Colony Cove Medical Loan Closet
The Colony Cove Medical Loan Closet is open on an “on call” basis. If you are a resident
of Colony Cove and have need of a medical device (walker, knee walker, crutches, etc)
Contact one of the volunteers listed below.
There is no charge for the use of equipment, however a deposit is required. The deposit
will be returned when the article is returned. And cash donations are always welcome.
These donations help us to replace worn items.
We ask that you return the item clean and if possible it should be returned within 60
days. If you need the item for a longer period of time please contact one of the volunteers.
We also ask that if you know you will be needing something from the CCMLC that you
call before you need it. Our volunteers are not always available at the last minute. We are
available on Sunday, strictly on an emergency basis.

The community looks less crowded and the highways have less backups, so it must
be spring time. We have issues we need to address. There has been personal trash along
with hazardous waste (paint cans) disposed of in the Manatee Hall trash area. This trash
collection area it for trash accumulated in Manatee Hall only. No personal trash is to be
placed there. We have trash pick up twice a week so there is no need to place personal
trash there. If it will not be picked up from your home it will not be picked up there either.
To make matters worse there is even dog waste thrown there. A resident who had just
thrown his dog waste in the trash area was confronted and his response was “what I am
supposed to do with it”. He was advised to take it home to which he replied “no way”.
Maintenance workers will not remove these droppings so they just stay there and start
to smell. We are fortunate enough to live in a community that permits pets but if residents do not properly dispose of their waste, that privilege could be revoked. Only we
as residents can do detrimental things to harm ourselves. We are looking to see if a dog
waste container can be located around Manatee Hall and Friendship Hall without being
a detriment to area residents.
We are seeking suggestions on how to increase our HOA membership. We hear excuses
like “you can’t do anything for me”. Although we, as an HOA, cannot directly do specific
things we meet with management every month to talk about issues and work on ways
to improve life in Colony Cove. We are your only advocate with management. Numbers
carry more weight. This community of 2207 home sites has HOA membership of only 460.
This low percentage of membership doesn’t carry much weight when we try to negotiate
various issues.
A problem came to the attention of the HOA and Management. A vendor at the Free
Health Fair promised a resident a “free” procedure which the resident had. Several weeks
later the resident received a bill for $1700.00 dollars. The matter was finally dropped with
no cost to the resident and Management will no longer permit this vendor at the Health
Fair. Any additional residents who have been victimized by this vendor are urged to call
Ashley at the office.
Residents have asked where the money from the can recycling goes. We have a ledger
called the ”capital account” which is where those funds go. This fund is used to maintain
things in our halls. We replace burnt out coffee pots, (we average two per year at a cost
of nearly $200.00 each) “lost” kitchen utensils, cabinets we purchased in Manatee and
Friendship Halls to store everyday items. These items include toilet paper, trash bags, and
paper towels so our hall monitors have access to these items immediately when needed.
We use this fund to do other things too numerous to mention. In the year 2014, the can
recycling generated $1,664.00 dollars. This year we have generates YTD 780.00. We thank
you for your cooperation in our recycling and we thank the residents who volunteer to
collect and crush the cans.

of the Colony Cove Office we visit and hand out information, along with gifts,to the
new residents. We are so delighted to be part of this wonderful community and wish

The HOA needs your help. It has been noted that the halls have been left in an untidy
manner. If you notice these issues please let a HOA member know. They need to be
made aware so they can find a solution. Each Hall has a hall monitor; Harmony Hall, Tom
Ricker. Ellenton Hall is monitored by Brian Murphy. Manatee Hall and Friendship Hall are
monitored by Russ Jeanes, the Pavilion is monitored by Ed Sparkman. Bayshore House
is monitored by Candy Candrilli. Any member of the Board may be notified of misuse.

The Lakes Club Calendar of Events
The Lakes Club Calendar of Events is open to all Colony Cove residents. Our theme for
the Fall 2015 and Spring 2016 Season continues to be “Exploring the Florida Around Us”.
We use the Colony Cove bus for most of our trips. Listed below is our Fall/Spring schedule
with details on our October trip.
Wednesday, Oct. 21st- Marie Selby Botanical Gardens, Sarasota. Senior group admission
price $15.00 (self-guided tour). A 15 acre tropical Bayfront garden oasis. A world leader
in the study and conservation of plants, particularly epiphytes (plants adapted to live in
the tree canopy) including orchids,bromeliads and ferns). The rainforest garden is one of
the only elevated rainforest displays in the world. Walk through the butterfly garden and
the botany museum and library. Outdoor cafe dining available or bring own picnic lunch.
Optional guided tours for an additional $5.00. Leave on C.C. bus at 9:15, return to C.C. by
3:00P.M.

Colony Cove Friendly Social Club
I hope you are reading this article while relaxing on the beach watching dolphins swim by or gazing at
the beautiful flowers all in bloom around the pool. This is Summer in Florida but it certainly doesn’t mean
The Friendly Social Club is “taking it easy”!!!
This past month we celebrated Mother’s Day at the pavilion eating enormous steaks and enjoying
music on the river. Our beautiful Mothers ate for FREE and received a pot of flowers to plant when they
got home. The FSC Board sponsored this event and we all would like to thanks all our other volunteers
who helped make this party happen. We discovered that large tarps covering the pavilion allows us all
shade and a nice breeze to enjoy a sunny day. Thank you to all our men (plus Chris) with ladders and no
fear of heights who ventured to the top to tie it all down and then dismantle it later!!
Another Fun Night with games at Harmony Hall was held with Bob Sobon making hot dogs for all who
attended. These are FREE events for anyone in the park to come out and have a good time and meet new
neighbors. Thanks to Karen McInnis for planning all of them!! There will be NO more games nights until
Fall.
We also threw in a surprise dance at the end of the month to say goodbye to Spring and welcome in
Summer. Bob Sobon planned this and we were all entertained by the music of The Tropics. There was
lots of dancing being done and laughter to be heard. Thanks again to all who set up and cleaned up. We
just could not do any of these wonderful events without you!!
This month we look forward to our Father’s Day Dinner Dance. Pam Graham and Sandi Grove have
been planning a night to remember for all the Dads on their special day. Hickory Hallow will be catering a
delicious dinner with MP+3 providing the music for an evening of dancing. A raffle including scratch-off
tickets, gift cards and a TV are up for grabs for the lucky ticket holder. You do NOT need to be present to
win and can buy your raffle ticket on Saturdays at coffee. Dinner/Dance tickets are still on sale at Saturday
coffees so get yours before they are sold out. Dads get in FREE but you still need a ticket.
FSC will be very active all Summer with a dance on July 17th with “Sarasota Slim” providing great
music and Bob Sobon serving up sandwiches and chips to all who attend. All this for only $5 for the whole
evening. Doors open at 6:30. We will also have “The Accidentals” for a dance on August 12th. More
information on that will follow.
As always, we want to remind all members to wear their membership badges to all events including
each Saturday when we award $20 to 6 lucky members if they are wearing their name badges. Any new
residents of Colony Cove are invited, as our guests, to enjoy doughnuts and coffee at Harmony Hall between 7 and 9am. Our meetings are at 8:30. Membership is only $10 per person for the entire year. WHAT
A DEAL!!!

South Service and Hobby Club
We are taking our Summer break and will be in full swing in October.
Colony Cove South Hobby and Service club is a volunteer group,
gathering to promote friendship and share ideas and to help those in
need.
If you are a cancer patient and live in the park and would like our assistance or you know of one, please Contact Jan Belfield 941-722-6801.
We sell cancer bracelets made with cat’s eye beads representing all types
of cancer. All proceeds go to Colony Cove residents battling Cancer.
Other projects are Nursing Home favors, Ted E Bears for the Police and
Fire Departments, baby blankets, preemie hats for hospitals and mothers
in need. And scarves for our troops, lap robes, walker bags, adult bibs
for nursing homes and many more worthwhile projects.
We meet on Monday mornings at 9 AM at Friendship Hall. The first
Monday of the month is a business meeting and the others are busy
with many projects. No special skills are needed. Please come by and
see us. Join us in October.

Well another month has passed and it is time for us to get together again and find out what has happened to any of us over the past
month. Hope your month has been as quite as mine. We will gather in
Ellenton Hall starting around 10:45 am and chit chat and then decide
where we will eat. Anyone is invited to join us. We are a group that spent
our time years ago supporting the North Hobby Club, like making the
Deputy Teddy Bears for the Sherriff's department to give to children in
an emergency, but have given up doing any of that stuff because our
fingers are getting too stiff to hold a needle anymore. So other groups
have taken over these tasks and we just sit back and gab and go out to
lunch once a month to keep in touch with one another. So if you would
like to join us please come on out June 4th and meet with us.
STAR CLUB

June 16th the members of the Eastern Star Club will meet at a local
eating place to catch up on the local news of the area and of each other. Will decided at our May luncheon where we will go so that is why I
can not tell you now where it will be. Joan will call you and let you know
the time and place, so all you have to do is keep the date open and come
out and join us. See you on June 16th around the noon hour.

Aaaah, the wonderful, low humidity, tropical breezes......if only they would last throughout the summer! April and May have proven to be some of the nicest Florida months in
many a year. We had a few days of rain (and plan on more), and as summer approaches
with her sandy toes and wide brimmed hat, the steamier days will surely follow. We are
down to partial capacity in the park, but that doesn’t mean we can’t still have trips to the
beach, to some of the local gardens, or to a favorite fishing hole.
April’s and May’s Board meetings found themselves getting thinner and thinner as club
members once again hit the highway to return by Mothers’ Day with kids, grandkids, and
great grandkids. We did have enough for quorums at both meetings and are planning a
packet distribution (idea and form still in the works) for all those new and beautiful homes
coming in. Packet will develop over the summer and early fall in time for next membership
drive. President Gray has been working closely with the HOA’s Welcoming Committee and
has even “found his name added” to their committee roster.
On a sad note, the members of C C South Club express their condolences to Roy Bass on
the death of his wife, Madlyn. Madlyn had previously been on the board of South Hobby
Club as treasurer. She will be missed for all her contributions and friendship.
All 2015-2016 function dates have been set. The entertainment and menus will be
forthcoming as the chairmans are scheduled:

February 14, Sunday—Valentine’s Day Ice Cream Social

The Board is considering additional activities spattered throughout the year, and possibly
this summer and early fall for those of us who are permanent residents.
Our Annual Mothers’ Day celebration gathered at Cracker Barrel, SR 64E, Bradenton, the
Saturday prior to the “bigger” day. The men were outnumbered, and rightly so! Thanks to
Treasurer Bass for chairing this salute to moms. Only the Board knew what a surprise the
ladies would get (curious aren’t we....)
The days are getting slower, the traffic is getting lighter, and the days are getting
longer, but that doesn’t mean anyone in the park—whether club member, resident, or
guest—should miss out on our weekly, Saturday morning coffees. Bring your mug and a
$1.00 to enjoy donuts, old friends, and new acquaintances. The first and third Saturdays
of the month offer a chance at 50/50, so bring your coin/penny jar! Membership business
meetings have been put on hold until October when the Snowbirds come flocking back
to Capistrano....okay, Ellenton! South Club Board continues to meet monthly throughout
the year the first Tuesday, 9:30 a.m., at Bayshore House.

Camera Club
Greetings from your Camera Club. By the time you
read this we would have had our May 27th meeting.
A huge thank you to David Frayer of Uncle Snaf
Photographic Art for his Light Room presentation,
and our large turn-out for this class.
Thank you all who attended the Sunken Gardens
Field Trip and Lunch on April 15th. A fun time was
had by all with lot’s of photo’s taken.
A reminder: if you pick up the weekly East County Observer at Publix (free) you will find a nature’s
beauty contest each week. There is a monthly drawing for a $25. gift card and a grand prize winner in
October will receive a $5,000 flooring makeover.
The club will take a recess for June, July and August
returning on Sept. 23rd. Up coming classes will be October 28th, November 25th, and our annual club Christmas party on
Dec. 23rd.

Colony Cove Art Club
For those of you who are new to the park, the Art Club meets (during the season) every
Wednesday at 1:00 at Bayshore House for watercolor painting, or any media you choose.
Everyone is welcome to join us and try painting. We have a great time and we produce
some pretty great artwork! Each year in February or March we have our annual art and
photography show and sale at Harmony Hall where we exhibit our paintings and hopefully
sell a few things. Our membership for the full year is only $10. Please come and join us any
time. We now meet the first Wednesday of the month at 12:30 for our business meeting.
Painting will begin after the meeting.Hopefully all our members will start attending the
meetings so that they know what’s going on!
Our present officers are Barbara Hart, President; Fran Kain, Vice President; Carol Stephan,
Secretary; and Lucy Boucher, Treasurer. Cary Letsche will continue to be “workshop chairman” for the next season, and Pamela Turner is membership chairman.
We are always hoping for new members and will welcome you to the club. Please join
us there if you love to paint or even if you have never painted before and would love to
try it! We are very informal and beginners are always welcome. We have a limited amount
of art supplies available if someone wants to try to try painting without investing money
in all the “stuff” just to get going. We all work at our own level on any subject of our choice,
and it’s worth the extra effort to pack up your “art stuff” and get out of the house to paint
while we have fun and socialize! All of our members are very willing to help each other as
some are more experienced than others. We also have an extensive library of art books
that our members can borrow (No charge for that!).
Since the snowbirds have all gone north for the summer, we will continue to paint on
Wednesdays but will not hold regular meetings now until October. We hope to add some
new and exciting things for next season, so join in!

Harmony Hall Hobby Club
Suddenly everything has gone quiet, can’t think why! We miss them already. Some of
us are still here, still meeting every Tuesday at 9.00a.m., doing our own crafts, come and
join us.
We have many great craftswomen. When we do show and tell, many hand made items
are shown. Gen Wolf brought two necklaces, Marion Rockett with a necklace and matching
earrings made with purple stones, Marion is willing to show us how to make them when
she returns in the fall.
Arlene Gabriason showed some simple knitted pin cushions, and a cute coin purse
made out of a babies sock.
Pauline Green showed three tablecloths with colored weaving on Monk’s cloth.
Mary Wall made a purse out of a very long zip and some bead decorations.
De Griffin has painted plate, she is going to run a class later in the year.
Sue Grace showed and donated two lap robes that we are collecting and making for
local charities. So, if you have any yarn that we could use, we would be very grateful.
Barbara Sirois showed some of her purses and wallets, they are very nice, well worth a
look at.
Just a few of the things that we make, and we are always looking for new crafts to make,
and for classes that we may learn new skills. If you want to know what we get up to, join

Did everyone have a “BLAST” at the Pool Crawl/Poker Run ??? It was great fun for everyone!
The Penguin game has started back up and now we have 5 to find!!! Everyone can play,
however only members receive the prize. *REMEMBER to BRING the penguins back at
our monthly meetings – the first Sunday of every month. We have great activities coming up, new this year is our Murder Mystery Party “Colony Cove Trailer Park Tragedy”(where
everyone has their own Character to play and everyone is a suspect!) Our COSMIC Night
Light Parade is being held Monday Night due to Father’s Day on Sunday…. * Everyone is
welcomed at our events.

The New York State Club
Hard to believe the Winter season is at an end and many of our snowbirds have flown
north - - or gone by car and even the Auto Train. We wish them a safe trip home and a safe
return in the Fall.
Plans are already in the works for next year’s activities. Back by popular demand is a
Chicken & Biscuit Dinner in January 2016 and Kim Betts and the Gamble Creek Band in
February 2016. More info to come!

Colony Cove Ohio Club
Members of the Colony Cove Ohio Club met Wednesday, April 29, 2015. The Lipizzan
Stallions trip was discussed and all are looking forward to it.
The winner of the famous “Football” was won by David Shafer.
The winner of the “Ohio Buckeye Necklace” was won by Carol Collins.
A picnic to be held at the Colony Cove Pavilion this summer is in the making. A date
and time will be forthcoming.
Details are in the works for an early November “TURKEY TROT DANCE” to be held at
Harmony Hall.
The Ohio Club is inviting the Michigan Club for a night of fun and to view the game.
On Saturday, November 28, 2015 at Manatee Hall is the Michigan / Ohio Game or is it the
Ohio / Michigan Game
An “Appetizer-Pot-Luck” gathering will make for a pleasant evening and most-entertaining event.
Ohio Club meetings are held the last Wednesday of each month (too late for a notice
in the Breeze for the next months’ meeting), please remember you can always call to

Polish American Club of Colony Cove
Our traditional Easter meal was held on April 21st at 1p.m. at Friendship Hall. We feasted
on kielbasa, several varieties of pierogies, ham, hard boiled eggs with horseradish, traditional vegetables, and of course, sweet treats. We enjoyed the fellowship of our friends
as we celebrated a Polish Easter.
Please come and celebrate our heritage with us! We meet on the third Tuesday of the
month at Friendship Hall at 1pm until about 3pm, unless otherwise notified of a different
meeting place or a field trip for that month.
You don't have to be of Polish descent to become a member. We have members who
were once married to a Pole or had friends who were Polish and enjoyed the customs and
food. For whatever reason,come to a meeting/luncheon/gathering and join in the sharing and friendship. We learn more about our culture and heritage every time a member
contributes information, experiences and memories to the group. Please feel comfortable
bringing Polish items, photos, and yourself to our monthly gatherings.
Our gatherings will resume on November 17th at 1pm at Friendship Hall. We are now
making plans for our traditional Christmas meal and holiday celebration. We also have
plans to visit Port Manatee. If you have any suggestions for other field trips we can take,
please contact our president, Fran (Mularz) Kain (941-531-4667).

South Quilt Club May And June 2015
I accidently missed last month’s article for the Breeze so I am combining May and
June together this month. Sorry for the mishap.
Many of our Snow birds have left and are on their way north, we wish them a safe trip
home and a wonderful summer.
This past month the quilt club were still busy finishing up quilts that they had started
on their own with many different patterns. This month’s featured quilts in the Breeze are
sewn by Debbie which is all Flower Pots with some applique and another beautiful quilt
by Cheryl which is all Dog’s front and back, I love this quilt. And the last is the Bow Tie
quilt by Nora.
We also donated two Lap size “cheat” quilts to the Hospice in Ellenton. Once again the
materials that were used were donated.
If you would like to learn how to quilt, now is the time for you to stop by and learn from
all of us. Our group is at its lowest since many of our members are snowbirds so if you
would love to learn please come down and join us. If you are not joining because you do
not have a sewing machine you should know that we have a few loaners on hand so you
can certainly join our group. This past month we have four new members.
Would like to also remind everyone that we are always looking for donations of scrap
material or any type of sewing articles, we love to take donations. It’s amazing what this
group can create with scrap material. We received some already put together quilt squares
that just needed to be finished and quilted together this past month and, I am so sorry
that I forgot to get the women’s name that donated them to our group. We will finish them
and send them off to a good deserving home. If you have a donation please drop them
off at 315 Alkmaar Street or call and I will pick it up (722-5453). We would appreciate it if
you did not leave any materials or sewing notions at Barbara Clancy’s carport.
We meet every Friday at 9AM to 3PM at Friendship Hall. Many of us stay and have lunch
together. We are also extending our hours to Tuesdays between Noon and 4:00pm.
Remember our club is free there is no membership fee. So please stop by and visit with
us we all look forward to meeting you. Also remember that the Quilt Club continues all year
long, we still quilt for the summer months ie: May, June, July,August so please stop by if you
are interested in learning
On a final note we would like to send our deepest sympathy and condolences
to Barbara Clancy and her family in the passing away of her beloved sister, Linda
Egmond. Linda was also a long time quilting member and was such an inspiration
to all of us, her talents were never ending from quilting to painting.

Colony Cove Woodworkers Club
Fellow woodworkers, by the time your read this article I will be on my vacation heading out west
to see more of our natural wonders. I was remiss this season for not identifying any of our most talented members. Check out the
attached photos. Jim Kane has one heck of a lot of talent and patience. I sure hope his grandkids
appreciate all the time and effort.
Jim Kane, and his wife, Carolyn have been happy, contented Colony Cove snowbirds for 6 years,
and live at 3815 Countryside Drive here in Colony Cove. Each Spring, Jim and Carolyn return to their
home, which is in Fort Wayne, Indiana, so they can load up on hugs and kisses from their grandchildren.
Jim discovered a truly wonderful, relaxing pastime when he became a member of the Colony
Cove Wood Workers Club a few years ago. Jim likes that the club members and the club managers
are all a very friendly and supportive group. Everyone in the club is always ready and willing to
provide help, and give great advice and guidance with equipment and techniques to solve "project
problems".
Jim was lucky to have been raised in a woodworking environment at an early age. His father had
a fantastic basement workshop for wood and metal working. Back then, Jim gladly did his time by
sweeping up his dad's sawdust in order for Jim to learn a few woodworking skills along the way. When away from Colony Cove and the Wood Workers Club, Jim likes to search the Internet, old
wood workers magazines, and libraries looking for that next interesting project that would make
the next perfect gift to bring home for one of Jim's and Carolyn's grandchildren.
Jim also tries to find time to make wooden Remote Control Sailboats for himself so he can sail
them on a pond back home in Indiana.

Amateur Radio Operators (HAMS)
Do you have an Amateur Radio License or are you studying for one?
Are you interested in finding out what it takes to be a Ham Radio
operator? If so, come join us.
The Colony Cove Amateur Radio Club meeting was held on Saturday, May 2nd with 5 members present. The club meetings have been
changed to the 1st Saturday of the month. Our next general meeting will be held on June
6th at 1 p.m. in Harmony Hall conference room.
We held a breakfast meeting on May 9th at the Ellenton Cafe and plan to have another
breakfast meeting on June 13th at the same location at approximately 9:30 a.m. The
breakfast meetings are decided on at the general meeting.
A few members took part in the Florida QSO party on April 25th by operating mobile
from 5 different counties. This is a contest to see how many counties other operators from
other parts of the country and world can contact in the state of Florida. We operated for
5 hours and made numerous contacts via phone and CW. Those operating were Dana
(K1RQ), Ken (W1KEN), and Jim (W4ESL).
Some of the members attended a Ham Fest in Pinelias Park sponsored by the Glorious
Society of the Wormhole on May 23rd. We pick various Ham Fests to attend at our monthly
meeting and you are invited to the meeting if you wish to learn more.
Once again our general meetings are held the 1st Saturday of the month at 1 p.m. in

“29” ERS CRIBBAGE RESULTS
Another month gone. Getting into summer now and numbers are
falling with the migration north. If we end up going below 10 players
we may have to cancel out until September. During April we had some
of our players go over to Kissimmee for a tournament. They did pretty
good from what I hear. Maybe we will end up with State Champion one
day!!!! from our group. No 28 or 29 hands again this month. The Skunk
Pot will be put away until next season when our Northeners get back.
This makes it fair to our regular players when they get back. Hoping that
they all come back. Still looking for new players. Come and join us on
Friday afternoons at Harmony Hall. Start at 1:00PM. Sign in at 12.45PM.

How Now Brown Cow?
Take a frosty glass, add a few scoops of vanilla ice cream
and pour in ice-cold root beer. Galloping Guernsey, you’ve
got a Brown Cow, aka root beer float. Or find a new favorite
with these cool cows.
Spotted Cow

Load up your glass with chocolate chip ice cream and
top with chilled seltzer water. Grab some chocolate sauce
and drizzle to your heart’s content.
Tipsy Cow
Cinnamon-Apple Pork Chops
2 tablespoons reduced-fat butter, divided
4 boneless pork loin chops (4 ounces each)
3 tablespoons brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
4 medium tart apples, thinly sliced
2 tablespoons chopped pecans
In a large skillet, heat 1 tablespoon butter over medium
heat. Add pork chops; cook 4-5 minutes on each side or until
a thermometer reads 145°. Meanwhile, in a small bowl, mix
brown sugar, cinnamon, nutmeg and salt.
Remove chops; keep warm. Add apples, pecans, brown
sugar mixture and remaining butter to pan; cook and stir
until apples are tender. Serve with chops. Yield: 4 servings.
If you like pina coladas, start with coconut ice cream and
add splashes of light rum (go for it!) and pineapple soda.
Top with a juicy pineapple wedge.
Purple Cow
In goes the vanilla ice cream. Next comes chilled grape
juice. Far out.
Cantaloupe Chicken-Orzo Salad
Fresh Green Bean Salad
Blueberry Banana Cream Pie Recipe
2 packages (3 ounces each) cream cheese, softened
1 can (14 ounces) sweetened condensed milk
3/4 cup cold water
1 package (3-4 oz) instant vanilla pudding mix
1 cup heavy whipping cream, whipped
2 medium bananas, cut into 1/4-inch slices
2 teaspoons lemon juice
35 vanilla wafers
1 cup fresh blueberries
In a large bowl, beat cream cheese until smooth. Beat in
the milk, water and pudding mix. Fold in whipped cream.
In a resealable plastic bag, add bananas and lemon juice;
toss until bananas are coated. Drain and discard lemon
juice.
Line an ungreased deep-dish 9-in. pie plate with vanilla
wafers. Spread with half of the cream cheese mixture. Top
with bananas and blueberries. Spread with remaining
cream cheese mixture. Refrigerate for 3 hours or until set.
Refrigerate leftovers. Yield: 8 servings.
Pecan-Crusted Chicken Nuggets
1-1/2 cups cornflakes
1 tablespoon dried parsley flakes
1/2 teaspoon garlic powder
1/2 cup panko (Japanese) bread crumbs
1/2 cup finely chopped pecans
3 tablespoons 2% milk
1-1/2 pounds Boneless Skinless Chickenbreasts, cut into 1-inch pieces
1/2 teaspoon salt
1/4 teaspoon pepper
Cooking spray
Preheat oven to 400°. Place cornflakes, parsley and garlic
powder in a blender; cover and pulse until finely ground.
Transfer to a shallow bowl; stir in bread crumbs and pecans.
Place milk in another shallow bowl. Sprinkle chicken with
salt and pepper; dip in milk, then roll in crumb mixture to
coat.
Place on a greased baking sheet; spritz chicken with
cooking spray. Bake 12-16 minutes or until chicken is no
longer pink, turning once halfway through cooking. Yield:
6 servings.
4 cups fresh green beans, trimmed and halved
2 cups cherry tomatoes, halved
1 large English cucumber, seeded and chopped
1 cup fresh baby carrots, cut in half lengthwise
1 cup coarsely chopped fresh parsley
DRESSING:
1/2 cup olive oil
2 tablespoons lemon juice
1 tablespoon white wine vinegar
1 tablespoon grated lemon peel
1 teaspoon Dijon mustard
1 garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/4 teaspoon pepper
In a large saucepan, bring 4 cups water to a boil. Add
beans; cook, uncovered, for 3 minutes. Drain and immediately place beans in ice water. Drain and pat dry.
In a large bowl, combine the beans, tomatoes, cucumber,
carrots and parsley. In a small bowl, whisk the dressing
ingredients. Pour over salad; toss to coat. Refrigerate until
serving. Serve with a slotted spoon.
Yield: 12 servings (3/4 cup each).
TO MAKE AHEAD: Green beans can be boiled, chilled in
ice water and drained as directed a day in advance. Store
in the refrigerator
1/2 cup uncooked orzo pasta
1 snack-size cup (4 ounces) pineapple tidbits
1/2 cup fat-free mayonnaise
1/3 cup fat-free plain yogurt
4 teaspoons lemon juice
1 teaspoon minced fresh mint
1 teaspoon grated lemon peel
1 teaspoon honey
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups cubed cooked chicken breast
1/2 cup chopped celery
1/3 cup chopped sweet red pepper
1/4 cup chopped green onions
1 small cantaloupe, quartered and seeded
1/4 cup unsalted cashews
Cook pasta according to package directions.
Meanwhile, drain pineapple, re­serving juice; set pineapple aside.
In a small bowl,whisk the may­onnaise, yogurt, lemon
juice, mint, lemon peel, honey, salt, pepper and pineapple
juice until smooth.
Drain pasta and rinse in cold wa­ter. Place in a large bowl;
add the chicken, celery, red pepper, onions and pineapple.
Add mayonnaise mixture and toss to coat. Serve on cantaloupe wedges. Sprinkle with cashews.Yield: 4 servings.

Oat Pancakes with Fresh Berries
INGREDIENTS:
1 1/4 cups Quaker Oats
3/4 cup whole wheat flour
1/2 cup all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
3 egg whites, beaten
2 1/4 cups buttermilk
2 tablespoons cooking oil
2 tablespoons honey
Fresh berries (such as blueberries, raspberries or
sliced strawberries)
Honey or pancake syrup
In a large bowl, combine dry ingredients; set aside.
In a medium bowl, combine egg whites, buttermilk, oil
and honey. Add liquid mixture to dry mixture. Stir until
moistened (batter should be lumpy). Cover; let stand for
15 minutes to soften oats.
Pour 1/4 cup batter onto a hot, lightly greased griddle.
Spread batter into a circle about 4” in diameter. Cook over
medium heat for 2 minutes on each side. Turn over when
edges are set. Serve with fresh berries and syrup. Makes 8
servings (16 pancakes).
Chocolate Peanut Butter Cookies
(makes about 5 dozen cookies)
2 1/4 cups all-purpose flour
2/3 cup baking cocoa
1 teaspoon baking soda
1/4 teaspoon salt
1 cup (2 sticks) butter or margarine, softened
3/4 cup granulated sugar
2/3 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
1 2/3 cups (11-oz. pkg.) Peanut Butter & Milk Chocolate Morsels
PREHEAT oven to 350° F.
COMBINE flour; cocoa, baking soda and salt in small
bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Beat in eggs.
Gradually beat in flour mixture. Stir in morsels. Drop by
well-rounded teaspoon onto ungreased baking sheets.
BAKE for 8 to 10 minutes or until centers are set. Cool on
baking sheets for 2 minutes; remove to wire racks to cool
completely.
Aunt Frances’ Lemonade
5 lemons
5 limes
5 oranges
3 quarts water
1-1/2 to 2 cups sugar
Squeeze the juice from four of the lemons, limes and
oranges; pour into a gallon container.
Thinly slice the remaining fruit and set aside for garnish.
Add water and sugar; mix well. Store in the refrigerator.
Serve over ice with fruit slices. Yield: 12-16 servings (1 gallon).
French-Style Buttered Potatoes
Total Time: 1 hour Active Time: 15 minutes Servings: 6
1 (3.5 oz) stick herb garlic butter
1 teaspoon dried Italian seasoning (or herbs de Provence)
1 (20-oz) bag refrigerated homestyle sliced potatoes
1 tablespoon quick-mixing flour
Preheat oven to 400ºF. Melt butter in microwave or on
stovetop. Combine butter and seasoning in medium bowl;
stir in potatoes until evenly coated. Sprinkle flour over
potatoes; turn potatoes to coat.
Transfer potatoes into 8 medium (or 6 large) muffin cups,
pressing gently to compact the layers. Bake 35-40 minutes
or until edges are browned and potatoes are firmly set.
Carefully invert pan to turn out potatoes. Serve warm.
Cooking Challenge
Cooking Challenge meets this month on June 24th,
6:00pm at Manatee Hall. This month our challenge is any
Spanish dish. Last month was ground mustard and any
ground meat. Simple for appetizers and entrees but not so
for the side dish and dessert!!
In April we challenged Chef Constantine Brianas with
cumin and jicama. He more than wowed us; not only with
the dishes he prepared but he actually prepared each dish
in front of us on his portable kitchen. We will definitely be
bringing him back.
For those new residents or those who do not know what
we do. We meet the last Wednesday of each month at
6:00pm at Manatee Hall. Everyone brings a dish to provide
about 30 people a single bite (spouses are welcome to join
us). There is no meeting, no dues, just good conversation
and good food. At the end of the meal we draw a spice
and a food for the next month and each cook draws a card
to determine what type of dish to bring. We have four
categories; appetizer, side dish, entrée, or dessert.

that we have are based around short term visits by your kids and grand kids, but there
are some other items that you may require on a short term basis. These include a wheel
barrow, a four wheel dolly and a refrigerator cart.
There is a very small mandatory maintenance fee for the use of the items and you will

Founded in 1989, the Entertainment Review has performed over 1,000 shows at
community events.The group is recognized nationally as an outstanding training group for

Gordy Wensel and Debra Kaye are from Branson, Missouri. They each have spent the last

perform an upbeat variety of country, 50’s & 60’s, gospel and patriotic music, splashed with
a little comedy, tailored to please audiences of all ages.

Duo Romantico are completely unique in today’s entertainment scene. They are two
classically trained singers. Atilio Marinelli is a powerful, dramatic tenor and his wife Christy
is a lovely, lyrical mezzo­soprano. When their gorgeous voices intertwine, it is nothing short
of magical. Their show brings to life all the favorite love duets from films such as “Moulin
Rouge”, “Pearl Harbor” and “The Godfather”. These two experienced stage performers
aren’t content to just stand and sing, they act out each song. Christy transforms herself,
just by pulling her hair back, into a dying Evita Peron and sings the heartbreaking “Don’t
