The association between mustard and Meaux, a town 41 km east of Paris, is the result of ecclesiastical
history and geology. The city has been a religious center since the seventh century, when Saint Faron
founded a monastery on the banks of the Marne River. The link between mustard making and religious
life was forged when Charlemagne charged monks with growing mustard seeds. In addition, the
countryside surrounding Meaux is rich in the kind of silaceous rock needed for mill stones, which led
to the creation of hundreds of mills in the area. By the 17th century, Meaux boasted numerous mustard
factories. In the 19th century, J.B. Pommery, a mustard merchant and mill owner, was fortunate enough
to acquire the Chanoines’ secret mustard recipe. It is this recipe, almost lost in the upheavals of the 20th
century, that was reintroduced by the Chamois family in 1949. Since then, the family business, now in
its fourth generation, has focused on promoting the classic mustard while introducing a variety of
successful new recipes.

Gingerbread Mustard
This mustard marries the two specialties of
Dijon: mustard and gingerbread (literally, “spice
bread,” because the gingerbread
of Dijon contains no ginger). This
smooth mustard works especially

Amora traces its roots in Dijon, the center of French mustard-making, back to 1703, but the company
didn’t really take off until 1934 when new industrial techniques married with a respect for traditional
recipes, plus astute advertising campaigns, made Amora the most popular mustard in France.

Dating back to 1899, Savora is a condiment made

The Cave de l’Abbé Rous is first and foremost a producer of wine. It takes its name from the abbé
who, at the end of the 19th century, first commercialized Banyuls wine in order to raise money to
construct a church for the village. Today, the Cave relies on 750 vignerons and their 1150 hectares of
vines for its wine.
Banyuls Wine Vinegar
Banyuls is one of France’s famous vins doux,
sweet wines drunk in apéritif or as a dessert
wine. It is made principally from the grenache
grapes that grow in and around Banyuls-sur-mer,
where the Pyrenées descend into the
Mediterranean. The vinegar that is made from
this wine is aged for six years in oak casks and
retains all the wine’s qualities, with hints of nuts,
licorice, coffee, orange peel, and vanilla. It mixes
well with nut oils. Its natural sweetness also
makes it an good choice for deglazing rich dishes
like sautéed duck or foie gras.

PHILIPPE GONET VINS ET VINAIGRES
The town of Arbois, in the Jura mountains, was home for many years to Louis Pasteur; it is also the
capital of vin jaune (yellow wine) production. It is here that in 1994 Philippe Gonet, after studying
Pasteur’s work on vinegar, was inspired to try producing vinegar from the region’s very special wine.
He starts with top-quality yellow wines, which he further ages in his 17th century wine cellar. His
vinegars, made without colorings or preservatives, have won accolades and are used by leading chefs
including Alain Ducasse and Georges Blanc.
Yellow-wine Vinegar
Vin jaune (yellow wine) is a specialty of the Jura,
the mountainous region between Burgundy and
Switzerland. Made from Savagnin
grapes, vin jaune is aged for more than
six years in barrels that are not topped
off as the wine evaporates. Within the
first two years, a layer of yeast forms
on top of the wine. This layer, called
the voile (veil), allows for controlled
oxidation; it transforms the structure of
the wine and gives the wine its
characteristic taste of nuts and spices.
(To this point the process is similar to that used to
produce sherry, but unlike sherry, vin jaune is not
fortified.) At the end of six years and three
months, the wine that remains (about 62% of the
original amount) is transferred to special 62cl
bottles, called clavelins.
It is from this very special wine that the yellowwine vinegar is made. The wine is aged at least
two more years in oak barrels before final
transformation into vinegar. The whole process
takes about 10 years. The vinegar is yellow,
slightly amber in color, with touches of green and
gold; its scent contains notes of walnuts and
curry. It makes an excellent accompaniment to
dishes of the Jura: chicken with vinegar or salad

with walnuts and Comté cheese. It can also be
used to deglaze dishes like frogs legs,
langoustines, shrimp, and grilled fish. It is also
amazing with sushis and sashimis.

Jurabalsam "Balsamic" Yellow-wine
Vinegar
A more concentrated version of the yellow-wine
vinegar, “balsamic” yellow-wine vinegar starts
from yellow-wine vinegar, to which is
added grape must. After aging in cool
cellars, the vinegar is concentrated and
reduced by slow evaporation. It has a
yellow ocher color, very ambered, light,
limpid, and slightly thick. With its
bouquet of dried fruit and walnuts, the
balsamic yellow-wine vinegar is great
for deglazing noix de Saint Jacques and
crustaceans, and smoked fish, as well as
in sorbet or ice cream.

Apple Cider Vinegar
Apple cider vinegar is touted for its health

Tarragon Vinegar
One of the four fines herbes, tarragon is a
mainstay of French cooking. This vinegar, which

Bénédicta traces its roots to 1911, when Prosper Eeckman, the owner of a vinegar and oil company in
Seclin (Nord) adopted this holy name, believing it would evoke the purity and quality of his products.

Béarnaise Sauce
Traditionally made of butter and egg yolks and

Hénaff Pâté
The famous Pâté Hénaff is a cupboard staple in
Brittany and beyond; the recipe dates back 100

Like its southern cousin bouillabaisse, Pérard fish soup has humble origins. During World War II, Serge
Pérard made fish soups from unwanted scraps scrounged at the end of the market in the fishmongers
hall of the northern Boulogne sur Mer, France’s leading fishing port. Over the years, he perfected his
recipe. In 1963, Pérard noticed that there was no seafood restaurant in nearby Le Touquet, itself a
considerable fishing port, so he opened Restaurant Pérard and placed at the top of the menu his fish
soup from the war years, improving it with ingredients, like saffron, that were unavailable during the
war. So popular was his soup that customers wanted to take it home. By 1964 Pérard had opened a
small factory to produce the soup. In 2001 the Restaurant Pérard was sold, but the fabrication of the
soup continued and diversified. In 2010, Pérard fish soup became the first in France to receive the
coveted “Label Rouge,” the red label bestowed on products of superior quality.

MOULIN SAINT MICHEL
The town of Mouriès in the Alpilles has been a center of olive oil production for centuries, thanks to its
geographical situaion. In 1780, there were 300,000 olive trees under cultivation and the town
numbered 15 moulins à huile (olive oil mills). The Moulin St Michel, at one point in its history known
as “le moulin moderne” (the modern mill), is situated at the heart of Mouriès in a building that dates

The Camargue, a flat marshy region just south of Arles formed by the Rhône delta, is famous for its salt

Formed in the 1960s from the merger of two local farmers’ cooperatives, Cavac has played a major role
in the development of the agricultural economy in the Vendée, a department in west-central France, on
the Atlantic Ocean. Today it is one of the leading agricultural cooperatives in France.
Mogettes from Vendée
Awarded France’s coveted “Label Rouge” in
2010, this small shiny white kidney-shaped bean
is tender and melting, with a
thin skin. It figures
prominently in dishes of the
Vendée region, such as
jambon-mogettes (ham and
white beans). Like other white
beans, it is good with lamb and
sausages and even with
seafood. It is also good served simply in a salad.

Green Flageolet Beans
First produced by Gabriel Chevrier in 1872, these
small thin somewhat flattened beans are

In the late 18th century, a disease hit silkworms in Ardèche, a region in the Rhône-Alpes, where the
abundant mulberry trees had nourished the silkworms and made Ardèche a principal supplier of Lyon’s
silk industry. It was at this moment of economic crisis that Clément Faugier turned to another of the
region’s trees, the chestnut tree, for salvation. In 1882 Clément Faugier created at Privas the first
candied chestnut factory. Next came the special recipe for chestnut spread, as a way to use the extra
bits and pieces of candied chestnuts. Today Clément Faugier remains a family business and produces a
broad range of chestnut products, all of which are produced without additives.

Chestnut spread, also known as chestnut jam,
goes by various names in French: confiture de
marrons, confiture de chataîgnes, and crème de
marrons. Clément Faugier’s recipe for chestnut
spread is exceptional for its inclusion of crushed
pieces of candied chestnuts. Because of its thick
and smooth texture, itt is excellent on toast. It
also goes well with yogurt, crème fraîche, or
fromage blanc and is ideal with waffles and
pancakes.

Maielen Noblia, of Biperduna, is one of the 170 independent pepper growers in and around the Basque
town of Espelette. Piment d’Espelette is a product with and AOC label, which means that growers
must adhere to very strict regulations with regard to methods of production. For example, the pepper
must be grown in a precisely defined geographical region, it must be harvested by hand during a
prescribed period, and and it must be sorted, cleaned, and put to dry within 48 hours of harvest. To
these very demanding rules, Madame Noblia adds her own strict standards, the result of her own
passionate views about responsible stewardship of the earth. She has no choice, she says, considering
the amount of pepper she and her family consume. Her personal recommendation: Espelette pepper
sprinkled on goat cheese.
Espelette Pepper
These peppers, known locally as ezpeletako
biperra and botanically as Capsicum annuum,
variety: gorria are intense but not too
hot. On the Scoville scale of heat,
they have value of 4, placing them
between ancho peppers and chimayo
peppers.
Espelette pepper is an essential ingredient in
Basque cuisine, for example in piperades, veal
stew (axoa), and chicken à la Basquaise, but it
can be used in mayonnaise, vinaigrette, and many
other dishes as well. Its rich reddish-brown color

At the end of the 19th century in Lyon, Léon Voisin used his expertise in coffees and teas to found a

Montpellier has a tradition of candymaking that dates back
to the Middle Ages, when Jacques Coeur unloaded from his
boats in the Port de Lattes products from the Far East,
including arabic gum, a natural gum which is the hardened
sap taken from two species of the acacia tree. That together
with the licorice native to the Mediterranean gave rise to a
whole range of gum balls and licorice candies.
Candymaking flourished in Montpellier for centuries. In
1939, there were still six confiseries in Montepellier, among
them one created in 1890 by Monsieur Chabernac and
another created in 1923 by Léon Auzier. The two companies merged in 1975 and the company is now
the last remaining candymaker at Montpellier to produce the traditional candies.

Chabert et Guillot is based in the town of Montélimar, which has been the capital of French nougat
making ever since the first almond trees were introduced into the Vivarais region in 1650.
In the first half of the 19th Century, Alexandre Chabert, a pâtissier in Montélimar, began to make nougat
as a complement to his traditional pastries. Over the succeeding years, his son and then his grandson
shifted focus to the production of nougat for end-of-year festivities (nougat being one of the traditional
13 desserts of Christmas in Provence), and to take advantage of the growing tourism in the area. Who
could resist a stop for nougat in Montélimar, located right on the N7, the autoroute that took
vacationers from northern France to Provence?

Au Pierrot Gourmand was the name taken by candy maker Georges Evrard for his candy shop in the
Marais section of Paris in the 1880s. In 1916, Evrard opened a candy factory at Ivry-sur-Seine, and in
1924, he is said to have invented the lollipop, adding a stick to the traditional sucre d’orge so that
candy lovers could enjoy the sweet without dirtying their hands. His lollipops became enormously

In 1825, M. Darcet, a pharmacist in the spa town of Vichy, created the first pastilles of Vichy by
extracting minerals from the town’s famous thermal waters and mixing them with sugar and natural
mint flavors. Originally molded and cut by hand, by 1856 they had attained their now-famous
octogonal shape. In the nineteenth century, the town boasted a dozen independent pastille makers. In
the mid-20th century the production was mechanized, and in 1973 the Société Nouvelle des Pastilles de
Vichy (SNPV) was created through the merger of a number of smaller pastille-makers.
Pastilles de Vichy
A favorite of the Empress Eugénie, wife of
Napoleon III, the octogonal pastilles were

In 1898 a young apothecary, Noel Perrot-Berton, was challenged by a railroad executive to invent a
drink – without alcohol – that would quench the thirst of the stokers who toiled in the heat. The result
was Antésite, which gets its name from the Latin ante (against) situm (thirst). More recently, the
company broadened its range with the acquisition of Noirot, a company specializing in the fabrication

In 1720 in Grenoble, Mathieu Teisseire created a distillery specializing in drinks based on fruits and
