MAINTAINING CURRENT RELEVANCE
WITHOUT LOSING TOUCH
WITH THE PAST
I had the pleasure of attending PCMA’s
(Professional Club Marketing Association)
20th Anniversary Club Membership
and Marketing Conference in Nashville,
Tennessee last month. The Association
has over 800 members from across the
country, many of whom were in attendance
at the event. They represented a variety of
different clubs including ones both large
and small.
I looked forward to attending with the
intention of learning new sales and
marketing practices and what I could bring
back to advance Membership sales at the
Club. As it turned out, those interests were
overshadowed by an extremely important
issue facing the private club industry today.
How to stay relevant to incoming, generally
younger, members while remaining loyal in
action and activities to long-term Members.
It is quite the challenge.
While the Greatest Generation (Age 65+)
is still the dominant generation for most
club memberships, the youngest segment
of the Baby Boomer population turned 50
last year. According to Schulman Research
Center there 10 million Baby Boomer
millionaires, yet even further, Nielsen
shows that Millennials, or Gen Y (born
1980-2000), represent more than 25%
of the individuals with $2MM or more in
assets. This group is on target to be the
most wealthy and powerful generation to
date and as a result, the future of private
club membership.
2
CLUB EXPERIENCE
Consider this, Millennials have matured
in a totally digital age, consider golf as too
time consuming and participate in up to ten
other activities in their spare time. These
activities in many cases involve family
members, both parents and children, and
tend to be activities which places a heavy
value on the “time” vs. “quality” experience
quotient. Current studies agree that trends
are showing most affluent individuals,
while originally interested in finite goods,
are now downsizing, shedding belongings
and choosing to spend more money
on experiences that provide long term
satisfaction.
During the conference I met many
Membership Directors from private clubs
as far away as California. While I took away
an incredible amount of knowledge and
ideas about increasing Member satisfaction,
I have to say, many participants were
very familiar with and offered praise for
Longboat Key Club. Those who reviewed
our event calendar were highly impressed
and appreciative of the sheer number of
events we provide.
All that being said, I look forward to seeing
each of you as we begin another new Club
season and I encourage you to participate
in all the wonderful events, prepared
just for each and every one of you!

Every New Year starts out just that way–on a
new path with newly defined goals or redefined
old ones, and a determination to integrate
new habits and healthy options into our daily
routines.
Well, this year will be no different! However,
rather than focusing on a lengthy new exercise
routine, or a diet which will deprive us of
almost EVERYTHING, let’s keep it basic,
simple and doable.
Destress, declutter and detox. There is no
better way to start a new year than with a
clean slate as a baseline. A healthy detox not
only recalibrates your system to give you more
energy and stamina, it also revitalizes essential
capabilities and functionality of internal organs
and reinvigorates your Qi (Chi.)
You can start with a great yoga detox. Simple.
Roll out the yoga mat and reintroduce yourself
to some basic yoga poses that will stimulate
your circulatory, digestive, and lymphatic
systems, and help you vacate some of those
toxins that have accumulated over the holidays!
The mental clarity and calming effects of yoga
are an added bonus.
Here is a simple routine to get you
started:
•
Wide-Legged Forward Bend
•
Revolved Chair Pose
•
Three-Legged Downward-Facing Dog Pose
•
Revolved Triangle Pose
•
Locust Pose
•
Plow Pose
•
Bound Headstand
•
Spine Twist
Detox with some mood altering aromatherapy
sessions. Whether done in the ambiance of a
spa or in the familiarity of your own bath, add
some essential oils to your relaxation sessions
to remind yourself to “stop and smell the roses.”
Essential oils can be consumed in three basic
ways, through inhalation, direct application to
10
CLUB EXPERIENCE
the skin on pulse points or by ingesting them.
Start slowly, perhaps with some lavender on
your wrists at bedtime or peppermint and
lemon tea after a meal.
Detox mentally by decluttering your space.
There is nothing better or more appealing than
new spaces. They spark our imagination, offer
us opportunities to express ourselves in new
ways and serve to showcase our more personal
sides to the rest of the world.
Take a good look at the spaces you frequent
the most on a daily basis, where routine sets
in and things become almost invisible due to
our constant awareness of them. Get rid of
items and products you no longer use, serve
no intended purpose for you at this time or are
simply remnants of past escapades. Make room
for new experiences and beautiful things.
Change your sheets, take down your wall art
and open the windows allowing fresh breezes
to flow through. Get rid of those old pillows,
the favorite pair of shoes you have not worn in
a year and the jewelry boxes that are stacked in
a drawer. The crisp sheets and blank walls will
inspire you to draw new things into your life,
as reminders to focus on your new intentions
and goals.
Detox does not necessarily imply an extreme
diet devoid of everything other than basic
nutritional sustenance, it is a good time to
give your body a break, and research dietary
detoxes that target specific areas of personal
health. A detox could be a general cleanse over
a weekend, or a more extreme focus on liver
or lymphatic purification. Whichever is right
for you, do it with the best of intent and find
happiness in the fact you are really nurturing
your body and saying “I care.” As always–
once you have invested the time and effort
into eliminating toxins from your body, don’t
rush to replace them! Look at habits which no
longer serve you well and eliminate them from
your life.
Make room for the new in this happy and
healthy start to the New Year! - Sandra Rios,

We all wonder what the New Year will bring–good fortune
and prosperity, new horizons to explore and new circles
of friendship we hope will evolve. For centuries people
have sought to predict the future through many methods of
divination and some have certainly stood the test of time!
Tarot cards are a very popular method of prediction which
has its roots in ancient Egyptian wizardry and wisdom
and the reading of Tea Leaves goes as far back as the 17th
century. Whether fact or fancy, either method presents a
way to enjoy a fun-filled afternoon of mysticism and mirth
with friends.
THE TAROT
With roots that go back to ancient Egypt, the Tarot is
believed to be a book which preserved the magical wisdom
of the Egyptian culture through the occult nuances encoded
in the cards.
It is highly probable Tarot cards were part of the magical
lore surrounding the Knights Templars. In order to avoid
persecution it is believed they concealed philosophical
messages and hidden meanings into the symbolism that
is displayed in the cards, which eventually turned into a
device for amusement and even gambling.
The Tarot is at the foundation of Rosicrucian symbolism
and possibly the very book of universal knowledge which
the members of the order laid claim to.
Many symbols appearing in the Tarot deck have Masonic
lineage. A numerologist will also find important relationships
within the design of the cards. If you are a Qabbalist, you
will be drawn in by the sequencing of the cards.
The designs of the 22 cards in the Major Arcana can be
traced back as far as 1440, when the first known deck
appeared in Italy and were thought to have been created
as a game for noblemen. Three decks called the “Visconti
Trumps” are generally regarded as the “forefathers” of the
decks that are widely available today.
Centuries later the cards morphed into a tool of divination
in 1781 with the writings of Antoine Court de Gébelin. He
believed the cards contained mystical knowledge which
had been purposefully encoded in the symbolism of the
designs.
The first account of divination through the use of cards is
seen in 1770 when a book was published that exposed the
divinatory meanings of cards. This belief was tested when, in
1799, the Rosetta Stone was discovered and the translation
of the hieroglyphs contained on it did not offer any support
of the theory that the Trumps hailed from Egypt.
Nonetheless, the belief endured and in 1857 with the
introduction of the idea that the nomadic Gypsies were
thought to be descendants of Egyptians, the fact that they
14
CLUB EXPERIENCE
carried the deck with them on their travels through Europe
validated the general thought of the origin of the Tarot.
In the nineteenth century, an occultist known as Eliphas
Lévi developed a correlation between the Tarot and the
Kabbalah, which is a body of mysticism embraced by the
Hebrews. This generated a new belief that the Tarot perhaps
had its origin in Israel, and the spiritual message of the Tree
of Life was encoded into the symbols.
Since that time, the Tarot has been linked to most every
mystical or occult belief system or religion known to
mankind. The Tarot is comprised of archetypal images
that cross linguistic, cultural, geographical, and temporal
barriers.
Today's Tarot card designs reflect modern trends of
culture, religion and philosophy. There are hundreds of
interpretations, and more are being conceived every day.
The diversity of the styles allows Tarot Readers to choose a
deck that suits their personal style and the temperament of
the subject.
TEA LEAVES
Tea leaf reading, or fortune-telling by tea leaves, is also
called tasseomancy, tasseography or teomancy. The name
tasseomancy comes from the Arabic word ‘tassa,’ meaning
cup and the Greek word ‘mancy,’ meaning divination. It is
believed that the art of tea leaf reading had its origins in
Asia, the Middle East and Ancient Greece.
Tea leaf reading began to grow in popularity during the
1800’s as a way of fortune-telling popular among the
nomadic gypsies that made their way throughout Europe.
It references the symbols and the patterns formed by the
residue of tea as a means of predicting one’s future.
Typically, the tea should be drunk in a light colored,
porcelain cup with a handle, a wide brim and smaller
bottom, matched with a white saucer.
It requires the seer to use their intuitive knowledge and
clairvoyant abilities to interpret the designs that appear,
and the formation of the tea leaves.
Learning the basic shapes and symbols is fun, and not
difficult. This is still a popular form of divination in Ireland,
Scotland, Canada and the USA. Tea leaf reading is still today
classed as an art of the Romany Gypsy.
Begin with loose leaf tea such as Earl Grey, English Breakfast
or Darjeeling. These are teas that have larger leaves and
little dust.
Always brew the tea in a pot and then pour into the cup.
The subject of the reading should drink the tea until there
is about one inch or so left in the bottom of the cup while
thinking about the issue that is in question.
CLUB EXPERIENCE
15
Holding the handle in the left hand, with a starting position facing the heart, swirl the tea around to the left three times,
stopping the motion when once again facing the heart. The tea cup is then up-turned onto the saucer. Some tea leaf readers
ask that you tap three times on the bottom of the up-turned cup before turning the cup and its contents over to them.
Typically, a reading is started from the rim, which presents the immediate future. Directly under the handle relates to the
subjects immediate situation. The leaves on the side of the cup represent the past and those on the bottom, the far past. Some
readers use the saucer as well to explain events further for the subject of the reading. - Sandra Rios, Director of Marketing
and Communications

Intelligence and Intrigue on Longboat Key
Meet Our Author, Dr. Patricia Gussin
Q
It is no surprise that people would
frequently ask about the transition
from medical professional to author.
Can you share with us some of the
key moments that paved the way for
this evolution?
A
My early days in medicine were very hectic with small children, trying to
balance career and family. Only later when my life leveled off a bit with
kids off to college did I start to reflect on those chaotic and sometimes
traumatic times. And that’s what inspired me to try to re-create them in
a fictional format.
This season our Book Club will welcome a number of intriguing and interesting authors, and
we are pleased to present this Q&A with our January author, Dr. Patricia Gussin.
Q
Given the body of work you have
published thus far, do you have a
favorite, and if so, what makes it so
special to you?
A
My last novel “After the Fall” brings full circle the re-creation that I began
in my first “Shadow of Death.” My protagonist starts as a medical student
and in “After the Fall” she becomes a pharmaceutical executive, much as
I did. All the elements in this four-book series come together in “After
the Fall”
A New York Times and USA Today best-selling author, Dr. Gussin has a varied background which
includes a medical practice and medical research as worldwide vice president for a leading
healthcare company. Both business woman and mother, she enjoys family life with seven
children and her husband, Dr. Robert Gussin. Dividing time between residences in Amagansett,
New York and Longboat Key, she and her husband also own and operate two vineyards in
Q
You were part of a large family, and you
and your husband have raised a large
family. How has family life influenced
or directed your creative energies?
A
I have a lot of family dynamic experience and I have used it extensively
in all my novels. No matter what the plot, the emotional realism comes
from a diversity of real life encounters. In family. In medicine. And at the
intersection of both.
Q
Do you think everyone has an “internal
author,” or is it something unique to
certain individuals? Do you anticipate
any of your novels evolving into film?
A
Every individual has a “story,” but writing is hard work and requires a
certain inspiration. As for a movie, there’s been talk of “The Test”, the
story of the family of a recently deceased billionaire and the distribution
of his wealth via a “test” embedded in his will. There are six adult children
and six parallel stories might be too much for a movie, but we’ll see.
Marlborough, New Zealand. Born in
Grand Rapids, Michigan, she is
a graduate of Aquinas College, Wayne
State University School of Medicine,
Columbia University Business School
MBA, and has an honorary degree from
Duquesne University.
The transition from medical professional
to author was a natural progression,
with the intention of expressing personal
experience, moments of joy, sorrow
and enlightenment inherent to her own
life and insights into the tapestry of
complexity and simplicity that shape
both individual and collective lives.
Q
Will we see the continued experiences
of Laura Nelson in a fifth novel?
Q
The Hamptons are renowned for an
iconic lifestyle but also the wonderful
farms and vineyards that are such
an integral part of their beauty and
appeal. Did this have any influence on
your choice to become involved with
the vineyards in New Zealand? And
why New Zealand over other locations?
A
“After the Fall” is the fourth and last of the Laura Nelson series. In
the series, I have advanced her age seven years between books, and
now I think she’s a bit too old. However, I am planning to use her twin
daughters, both physicians, as my protagonists in my next novel so Laura
may reappear, but not as the main character.
A
We love the vineyards on Long Island, but during a trip to New Zealand,
we became captivated by the people, the stunning beauty of the country,
and the spectacular wines, especially the Sauvignon Blanc. Having
vineyards there gives us the perfect excuse for two visits a year.
Her first novel “Shadow of Death”,
was nominated best first novel by
International Thriller Writers. Spring
boarding from that accolade, four more
novels followed “Twisted Justice”, “The
Test”, “And Then There Was One”, and
“Weapon of Choice” Her most recent release
“After the Fall” is her sixth novel and the
fourth in the Laura Nelson series.
She and her husband are co-authors of
“What’s Next…For You?,” a book that
shares their transition from careers
to authors, publishers and vintners.

and Communications

We are excited our Book Club got off to such a great start in
2015. With presentations and discussions in November featuring
“Ghettoside” by Jill Leovy and facilitated by Alan Wilson, and
“The Lady In Gold” by Anne-Marie O’Connor facilitated by
Edna Hausman in December, our Book Club gained some great
momentum and set the tone for a fabulous start to the Book Club

There is a lot to love about Longboat Key. In fact, 60
years worth! As the Town of Longboat Key celebrates
its 60th Anniversary, we are reminded of the historical
past of the island we call home.
For hundreds of years before the island was settled,
two native tribes, the Timucuan and Caloosa Indians,
spent months enjoying the warmer climate and
abundance the island paradise offered. Shellmounds
containing artifacts from beachside picnics and fish
fries show that these were commonplace activities for
the tribal people.
The name “Longboat” actually came about from the
type of boat that was able to navigate the marshy
waters and mangrove swamps surrounding the
island. It is commonly thought that Hernando DeSoto
and Juan Anasco visited the island in 1539 on one of
their excursions.
Longboat Key
Turns 60!
The island has welcomed homesteaders and been
home to many ethnicities over the centuries including
native Indians, Spaniards, Cubans and local pioneers
until the 1890s when winners of homestead grants
settled here on their own land. After the Civil War
these homesteaders came to the island, one of the
first being Thomas Mann and his sons. In 1891 the
elder Mann was awarded a homestead grant of 144
acres and one son received another homestead grant of
144 acres.
The island was used as a target range by the Army Air
Force during World War II. During the practice drills,
gates blocking entrance onto the island were closed as
the island was barraged with 50 caliber rounds. Once
the exercise was over, the gates were opened up and
traffic would resume.
The early 1900s saw modern development taking
place on the north part of the island, and the
John Ringling era began in 1920 when the iconic
businessman and entrepreneur purchased hundreds
of acres to build his Ritz-Carlton Hotel. Construction
on the hotel began between 1925 and 1926, but it
was never completed and after years of neglect was
finally torn down in 1962.
Right around that time, Arvida Corporation purchased
the land and eventually built the commanding
condominium towers which now line the Gulf of
Mexico, the first of which was Longboat Key Towers.
The building boom continued through the 60s and
70s, during which time the Town planned for a
population of about 26,000 residents.

LONGBOAT KEY HISTORIC MARKERS
Marker #1 is at Overlook Park next to the New Pass
Bridge. Coming from St. Armands Key, cross the bridge
and take an immediate left, right before the Chart House
restaurant. The marker is next to the pass and tells
about the Ritz Carlton Hotel, started in 1925 and never
finished.
Marker #2 is located at 2162 Gulf of Mexico Drive,
right next to the fire station, on the right-hand side. It
shares information about the farming community that
thrived on the Key until the hurricane of 1921, which
destroyed crops and covered most of the Key with salt
water.
Marker #3 is at 3960 Gulf of Mexico Drive just south
of Bayport condominium, next to a utility lift station.
This marker shares information about all the activities
in the Gulf from Spanish galleons and Indian canoes
starting in the mid-1500s, through the Civil War years,

Marker #6 marks the location of Longboat Key’s first
home, which was in the area of Broadway. It was a
thatched shack built around 1882 by Thomas Mann, a
Civil War Veteran from Indiana. Opposite 631 Broadway
is a marker telling of the concrete block house built
by attorney, John Walters in the early 1900s which is
still standing. It is now owned by Longboat Pioneer
Helen Holt.

to Jeff LaHurd, historian and author, and Tim Field, son of the late developer Herb
Field, speak about the history of Sarasota and Longboat Key. $50++ per person.
Marker #7 is farther down Broadway, just north of
the dock. It tells of the covered Town dock that was
destroyed in the hurricane of 1921. Ships from Tampa
landed there to discharge and pick up passengers
who stayed at the hotel, another block house, which
is still standing. The ships continued south to Corey’s
Landing and Sarasota where they picked up fish and
produce and returned to Tampa the next day.

rich history that is woven into the fabric of our island
paradise. The Town of Longboat Key in conjunction
with the Longboat Key Historical Society erected seven
historic markers at various locations throughout the
Key. Enjoy your explorations!
Marker #5 is at 4800 Gulf of Mexico Drive, at the
beach access on the Gulf. It describes the island’s use as
a target range by the Air Force and speaks to the Coast
Guard patrolling the beach at night.

Some of our favorite golf flicks through the years...
A timeless game is the perfect subject for timeless and classic films, so, as golf goes, there are certainly a few flicks that you
will enjoy whether you are a die-hard competitive type or just a player who wants to get out on the course to enjoy nature.
These classics will bring a smile to your face, if not for their honorable emulation of the game then certainly for the irony and
unpredictability that each of us experiences out on the course on any given day.
So, if it is a rainy day and the course is closed, you can still indulge in and relate to, some of these great golf experiences, as
presented on the silver screen. - Sandra Rios, Director of Marketing and Communications
West of Broadway, 1926 “Starring Priscilla Dean, Arnold Gray, Majel Coleman
and Walter Long”
One of Hollywood's earliest, if not the earliest golf films, this 1926 comedy/romance
film, was created by one of Tinseltown's notable silent film producers. When Wyoming
rancher Bruce Elwood wants to attract tourists to his golf club and resort, he entices
a well-known golfer to visit his club, only to find out that Freddie Hayden is, in fact,
a woman. The tactic works, but alas! All the ranch hands would rather play golf
than work!
The Caddy,
1953 “Starring
Dean Martin,
Jerry Lewis and
Donna Reed
with cameo
appearances
by Ben Hogan,
Sam Snead
and Byron
Nelson”
This movie from 1953, stars Jerry Lewis as a golfer who
discovers he is afraid of crowds. Trying to make his way, he
becomes an instructor that helps Dean Martin gain fame
as a pro golfer... and they wind up as a comedy team in
the end.

Follow The Sun, 1959 “Starring Glenn Ford”
The Legend Of Bagger Vance, 2000 “Starring Matt Damon and
Will Smith”
A life story about Ben Hogan–this is a sappy sports movie where the
fallen hero rises like a phoenix, overcoming all odds to be triumphant
in the end. Predictable, but a classic!
A touching story of triumph over life’s many obstacles and
finding one’s way through life, a story about personal journey and
fulfillment. A film for golfers and those with a soft spot for tenacity
and perseverance.
Caddyshack, 1980 “Starring Bill Murray, Chevy Chase, Ted Knight
and Rodney Dangerfield”
The ultimate classic comedic film, which just happens to take place on
the golf course, will leave you with aching ribs and punchlines that will
live on in perpetuity. Given the talent line-up, this movie is as good as
it gets.
This 2001 sports drama portrays a young boy’s summer
job as a caddy at an exclusive country club. As he
learns valuable life lessons regarding the elite element
of society, he sets his sights on becoming a great golfer. A crash course that relates to the game as well as life in general.
Tin Cup, 1996 “Starring Kevin Costner,
Cheech Marin, Don Johnson and Renee Russo”
Laughs, drama, and romance provide all the ingredients
for an unforgettable movie, when a golf lesson leads to,
well, a lot of action off the course. A fun and enjoyable
movie for a Saturday night.
Bobby Jones, Stroke of Genius, 2004
This tribute to golfing legend Bobby Jones shares the story of
ambition and a drive to be the best golfer you can be. An inspiring and
timeless film.
Happy Gilmore, 1996 “Starring Adam Sandler,
Christopher Macdonald, Carl Weathers and Julie Bowen”
As one of Adam
Sandler’s
most
memorable
performances,
frat boys and beer
soaked
golfers
reign supreme in
this comedic golf
film. A cult classic
that has given a
generation of young golfers many a punchline.

A struggling golfer travels across the country, with the hopes of
making it big on the PGA TOUR.

Seven Days in Utopia, 2011 “Starring Robert Duvall

An adaptation of Golf’s Sacred Journey “Seven Days at the Links
of Utopia,” a book by David L. Cook. Beginning with a loss that
leads to a public meltdown for pro golfer Luke Chisholm, things get
progressively worse when he drives through a fence that is owned
by Johnny Crawford, a rancher and former touring golfer. Crawford
turns the tables and takes Luke under his wing, giving him new
insights into life.

Recreational boating provides entertainment, reduces stress and provides a host of
healthy opportunities to enjoy the great outdoors.
Boating Is More Affordable Than You Think!
Gas prices are reasonable and you can own or rent a boat at any number of locations
– for day trips or even longer excursions.

Relaxing with family and friends is as important as a daily meal or walking the dog.
Boating Will Give You Confidence
Instilling a child with confidence, or an adult with a sense of success, boating is a
rewarding activity at any age.
Boating Is Exercising
Boating is as much fun as it is good for your workout routine – you will not even think
of it as exercising!
Recreational Boating Is Easier To Learn Than You Think
Boating courses are easy to find and a fun activity to enroll in to meet new friends and
to develop common hobbies with current friends.

STONE CRAB TOSTADA
with Creamy Lime Vinaigrette
Salad Composition
1 lb picked stone crab
1 1/2 cups creamy lime vinaigrette
1/2 cup thin sliced red onion
1/2 cup of sliced avocado (Delray or Haas)
1 cup sliced fresh hearts of palm (see recipe)
1 medium ripe tomato sliced into half moons
(cherry or grape tomatoes halved)
1/4 cup picked cilantro leaves
1 head of little gems or Lolla Rosa greens
1/2 fresh lime
salt and black pepper to taste
4 or 6 each whole corn tortilla, deep fried to crispy
2 cups spicy red beans (see recipe)
Tostada Assembly
Place tomatoes in a bowl, season with salt and black
pepper and a squeeze of fresh lime. Add avocado,
red onion, hearts of palm and cilantro. Toss gently and
allow to set for 5 minutes. Add lettuce and creamy
vinaigrette and toss.
Spread a thin layer of warm beans on crispy tortilla.
Top with salad composition, and then top with stone
crab meat.
Creamy Lime Vinaigrette
1/2 cup fresh lime juice
1 1/2 cup olive oil
1/2 cup oaxaca cheese
1 tbsp dijon mustard
1 tbsp chopped fresh garlic
2 tsp fined chopped cilantro
3 tbsp pasteurized egg yolks
salt and pepper to taste
Spicy Red Beans
2 cups dried red beans (washed)
5 cups chicken stock
1/4 cup diced yellow onion
1 tbsp chopped garlic
2 tbsp olive oil
2 tbsp poblano pepper chopped
1 tsp jalapeno diced
2 tbsp a dark rich dry chili powder
1 tsp ground cumin
salt and black pepper to taste
2 tbsp cilantro leaves chopped
Method
In at least a 2 quart saucepot, add chili
powder and cumin. Place on medium
heat and allow spices to dry roast for
a minute or two. Do not allow to burn.
Add olive oil. Then add onion, jalapeño
and poblano. Cook onions and peppers
for 2 minutes stirring on medium high.
Add and stir in beans. Then add 4 cups
of chicken stock. Reserve 1 cup chicken
stock as you might need during cooking
beans. Bring to boil and then allow beans
to simmer for 2 1/2 hours, until beans
are fork tender. Add reserve stock as
needed. Once beans are tender, place in
a blender or with a food processor, pulse
beans several times until bean mixture
becomes chunky and creamy.
In a blender place egg yolks, mustard, garlic,
1/4 cup Oaxaca cheese. Blend and slowly drizzle in
olive oil. Allow to emulsify. Blend in cilantro and lime
juice. Season with salt and pepper. Fold in remaining
Oaxaca cheese.
