hearted if
you do see anyone with expired tags and let them know.
Thanks, Phyllis

Yarn Hookers
Since November, there have been 10 lap quilts made for the residents of Royal Oaks Nursing Home.
These quilts were made by 3 of the group who are, Fran Nunes & Pat Smith, who are from the
Ramblewood Villages who come to our weekly get togethers and Phyllis Grossi.
The Home is so grateful for all of these donations and they tell me that all the residents are so pleased when
they receive these gifts.
The Yarn Hookers will be doing this every now and then as they get more quilts made and this is part of our
charity giving through the Women’s Club.

WOMEN'S CLUB CHILI FEST,
DEEMED A HUGE SUCCESS
On February 13, over 152 Soufhfork residents filled their clubhouse to overflow capacity to attend the
second annual Southfork Women's Club Chili Dinner.
The Women's Club club sponsored the event and the Men's Club helped by setting up the tables,
acting a waiter’s and then helping with the cleanup.
The first event of the evening was an auction in which SF resident Jim Morvatz, masquerading as an
auctioneer, sold 25 items donated by local businesses for the occasion. Many residents were able to
make some fantastic money saving purchases as the auction progressed. One of the elder statesman
from the park (Chuck Stowe) was surprised when a teddy bear sized stuffed horse, donated by Wells
Fargo Bank, was given to him by the Auctioneer to honor his first job as being a driver of a Wells Fargo
Stage Coach (or so the auctioneer had been told). The auction raised over $350 which will be used by
the Women's Club to fund donations to the many charities that the Women's Club supports.
Dinner consisting of bowls of piping hot chili, salad, bread, drinks and dessert were then served and
enjoyed by the attendees.
The main event of the evening then started when 3 couples took the stage to be introduced by the
Master Of Ceremonies for the evening, Craig Whitbeck. He explained the rules of the game to Jean &
Harvey Barber (married 5 years) , Diana & Bill Stricklen (married 18 years) and Rhoda & Rene Beunier
(married 62 years). The ladies then left the stage while the men anwered questions posed by the MC.
Then the ladies returned to the stage to try to answer the same way as their husbands. After that the
Men were taken offstage and the situation was reversed. Many laughs followed when some of the
contestants tried either successfully or unsuccessfully to match their mates answers. A panel of judges
(Honorable Marvin Dye, Vivacious Dee Martin & Terrible Tom Geyer) calculated the scores and after
much dicussion between the group awarded 1st Prize to Bill & Diana Stricklen, which were presented a
bouquet of flowers by Phyllis Grossi (who had written the script for the game). The other contestants
were also awarded prizes for their participation in the event.
During the evening Marielle Quain, President of the Ladies Club, drew names from the admission
tickets and awarded many door prizes to lucky attendees. Mrs. Quain also thanked everyone from the
park who had helped cook and in some way had helped prepare for the event.
All in all everyone had a great time for a good cause!
